    Florida concept moved to Vegas. Let's be responsible in what we eat. leads to new and different choices. I stayed conventional with the cauliflower which was excellent. Seafood, pasta and bread available. Drinks were excellent and service was particularly strong With staff paying attention, listening and trying to address anything that would make my meal better. They have a five course tasting menu if you come hungry.

    Hands Down the Best tasting menu in Las Vegas. Absolute Brilliance! Everything we ate hit on all fronts - Flavor, Texture, Plating...it was a feast for your eyes as well as your tastebuds. The service was impeccable as well. Our waiter Doug is the definition of Exceptional Customer Service. All the servers were amazing and my glass was never empty. A lot of restaurants of this caliber can feel pretentious, not Stubborn Seed. It truly embodies what a Fine Dining Experience should be. Never once did I feel anxious about needing my glass filled or waiting too long for the next course. Everything was as it should be...Perfection.

    Stubborn Seed is more than a name. It represents a philosophy rooted in resilience, dedication, and a refusal to abandon ingredients that may seem unlikely to shine. With patience and precision, those small ideas evolve into bold, refined, and unforgettable culinary experiences. Jeremy Ford, Top Chef winner, opened the Las Vegas location of Stubborn Seed, building on the success of the original Miami restaurant, which holds a Michelin star. With Michelin returning to Las Vegas, it feels like only a matter of time before this location earns one as well. Choosing a restaurant for a special occasion in Las Vegas can feel overwhelming. The options are endless and the standards are high. After doing my due diligence, I reserved a table for two at Stubborn Seed because the cuisine looked modern, creative, and thoughtfully composed. I mentioned that we were celebrating my wife's birthday, and they absolutely delivered. She was treated like royalty from the moment we arrived. As locals, we were told we received complimentary valet and a discount, which was an unexpected and appreciated touch. Had I known. I wouldn't have parked at self-parking located in another zip code. From personalized menus to polished, intuitive service, the entire experience felt elevated without feeling stiff. I even told her we should return for my birthday, although November suddenly seems far away. We chose the tasting menu with wine pairings. From the moment our server, Cole, introduced himself to when Josh, the sommelier, stopped by, the service felt Michelin level. During our conversation, Josh mentioned it was also the one year anniversary of Stubborn Seed Las Vegas. Serendipitous. The yellowtail, lamb dumpling dish, barramundi in galangal curry, wagyu strip loin, and citrus pavlova were all exceptional. Each course felt precise and intentional. And as an Asian dude, I learned that you can do so much more with pine nuts from Stubborn Seed's dishes! The wine pairing added another layer of discovery. A dry Riesling was a standout, and pairing Pinot Noir with white fish completely reshaped how I think about seafood and red wine. In many ways, the restaurant's name mirrors the chef's own resilience. His perseverance and skill have allowed something planted in Miami to flourish in Las Vegas. We will absolutely be back.

Open kitchen with cool painting mirror of Hokusai wave combined with graffiti. 5 stars. * Location: resort world which is not walking distance if you stay on the strip. About 15 min car ride. We took Uber (about $20). * Meals: delicious, generous portions with beautiful presentation of each dishes. 5 stars. * Services: excellent. Pleasant and attentive, 5 stars. Stubborn Seed is on the Conde Wedt 28 best restaurants in LV. Chef and owner, Jeremy Ford is the Top Chef's winner season 13 and has one Michelin star for his restaurant in Miami. The restaurant is inside the Resort world, on the other side of the casino and the food hall. The dining area is spacious, chic but casual. We chose the chef tasting menu when we made reservation. My friends also decided to go with wine pairing 4 glasses for $60. They enjoyed the pairings. The menu was printed without party name which is a nice touch. To start, olive ciabatta breads with feta cheese, vegetables. The bread is very moist. The vegetables and feta cheese is served on the side which can be eaten like a veggie toast. We also had an extra dip dish. The presentation is very nice with flower arrangement and fragrant smoke. Yellowtail was so fresh with citrusy and sweetness from Asian pear and passionfruit. The dish is very refreshing. Our favorite dish! Lamps fagottelli: very al dente! One of our favorite dish of the menu. Pan roasted barramundi with baby leek, fennel, shitaki sofritto. The fish is cooked perfectly, moist with crispy skin. The dish is a perfect fusion with east and west. Wagyu striploin: perfectly cooked beef, moist and well seasoning. We also enjoyed this dish. Citrus pavlova: very playful and cute presentation. It is a bit sweet. Overall, we enjoyed our experience and had full tummy! I would definitely recommend to check this restaurant when you visit LV. They definitely derseve one Michelin star!

    Stopover for a quick dinner in Vegas on the way back from the Big 5 means a chance to sample some newer contenders in the Vegas food scene. Stubborn Seed holds a Michelin star in Miami but just recently (Feb 2025) opened a second location in Vegas. The add on appetizers for $40 were so so, the best of which was the hamachi crunch which was quite similar to many an appetizer at other Michelin restaurants. The meal ended on a confusing note with tiny red velvet cakes which had nothing to do with the seed concept and also were just okay. Highlight of the night were the palate cleanser (addictive) and the dessert (delicious). The savory and sweet sherbets were the strength of Jeremy Ford's menu and it would be an interesting concept to make every item on the tasting menu a sherbet experience. The wagyu and each of the dishes prior to it were pretty dang solid as well, so I could see this menu getting recognized if the service becomes more Michelin-like. The delivery of the dishes were on point and delivered well by the server, but the ambiance of the restaurant is currently more Vegas than Michelin. Bathroom was pretty gross, and no validated parking is available (unless you valet).

    Multi course meal with wine pairings... Fois Gras Curried fish Wagyu Beef Mini brownies Hamachi Lamb pot stickers The list goes on and every single bite was nothing short of delicious. I can't even begin to describe how each paired so well with the wines and the portions were perfect. Service is top notch here. Drinks phenomenal Wine list even better It's a wonderful experience and cozy atmosphere. Highly recommended.

    Wow! This place was a treat! The restaurant itself it gorgeous and I loved the giant art piece above the window into the kitchen. We came for a family reunion and were seated right on time and served incredibly well. We went with the chef's choice menu and everything was fantastic! Each dish was a fun experience of flavor, story, and fusion. The service was absolutely top notch with great attendance and presence. We did the drink pairing with the meal and it has to be one of the best pairings I've ever had. Never has each drink been great to start, better during a bite, and somehow even more delectable after. Surprisingly, the dish that stands out in my mind is the dessert. The yuzu was perfectly sweet, tart, and light and I wish I could get it all the time!

    After a long night of planning NYE dinner, my husband and I made reservations at Stubborn Seed. The tasting menu of $169/pp before tax and gratuity was very affordable and well worth it! You are able to indulge in land and sea dishes. I love almost every one of the dishes that evening. Ambience: incredible, moody, romantic and definitely elevated with posh red leather booth seats, fun light fixtures, arched mirrors, coffered wood ceiling, Japanese mural hung from the ceiling/wall and beautiful tiled floors. Oh i made sure to notice it all! The table setting was also beautiful with a folded menu, sealed with hot wax stamp, love the little details. A spot for a romantic date, I would say and perfect for NYE dinner for two. Our tasting menu included the following: TOGARASHI SALMON CRUDO - 5/5 (SO GOOD!!!!) amazu ponzu | avocado | Jalapeno failium CHAR GRILLED OCTOPUS - 5/5 popcorn polenta i piquillo shishito succotash chill miso PAPPARDELLE - 4/5 chanterelle mushroom | chicken oysters chestnut cream bottarga CHILEAN SEABASS - 3.5/5 (a bit salty) ginger lemongrass brodo | shiso pistou | maltake | bok choy KALBI - 4/5 westholme short rib | daikon emulsion kimchi brussel CITRUS BUBBLY - 5/5 (refreshing & delicious) almond sponge | champagne gelee vanilla mousse | blood orange cranberry sorbet Cocktails were well made, strong and flavorful. Old Fashion is usually our favorites but you also can't go wrong with the wine pairing (additional $85). Chef also brought us an additional dessert for our anniversary. It was so thoughtful. Service was absolutely incredible. Our waiter was attentive, kind and fun. If you're ever in Vegas looking for a fun, elevated dining experience come check out Chef Jeremy Ford's Stubborn Seed, you won't be disappointed!

    Just Simply Amazing First off- the decor is beautiful and the ambience is dim and romantic, but also good for groups. We chose the Chefs Tasting Menu which came out in 6 courses and each course came with a wine or sake pairing which was all perfectly timed. Every dish was unique and full of flavors. We definitely left VERY full!!! I highly recommend a stop there or if you're in Miami, they have their original location there!!! Make sure to make reservations way ahead! Also our waiter was knowledgeable and had a system with the other waiters that worked really well to get everything cleared and timed out. It was kind of nice that we didn't just sit there for hours, even though it was 6 courses. Great Food & Bon Appetite Highly Recommended !

    To die for! Stubborn Seed was out of this world - I can't believe there wasn't a line out the door but it's still so new. Very nice interior and spectacular service. We shared the tasting menu plus wine pairings - such a treat! The food was fantastic and the tasting menu was perfection. The yellowtail, barramundi and wagyu courses were my favorite - the sauces with the both the yellowtail and barramundi courses need to be bottled and sold separately. The wine pairings were fun (especially the sake with the yellowtail!), but next time I'd just go with cocktails. We also ordered the Cacio e Pepe cheesy puffs (just ok) and the Iberico ham fritters (must have!)

    Stubborn Seed had been on the wife's and my radar since it opened. We're both big Top Chef fans so we knew who Jeremy Ford was, but we'd never had the opportunity to try his food at his Miami original. Needless to say, we were really excited to give his Vegas version of his Michelin-starred concept a go on a Thursday night. We arrived a few minutes before our 6PM reservation, but were able to be seated immediately in the dining room with a view into the kitchen. The restaurant's interior design had a masculine, but still very appealing, aesthetic with dark wood, leather, and subdued lighting that seemed more Vegas steakhouse than South Beach. Since we're locals, we received a complimentary glass of bubbles to enjoy while we looked over the menu. It was a very welcomed start to our night. While Stubborn Seed offers a la carte options, we came for the tasting menu, which is our preferred way to truly get a feel for a chef's cuisine. We added the "elevated experience" to the tasting menu, which added a few additional bites and a $40 upcharge. We also opted for the wine pairing. We received the following items on the tasting menu: - Kalamata Olive Ciabatta - Kaluga Caviar Macaron, Hudson Valley Foie Gras & Black Truffle Tart, Wagyu Beef Tartare...over-the-top in a great way! The tart was my favorite single bite of the evening. - Sake & Citrus Cured Japanese Yellowtail with chili ferment, compressed Asian pear, and passion fruit buttermilk emulsion...fresh, refreshing, and flavorful, my favorite course of the meal. - Harissa Lamb Fagotelli served over a ginger tomato emulsion, peppers, and pine nut dukkah - Intermezzo consisting of a sour apple sorbet, fennel granita, and a rosemary gel. - Fragrant Spiced Barramundi in a galangal curry...fish was perfectly cooked, the curry was fragrant and flavorful, but was on the razor's edge of being too salty. - Westholme Australian Wagyu Striploin...fork tender, rich, buttery goodness. - Citrus Pavlova, an olive oil cake with yuzu cream and caramelized pistachios Stubborn Seed lived up to, if not exceeded, my lofty expectations. The food was imaginative and tasty. The wine pairings were interesting, yet delicious and complemented the food perfectly. The service was excellent from all team members throughout our meal. The setting was classy yet comfortable. Overall, I thought we received surprisingly good bang for the buck given its location in a high-end Strip property. Stubborn Seed won't be everyone's cup of tea, but if you love well-made, creatively conceived food, then you should definitely give this place a try.

    This was a really great tasting menu at an excellent price. Atmosphere/ambience: dark vibe Miami makes sense. It's more chill than some other Fontan restaurants and we were glad for it. Plenty of space. Lots of tables. Few were filled at beginning of prime time when we began our meal. As the experience went, we were surprised. A real gem. Service: attentive, thoughtful, and fun. Chuck was our main server and he matched our energy. The menu is fairly set with some accompaniments. I respect a chef that sticks to their offerings and is upfront about it (mentioned several times before you can book). There was a slight adjustment or two for some dietary allergies but it's really take it or leave it with a flex option or two here or there. Food came out well paced. Drinks were always full. Food: the two seafood dishes were a standout. Maybe not surprising from a Miami-based Michelin starred restaurant. The foam I still dream about. The wagyu was nice and rich, and it was able to speak for itself without being cloaked by unnecessary flair. We were sated even though jt was a few courses, and two of us ordered the option extra dish. A intense bite. The menu will change often. I'm sure mine is seasonally gone now. Drinks: our group liked the cocktails -- tradition and unique ones too. The wine pairing was excellent. Not always big names, but they were on point and surprisingly great for the price point. Price: Speaking of, it's hard to beat for the dollar. There are certainly bigger and more expensive and also better courses menus and pairings in Vegas, but I'd argue not per the dollar. A great spot to take for a nice date or special occasion without breaking the bank -- just denting it. Only concern was we weren't told tip was included even for a table of 4, and we almost mega tipped but did a double take. We'll be back!

    Stubborn Seed was nothing short of a phenomenal experience from start to finish! We came here to celebrate my friend's birthday, and I was overly impressed with the thoughtfulness and the attention that they put knowing it was our friend's birthday. We had special menus that noted the celebration and of course, the dessert at the end was unexpected and absolutely delicious. The timing of the dishes was perfect, the size of each course was balanced, and the waitstaff was exceptional. I was impressed with the variety of wines they had available by the glass and loved the "enhancements" and "add-on" caviar based options - a MUST try! While this dinner was not inexpensive, IMO, it was worth every penny! The restaurant itself was warm, modern and upscale. I loved being able to sit right in front of the kitchen window also and see the chefs at work! It lived up to all my expectations and I will 100% be going back next time I'm in Vegas!

We decided to go with the tasting menu tonight since we hadn't been before and wanted a good sampling of what they had to offer. It did not disappoint. Not a single dud on that menu. Faves were the Oyster Duo, Octopus, Foie Gras and the Por Flank. Every single dish was flavorful and well seasoned. The service was outstanding and attentive with one tiny hiccup, not big enough to take a star away. I had specifically noted on our reservation that it was our Anniversary and it would have been nice if it was recognized but was not. Wasn't looking for any freebies but would have been a bit more special if mentioned. Not end of the world but a bit disappointing. All in all will be back to try our favorites again on the a la carte menu.

    My son surprised me for Mother's Day by booking a reservation for 4 at Sparrow + Wolf. After…read morereviewing the menu, we decided to go somewhere else that had more options to accommodate everyone in our group. He canceled the reservation on Mother's Day and was fully aware of the stated $25 per person cancellation fee ($100 total). Unfortunately, the restaurant charged his card three separate charges totaling $250 ($100, $100, and $50). He contacted the restaurant and was initially told the refund would be processed within 3 days. After following up again 3 days later, he was told the employee who handles refunds was out of the country and that he should not have been told 3 days. He then received an email from Thaddeus confirming the cancellation fee was only $25 per person and stating he could use the $100 as credit toward a future visit if he showed the email at the restaurant. However, the additional $150 in charges was never addressed. My son replied to the email asking about the extra charges and still has not received a response 3 days later. At this point, he is handling the matter through his bank's fraud department. Very disappointing experience, especially with the lack of communication and accountability. I would not recommend this place.

But overall, the energy of the restaurant made it a fun place to celebrate. The dessert presentation for my birthday and the service were both fantastic. Definitely a spot I'd return to when back in Vegas.

Unfortunately, this visit was a huge disappointment. I probably should've realized what we were in for when I noticed they offered "sensory kits" at the restaurant. Once we were seated, the noise level was absolutely unbearable. And I'm not exaggerating when I say it was louder than a concert. The crazy part was that it wasn't even from music. It was just the overwhelming noise from the crowd and other guests. We literally had to shout across the table just to communicate with each other. It completely ruined the experience and made what was supposed to be a special dinner feel stressful and exhausting instead. The food and drinks were still very good, which honestly makes this even more frustrating. But the atmosphere was so overwhelmingly loud that it overshadowed everything else. I genuinely regret choosing this place for my son's 21st celebration. Sadly, after this experience, we won't be returning.
