We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. (5/5) Proper Meats + Provisions definitely serves some great sandwiches. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6! Self-serve your drinks and before you know it you have food. My wife had Ceasar salad and was pleasantly surprised to find it contained halved cherry tomatoes. A salad is a salad, unless it's bad. You rarely notice if good, but this one was. A perfect salad lunch for her. My daughter had spaghetti and meatballs. She loved it. We're usually picky about Italian food and rarely order it from a non Italian place, but we've been on the road and she was starving. From the first bite she was hooked. Bursting with flavor, certainly part pork and full of herbs. Clearly made in house. My son and I split a margarita pizza and it hit hard. Paper thin. For dinner we'd need one each, but for lunch splitting it was perfect. Great flavor top to bottom. The paper thin crust, the tangy sauce, and good quality cheese topped with a generous amount of fresh basil. Bonus for the red hot sauce (green tasted artificial) which I grabbed a spoon to taste with as soon as we sat down, I love hot sauce. And for the classic rock playlist. For $10.50 (!) I had 1/2 of the perky turkey sandwich and a cup of their white chicken chili. The sandwich was simple and perfect with good flavors. The soup was pretty amazing and piping hot! This will definitely be a place that I hit again and again!
