I've intended to visit this restaurant for a few years now. But finally, one hungover Sunday morning called for some pancakes to revive me. Most the reviews I read mentioned the pancakes are the best item to get, so my girlfriend and I couldn't resist. This location is tucked away in the North Capitol Hill neighborhood surrounded by trees and older apartments/ homes, and the interior is just as relaxing and quaint. It's dark lit, intimate with modern fixtures and flowers, and has one centerpiece which caught my attention before anything else: a restored tower espresso machine which appeared to be from the 1950's. I'd only seen an espresso machine like this at the Kent Bakke Espresso Museum in Ballard, so as a coffee nerd with an emphasis on espresso, it was lovely to see. It took us about 5 minutes to get seated at the bar which is outstanding time for a brunch spot in Cap Hill on a Sunday. We were able to order within 5 minutes of deciding what we wanted, which was the bacon egg sandwich with avocado spread, omelette with hearth roasted potatoes, an espresso, and the main event, the pancake. I can't express how much the pancake exceeded my expectations. It was wide and tall, extremely fluffy, had decadent bourbon whipped cream and cinnamon stewed strawberries which is something I've craved for a long time. The menu states to wait 20 minutes for the pancake to cook and they miraculously got it to us in 10. The other breakfast items were tasty but left something to be desired, so we ordered extra Romesco sauce and they gave us a tub of it which helped immensely because of how much flavor and complexity was packed in it. The espresso was very fittingly a traditional Italian style dark roast from Caffe Umbria Roasters which hits the spot when hungover. We were also lucky enough to have sat right next to the espresso machine and the bartender kindly let me take a video of him pulling a shot which still gives me joy to this day. Speaking of the bartender, he happened to be one of the chefs working at the bar due to them being down a waiter and a chef which really speaks to how kindly we were treated despite dealing with an extremely short staffed Sunday. Our waitress and the rest of the staff also made us feel welcome and not as an irritant when making requests which is hard to find in Seattle. Overall, my experience at Single Shot left an extremely positive impression on me. We were assisted quickly, never felt as a bother, and got exactly what we needed to recover and enjoy the rest of our day. We will be back for that pancake and will encourage our friends and family to visit! read more

I went here for an impromptu brunch on Saturday, we got here around 12:15 and was able to get seated immediately. Though I think their weekend brunch reservations usually book out fast so would recommend snagging a reservation in most cases. The space is intimate, but when we went there were only a few other people there making for a slow-paced peaceful dining experience on a gloomy Seattle day. The person with me has lots of food intolerances and our server went above and beyond to check with kitchen staff to double-check ingredients. I was truly appreciative of them being able to accommodate to them since their intolerances are pretty restrictive. I had the omelette which was delicious, I tend to lean on the savory side and enjoyed all the layers of this dish. A bit of heat from the sauce, the freshness of the greens, and richness of the omelette balanced each other nicely and really brought this dish to life. However, I was truly SURPRISED by the pancakes. I have never had pancakes like this and they were incredibly delicious. The portion was insane though I think you could easily share the pancake with 4-6 people. I almost wish it also came in a personal size. Overall, I definitely recommend coming here to try the pancake. It was truly one of a kind and made this meal very memorable! read more

Came here with a group of 4 on a Sunday afternoon and the place was absolutely packed -- clearly a popular brunch spot. Our server, Isaiah, was attentive and friendly the whole time, checking in on us and keeping things pleasant even though the kitchen was clearly slammed. The food took 30-45 minutes to come out, which felt long even accounting for how busy it was. Once it arrived, though, everything was genuinely delicious -- we ordered the omelette, bacon egg sandwich, salmon lox, and breakfast skillet, and all four dishes were well executed with no complaints on quality. One nice touch: they were sadly out of the pancake we wanted to order, but instead of just shrugging it off, they made us a complimentary mini pancake with the remaining batter. Small gesture, but it was excellent and said a lot about the kitchen's attention to detail and hospitality. Would I go back? Probably, but I'd try to hit it at an off-peak time if I can. I went to get brunch on a Saturday. We made a reservation the day before - it was easy since there were a lot of spots to choose from. There seemed to be available seats for walk-ins when we were there too. I had the pancake and my friend had the eggs Benedict. Pancake was very fluffy and the presentation was really nice. The pancake tasted just ok honestly, but I liked the berry compote on top of the pancake. I also had the iced latte, which went really well with the pancake. We called last minute to ask about outdoor seating for two and a small dog, and the staff member who answered was very friendly and let us know they were busy, but that he had a table currently open he could hold for us. They don't have dedicated parking, but there was plenty of street parking in the area. The outdoor seating was very cute, covered, and great for people watching. The asparagus and cauliflower appetizers were amazing, as was the salmon dish. Our server was very attentive. The tiramisu had cocoa nibs instead of powder which was not my favorite twist, but that's the only critique I could reach for. read more

Parking is challenging as you'd expect on Capital Hill, Lyft or Uber is a good idea. We sampled many things on the menu, gnocchi, roasted cauliflower, and pork chops were stand outs. Note the menu seems to change regularly so it looks like you can come here often and never get bored. This is a cute little cafe in Capital Hill. Parking is kind of a pain in that area, but I was able to find street parking a block away. We came in right at 10am, it was very cold in there, although we did sit by the window. I imagine they keep the heat down overnight and we were there first thing in the morning. I ordered a cappuccino and the salmon lox. The espresso is very good, I'm not sure where they get their coffee, but I enjoyed it! I was also very impressed by their salmon lox! I am somewhat of a connoisseur for this meal, I order it at every restaurant, and this was top tier! Goat cheese, capers, egg, arugula, all hit perfectly as well as some aioli. I would rate it the best salmon lox I've had in Seattle. 5 stars! The service was also great, our server was polite, attentive, and was able to cater to some minor requests. I was recommended this spot for brunch and it was pretty good! The inside is elegant and cozy, and definitely a nice spot to take others. We made a reservation ahead of time which seemed like a good idea, as it was quite busy inside. Upon being seated we were asked numerous times if we would order drinks, and when we politely declined the waitress didn't really seem to like that. Nonetheless, we ordered our main entrees - I got the eggs benedict, which seemed to have high praise. The food came our relatively quickly, and was presented beautifully! I did enjoy the benedict - the egg was slightly runny, the hollandaise was good, and I loved the proscuitto. They used bread instead of the classic english muffin, but I think I liked this more. The potatoes were also good but nothing special - I felt like I could taste each individual seasoning and just make it myself. Food - the food was good but they didn't have too many vegetarian options that I would keep coming back for. The OJ was awesome and the pancake is HUGE. We probably both could have split it. The avocado toast on the other hand was not much of an entree compared to the pancake so it worked out. Service - they were super super busy and overrun. We were seated at the bar and we could see how hard the bartenders and servers were working and hustling about. They were working very hard and trying to be attentive though and they checked in enough. Ambiance - it's a bit too cozy and cramped for my preference but it's a cute little neighborhood brunch spot! Came on a Sunday at 11am and surprisingly it wasn't too busy when we got there but it quickly filled up shortly after. We had reservations so luckily there was no wait for us either. I got the lox toast and my friend got the eggs Benedict (without the bread since she's gluten intolerant). They made the change for her request very seamlessly and it was still delicious! The lox toast was also really balanced in my opinion. To compliment the salty flavors of the lox was an arugula and fennel salad on top with some capers; I really enjoyed it! The space is small but provided a perfect cozy space for a lovely brunch. Pretty darn good small place in S Seattle. Seasonal food items with a flavor twist highlighting chefs farm-to-table orientation. Place is bustling on Sat night I was there. My reservation was at 6, and by 7:15 both standard and bar seating was full with people waiting. I would guess capacity is less than 100 diners. I felt a bit rushed once we went past 7:30 as they were trying to turn the tables for the next wave. As stated on their website, parking is neighborhood street only, and it's a bitch. I drove around for 20 minutes before I found a spot I had the charred Brussels Sprouts, which were good, but not best I'd ever had, and a bone-in pork chop, a tad dry. Kitchen accommodated my request to hold off on the grits and add some seasonal vegetables, which they did for me. For dessert had a delightful lemon tart. Service was efficient, not particularly friendly. Seems like maybe I had the owners (husband and wife team?) waiting on my table. Fantastic wine and craft cocktail list to compliment the menu. Patrons were largely in 25-45 age bracket, lots of couples out with friends. I would rate as $$$ a little over $100 pp (ex tip) with one cocktail, appetizer, entree and dessert. Single shot's brunch was impressive, both in presentation and flavor! The space felt classy but not pompous (well maybe having a wall full of blank canvases is pompous? IDK?!). Service was friendly but also a bit distracted, probably d/t crowd to service ratio. Speaking of the crowd, Single Shot was always full but there was never a line. Maybe this is because they have more reservations than walk-ins but we were happy to sit at the bar as walk-ins. We shared the eggs Benedict and Lox and avocado toast. The hollandaise sauce emphasized lemon but it's one of my favorite Benedict's in my memory. The lox toast was delightfully salty. The Americano was great and the greyhound with fresh squeezed grapefruit was vibrant and juicy. I saw from the menu that dinner here is pretty expensive, but I thought the brunch prices were reasonable, if not even lower than some places with more common fare. Tucked away in a less busy NW area of Capitol Hill, I found this place to be a refreshing oasis for a weekend brunch. I highly recommend and imagine I'll be back. read more

One of my friends suggested Single Shot for an intimate brunch, and even though we are from Tacoma and I was hesitant to drive all the way to Seattle just for a brunch spot, it was definitely worth it! Single Shot is tucked back in the neighborhoods near Capitol Hill where you wouldn't even think such a modern and outstanding brunch spot would be! It was honestly hidden between older homes and apartments and would be easy to miss if you didn't know what you were looking for. It's a cozy restaurant inside and has nice outdoor seating as well. The decor is a modern take on vintage style, and being there feels both like stepping back in time but also living in the 2024 you only see in movies. The staff are all extremely friendly with customers as well as with each other. I was new, but I could tell based on watching staff and patrons interact that there are a lot of regulars. I was given a heads up that the food is large, so we decided to do family style dining, and it was truly large servings! I was shocked by how large a single pancake was!! Between the three of us, we still had leftovers! Everything is homemade and uses fresh ingredients too! Even the toast was impressive and toast is usually the leftover filler for small meals, but not here! I cannot wait to come back! read more

However, the coffee (latte with oat milk and vanilla syrup) was a bit overpriced and not well made. But everything else was worth it. The service was pleasant. Apparently this amazing place has existed for quite some time and I was just too naive to ever try it but it is WORTH every penny. Such amazing, creative, food in a very cool and chic atmosphere. We stayed for a couple hours with a bottle wine and about five different dishes; catching up with friends but also questioning how we could ever even recreate these dishes. The recipes are so unique and it left us wanting to try everything on the menu. The atmosphere is also great for friends, business dinners/lunches, groups or dates. Parking was relatively easy as it's off the busy streets and there is street parking and great service. Appetizers in no order: Roasted beets: the funny thing is that I don't even like beets lol but when I ate this salad, it was so refreshing, light, and had a bit of citrus to. Highly recommend as a starter. Roasted Cauliflower: Highly recommend as it was one of our favorites. Lots of depth in the dish from the garlic and touch of acidity from lemon drizzle. Salad paired was also very good! Burrata: I can't eat this dish again because it was so good that eating my daily meals now bore me. This appetizer was so creative with the glazed plums and the burrata was so fresh. Mains: Margherita pizza: Wasn't expecting a lot since it wasn't a pizza place? but somehow still one of the best thin-crust pizza's I've had in seattle? Such simple ingredients but cooked and seasoned to perfectinon. Painted Hills NY Strip: paired with chimichurri sauce was a bit pepper-y for me but nonetheless I kept finding even if it wasn't my flavor profile, I couldn't not eat it. The steak was rare and delicious. Alaskan Halibut: A very light, more sweet dish. Honestly if you've made it this far into the review, sorry that I'm running out of ways to describe food other than beyond delicious and highly recommend. Omg this place is amazing. We did a family style meal and ordered three different proteins and two sides. Everything was cooked well and so tasty. The pork chop, lamb and steak were all around 12-16 oz options (as informed by the server). Highly recommend making a reservation as it's a small space but it's not impossible to make them 48 hours in advance. Cocktails are well done and fairly strong. But truly save space for the food. With so many of my favorite restaurants closing the past several years, I hesitate to let everyone know how amazing this place is ... but I also want them to stick around ;) TLDR; the food is consistently amazing. We've dined at Single Shot several times a year for 5 years now. Every meal has been a delight. We order across the menu to try new things -- and it is impressive how well the kitchen nails everything from fish to foul, steak and veggies, sauces and rubs. On our last visit I had the rack of lamb, and I am still gushing over it. This lamb in particular was the best I've had ... ever? This lamb in particular was a great example that they not only know how to cook/prepare, but also how to choose their meats and ingredients. Top notch cut, excellently prepared. Another great dining experience at one of my favourites! I was pleased to see they had changed the menu (it was about time!), and very happy to see they added Blistered Shishito Peppers to the menu! A note on those: They could be a little more blistered (less raw), have more of a variety of heat (there's usually more of a mix of mild, sweet and spicy) than 100% super hot, and make the glaze a little more sticky so it clings to the peppers - instead it ran down to the bottom of the bowl where we discovered all the goodness after having finished most of them. Another good idea would be to add some small side of bread or similar to offset the heat, and a finger bowl of water and lemon to clean your fingers after (if you're so inclined to eat them with your fingers, which is easiest). Steak and halibut were most delicious - specifically the chimichurri sauce with the steak had tons of flavour (and would have been an excellent pairing with the halibut as well!). read more

The cauliflower had great flavor. The burrata was okay- not sure I'd order it again. The agnolotti was amazing. Could eat it every day. We'll have to go back and try everything else on the menu.
