Tried the Jiro ramen with thin noodles and normal noodles, plus the spicy miso ramen with pork broth and thin noodles. The Jiro was decent but a bit bland compared to the spicy miso, which had a rich and flavorful broth. The fried squid was good. Came here with the family to try the ramen since this is one of the ramen places in Elk Grove that we haven't gone to. Unfortunately, it was just not for us. We ordered the black garlic ramen, tang tang ramen and the beef don. Oddly they have different noodle type but the server didn't ask what noodle type we wanted. So it's a good thing I told the server I wanted thin noodles else they would default to normal. The black garlic ramen was really bland and tasted like unseasoned pork water. The chasu and noodle was decent in texture but that's about it. The tang tang was the same as well, bland and not spicy. For this we ordered with no green onion but it came with it still. The server noticed it when they brought the ramen over and asked us if it was okay, then kinda just went back and scooped it out right behind the bar, not even in the kitchen lol. The beef don was okay at the least and had decent flavor. It comes with the marinated egg which I think is a plus. Interesting Japanese/Chinese hybrid ramen shop right off of Hwy 99. The Black Garlic Ramen doesn't have the typical creamy consistency of classic tonkotsu broth, but it offers the same boldness in flavor. The bamboo shoots and black fungus were such a nice touch! It reminds me of ingredients my mom puts in her own noodle soups. Lastly, the noodles had a nice soft texture to them. Bonus points for the peaceful ambiance, clean interior, and medium-volume indie music. It saddened me to only see 2 other tables occupied on a Saturday night. The presentation is great and I love the small details of the bowls and trays I ordered the Jiro ramen which is considered "crazy spicy" the level was perfect for someone who enjoys spicy food and I also added some chili oil sauce that they offer on every table and it made it EXTRA yummy! 10/10 and highly recommend! Always hesitant to try new ramen places, 8 Hour Ramen pleasantly surprised me. I had the Black Garlic Ramen. The chashu was very flavorful and they provided a good number of toppings. The broth, noodles, and toppings were all excellent. Just as a note, the broth was quite heavy in fat-content. Overall, good service. For a relatively low amount of tables, the waitress took an incredibly long time to check-in and to deliver the check. Went here after school with my daughter for dinner. We got the kid size tonkatsu ramen and the gyudon. She got to taste the food first, official food taster and all. She really liked both! The ramen broth had a very nice flavor to it, and its such a little thing, but the bamboo shoots were fresh and tasty. The beef bowl was yummy too! We'll come back for certain, and bring the hubby. This place was recommended by a friend of mine and I decided to take myself out on a me date and try this place! I ate here around 2pm on a thursday and it was very slow and relaxing. I enjoyed their interior design as well as their music. It really set the vibe and perfect for eating ramen. After we sat down, the service started to lack. It took them a while to come take our order. We order fried oysters, tonkatsu ramen and black garlic ramen. Thin noodles were meh, I would recommend the regular wavy noodles. - Tonkotsu Ramen: more flavorful broth, borderline salty. Regular noodles had a good bounce and chew to them. - I appreciated that they had multiple noodle options (thin, regular/wavy, udon, and spinach). A lot of places don't even have the thin option, so that was great. I would recommend the regular, wavy ramen noodles. - Chicken dumplings (or gyoza or potstickers or whatever you wanna call them): not good at all. My daughter ate them, but my son refused after one. Then I tried it and understood. Not sure if it was the dipping sauce or what, but something tasted like cleaning supplies (like lemony pinesol or something) to me. I would not recommend at all. - overall, I did not care for the food and don't think I'll be back. SERVICE: meh. But our favorite which is the Black Pepper was just like water and no richness to the broth as before. Was such a bummer. To start off, the food here after the reopening has been amazing, I haven't gone here before the reopening so I can't say what it was. But from the broth to the noodles, this was one of the most delicious ones that reminds me of Japan. The gyoza was made in house and was very juicy and delicious which makes me want to eat so much more of them. The service was impeccable, they were very homey and attentive and definitely, can't find that kind of service anywhere else. It may not seem much at first, but all the little things add up! We've been coming to 8 Hours for a little over a year, and I can't say enough good things about this place. The space itself is warm, cozy, and inviting, with room to feel like you can have a private conversation with your group but not feel isolated. The food is solid! We are regulars and get the Miso Veggie Ramen and the Udon Stir Fry with Beef. It's rare to find a ramen spot with a veggie ramen option, let alone one that actually tastes good - but 8 Hours does it. And their staff has been amazing throughout. I started off with the chicken karaage. I like the salad that comes with it and love how the karaage is crunchy. For the ramen, you get to slightly customize your noodles (thin ramen, normal ramen, udon) and broth (normal, half-half, one and half). I got my black garlic ramen with normal ramen, and normal broth. It had great flavor, although it was slightly oily. The service was great,and I like that the restaurant is clean. My husband haven't stop talking about trying 8 Hours Ramen. It's not a big place but we came early enough that there are still tables. It looks like a family run, mom and pop shop. I'm baffled by the options for soup base flavor level. How do you determine half, normal and one & a half? I guess it's my fault for not asking the waiter upfront but we each purposely selected different options and we can't tell the difference. Overall the ramen was just okay. The soup based was bland. Nothing memorable except that it was $18 each bowl. To be fair, I've had really really good ramen in my lifetime living in NYC previously and traveling around the world. The appetizers were better than I expect. The squid leg and chicken karaage was nicely deep fried and not overly battered. I would skip the fried oysters. My husband showed our waiter the 15% off promotional discount for soft/grand opening, even though he suspect that might have been expired. Can't hurt to ask. The waiter checked with the manager or boss and said it was okay and they will honor it. When we got the check at the end, the discount wasn't applied. We just pay and left. This place is very cute and cozy. It's a bit small so you may wait a bit before being seated during dinner. The spicy miso was very flavorful and I enjoyed the broth throughout the whole meal. I forgot what my friend ordered but the broth is very light, a good choice if you're not feeling a strong meal. It's a bit steep at $18 a bowl, but it's a good experience. They're very generous with toppings. I also like that they allow you to customize your noodles to be thin and thick or to be udons and how fatty your broth is. The downside to this is it seems a bit unorganized. It's not too bad as they get busy during dinner, but it threw us off when they got our orders wrong 3 times as they brought them out. We ordered some potato croquette, they brought it out and then took it back, thinking we were the wrong tablet but were given it again when they realized we are the right table. The ramen also came out with my order but has the toppings my friend ordered so they took back both bowls to redo. The ramen here is very... mid. I got the black garlic ramen and there's nothing special about any of it. It doesn't WOW me but just gives me a subtle nod. The tare of the soup is there but lacks a strong base flavor, the black garlic isn't as pungent nor carries the flavor of the soup, acting like a side character in its own dish, and the texture of the noodles feels inconsistent, a bit firm, and not uniform. The chasu doesn't seem to have a strong braise either. The egg, however, was perfect. Overall, the ramen here is nothing exciting but still welcoming. You're not going to have your tastebuds blown away but rather best if you want a casual meal. Flavor is a shadow rather than being in the spotlight which is a bit disappointing. It was finally a windy day for the first time this fall season, so ramen was the immediate craving! I wanted something nearby and new, so we headed to 8 Hours Ramen. It's not a huge place but we came before dinner time so we easily got a table. They brought out a plastic tableware set for our daughter which I always appreciate when restaurants do that! The ramen options are not extensive but what made them stand out is the option to customize your ramen thickness (or udon) and softness, as well as broth level. Unfortunately the customizations didn't really come to fruition. I ordered soft and mid noodles and they tasted firmer than my husband's noodles, which were supposed to be normal and mid. So I'm not sure if it got switched..but if you're asking me to customize then it should be right! I also didn't quite understand the broth level. You can do half, normal, or 1.5. I did normal, but after having my meal I would recommend 1.5. The broth just didn't have as much depth of flavor as I would expect a place to have who names itself after how long they cook the broth for. I liked that the chashu was sliced thinly but it was overall a small portion of meat and noodles. If it's a $17-18 bowl of ramen then I need to be so full I can barely finish all the noodles. And I was not full after eating this meal, even with dumplings on the side. The highlight of the bowl was definitely the egg! So soft and flavorful, I saved half for my final bite just so I could savor the flavor of it. They do have plenty of appetizer options and a few non soup entrees. We chose the chicken and corn potstickers. The skins were quite thick but I liked the filling. Probably wouldn't have gotten them if our daughter wasn't eating with us. Our server was very nice, and food did come out quickly. But just didn't have the flavor I wanted. Hopefully they'll take feedback into account so they can adjust recipes. We came around dinner time and many tables were filled. We ordered two ramen bowls and potstickers. Service was friendly and considerate. I noticed that we did not have chili oil on our table and the waitress brought it over from another empty table to us. Yokohama ramen: This is a chicken based soup. The chicken was cut thinly and was well seasoned, moist. I wished there was more chicken in here! There was also bamboo, spinach, egg. The egg was cooked perfectly. The broth was a bit on the saltier side at full flavor, but it had a LOT of flavor, which I enjoyed. I would probably get the soup at half flavor. I got the middle sized noodles. Apparently, if you go any thicker than the middle sized, it is an udon noodle, and not the typical ramen noodle. Spicy miso ramen: Oops I think we forgot to specify if we wanted pork or chicken based soup. I did not eat this, but I tried the soup and it kind of tasted like the spice was kimchi. My partner enjoyed this. Pork cabbage potstickers: I can see how people might enjoy this, since it came out hot, crispy. The filling was fine; it had a little bit of broth in there coming out, kind of like a xiao long bao. Personally, I would not get this again. Restaurant was very clean. There are multiple booths, free standing tables, and bar seating. If you have a larger party, I'd suggest coming earlier so they can rearrange the tables to accommodate. I saw this place opened not that long ago and gave it a shot. It's a small little place near the Walmart off EG Blvd. Overall, the food was ok. I didn't find the broth anything special. It's a good place to go if I were in the area but probably not something I crave. My overall rating is 3.5 stars. Pros: I liked how you can choose how soft, hard, thin, or thick your noodles will be. Also liked that you can choose how much flavor you want in your broth. I got the Yokohama with regular noodles, ramen cooked normal and half the broth flavor since I watch my salt intake. You get a lot of food with the Yokohama, especially with the added chicken so I couldn't finish my bowl. Service was good, they had a good number of tables when we were there. I also tried the chicken and corn dumplings which were good. My partner ordered the jiro, which he felt wasn't enough flavor (mid ramen type, normal flavor, and noodles cooked soft). So I look at this place and got excited because another ramen shop opened up. Hubs and I walk in. We are pleasantly greeted by the gal up front. She is mopping the floor and let us know we can sit anywhere we like. She comes out to hand us menus and continues mopping. So we decide what we want to order. I love garlic and decide upon the lunch special of black garlic ramen with pan fried gyoza. The gal asks if we want water and we say yes. Then she comes out with the waters immediately. Neither my husband nor I noticed if she washed her hands. I don't think she did. She was just cleaning up the floors. Ewww. Okay, 1 mark down for lack of handwashing. Next off is the gyoza which ends up being par for the course as was the gyoza. So 3 stars for that. Ramen is set out. Now during this entire time, it did not seem the gal has washed her hands, or wiped them or sanitized. Anyhow, onto the ramen. My ramen was certainly very pretty. The seasoned egg was perfectly normal, neither fantastic, nor terrible. The middle was cooked to perfection, but the egg was cold. Not sure how to rate that one as many places will have eggs on the cold side. The noodles seemed hand made (awesome opossum!). Tender yet lacking a real taste. Hmmm.... Bamboo shoots were tasty. Mushroom ears were a little on the flavorless side....hmmmm. Let's try the broth....omg! It tastes like burnt something...not even burnt garlic....like no prominent garlic flavor at all. Ugh! THAT's why the ramen noodles and mushroom lacked flavor. So overall the 8 hours ramen is a fail. And the lack of handwashing calls into question whether I could get sick after eating here or not. 1 star it is. Sorry guys, but pass over this place. I was excited to try this place since they offer thick noodles and ability to choose "hard" cooked. Interior was really welcoming and cute too. We tried 2 different ramens (Jiro and Yokohama) and some potstickers (beef bc they were out of pork and cabbage at the time) but everything was very underwhelming. I usually think a lot of food is too salty but in this case everything seemed under-salted. I wasn't getting much flavor from the broth either. The potsticker filling tasted off to me. And.... let's just say my stomach was NOT happy some hours after. But my partner felt fine so maybe it's just my weak stomach. Ordered the Yokohama ramen and the pork cabbage pan fried dumplings for take out. Recommend heating the soup once you get home if you want the soup really hot. Yokohama comes with chicken, pork, bamboo, egg, and spinach. Very tasty and the highlight is the porky flavor broth. It is not oily so you will need to get something else probably the tonkotsu. Small but cozy inside, (felt a bit crammed tho.) We were seated quickly and ordered a little while after. Food did took a bit long to come out as there was only 2 persons working (1 servicing out & 1 in kitchen) and there's like 4 tables full waiting for food. All ramen were customizable I loved that especially with kids not liking some toppings and were able to replaced it with something else. And different noodle options rather than just the usual ramen noodle. The eggs were PERFECT! TASTY!!! Unlike some other places. The broths were tasty. We tried the Tonkotsu, Yokohama, & Jiro. Out of the 3, Tonkotsu broth had the most flavor. Noodles were a bit chewy like Al dente which we like because who wants soft soggy-ish noodles. Overall the ramen soups were great.
