The corn tortilla chips were on the thicker side and broken into pieces of different sizes. There were some crispy bites but the chips did turn soggy, very soggy. The roja sauce had a nice amount of heat and some tang. The chilaquiles were topped with crema and cheese. I added cilantro, chopped onions, pickled onions, and lime. The refried beans on the bottom also made the chips soggy. Verdict - too soggy and too big. The tortillas are made by hand. There's also a self-serve salsa and condiments bar with four types of salsa, lime wedges, cilantro, onion, pickled onions, cucumber slices, and radish slices. I would go back to try the birria gorditas.

Thankfully that wait is not TOO long compared to the 2-3 hour wait lines during peak, and 3rd street is very walkable. We changing positions now... and moving on to the cow poke... well... in this case ... a naked POLLO that just can't be dressed anymore... So I went for the kill and finished off what was left of this little POLLITO by dipping in all three salsas... whilst I chomped on the bit of this huge grilled chile pepper for some heat on the side...that Chilli Pepper was real huge so I had to take small bites...I couldn't take it all at once..!!! We keeping the windows misty at the LITTLE RODEO cause I'm damn for sure ... this ain't LITTLE RODEO's FIRST RODEO if you know what I mean....and it sure as hell ain't my first rodeo either...but this Chicken got me tripping... I'm off my horse...!!! Send in the rodeo clowns!!! THEY DEFINITELY GET AROUND... they in Echo Park on Sunset and one other place ... I'll find it later...too busy right now stuffing this meat into my face... Back to steaming them windows...I'm all sweaty from that BIG ASS CHILE... Now it's just me and half of the little pollito that's left... and the dipping salsas... I ain't done yet! Hang on POLLITO!!! Let me lasso you in....it's a bitter sweet thing to be in between lovers... but listen...you're the one for me now... You ain't going nowhere... There is nothing left to see here...btw Except if you never been... ....DONT PASS UP what could be the MONSTER POLLOTE of your very Short life...!!!
