    First course: raw blue fin tuna

    4.5/5. I was soooo excited to eat here. Sauvage's tasting menu is 95% of the reason I made the trip from Denver to Steamboat! Overall, it was a very good dining experience. I was not totally sure if I wanted to do the 3-course of 5-course, but once my server told me that it's a $15 surcharge to do the 3-course with three non-dessert items (vs. a starter, main, and dessert), I decided that for an extra $15 on top of that, I might as well do the 5-course and try it all! For menu selections, I went with (1) raw blue fin tuna, (2) ricotta filled pasta with crustaceans (prawns & lobster) and pistachio pea pesto, (3) swordfish with white bean salad, (4) squid ink vinaigrette crusted sea bass with melon and and a mussel curry foam, and (5) Sauvage birthday cake & shake. An apricot amuse bouche and a strawberry-lychee dry ice course were also provided. The bread course was phenomenal, with the mushroom pretzel roll and truffle cheddar scone being my favorites. Paired with the house Malbec. The food was innovative and cooked very well, with beautiful presentation. The waitstaff is extremely knowledgeable regarding all menu offerings, wines, etc. Reasons for losing 1/2 a star: my swordfish was very fishy. For the second course, I asked if it could be prepared without prawns (allergy). When the dish came out, there was also no lobster, and no additional protein or extra serving of pasta to compensate...I felt a bit cheated on this course and likely would have picked the other menu option had I known. The staff here is incredibly welcoming and attentive...almost too attentive. Each course contained only about 3-5 bites worth of food. Without fail, at least 2 or 3 servers checked in on me during a single course, averaging to about one check-in per bite. Although intentions were good, I felt like I could not get a moment to enjoy a bite in peace, and instead had to quickly chew and swallow so I could respond to the server. I came hungry and expected to leave hungry, because, well, it is a tasting menu. But I left full and content, for which I owe that delicious bread course so much gratitude. I would come back to Sauvage if I am ever in town again and would love to check out new offerings on their menu!

    For the first 3 months of 2023 Sauvage Restaurant offered a 6 course tasting menu for $135/person. I've enjoyed dining here previously, and they seem to have had quite some turnover, but they haven't lost their touch. Their Winter Cocktails & Wines by the glass included Shaken, Stirred, and Zero Proof, too! The Seattle Fog, Gussied Cup, Mr. Tally Man, and Left Hand were welcomed additions to our meal. Didn't try any beer or wine offerings. Thoroughly enjoyed the Ecorce Gourmonde, coffee, and mint tea afterward. Posted a photo of the 6 course tasting menu and suggested additional wine pairings. In case you need just the horribly-reduced from the originally-clever text: First Course - Seafood Chowder Second Course - Salmon Third Course - Capon Fourth Course - Beef Fifth Course - Coco(nut) Sixth Course - Bekah's First Desert (sp?) I enjoyed the multiple meat/dessert aspect. Little tasty breads accompanied most of the courses, though it wasn't clear if they were still made in-house. The seating was comfortable and afforded a view of a brief nasty blizzard outside. Though we obviously weren't in any hurry to leave, it seems the kitchen's timing was rather off with the delivery of subsequent courses. Sometimes it was a five minute turnover and others closer to fifteen. Drinks took a long time all night, so plan way ahead for any potentially-needed refills or new drink selections. Our biggest complaint was the announcing of the courses. A plate was presented by a server who would describe its contents while entirely facing one diner and then not repeat those completely-lost words (ambience music was at a healthy volume nearby) when placing the course for the other diner. Either don't turn entirely to one side or simply repeat for each diner. It was rather annoying amateur mistake that kept happening. It was, in general, a nice celebration for two people early observing birthdays that occur deep in the heart of Mud Season when almost nobody remains open. All in, this experience was over $500, but quite enjoyable. If this is too rich, consider trying their A La Carte Menu. I still highly recommend the Sauvage Restaurant for celebrating special occasions.

    Sauvage was supposed to be a surprise treat for my daughter and her boyfriend. They hadn't had a tasting menu before and the soup, trout, duck and pork tasting sounded delicious. They are just not. It's artsy and unique but the flavors together was just a miss for me. Nothing was hearty, rustic, or seasoned. It was confusing and needed more flavor and cohesiveness. There were a lot of elements on the dish but it didn't come together. The soup the best item. Broccoli and cheddar whipped but it was just a few spoonful. I'd honestly advise them to go to a tasting menu like Bazaar Meat with Chef Jose Andres or chef Joel Robuchon's tasting menu to see these restaurants do it. Every bite burst in your mouth and the decadence overwhelms. Everything is beautiful but incredibly tasty and thought out. I really wanted to show my guests how amazing a tasting menu was. We added the wine pairings. Unfortunately the chosen wines were not good. A nauseously sweet wine, a bitter red with a dry finish and dessert full wine I couldn't even get down. 3 inexpensive tasting wines for $119. The food was $109 a person for 5 courses and was at least in line price wise. Also a tasting should not be a full glass but a 3 oz pour. We had 12 glasses at the table including our cocktail we had hadn't finished. The positives: The outside A Frame private chalet was nice and an unusual experience. It's heated and you have a blue tooth for music. We all enjoyed that interesting part. Our server Anna was attentive and we were well taken care of. I just wish for almost $900 tab for 3 (when you add the tip) blew our socks off. I wanted my guests to experienced what I have in the past with chef inspired food tastings. I don't like to write reviews like this but I feel compelled to give the criticism they need to rethink and taste it themselves so they can be successful.

    This was our second time dining at Sauvage and I cannot wait to come back. Kyle provides excellent service and recommendations - he is extremely knowledgeable about the dishes. The chef was incredibly accommodating and made a last-minute substitution for us. We've dined at some of the best restaurants in LA, but honestly this was one of my favorite culinary experiences ever. Thank you Sauvage for providing an unforgettable birthday dinner!!

    3 stars is being generous based on my recent experience at Sauvage. The service from Ariel was outstanding and saved what would have been an otherwise hard pass on this "French style" restaurant in Steamboat. They are located on a quiet street so there was plenty of off street parking available. For a Saturday night 7:00p reservation I was a little surprised to find the place empty. I think there was only one other party dining the entire time we were there, which was close to 4 hours. This is always a red flag for me. I do not recommend coming here if you are looking for semi-speedy service, the entire dining experience is overly drawn out as if building anticipation for the next course will somehow make it better. I ordered the 5 course experience and was disappointed in the food. While each plate was beautifully presented, the taste under delivered. I definitely would not recommend the pumpkin salad or the Duck for the Main Event. Both were bland and really lacked any type of cohesion to the other ingredients on the plate. The Apple & Cognac Soufflé was definitely a stand out from the other items I tried and apparently it's one of the dishes they're known for. If you choose to dine here I definitely recommend ordering this.

    So.... We were looking for a fancy dinner place. This definitely fits the bill. The service was outstanding, the ambiance was perfect, and the wine was supurb. The food was on a whole new level. It was like going on a new adventure with new other wordly tastes and textures with every course. Every single, what ended up being 8 courses, was like an edible piece of art. The staff brought fresh flatware with every course and elegantly described each minescule portion of the meal. The reason I rated this restaurant four stars instead of five was because we left feeling full and a little confused. We had gone in for dinner but received something that included dinner but was definitely more of an experience. We ate probably 60+ different types of lifeforms, everything including snails liver, finger Limes waygu beef, white salmon, lobster, pomegranets, multiple different kinds of foam and tons of things I can't even remember and have never heard of. This is definitely a place to experience, but I am not so sure we will be back regularly as unbelievable; it was a little overwhelming with how 'much' of everything there was.

    Had the most amazing 5 course meal in over a year! Service was great! I enjoyed the atmosphere, all the tables were properly spaced and all the staff wore masks. They served us a Trout croquette to start. I ordered the beef carpaccio, pasta, duck, aged beef and open sesame panna cotta desi. My friend got the escargot, beet salad, duck, king crab risotto and soufflé. Everything was flavorful and had a good mix of flavors and textures. The risotto was super rich. The aged beef was tender and cooked perfectly. The panna cotta was very light and refreshing. The beef carpaccio and beet salad were served with something sweet which gave it a good mix of sweet and salty. We both thoroughly enjoyed our meals. Definitely would return!

    If you're open-minded about the food, you definitely need to try this place next time you're in Steamboat. Everything had so much flavor, and some of the ingredients you think are a little strange complimented the others in the dish. Make sure not to eat before, even though you may think it won't fill you up...it will. A piece of bread/pastry comes with each course.

    My wife and I had the 5 course vegetarian tasting menu. This was really a delightful meal, we sat outside and despite a busy night, we had great food and service. The dishes were presented impeccably and we felt really well taken care of. -Acorn squash soup -mushroom risotto -seared hearts of palm -Roasted butternut squash -birthday cake w/vanilla shake The lineup was super seasonal and felt perfect on a crisp fall evening. We'll definitely be back!

    My husband and I went for Christmas dinner. Attentive service. Tasting menu unique and very flavorful. First two courses of bisque and then fish were not particularly warm, if that was intentional. Duck phenomenal, lamb was tasty but fatty. Desserts unique but not what would have selected if given the choice. Bread service with each course great in concept but slightly dry and not served warm. Wine pairing excellent however extremely expensive for the quantity. Ambiance cozy; glad I switched out the wooden chair for a fabric and cushioned chair. Grateful for an additional special occasion restaurant in Steamboat. The team definitely has the skill to make it work!

    Another incredible experience at Sauvage! Although we preferred the chalets which are no longer operating - we dined instead, not my top choice. The service and food were impeccable. We did the tasting menu of course and it did not disappoint. Best parts were: French onion soup, lobster sammie, agnolotti, risotto and chocolate soufflé. Love this place, we will be back every season we're in steamboat for sure.

    OK - this is French fine dining in a BEAUTIFUL mountain town. Reservations needed and it is usually a tasting menu - prix fix for 6 course dinner. Well, at first the portions seem miniscule but by 3rd or 4th item, you start feeling sated. By the end of dessert, you realize the sizes were perfect (at least for non-gluttons) Anyway, the food - wow: some dishes sound familiar but they pack so much more flavor then described. This place is pricey but not exorbitant. Come here if you want a higher, more refined dining experience than most mountain town fare. I mean that it a good way.

    One of the best meals of my life. Everything about the experience was incredible from the first cocktail to the music and ambiance. The sturgeon and potatoes in beurre blanc was absolutely everything. SO light and buttery - like comfort food flavors but sushi. The short rib with the fois gras add on was out of this world. The melon soup was fabulous. The only just okay things I could have skipped were the shrimp and the scallop. Although really well cooked, both weren't really worth it if you can save room for other stuff on the menu. My husband loved the flambe as did I but it was a lot after a huge meal. The blueberry ice cream was yummy but a bit cold for the rainy night. Wish I got the birthday cake instead simply for the temperature and comfort food element.

It was not personable at all. They did not come around to refill our wine glasses all night. By 9pm we got tired of waiting and we got up, put our coats on and walked to the front to try to pay at the front. That's when he came over. No apology, just said oh you want to pay? Charged our card and gave us the receipt to sign. We noticed he over charged us. He was already back chatting with the other couple and my partner didn't want to interrupt him so then I went to go ask another employee for help which then got the servers attention and he came over. Then we waited like 10 minutes until he was able to refund and recharge the correct amount. We had just driven 3 hours after having a medical emergency all morning and almost cancelled our trip. We had an absolutely heart wrenching day with the news we received from the doctor. But we decided to move forward with the trip and just have a nice dinner as we recovered for our first night. So while the food was good, this was not a pleasant ending to our already terrifying day. Pay attention to ALL of your customers! Not just the ones who are clearly wealthy and keep ordering more glasses of wine. I am updating the review 06/09 because in the end, the restaurant made it right.

The lights were white but soft, and the decorations were eclectic. Judging by the ambiance alone, Pixies might have been a more fitting name than Foxes. The two bartenders playfully bantered with each other and their patrons -- one more calm and quiet and the other a bit more energetic and chaotic. The cocktail menu was small but all-encompassing, with flavors suitable for every palate, and the bartenders were eager to offer suggestion. Fortunately for us, our group was large, so we were able to sample almost the whole menu, and not a single item was disappointing. A surprising highlight was an off-menu mocktail prepared with egg whites and raspberries, where the subtle flavor of the raspberries elegantly danced on the smooth cream of the egg whites. A less-surprising highlight was the Forest Bianco, where the aromatics of the gin were perfectly accented by the spruce and bergamot, and honey elegantly smoothed out the edges. As the evening carried, on the name Foxes seemed more and more appropriate. At some point, between the drinks, the decorations, and the dazzling displays behind the bar, it became quite clear that the charismatic bartenders were the well-deserving namesake of the Foxes speakeasy.

Foods were good, but mine especially (Crab Benedict) felt a bit lacking. Let's just say that I've had Crab Benedicts as just as good for half the price...and with better sides. Maybe lunch or dinner experience is better here? In any case, am glad we checked out the place...but I doubt I'll choose it for breakfast again.

The menu is on smaller side but still plenty of options. Seem to have nightly specials. We ordered duck and wild rice soup which was very good. Also salmon and farmers pasta (market veggies). Both were excellent. Pasta was slightly spicy which I wasn't expecting. I had to ask for the garlic bread but that was no problem. Finished off with bananas foster crème brûlée. Yummy. I loved that they had wine flights. I had the Chardonnay flight.

The menu has some high quality offerings with some twists. You can get steak everywhere- BUT BEEF WELLINGTON?? This was a truly spectacular dish. Amazing flavor, perfect flaky crust, and unbelievably tender, melt-in-your-mouth steak. They were gracious to do a split plate with lovely presentation (wish I had just ordered my own!) Backing it up, the burrata app was a great starter. We lucked in on a Wednesday where they have 1/2 priced wine, and our bartender gave us a great suggestion as well as top service the whole meal. Wish I lived closer to frequent this place!
