Amazing quality sushi!!! Feels very modern Muji vibes. We waited about 20 minutes around 8pm on a Monday (holiday) night. The family (with a cute toddler hanging around) that owns the place plus the servers were all so friendly and attentive. We got complimentary black tea (can choose between that and water) which was nice. The Seared Salmon Belly was interesting. Not sure if I would get it again, but it was topped with guacamole and laid on top of lemon and some alcohol (sake?) for the torching. Some pieces tasted like alcohol so dipping it in soy sauce helped a lot. I really enjoyed my nigiri cuts (salmon, scallop, eel, sea urchin with quail egg). They were all MASSIVE... my mouth would be so full from one piece, and honestly could take 2 satisfying bites. The hand rolls were also very filling and worth it. Probably one of the best tasting and freshest sushi spots that I've been to in the area. I got the sashimi deluxe while my girlfriend got the Treasure Box. Both had a beautiful presentation and the fish tasted fresh (something that is hard to find in the area without costing an arm and a leg); the treasure box even had gold leaf in it! The server pointed out each of the cuts on our plates which was very helpful. At the end once we were finished, we were gifted with, not one, but TWO complimentary dishes: one was a delicious fatty tuna roll (I wish I remembered the name because I would order it next time) and the other was a mochi dessert. Hands down, I think this has been one of the best sushi experiences in the Fairfax area. The food was delicious and tasted fresh, the service was incredible, and it just had a much more genuine Japanese feel and aesthetic in the restaurant itself. The nigiri portions are HUGE I had to eat the salmon in two bites- so worth the price! The best hands down was the Unagi! The texture and taste was the best I've had and I am still thinking about it. They were sadly sold out of Toro :( so I'm very excited to come back and try! Best seared salmon belly hands down. The presentation is great and the flavor is very good. I usually don't crave something like this but I had to come back for it. The other rolls were also very good. I'd love to try other dishes there when I get the chance. They don't seem to take reservation (or maybe it's because we only had 4 people in our party) but you can call ahead to be added to the waitlist. The restaurant itself is not very big but it's nice and clean. One annoying thing is the parking. The parking strip is usually completely full around dinner time and there's not a lot of space to maneuver between cars to find parking. I think you can park by the urgent care at the end of the strip, however. I'd recommend folks to try this place, especially the seared salmon. read more

Solid sushi spot! We came for a date night on a Friday and had to wait 35-40 mins for a table. Unfortunately no reservations here. We ordered the 32 piece Nigiri Sashimi and roll combo for two people as well as takoyaki and sake. I enjoyed the Dasai 45 Sake we ordered. This is a great spot if you like specialty rolls as they have a massive selection of options. Presentation was gorgeous even on a busy night. Was craving some sushi, and wanted someplace different for a change. My friends and I went on a Saturday night and thought by 8pm the dinner rush would have ended. However, we got here and it was pretty packed, and had a wait. We decided to get our order to go, and that was done fairly quickly. I ordered the tiger roll, 2 salmon nigiri, and 2 sweet shrimp nigiri. Their rolls were perfectly portioned, nothing is worst than having a roll that has too much rice. The salmon and sweet shrimp were fresh and not fishy at all. They also added in a bonus spicy tuna hand roll, which was something I was actually contemplating ordering. I personally had high hopes for this sushi establishment, but as sometimes Yelp does, it misleads you with reviews from uneducated and inexperienced diners. First off, the service and decor are top notch. This is not a reflection of those two aspects of the business, I am strictly rating this on the quality of the sushi. As a point of reference, I have been to 33 Michelin starred restaurants so I am basing my knowledge of sushi and speaking with sushi chefs regarding this review. This sushi very much reminds me of Yuraku in Maryland, and it quite possibly may be from that type of lineage. Sushi requires balance of the neta and shari as well as careful seasoning and forming of the shari. Unfortunately, this establishment misses the mark on both. I understand the concept of generosity with the neta and also some complimentary items we received from the chef but true edomae sushi requires a balance between the neta and shari. One cannot empower the other in terms of volume. As any sushi enthusiast knows, the most important aspect of the nigiri is the shari. It must be seasoned, ideally with akazu and a bit of sugar and salt. The ratio of these three seasonings can vary wildly between each sushi chef but the majority of the seasoning must come from the vinegar. This shari did not have any particular strong seasoning (almost bland), there was no even disbursement of the rice grains while eating the nigiri (meaning the rice was too sticky and pressed too firmly), and it was served slightly cold. I understand that there are limitations with the temperature of the rice as all the pieces of nigiri were presented at the same time. I really hope the chef has a chance to dine at Sushi Noz or Sushi Sho, where one can witness true edomae sushi mastery. There must be standards upheld with sushi even at the lower price points. Everything I mentioned above can be changed with negligible additional costs, it is just a matter of perspective and how seriously the chef approaches his craft. read more

When I arrived, I had to put a name down and wait outside of the store. I would say it was about a 1 hr wait. The service was great and the servers were attentive. The interior was bright and modern. We got a bit too much food for 2 but worth it. Kani Salad - tasty and light. The cucumber had a great texture. Sear Salmon belly - the highlight of the meal. It 's torch at the table and overall a delicious bite. Chirashi Bowl - The sashimi was very fresh and great quality. The fish cuts were also generous. Nabe Udon - served in a cool bowl that gave a nice presentation. The udon noodles were a nice texture. And the hot broth was light and great balance to the sushi. Came here for the first time and we were fortunate that they had a table available. I recommend calling ahead if you can, the spot is smaller but really intimate. The service was amazing, and everyone was super friendly. They accommodated our questions and didn't hesitate to help us when we asked. They were extremely attentive which we appreciated. We assumed the tables were too small because of all the food but the timing of our food was perfection that the table size made sense. You can tell a lot of thought was taken into this place. Really delicious and fresh fish used here! I like the new sushi taco concept they've brought that i've seen in places like New York but this is the first place I've been to in Nova that does it. Very fun and good amount of fish still! I ordered the double s and crunch shrimp for myself and thoroughly enjoyed both, and to finish off my appetite I had the vegetable tempura as well. Their tempura batter is very light and I enjoyed the variety of veggies that were used. Service was pretty slow, not a lot of servers working and a busy restaurant. It took ~20-25 minutes to even get water, and it took awhile to get our bill paid as well. I understand a restaurant can get busy though, so just something to note. My partner and I recently went to Sushi Cho for the first time and absolutely loved it - we couldn't believe we didn't try it sooner! When we got there it was a pretty long wait for a table - especially because a lot of people knew to call ahead of time to put their name on the waiting list. It was a pretty large appetizer with 4 large pieces so if you arent too hungry and only a party of two, it may be worth saving your stomach for the rolls. We tried several different rolls and each one was better than the last. The service at Sushi Cho was great, with our server was covering a lot of tables but was still being attentive. Very aesthetic Japanese restaurant in Fairfax! We got the crab calamari appetizer. It's okay. I probably should have read the menu better because I was expecting squid rings and crab calamari style. It's a deep fried roll calamari style. Kani Salad - It was good although I didn't taste/eat any mango and the menu says it has mango in it. Sashimi Deluxe - This was the highlight of our visit! Finally got to try Sushi Cho and I am really glad I did. Price is a little bit steeper then other spots, but I think it's fair to say that Sushi Cho probably is the best sushi spot in northern Virginia as of now. Freshness of the fish is A1 and service was excellent as well. My only complaint is that, I could be wrong but I didn't see a nigri menu where you can order two pieces of sushi at a time. I will definitely be returning and I hope that they keep the quality and the taste consistent. It's small, clean, and simple in decor. They get packed pretty quickly - I came on a Sunday night around 7pm and had a 20-30 minute wait. You can leave your phone number and they'll call/text you when the table is ready. The menu is large and has a variety of options to choose from. (Had to take notes on which rolls I wanted to try so I wouldn't lose count!) This time, I got the seared fatty salmon appetizer which is torched table side, and absolutely delicious. Overall it was a unique experience but they should give hand wipes since you have to hold the bone in order to scrape the meat. There wasn't much meat in the bones and it was standard maguro.
