She offered no seats inside for us to wait inside or extensions of customer care. I did not understand why the hostess or manager did plan for a reservation for only 3 people!! This is a true gem of a place that is open really late all the time and a perfect midnight or 2 AM spot to dine in. ATMOSPHERE/ARCHITECTURE: 8/10 The inside is on the small side but still probably can comfortably seat 25-30 total. It is nice and clean inside and offers limited outdoor seating as well. SERVICE: 8/10 Servers and waiters were courteous and helpful. I did not have any issues from this front. FOOD: 10/10 Takoyaki - 9/10 - The takoyaki here is definitely a step up from most places' takoyaki. The "octopus balls" are essentially dough with bits of octopus, tempura, onion and scallion, making for a delectable snack/appetizer. Their takoyaki has nice soft and chewy dough and is not sparse on the octopus. Tempura - 9/10 - This is your standard vegetables deep fried after being covered in the tempura batter. It's crispy and delicious, though I have rarely if ever had bad tempura vegetables. This was no exception and a worthy appetizer. Original Hakata Tonkatsu Ramen - 9/10 - Ramen being the namesake of the restaurant, this better have been good, and oh I assure you it was. Tonkatsu broth is a pork bone based broth which was done well here. It was rich with flavor and really set a great base for the dish. The ramen was topped off with grilled Berkshire pork belly, bamboo, black mushroom, fish cake, green onion and soft boiled egg, coming together as a delectable bowl of soup. One of the best bowls of ramen I have had the pleasure of having in Chicago. VALUE: 10/10 Comparing with many other ramen options in the city, this place is at least $2 cheaper. And is the quality any less? NO! It's actually better than even "high end" or "trendy" places like High Five Ramen (where the wait time is 2-3 hours by the way). I ordered the chicken paitan ramen and vegetable gyoza (steamed). The broth for this ramen was quite tasty. You can tell the broth had a grilled chicken taste to it and it wasn't salty at all. When I came this time, you order off the QR code that's taped to the table which is pretty nice if you're an introvert! To start off, we ordered the tako sausages and the takoyaki. Both were super delicious! For our main meal, we ordered the original hakata tonkatsu ramen and the tonkatsu don. My ramen was absolutely delicious and my partner said the tonkatsudon was really good but he wish they specified that it had bones in it. The description just says a pork chop and at other places we have gotten it, it's always been boneless and also cut into slices. Either way it was still good, again just wish it was added to the description! They were definitely busy at 11:30PM but they sat us down very quickly and our food came out quickly as well. Shinya is consistently good, but also... I wouldn't put it on a top list of ramen places in the city. The difference is the tonkatsu broth flavor. It's decent but is missing that savory, umami something that makes the depth of the some of the most amazing places so good. Still, there's lots to like about Shinya--dishes are well presented and look great with that japanese kawai (cute!) for some things. And honestly the $3 Sapporo draft beers are nice for those of us that like a draft beer with our ramen! Right now Shinya has one of the nicer outdoor patios in the Bridgeport area, so this is also a plus, with hanging Japanese lanterns for some warm ambiance. The pork pieces were extremely tender and delicious and the egg was cooked perfect. The broth wasn't super depth/complex and couldn't taste the black garlic flavor as much as we'd hoped. The noodles were a little too soft and didn't have that bite, maybe pre-made. Takoyaki - the balls were very soft and texture was spot on, but small pieces of octopus inside, which were sometimes hard to find. Skewers: Beef tongue was chewy, but has good seasoning. There's a small free parking lot in the back (maybe 4-5) spots and it's hard to get to. Also hard to exit the parking lot. The restaurant itself is a little small but it was not crowded when I went on a Saturday night. I ordered the chicken karaage and it was so so delicious. perfectly breaded and actually had chicken unlike those fried nuggets of bread crumbs. The spicy mayo to dip it in is good too. There's limited parking in the back, so you might not have to pay for street parking. Came in on a weekday and there were a couple filled tables. We were seated right away. I wanted to get the Japanese pickled cabbage, but they said they ran out. I asked if it was possible to substitute an add-on because I'm not a huge fan of wood ear (black fungus), so I was hoping to change it for something else. The waiter told me that I would have to pay extra, however it'd be free of charge if I wanted to substitute the meat, which I found more confusing since meat definitely cost more. I ordered the Yuzu chicken ramen. I absolutely love yuzu so I was very excited for it, however I was let down because it lacked yuzu. I really had to close my eyes and imagine it. The chicken was tasty and very tender. The noodles were also nice and chewy. Their noodles were definitely some of the better noodles I've had in Chicago! Shinya gets alot of things right -- hearty, flavorful ramen, great service, and (most importantly) reasonably priced drinks. They have an outside area that's almost as big as their indoor dining. I haven't had an issue with waiting, but you can always reserve a time if you want to be sure you'll be seated (mostly applicable if you're bringing a group of 4+ I would say). My favorite dish is the chicken curry ramen paired with a cold Sapporro. You seriously can't beat it. It's perfect for cooler weather. There is paid street parking, but you can easily find free street parking in the surrounding neighborhood. Plus, it's a chill area to just walk around. I really did not enjoy this place. Very overrated. To be fair I only got the calamari and it was very bad. The seasoning tasted like tajin but much worse, the breading was very crunchy and didn't taste well, and the calamari tasted bland and felt like rubber. Service was good I'll give them that. We tried fried tofu, breaded chicken, short ribs shrimp tempura and grilled shrimp skewers. The fried tofu are tiny pieces and not much flavor. The short ribs, shrimp tempura and breaded chicken was delicious. The shrimp on the skewers were tiny. Tried different things and now I have a few favs. The ramen was delicious. Check in on Yelp, and you'll get a free appetizer! I had the Shoyu Tonkotsu Ramen. I'm glad that there's no MSG in the ramen according to the menu, but the great thing was that my bowl was filled with everything I wanted without having to pay extra. I was craving Asian elevated chicken noodle soup and the Grubhub coupon was calling to my soul. So I decided to order delivery so full disclosure on that impact to my thoughts. Went with the Original Hakata Tonkotsu Ramen and the Potato Croquettes. As usual, the soup is packed separately so the noodles aren't soaked. I open my soup container and the soup is still kind of hot. Pour it into the noodle container and it everything just turns room temperature. The noodles stayed in the container shape like the circular instant ramen noodle packets. I guess you need to stir. I've had take out ramen before and i think the soup needs to be hotter. Again, this could just be a delivery issue but I was disappointed. The noodles were forgettable. The soup was memorable in a bad way. It was pretty plain. I think my Nong Shim tonkotsu has more flavor. I wasn't sure if this was watered down or just terrible. The pork belly was ok. I thought maybe the potato croquette would turn things around but again, getting it delivered probably had an impact. They were soggy, in a styrofoam box with no ventilation. Some places cut holes in the corners of the box so condensation doesn't build and soak up whatever is deep fried. Something they should consider doing...Besides being soggy, it was eh. Again, this was all delivered so maybe I would feel differently in the restaurant. But the soup was a disappointment and that wouldn't change getting it hot from the kitchen dining in. Maybe it's needed for late night seatings or on Friday/Saturday night. We started with chicken karaage and seaweed salad. Both were brought out promptly and very tasty. For drinks we tried the blueberry rosemary smash and the lychee rose martini. They were strong and not our personal favorites. I'd def want to try another next time. For ramen we tried the black garlic tonkotsu ramen and the sapporo spicy miso ramen. We were able to customize them to our liking and everything came out perfectly. I love the spicy miso and finished every last bite! The waiters were all very kind and answered all questions.
