The fries were standard, skinny with the skin on them. But the burnt ends made this 4 star into a 3 for the review. Half rack was solid! I'd say this is what gave me the 3.5 rating. This fixed my bbq craving. It was pretty tender for what it was and the area for what I expected. Had the cheesy potatoes, which was basically cheesy mashed potatoes and I was delightfully surprised cause I was hoping for potato wedges but all is good. Mashed is gouda too! Pulled in after a long days drive, and I was greeted with smiles and open arms with gratitude for a Veteran. Al was very attentive and provided not only stellar service, he ran the bar with leadership making sure all of his patrons were well taken care of. Ordered some takeout from here after a long day of hiking. Both got pulled pork sandwiches, one with hand cut fries and one with potato salad. The two stars is for the small portion on top of the rack of ribs. It tasted good. If they had remembered to give a sauce for the ribs, it probably would've been a little better maybe a 2.25 star review. Other than that, as a person who grew up in the industry, both cooking soul, food and serving it, that was some of the most ridiculously horrible gumbo I've ever had in my life. it was almost as if they threw the scrap meats into a pot added some seasoning and oils, the roux was not darkened, which is a major part of gumbo. To top that off it was $12 each and they only filled up both small cups of gumbo halfway. The service was some of the worst service I've ever seen anywhere in my life. The beers were massively overpriced, and I get it. It's a tourism town, but who the F wants to pay $10 for a Coors light. The music was actually good and the theme of blues music and Singer songwriter vibes was heavy in the air. The bartender couldn't look at us in the eyes, and seemed lost, and confused. She didn't even know what drinks we had ordered, and we had a mixup with our billing. The hostess couldn't even recommend what to try on the menu. A misinformed staff, and overworked, non-white staff, and a bartender that just seemed like she was taking it all for granted, mixed with horrible gut, rot, and bubbly gas, is what you can expect from this establishment. Great music though. Dear owners, Why do you put a dark roux in gumbo? It's provides both toasty flavor as well as thickening. I like to use one of these in my Turkey Gravy recipe. A dark brown roux, also known as a chocolate roux, provides a ton of flavor to a traditional Cajun gumbo or a Creole gumbo. Not only does it thicken the gumbo, but it provides a lovely nuttiness to the dish. read more

April 6, 2024 we had dinner at the blu pig. I had baby back ribs. The menu says they are smoked for 6 hours but have no smoke flavor. Doused in a 'ketchup and sugar' sauce which I asked not to have. For the high price it was mediocre as were the two sides of "City Market" potato salad and bad bbq beans. Wife had Brisket which also was not smoked. Our friend had a burger with cold french fries. I walked around the place looking for a smoker, there was a small pipe on the roof emitting a little smoke, I think they were signaling the new Pope has been chosen. For a family of four, I think we ordered the wrong thing! We ordered (2) of the 8 oz/2 sides BBQ combos. We don't eat pork, so we ordered tri-tip, prime rib, smoked turkey, and burnt ends. For our sides, we ordered french fries, baked beans, coleslaw, and fried okra. BBQ combos always come with a corn bread muffin. Flavors were delicious. I loved that the Blu Pig offers 3 different sauces to choose to your liking: a sweet bbq sauce, a mustard-based sauce (my favorite), and I believe a Texas-cracked black pepper barbecue sauce. Their cornbread muffin is more like a cornbread cupcake in size. Would not recommend their smoked turkey--it was dry to me and the smokey flavor wasn't coming through. The tri-tip, prime rib, and burnt tips were delicious. I particularly liked the french fries because of the fresh crispiness...dare I say it? It's like what In-N-Out french fries should be! The reason I prefaced with a disclaimer is that I felt convinced by our server that a) the turkey was going to be good and that b) (2) 8oz/2 side BBQ combos would satiate the four of us. It wasn't enough--I had to knock off a star for this. We ordered an extra order of house fries because we were all still feeling on the emptier side. (I will mention that even though it states the portion size by weight, 8 oz per protein portion is really not much at all. And in my experience at BBQ restaurants, this portion size is *tiny* and IMO, is worth mentioning to customers.) Otherwise, there is private parking. The entrees we order were good. My husband and I had pulled pork. He had ribs with the pork and I had tips. . As a side we both order the garden salad. It was colorful, filled with mixed greens, a little carrot, tomato and cheese. The lettuce only looked good. It was so tough that even a knife could not cut. This is a combination review of 2 separate visits last week. My boyfriend and I came in on Wednesday to have some drinks, and sat at the bar. The bartender was "friendly" and "attentive." as in he quickly took our orders and prepared our drinks. We were chatting with him throughout our visit, and his rather grumpy attitude and commentary about the state of Moab, his life, having to wear a mask was not exactly the small talk that we felt like having with a random stranger. We didn't want to listen to the negativity so we quickly finished our one drink each and cashed out, rather than staying for more. My wife and I were pretty disappointed with the food that we had. She ordered the brisket meal. The brisket was barely warm and didn't even appear to be smoked, it was over cooked. It didn't look appetizing at all. The cornbread that came with it crumbled when we tried to grab it. It was very dry and had hardly any flavor. My tri-tip was also over cooked and was lacking flavor. Layover in Moab overnight and decided to give this place a try, so since I'm not much on BBQ I ordered a cheeseburger. The first thing that got my attention was that they didn't ask like most high end burger places how I wanted it cooked. But I thought it would be better than a cold cut sandwich outta the fridge, boy was I wrong. Meat was barely legal, at least I didn't need a bandaid for it. Everything seemed reheated. The bowl of Gumbo was Good, but used to be awesome. This was our 2nd trip to Moab to eat there since Covid. Both times it was the same. Disappointing. Seemed like a fair value for $18.95, but it really was not. The fish amounted to one small fillet; no more than 3 ounces, at most. The tossed salad was good, and offered more variety than iceberg lettuce. A cup of baked beans, and a tiny cornbread muffin that was inedible. Surprisingly, it doesn't seem that Moab has many vegetarian options out there particularly after a long day of hiking. So, I decided to go to The Blu Pig simply for its proximity to my hotel which also provided 10% off on my meal. When I arrived, I was eating alone and so the host encouraged me to go to the bar rather than the restaurant area. Personally, I would have preferred to be in the restaurant given it had a much more quieter feel but I understand I was alone and they'd prefer me to take a bar seat so I went in there which is a much darker space and had a musician playing on a Saturday night. The vibe is fine in the bar and pretty much what you'd expect from a BBQ bar on a Saturday night. I've been to so many places with that feel around the country and it services what it needs to with sports on the TVs, people chatting, and a musician playing. The Blu Pig is clearly a meat lover's heaven which is difficult for me since I don't eat meat so I can't really address the BBQ or how good it is but it apparently is good given the other reviews. I did order the veggie burger off the menu. It was fine. I don't believe it's made in-house but, again, given this is a meat heavy establishment, I guess I shouldn't be surprised. What I did appreciate was that they had hushpuppies on their menu as a side. That was a huge plus that I really enjoyed and not something that you normally see at a restaurant even one like this one. So, that was an awesome touch. Other than that, I thought service was solid and the bartender was a nice guy. I also appreciated that they had O'Doul's behind the bar for those of us who no longer drink but still wouldn't mind a N/A to relax after a long day. The Blu Pig is sufficient if you are in Moab to get filled up. I'm sure it's a much better experience if you're looking to eat a lot of meat or drink up but that's just not me. I also thought the musician was good even if I wasn't in the mood for such a loud bar vibe experience and she did well given a majority of the crowd didn't even care that she was performing. The rest of the staff had masks under their noses. I made the comment to the waitress that I expected masks to be covering her nose. Her response? I sweat when it's above my nose. I had Pulled Pork, Cold Slaw AND Hush Puppies.Owners are originally from Florida I understand - as am I! They understand their Southern Roots Expressed through the restraurant's Menu to be Sure!
