Xi'an Noodles seemed like a promising place for biang biang noodles in Bellevue. We went in for a weekend lunch, only to be terribly disappointed. This restaurant is mostly self service; there are two kiosks right in front for ordering and a table full of prefilled drink cups. I think the only upside to this restaurant is the free cups of mango tea, which are slightly sweetened and fruity. I wouldn't say they are very mango forward though. Hot Oil Biang Noodles ($13.99) - The biang biang noodles here aren't very good. They seem to be stretched somewhat, but then I feel like they take shortcuts. Instead of being almost completely stretched via bouncing the noodles on the table, they only stretch it probably half as much as normal, then they cut the dough lengthwise several times - this is why I can see multiple clear corner pieces in the noodle instead of it being relatively straight. They also don't care to make it consistent in thickness. This causes major issues because the thinner parts are soft and mushy while the thicker corners are doughy and slightly undercooked. I don't know how, but the noodles also clump together, so in some bites, I'm eating three strands of mushy noodles right on top of each other. The sauce here isn't much better. It's supposed to be aromatic, blistering hot oil mixed with chili/vinegar and aromatics poured directly on the noodles. The problems here are multifold. Firstly, they don't drain the noodles properly, resulting in an excessive amount of water diluting the sauce. Secondly, they use far too much vinegar, making the sauce overly acidic. The vinegar is by far the dominant flavor in the dish. While the dish seems like it will be spicy due to the red color oil, it's almost completely diluted out by the vinegar and noodle cooking water. The dish is basically not spicy at all due to these factors. (2/5) Spicy Cumin Lamb Biang Noodle Soup ($14.99) - This dish suffers from the same noodle issues as above, but the soup format improves some aspects slightly, but worsens other aspects. Since the soup is hot and the noodles are soaked in the broth, they soften more readily, so the soft portions are even more mushy than the "dry" noodle. The thicker portions are nice and bouncy though. The soup itself is relatively flavorful, slightly gamey, and tastes like it actually is a lamb bone broth, but it doesn't really have depth of flavor. Again, it's not really spicy at all. The lamb on top seems like thinly sliced hot pot lamb, pan fried until very dry. If not for the fact that the lamb is sliced thin, it would be extremely tough. It does have a nice fragrant cumin flavor though. (2/5) Those were the two worst bowls of noodles I've had in a long time. I wasn't particularly impressed with the noodles at the U District location of Xi'an Noodles either, but they were far better than these two steaming piles of excrement. I come here whenever I'm in town in Bellevue. I won't say it's the most authentic, but it's decent and casual and easy so makes for a nice quick lunch, especially because I travel with my dog and I'm glad they have two outdoor picnic tables to dine in. Not sure why some complain about the kiosk ordering, I find that super convenient, and it has photos so you get an idea of what you're ordering. The worker manning the tables and bringing out the food was super nice and helpful, so overall it was a good dining experience. The cucumber salad is always refreshing and crunchy. I typically get the biang biang noodles, once lamb, and recently the pork and vegetables. The added vegetables can make the sauce seem watery, but it was nice to get some vegetables with my noodles. Xi'an is known for their hand pulled Biang noodles, with many noodles nearly a foot long! We all went to UW years ago and so we had all been to the University location when they first opened up and were excited to try their new location in Bellevue. We arrived at 5pm on a Saturday night and we were the first ones there. You order at the kiosk and choose either dine in or takeout accordingly. For many dishes, you can also choose from three different spice levels: Less spicy, regular spicy, or extra spicy- we opted for regular spicy to compromise for everyone's heat preferences. My three friends and I ordered the... - SPICY & TINGLY BEEF BIANG NOODLES ($13.99): if you like Szechuan pepper, this dish is for you! It's savory, slightly spicy/tingly and has the perfect amount of oil (personally I would get extra spicy for this one). The beef is also thinly sliced and tender. We liked this one so much that we ordered two plates of it! - SPICY CUMIN LAMB BIANG NOODLES ($13.99): This dish was great too and was less spicy than the beef noodles. You could definitely taste the cumin and the lamb was well-marinated too. - BRAISED PORK BIANG NOODLES ($13.99): this dish was 100% mild (hence no spicy in its name). It came with pork shoulder which neatly shredded when pulled apart (probably could've used a fork though)- it was just salted and honestly reminded me of Kalua pork. While 85 wasn't my favorite dish of the night, it's a good option for those who have zero spice tolerance. - HOT OIL BIANG NOODLES ($13.99)- this dish was unique from the others as you could tell it had a little vinegar and tang in the sauce. It didn't come with any meat, but came with a few pieces of bok choy which ended up being our vegetables for the night (aside from the cilantro served on the other noodle dishes). - SHRIMP, PORK, AND CHIVE DUMPLINGS ($11.99 for 10 dumplings): the dumplings were steaming hot and while not that big, they had good flavor and were nice and moist. Nothing to write home about, but they were solid dumplings. Service was great and our waiter was very friendly. They also gave us free mango tea to go with our meal. My main complaint (-1 star) is that they don't have too many vegetable options on their menu- it would be nice if they had garlic green beans or offered plates of bok choy or other vegetables to go with the heavy carb/meat meals. While they have a Vegetable Biang Noodle dish with tofu, it honestly looked kind of plain and didn't come with spicy sauce. The total with tax and tip came out to just over $100, which split among four people is definitely reasonable for dinner in downtown Bellevue for the amount of food we got. They have a parking lot shared with Boiling Point and Snowy Village as well as a few other businesses in the plaza. The interior is clean and they share a bathroom with Snowy Village next door. Paid a revision to this location after a three year hiatus - usually go to the U-District location - and they've really improved! Maybe they finally worked out the kinks but the portions were larger and the noodles were cooked perfectly! I've been to the location at the UW Ave about 11 years ago. Not sure when this one opened up in Bellevue but I'm happy that the quality hasn't gone anywhere since! I got here with two other friends at around 6pm on a Friday night. This place also shares parking with nearby businesses, and it gets full around peak hours. You order your food at the kiosk nearby and servers bring your food to you. Inside has tons of seating for mostly 2-4 people per table, and has a very casual atmosphere. I ordered the spicy cumin lamb hand-cut noodles along with some beef skewers. My friends also ordered their noodles, one of them getting the spicy & tingly beef and the other getting braised pork. We all had a chance to try each other's meats, and you honestly can't go wrong with whichever you decide to get; all of them fit perfectly well with the noodles and spices they add into each of the noodles. The braised pork could even be spicy - this was the only dish that wasn't spicy - and it's still taste just as awesome! For my dish specifically, the lamb was tender and did not have an overpowering gamey taste, and there was a perfect ratio of meat to noodles. I also love my spice, and the level added here was just right and more. Beef skewer was also delicious too; it was even spicier than the noodles, and I just wanted more. In terms of other aspects, food came out pretty quickly, and service was prompt and fast. Pricing is very reasonable for a dish that fills you up, only about $14 per plate before tax. Has coriander, green onions, wood ear and vermicelli for some extra aroma and textures. The diced bread didn't taste anything out of the ordinary. The lamb is plentiful and perfectly seasoned, the noodles are chewy and unctuous. The portions are huge too, I can usually only finish half. And the noodles make good cold leftovers IMO.
