If the restaurant group is pocketing any of that balance then they are just stealing from their staff, which might explain why the staff is not upfront about the rationale for the fee.

She actually remembered us because we shared the potatoes the first time and she even asked if we wanted to share them again (yes, please... and she brought two small plates!).
