Surprisingly, their to-go food is better than dining in. Seating along the wall feels like a seesaw -- when someone sits beside you, your drink might spill. Service was friendly but careless. They asked if the food was good before I even took a bite and ignored me. When I pointed out that the chicken was chewy and nearly broke my tooth with its hardened crumbs, they just said, "We'll let the kitchen know," then charged me full price and ignored the half-eaten plate right in front of them. The waitress chatting over my shoulder with another table was rude and uncomfortable. The Nashville chicken was the worst I've had here: burned crumbs like rocks, overcooked meat, and barely any sauce. The spicy aioli was almost nonexistent. The beet salad made my partner run to the restroom with nasty pickled apple and mushy beets. Yummm! The burger was delicious. I ordered the Classy, medium. It came with grilled onions and cheese. I only wish I would've asked for pickles to add a must needed cool crunch. My wife ordered the Nashvilles sandwich and it was perfect. The seasoning was on point just a little heavy on the cayenne so if you like spicy food it's perfect for you. She order the Purple Drank, which comes with glitter. I found it refreshing. I had ordered from their rotating tab. A stout, which was way too strong for day time, 16.5% alcohol. The Cut is serving up some of the most gourmet burgers in Irvine and beyond! This spot is located in the same plaza as Hmart and Sprouts and there is a good amount of parking spots. Reservations are recommended but you can also take your chances with walking in as well. Wifey and I stopped by for dinner around 7pm and there was about a 10 minute wait. Inside, they have a nice modern interior with about 7-8 tables for seating. For their menu, they have a great selection of appetizers, burgers, sandwiches, and salads. We opted to try the Truffle and Brie Burger, The Cut Burger, Poutine, and a Lavender Lemonade. Everything that we had was delicious and we could definitely taste the quality of the elevated flavors. Overall, we thoroughly enjoyed our time dining here. All of the staff are very friendly, welcoming, and attentive. I think that a lot of people would like the food and the ambiance. I was a little confused because i thought it would be closer to fast casual dining but instead it is closer to a pub like Eureka. Service is very friendly and prompt. It isn't too loud and there is a lot of space for each party to kind of be on their own without overlapping with one another. Food is really good - I got the bleu cheese burger. I think they use a 90% lean / 10% fat ratio for their ground meat - not sure but the burger itself though really tasty was slightly dry, which was unexpected because everything else was done very well (flavor was on point). This might be a stylistic choice or matter of preference idk. I would grab an order of the tater tots or loaded tots - they were extra crispy and a good pairing to the burger. Ok...this one is rough. My first experience with the Cut was in 2020. It was amazing. Simple, yet flavorful. Over the years I'd go back and it was alway amazing, until...last year and this year, I've notice a shift in flavor. The burgers are still good don't get me wrong but, it's not what I'm use to be. Was the food good? Yes. Was The Cut burger worth $40? Absolutely not. We would have rather gotten another appetizer to share for that price. Again, it was good - the potato bun was nice, and the aged cheddar on the burger added some good flavor as well. The shishito peppers appetizer was tasty. We also loved the fries. Would I come back here because "its my birthday", a "special occasion", "I need my friend to try this", or "I HAVE to have this flavor again"? Nooo way. We decided to try The Cut burger on the menu because we wanted to see if the price was worth it. It definitely was not. We also tried The OG burger, and it was good - we felt like The OG was much more worth the value and also very tasty. This was our first time here... but, in my opinion, if we come back, I would order the less expensive burgers and try more of the appetizers. The restaurant itself was small but had high ceilings, and the steating was very "open concept". We dined on a Sunday night, so it was fairly busy... the noise level was pretty distracting. We were able hear most of the conversations the occupied table(s) next to us were having, and often we would notice that the guests dining near or next to us would glance over at our table and other tables within close proximity. Most, if not, all of the tables were very close together. Wish this place had some permanent barriers to separate the tables in order to help it feel more private for guests, given that the space isn't very big, on top of having high ceilings. We may come back, but will maybe try to aim for a slower day of the week and also choose other items on the menu that may be more worth the price. read more

This is by far my favorite burger place and what I'd consider one of Irvine's gems. I've gotten takeout here a few times but finally decided to dine in with some friends for weekend brunch for a birthday celebration. As we got seated the server told us the menu has changed a bit and to my disappointment my favorite item, the Colombian burger, was cut from the menu. I was super bummed about it but the amazing server said she would talk to the chefs in the kitchen and see if they could make something similar. Honestly, not a big burger person so I didn't have high expectations for The Cut but my husband was craving a burger so we decided to stop by for dinner. We got the wedge salad to share and I got the OG and my husband got the double smash burger. The wedge salad was light and refreshing, the perfect amount of dressing without overwhelming and my husband really liked the cherry tomatoes, everything tasted very fresh. My OG was delicious but unfortunately fell apart after a few bites (the grilled onions, while delicious, really weighed this thing down). We also shared a side of tater tots, so crispy! My friend invited me here as part of a Yelp event. When we arrived, my friend told the server about the event and he had us wait to the side while he seated a couple behind us who had just arrived. Not sure why they got priority seating. He then asked us if we wanted to sit at the bar or order take out. We wanted to dine in. Don't know why that was not an option. I ordered a chopped wedge salad with grilled chicken. I wish I ordered burger instead because the salad unfortunately was mediocre and the grilled chicken was a little sad.
