I like how the bar is in the middle of the restaurant with plenty of seating in and outside throughout. Very woodsy vibes to me. We first started with drinks. I wanted the Aperol spritz and other members in my party got beer. After 20 mins of waiting for our drinks, we were told the bar tender had called in sick, and they were trying to make our drinks as fast as they could. While we were waiting for drinks, we place our food order. I originally wanted the chicken, but they were out of chicken...this was a Friday night at 6pm and they were already sold out of something...so I got the sausage plate instead. We got our drinks 5 minutes before our food came out, and my Aperol spritz was not good.. was not mixed well at all, but the waitress was so sweet that I didn't say anything. Our visit to WRB was disappointing. We have visited many times before and were pleased with the service and food. On Jan 9th , we again went to WRB but the food has changed - the Cobb salad was presented in a different plate and was lacking. We also had ordered the brisket salad and it wasn't satisfying. I enjoy sharing reviews of great spots to try out but unfortunately I can't do that for Wolf River Brisket in Germantown. This was the worst BBQ experience I've ever had! We sat at the bar and were immediately greeted with water. We ordered a couple of drinks. My husband's old fashion was tasty. The bartender was cordial. FOOD: Smoked wings were very dry and for $23.00, I expected moist, juicy chicken. I had browsed the menu before we came and was really looking forward to these. Burnt ends came out looking beyond burnt! I asked the bartender if they came with sauce and she commented "they do look dry", yet served them to me knowing this! She replaced them with some new ones which did look better but honestly were not the best burnt ends I've had. Mac and Cheese looked like Kraft with breadcrumbs sprinkled on top. Very bland and not very cheesy. Would not recommend and I cane craving some good Mac and cheese. Mashed potatoes were very good and creamy. The brisket was decent. Again a little dry but considering the experience with the burnt ends, it was ok. I have to wonder how long the meat had been sitting on the line. Could possibly be why it was all so dry. Cornbread waffle was a fun and creative spin on cornbread and was tasty. It just needed some butter served with it and it would have been great! Grits were pretty decent and was what I ate the most of from my sad plate. The bartender came to check on us and asked how everything was going. I didn't want to complain but made a sad face and her eyes opened wide and she quickly scurried off. No questions asked about what was wrong even though my plate had only been picked at. The bartender presented us with a bill of $104 which we paid and left. I work in the industry and when a guest is not happy, I try to find out why. In general it just felt like the staff was just getting through the night versus staff trying to wow each guest with good food and great service. Will not be back. read more

I have officially found my favorite dish here! Don't get me wrong everything I've gotten so far has been great, but the brisket and grits is just on point! If you can't tell by now I do love grits and how cheesy it is. Pair that with a meat that just melts in your mouth and some pickled green tomatoes... it just leaves me lost for words. This used to be one of our favorite places! The food and service used to be amazing. Not sure what happened but the last couple times have been disappointing! The waffle appetizer was obviously not fresh and had been microwaved to rewarm. It was crunchy in some places and mushy in others. Our lunch was just meh - I had soup and salad - it was ok. We also had the burnt ends - advertised as one of their signature dishes. Some of it was so hard we couldn't cut it. Just very disappointing! The service was ok - not overly welcoming or friendly. From the brisket and burnt tips, to the cornbread waffles, our meal was solid. The only disappointment was the chicken placed atop my Caesar salad where about 25% was gristle. The salad was good tho. In fairness, I am not a complainer so I didn't send it back. Also in fairness, the server who saw the chicken left behind didn't acknowledge the fatty leftover. The sliced brisket was excellent, the burnt ends a little to saucy for me but Schweety loved, and a sausage which was a little overdone. The cornmeal waffle was a surprise treat. Mac n cheese could have been a bit cheesier and the succotash was a little dry. But overall, a satisfying visit. We went basic on this time but the menu has many more items that I would like to try. I had an awesome experience at WRB. I went in with a group for dinner and they were super kind and accommodating to our large party. We started out with the Three Meat Sampler. It included: sliced brisket (4 oz) burnt ends (6 oz) smoked sausage served with mac & cheese, choice of side and bread (the bread is a waffle shaped cornbread) and it is delicious. We also had the Smoked Wings! 10 tossed in house rub served with choice of ranch or blue cheese dressing. They are so good and super flavorful and juicy. The side salads were also fresh and crisp. Pulled chicken - wasn't really what I was searching for but they gave me a generous portion and I'm sure plenty would love it Brisket - thick and juicy brisket that almost falls apart in your mouth. Our party of 3 were attracted to this place as it was getting good 'press'. Our experience wasn't up to their current rating. One person ordered a Salmon salad ($13) and a couple sliders (2 for $13). The other ordered the smoked half chicken ($17) and I ordered the burnt ends ($20). I liked the burnt ends - it had an unusual sauce, which I liked, but may not go over with others. Couldn't finish the turnip greens (side), as it was too 'strong' (vinegary I think). The salad and sliders were 'average', and the chicken was disappointing - mainly because the purple pea succotash side had overpowering spices in it. We wanted to order the smoked chicken wings but they were out. I see a fair number of other reviews mention items being unavailable/dry and this is to be expected when you smoke the meats for 18 hours (according to their menu). I'd suggest a staggered start to their smoking, and perhaps adding ribs to their menu. Driving business away due to shortage/schedule only works for so long, and the ribs might attract/keep customers who aren't as big on the other menu items. Service was another drawback, accounting for the loss of 1 star. We were quoted a 20 minute wait to be seated and it was far longer than that (perhaps the staff should be introduced to the concept of 'underpromising and over-delivering). Our waiter took our drink order and disappeared for quite a while (actually, he was observed talking to another cook/waiter) for some time. We asked for to-go boxes, which were obtained promptly, but we then had to prompt him for our check. They appeared to have food service at the bar, though I could be wrong. Ambience? My first time here because my family wanted to have lunch somewhere close by. We decided to come here because of the patio. We wanted to sit outside to enjoy the weather and social distance. They have plenty of seating area indoors and out on the patio, the staff was terrific, and the food came out fast. However, the food could use some improvement. We ordered the Salmon and Brussels Salad, Burnt Ends Plate, and a Sliced Brisket "fatty" Plate. All three dishes were a little bland. The only thing that stood out was the Cornbread Waffle. The cornbread was tasty, and it was crispy. Overall, it was an okay experience. He was cheerful and pleasant and even sat down for a few seconds to go over the menu with us. He sent over a few items for us to sample because we were so undecided. We had a pretzel and the corn dip to try. They both were really good. So good that I forgot to get a photo I settled on the sliders and my husband had burnt ends and waffles. He really enjoyed his meal. Mine was tasty and flavorful as well. The sliders come with different sauces and I got mine on the side because I am that picky. The server also sent over a few burnt ends for me to taste. I am definitely not a fan. No judgement or negativity towards the restaurant, those just aren't my thing. I also have heard complaints about wait time. We went in on a weekend evening and sat right down. The restaurant was full but not packed beyond capacity. Weird..... That is the only way to describe my experience . Me (solo for dinner while traveling for work). Make the 15 drive from the hotel. Clean, and inviting when you walk inside. I sit up at the bar, and it takes a few minutes for the bartender to come over. No big deal, it was a little busy, but nothing crazy. After a few minutes; the older of the two bartenders finally comes over, so I order a beer, no big deal. I also ask for a water. "Sure no problem...". I never got that water, even when asking again when my meal came. This is what is so weird.... Of the two bartenders, older guy (not younger guy with a manbun) was running all over the place. To go orders. back to the kitchen, busing a table. Socializing with a "regular" couple for about 5 minutes. He was truly hustling, but in the wrong areas. I had to wait a while to order, because when he was done talking to the older couple, his service bar was backed up. All in all, it took about 10 minutes to get one beer, and finally place my order. Again, not a terribly big deal. It was as if the younger bartender/manbun guy, couldn't make drinks, or didn't know how. The older gentleman was always in the weeds. Weird note, all of the servers, had to wait for wine glasses, because the way they are stored above the bar, only the bartenders can access them. (Wine is poured in a small vase type device, and then poured into a wine glass). This literally happened a dozen times in my 45 minutes of sitting at the bar. Poor design/process, and really needs to be fixed. Finally get my dinner ordered, and grab a margarita. Food came, before my margarita. Not sure how that happens, but again, the older bartender was always in the weeds. My dinner is finally brought to me, and it took 5 minutes (or more) to get silverware. I was literally eating the green beans and burnt ends, with my fingers, until I could get someone's attention. I again, asked for a water with my meal. No such luck. As for the food.... Mashed potatoes, very solid. Green beans, very solid. Burnt ends, less than impressed. It was more like shredded beef, than burnt end cubes. I finished my margarita, and was going to grab one more beer. No such luck. I was never asked if my empty glass needed a replacement. In summary, they literally had, about/very close to equal staff/ to customer ratio. But nothing is getting done. I used to bartend, and be a server. Everyone there; except the older bartender, barely moved/hustled. The kicker was when I asked for my check.... They dropped it off, I paid, signed the receipt, and left. No, "how was your meal?" "Oh crap, do you still want that water?" "Thanks for coming". Absolute crickets. I come to Germantown weekly for business.. For a multitude of reasons, I'm pretty certain I won't be back, or taking my customers here. How this place is profitable, is a head scratcher. read more
