    Bummed that the San Mateo location closed but happy it reopened in Fremont. Easy parking in a strip mall right off Fremont Blvd. Compared to the San Mateo location the Fremont location is bigger with more room between tables and brighter. I like the Fremont location better. Shugetsu's specialty is tsukemen and the ramen is also very good. We started with kaarge chicken. Perfectly cooked, light sauce, highly recommended. 2 had the tsukemen with was great as usual. I had my usual ramen which was very good. We also tried the abura soba for the first time. Instead of a dipping sauce the noodles are served dry with a couple of oils your pour over. Interesting but not our favorite. Good food, reasonable prices and good service.

    We really enjoyed our first time at Shugetsu and we'll be back when the ramen craving hits. There isn't that many parking options, but since it's close to downtown Fremont, you can just park elsewhere and just walk. They have anime posters and figurines to look at while you're there. Fun for our boys to see the series they're all into right now. They have TVs that had anime playing at the time. They have high chairs for you if you need them. It's spacious in there so you don't feel cramped. I tried Tsukemen, where the noodles come separate from the broth. I asked the waitress the best way to have the noodles because they will ask if you want the noodles cold or warm. She suggested cold because that's how they normally eat it so that's what I did. I'm glad I did because it was delicious. The broth had pork bits in it and you can taste all the flavorful char in it. I'm now hungry and want some.

    Yummmm!!! I just love noodles. Staff was helpful and nice. First time trying cold ramen. And seriously love it. Got the shugetsu tsukemen special. And the fried chicken. The chicken was nice and crispy. And the noodles were perfect. The soup wasn't too salty. It wasn't crowded during Wednesday lunch. Will probably crave this often! Lol

    5 stars -- easily one of the most satisfying ramen experiences I've had in a while. The pork belly ramen was incredible. It leans lighter, more shoyu and bonito-forward, which made it feel clean but still deeply flavorful. The broth came out piping hot (the way it should be), topped with fresh green onions, bamboo shoots, and a perfectly soft-boiled egg. The homemade noodles had that ideal chewy bite that really tied everything together. The tsukemen was just as impressive -- rich, smoky, and super flavorful. The pork belly was tender and comforting, and the dipping broth had a depth that kept me going back for more. And the chicken karaage? One of the best I've had. It came out dangerously hot (in a good way), with skin so crispy it almost snapped like a chip. The sauce was packed with flavor -- soy sauce, green onions, and grated radish gave it a punchy, savory finish that elevated the whole dish. Would absolutely come back again.

    I discovered today that I am not a bold broth person. And the Shugetsu Tsukemen's soup was very, very strong lol. I should have asked more questions on what's in it (there's no description), but I think for my flavor profile I just prefer something lighter so I will try the Miso one next time. Shugetsu Tsukemen Special ($20): It was an extra $2 for another half of a marinated egg and 3 pieces of pork slices, which was a fair price. I opted for cold noodles and the regular size, and I don't know why I chose regular when all the noodle portion sizes were the same price??? Friends. Go for at least large, because you can always take home your leftovers and have Tsukemen again (I don't expect anyone to finish their soup since you're just dipping noodles in it). Non-Spicy Miso Tsukemen Special ($22): My friend ordered it with hot noodles and really liked it! I would get this spicy for the next visit, and I missed it on the menu that they will add extra soup at the end.

    Truly a delightful little ramen shop with amazing noodles. The interior looked clean as far as I could see, and the staff are so very polite and friendly. The broth of the Shugetsu Tsukemen is not like your typical ramen-like broth. Instead, it's met with a savory and tangy flavor that becomes a bold dipping bath for the house-made noodles. If you find the broth too salty just ask for some hot water to water it down. The char on the meat in the broth was delicious and distinct. The marinated egg was perfectly cooked and marinated. And last but not least, the noodles were my absolute favorite component as they were a lovely thick consistency and had a great bounce to them. I got a regular size and it was more than enough for me. If you're a fan of anime and ramen then definitely check out this shop. Loved the figures and overall down-to-earth aesthetic. Will definitely be back to try out more options on the menu! :)

    Great ramen spot right behind Bill's Cafe. No wait on a Friday at 7pm but it was decently crowded. I've tried the tsukumen and shugetsu ramen in the past and I think I prefer the shugetsu ramen, the broth is so clear and tasty but both are good. Noodles are thin and firm. It's a bit hidden but worth seeking out, possibly the best ramen spot in Fremont.

    I've been wanting to try this spot for quite some time now. It's a cute decent size restaurant, has a nice wall of anime figurines. Very nice staff, my waiter explained the noodle options and the menu is very easy to understand. Today I decided on getting the spicy miso tsukemen with the XL portion of noodles. This is 400 grams of noodles. About little more than 3 cups of carbs. It is a LOT of noodles. When the plate of noodles showed up, there was some regret building in my head wondering about my food life choices but in the end, I slurped it all up! Only disappointment was they didn't come fill up my dipping bowl with chicken broth after I was done with the noodles. I would've loved the experience in its entirety given it was my first time trying tsukemen. When you order the tsukemen, it's the same price regardless of what size noodles you want. They have regular (200 grams) large (300g) XL (400g) and Mega (500g). If you order the broth ramen, there's 3 noodle size options, regular, large and mega (+$5). Overall, I'll be back soon.

    There's no wait on Saturday dinner time. The dip noodles (tsukumen). are same price regardless of size, the dipping broth is nice with the right flavor. We opted for tsukumen with marinated egg for $18, the egg was nice but it's cold. The noodles were sticking together like a big dough, I am having some trouble to get them out and dip them into the dipping broth. Shugetsu ramen is the chicken + soya + bonito broth not the normal tonkotsu broth. It's okay, we got the grilled pork belly, it's awesome Love the fried chicken, so far the best I had. It's crispy with tender meat, the minced ginger sauce is a great addition to the chicken.

    Honestly, one of the best ramen places in all of California. Even better than a lot of ramen eateries in Kyoto. Come here if you love steaming hot ramen with rich, savory broth. Comforting and soul-soothing ramen topped with tender meat and fresh vegetables. Great service! Usually quite a significant wait time on weekends, but very worth it. We love this place!

    Came here on a random Thursday for lunch with my mom, who loves ramen. She was craving ramen, and I was craving tsukemen, so we decided to give this place a try. The menu is pretty straightforward and not overwhelming, which I appreciated. I have pretty high standards for tsukemen, so I ordered the Spicy Miso Tsukemen. Shugetsu met more than half of my expectations, I'd give my bowl a 7/10. My mom ordered the Shugetsu Ramen, and I think she really liked it, she almost finished her entire bowl, which says a lot. For appetizers, we ordered the fried chicken and takoyaki. The takoyaki was good, but the fried chicken was a bit cold when it was served. Now for the downsides. While we were eating, there was a cockroach on the floor that crossed from one table to another. That was definitely the biggest letdown and honestly hard to ignore. The second issue was the wait time. We waited almost an hour for the appetizers, and then another 25 minutes for our ramen and tsukemen. It felt longer than expected, especially for lunch. Will I go back? Probably?? If I'm really craving a good bowl of tsukemen. But I do hope they improve cleanliness and timing because that makes a big difference in the overall experience.

    Shugetsu is a new tsukumen noodle shop that recently came to Fremont Vibes give off very Japanese anime aesthetics and the servers are nice and helpful Parking is easy Abura soba was solid noodles with great flavor and had great chewy noodles The tsukumen was also solid and the sauce itself was a bit watery but still good enough to cling to the noodles Chicken karaage was unique and had great flavor as well Overall good vibes good food!     for sure! theyre super flexible and accommodating with customizations. With that said, if you're looking for totally vegan...I'm not sure if any of the broths are vegan.

I forgot what my husband got, but it was another spicy ramen. Both tasted good, I'll say that right off the bat. My husband opted for level 2 spicy and he felt like he could push it higher next time. Overall, Hinodeya is a good place for solid ramen. The chicken karaage was okay, although it would've been nice to have a spicy mayo sauce or something to accompany it. The matcha salt was different, but didn't really add much to the dish for us.

The noodles had an excellent texture, firm with just the right amount of chew--allowing them to hold onto the broth beautifully. The toppings were fresh, thoughtfully prepared, and blended seamlessly with the overall dish, adding texture and flavor without distracting from the star of the bowl. Not the thickest pieces of squid, but it was fried perfectly and tasted good. The miso ramen's broth had a nice zippy acidity to it which I really enjoyed. My wife got the black garlic ramen and the broth was very flavorful as well. I was surprised by how nicely cooked the noodles were. Perfectly al dente. Don't expect to be blown away with a transcendent experience or super Instagrammable presentation, but the food is simply made well and does the job.
