Server was excellent, and very attentive. Unfortunately, that's about all that was great. After all the hype from other locals who were patrons before the fire, and after reading their menus on line we endured the haughty "reservations only" restriction and reserved a table for tonight. We were especially looking forward to great mixed drinks and to trying the paella which is "only served on Thursdays". First disappointment came when our waitress clarified that the paella was only served on "select Thursdays" and the one or two chefs that make it weren't working tonight. She advised us to follow them on Facebook to see if they were actually serving it in any given Thursday. Then, we read the menu description and ordered whiskey sours. This brought about the second and third disappointments of the evening. Not sure what they put in front of us, but the drinks didn't remotely resemble whiskey sours. I don't think they contained whiskey, were not sour, lacked the maraschino cherry, and instead of the egg white foam indicated in the drink menu, the bartender hat floated something pink or orange on top that was bitter and spicy. This was the only time I've ever sent drinks back in about 50 years. I read through their entire cocktail menu to see what the drinks we were served might be - thinking maybe we got someone else's order. Nope. Nothing on the menu remotely resembled the swill we were served. Rather than apologize, the bartender came to our table and confronted us, annoyed we sent back the drinks and insisting we got whiskey sours. When I showed him the menu description, he indignantly told me he followed the recipe. By now, we're thinking these guys are headed for an episode of Bar Rescue. Then came the food. By now we decided we didn't want to stay for the entrees so we opted for tapas. The panels cheese was good as were the bacon wrapped dates. That said, I don't think we've ever seen bacon wrapped dates quote that tiny for the price paid. We decided to order a pizza and ordered a pepperoni with sausage added on. Crust was good, but limited pepperoni, and the "sausage" amounted to sliced smoked hot dog (probably less than one whole link). Atmosphere was terrible as there is no sound absorption at all and it was loud enough to make a conversation all bit impossible without yelling across the table. We regularly support local establishments and had high hopes for Verde as they've reopened after rebuilding from the fire. Unfortunately after tonight's experience I don't think we'll be back. read more

What do you get when you add Hill Country rustic chic with Tapas and crafted cocktails? You get Verde Bistro, a true hidden gem, in downtown Bulverde. Seating is both indoor and outdoor and it was pretty busy with it being a Friday night. Luckily my husband and I got a table right away inside near the bar. The cocktail menu had some pretty solid choices and our waitress made a few recommendations. If you like and Old Fashioned I enthusiastically recommend the Bulverde at Dusk with rye. It had a full bodied smoky finish that hit the palate just right. My husband is picky with a properly made Old Fashioned and gave two thumbs up. I chose the cucumber mint tini with gin. It was smooth and light in contrast and the perfect summer time drink. Most of the menu is tapas (small plates) and sharing is encouraged. We were told everything prepared is in-house made with many of the ingredients locally sourced. I definitely wanted to try the Perfect Pear pizza. Since it was a 30-40 min wait for the pizza to be cooked we ordered the street tacos on corn tortillas and chorizo and cheese canapés in wontons to get started. I'm a sucker for corn tortillas and these didn't disappoint. The flavorful creamy avocado sauce drizzled over the top complemented the flavors and made it stand out from other street tacos I've tried. The bite sized canapés were equally as delicious. The Perfect Pear pizza arrived piping hot and smelled divine. Upon first bite I could taste the pears but also the arugala, goat cheese, and chicken sausage. No one flavor was overwhelming and the toasted pecans added a nice texture and contrast. Crust was soft yet has that slight crunch. I'm one of the harshest pizza critics and usually don't care for thinner crust but I have to say I was impressed. If you're looking for a different type of pizza this is it. The name says it all: perfect! The wonderfully eclectic ambiance and quality of the food and drinks made Verde Bistro a 5 star experience! read more

Sometimes it can be a bad sign when you are the only patrons at a restaurant, but this was not the case with Verde Bistro! We were visiting some friends for the weekend and they suggested we come here for some drinks and tapas. We were the only group for most of the time since we came right at opening time on a Saturday. The nice thing about being the only patrons for most of our visit: we had excellent service! Juan was attentive and gave helpful tips when we wondered about ordering more than just the pear goat cheese pizza for four people. If you're wondering, his suggestion to order more was accurate. We also ordered the empanadas, which had 3 large empanadas. The pizza was very good. I enjoyed the pear with mozarella and chicken sausage, and although most of the table thought there was too much arugula on the pizza, I really enjoyed the brightness it added. It was also the first time any of us had pecans or any nuts on a pizza before. Creative and it worked! It was like a pear salad on pizza bread. The empanadas were fresh and had a great meat to crust ratio. For drinks, we had coconut lemonade (it is nonalcoholic) which was like a piña colada and the chocolate Manhattan. I couldn't taste the chocolate until the last 1/4 of the drink, but it was a nice flavor for the little bit I could notice it! We weren't there for happy hour, but that sounds like a snazzy deal. Tuesday through Thursday from 4 to 6. The locals I was with, also recommended the brunch. Verde has a great atmosphere. The music was a combination of chill, jazz, and latin. The playlist was on point! It even had us dancing in our seats. The sunroom area where we were seated would be a perfect small party room. It has a bar, large, open windows, and several tables. You also have a view of their outdoor patio. If I lived here, I know I would come here a lot during the summer to sit on the patio with friends with those cute patio lights. Overall, Verde Bistro is a great place for drinks and tapas. In order to get full, you might have to order quite a few plates, but we enjoyed it for a snack before a late dinner at home. read more

I got the sour Paloma and it was good, but I think next time I would try something else. I would have preferred it a little more sour. We were recently trying to get home via a back road, and found that flooding stopped us on three different routes. As we were about to attempt a route to 281, we came across this little spot in Bulverde. Now, when you've already tried three ways to get home, a nice dinner sounds so comforting. And, it was! Right from the start, service was attentive, the decor was serene, and the food came out quickly. Even more importantly, the food was delicious. We could tell that some of the people were regulars, and I like that kind of atmosphere - honey and welcoming. I've been to Verde a few times now and after initial review I'm not sure if they are consistent enough with their meal prep. The Valentine day dinner really turned me off and took sometime to consider if I should leave a review. But I've been in the hospitality/food service business for over 30 years and understand feedback is critical to getting better. The price of the Valentine menu was outrageous given the poor execution of the meal and menu itself. If you are going to elevate then elevate...proper place setting, proper dishes and proper chefs touch. Spaghetti noodles for the scampi was dry and not sautéed to allow the noodles to absorb the oil (could have used a linguine or angel hair) ; the salmon was not only over cooked but flavorless. The asparagus (baby I.e very thin was served with the entire stalk); I could go on and on... the waiter was nice and the drinks and dessert was good. We enjoyed the empanadas (3 to an order so if there are 4 of you, ask to add a 4th), the panela cheese (ORDER THIS!), the bacon wrapped dates, and the Brie, then ordered the pear and goat cheese pizza. It was all really good as were the drinks we ordered. My sister ordered the coconut milk lemonade and then ordered a shot of coconut rum to put in it. That, right there, should be on the drink menu.
