A FIVE STAR hidden gem inside Murrieta Hot Springs Resort that is open to the public. Celebrating my husband's birthday we tried Talia for the first time for dinner. What an amazing and elevated dining experience. The outside patio is lovely. Their focus is home sourced fruits and veggies and it was amazing sitting next to a blueberry bush in a planter. We started with muddled spa-like cocktails. The roasted beet/feta/pistastio salad was everything you would want in a salad and easily shareable. Next, the salmon- WOW! Ora King Salmon with ratatouille salmon farce inside a squash blossom(mind blowing it was so good) butternut squash potage, pepitas. The salmon was cooked to perfection and that crispy skin is not something you see often. Generous portion too! The star of the show was the Moroccan Spiced Mary's Half Chicken. I believe they use 27 different spices and the crispy chicken skin while producing such a moist chicken breast is amazing. Served with sundried tomato goat cheese stuffed, preserved apricot cream, smoked almonds. The apricot cream was shear GENIUS! We also chose the Roasted Potato Purée with parsley, fried garlic, grilled scallion oil. The fried garlic bits on this was just icing on the cake. Sooooo good. The service was above and beyond. Weird snooty vibes... Came in around opening. Was seated immediately. They asked us if we are celebrating anything and when I said that I had birthday 2 days ago employee just gave me a smile. Like why to ask then? The food was great (except ricotta appetizer that lacked something and matcha martini that tasted like straight baileys) and came out surprisingly fast. I ordered Moroccan chicken and when I was about halfway done the person showed up and asked me "can I take it or do you want it boxed?"(no other options and I am a relatively fast eater). I answered that I'm still eating. I swear to God between then and the very last bite I saw that same person with that exact question (only without boxing option) another 5 times!!!! So annoying! Once I ate that last peace my plate disappeared. They brought us desserts menu but at that point I didn't want to deal with another "plate drama" so I ordered a drink. After that we immediately received the receipt like "if you don't want to order anymore you can get out now"... Never had such an experience... I came here with my family for a birthday getaway at the resort and was so happy to find a genuine farm to table restaurant. You can tell that the chef really takes pride in using fresh ingredients where even your server is bragging about them!!! The service was phenomenal, Cassara was the best, We get seated as soon as it opens and our seats were dirty with sprinkles of dried food. The food was absolutely disappointing. The duck dish had bones in it, which I almost swallowed, lacked seasoning, almost like it was boiled and chopped into little pieces. It was basically a plate full of cabbage with a tiny bit of flavorless duck and not in a good way. I could not finish it. The swordfish was decent and cooked well. The Moscato wine was sour and we couldn't even finish it. The chocolate cake beautifully presented but was dry and hard to eat. The restaurant was beautiful but our table top was made of tiles, so our plates and glasses were very unstable. Watch your drinks! My mom went there weeks before and warned me about the food but I wanted to try for myself. Guess mama said they'll be dishes like this...my mama said... Service: Went there on a Sunday. Busy, yet attentive service. I understand that it is a 'shared plate' restaurant and they say it on the menu. Where I have an issue is when they shove it down your throats and use it as a cope out. It would be nice if they said 'since we encourage shared plates, would you like these in a certain order?' The cherries cut the richness of the ricotta and the focaccia was toasted perfectly on the outside and soft on the inside. My husband savored every bite of his perfect medium rare ribeye (though he shared a couple with me). I would never think to pair it with blackberries but it works and each flavor compliments the other. I had the swordfish that was also a blend of flavors that worked together to create a subtly spicy beautifully cooked tender piece of fish. The star of the show was the Frog Hollow Peach Crostata- made to order and served hot out of the oven - the peaches literally melt in your mouth. We stayed at Murrieta Hot Spring Resort for a night and had dinner at Talia to celebrate our anniversary. Service was great! The hostess and servers were very nice and attentive. We were offered two complimentary champagnes right after seated which made us feel special. Food, unfortunately, was a bit hit and miss. We were really amazed by the flavor and texture of the swordfish while the duck confit was dry and bland. The server was very nice. She took the duck back and offered another entree. I ended up getting salmon which was good. We also got one app and two sides. I found some were better than the others but overall, they were ok. Reservation and Seating: Talia promptly opens at 5. Highly recommend reservations as seating is limited. People trying to walk in for seating were turned away. I made a reservation on OpenTable where I noted our special occasion for the evening and my wife's dairy, egg, soy, and gluten allergies. We were sat down at our table within a few minutes of checking in with the hostess. Ambiance: imagine an old church mission meets pottery barn. One side of the restaurant was well lit and the other side a bit more dim. Large outdoor seating area for larger parties. Space heaters available. Service: HUGE shoutout to our server, Andy. Very polite and professional at all times while being approachable and personable. He made it a point to ensure he understood my wife's allergies with the reservation. And with that in mind Andy made recommendations of how the Chef can adjust and accommodate. Andy was extremely knowledgeable of the menu with regards to flavor profiles, ingredients, cooking techniques, and even the source of their seafood. I cannot say enough praise about Andy. Food: Beet Salad - bright and tangy dressing is a great contrast to the earthy beets. Garnished with a welcomed sprinkle of coarse Himalayan sea salt and crushed macadamias. Welcome composed salad. Usually comes with feta but removed due to allergy. Ora King Salmon - usually served with butternut squash purée but removed due to allergy. Salmon served two ways. Salmon brought in from New Zealand since wild caught salmon is currently out of season in the Pacific Northwest. Center cut filet with crispy salmon skin. We were skeptical at first on how crispy the skin would be but pleasantly surprised that it was in fact very crispy. The salmon was buttery smooth and succulent; no chewing necessary, so good! Second preparation was using the thinner parts of the whole salmon filet, and mixed with a ratatouille stuffed in a squash blossom and then pan roasted. The stuffed blossom had perfect char and crispy texture. Wife remarked that this was the best salmon she's had and would eat this for the rest of her life if she couldn't only eat one thing. Swordfish - generous steak cut of swordfish. Perfectly cooked. The mild flavor of the fish is needed to serve as the vessels for the complex turmeric and ginger sauce. The sauce, imagine a rich and creamy thai curry; and this description does the sauce a disservice. Very good sauce! Has some heat. Served with three plantain fritters that held up well within the sauce. Flavor was good pairing with the sauce and swordfish. Perfect combination of flavors and textures throughout this dish. Cinnamon and tangerine gelato - this option is vegan but you could never tell. Made of coconut cream, the texture was delightful. Who knew cinnamon and tangerine would make a good flavor pairing but it works so well. Chocolate cake with ice cream and white chocolate with matcha crumble - every component of the dish was great but the best was the crumble. The crumble was cold and surprisingly bright which paired really nicely with the rich chocolate cake. Would ABSOLUTELY come back here again soon. The menu rotates with a few staples that hang around more than others. Talia has only been open for two and a half months (January 2025 at the time of this writing) but I expect them to increase in popularity and succeed.
