This was a fun dish. It's cold, with the chicken being very similar to chicken salad. The mash was very bright and flavorful, and with purple dots here, green dots there, and those luscious quail eggs, this one was a lot of fun. Quinoa Capón (Peruvian tri-colored quinoa and wok-sautéed fried rice with shrimp, mushrooms, snow peas, bean sprouts, red peppers, and scallions, garnished with wonton strips). Fried rice/quinoa with tons of veggies. Huge, plump shrimp, this dish was simple, but it was a winner. I loved it. Merengon (classic sponge cake soaked in a blend of three milks, topped with baked meringue, diplomat cream, red berries, and a mix berries reduction).
