Food- Tucked inside the classic Hotel Santa Fe is Amaya, a restaurant that offers a taste of authentic Southwest cuisine. I would highly recommend sticking to the Southwest options, as these are where the kitchen truly shines. Having grown up in the region, I can attest to the authenticity of dishes like the green chili enchilada and the huevos rancheros, which they absolutely nail. For a great start to your meal, we ordered the chips, salsa, and guacamole trio. We also ordered the chicharrones separately, but they were not seasoned as described on the menu. While the food is a highlight, the bar could use some improvement. The drink prices are amazing, but the drinks themselves aren't mixed very well. My Old-Fashioned was served in a copper tin cup (better suited for a mule), and in another instance, a bartender put a spilled olive from my martini, which had fallen on the bar mat, back into the drink. Ambiance - The ambiance at Amaya is a breath of fresh air. It features open seating with an airy, light, and refreshing feel. The combination of skylights and open doors creates a very well-lit and inviting space that perfectly complements a sunny Santa Fe day. It's a comfortable and relaxing environment to enjoy a meal. Service - The wait staff is very friendly and attentive, adding to the pleasant dining experience. They were quick to seat us and made sure we were taken care of throughout our meal. While there was a minor hiccup with the bartender's service, the wait staff's professionalism and attentiveness were stellar.

    Empty restaurant.

Took over 30 minutes for my entree to come out when the restaurant was completely empty. Ordered a cup of corn chowder and scallops for my entree. Soup was glorified milk and corn. Came out with visible unmelted shredded cheese still in. Scallops came with pork belly and both were severely overcooked to the point where both scallops and pork belly were hard and I was unable to cut through it. Sat there clearly not touching my food for over 15 min and no one came to check on me. I had to look over to the kitchen where the servers were very loudly chatting and took a couple minutes before they noticed me staring and came by. Server was unhelpful and didnt seem to care. The actual dish had so much potential. It would've been a 5 star dish of the proteins were not disgustingly overcooked. Can't recommend this place.

PThe food here is exceptionally good. My salmon was cooked to perfection. The service was stellar. Lady was a sweet heart. The ambiance is fabulous with native art all through out the Hotel. I loved the wooden flute music at dinner. I could feel the stress roll off my shoulders. We stopped by the bar in the afternoon for beer and a nosh. Misty was great. I tried some butter squash soup . . . Delicious.

While staying at Hotel Santa Fe, arriving later in the evening we defaulted to dinner here. Nothing terribly wrong with the food, but nothing terribly right, actually wrong for The prices, , definitely no reason to dine more than once or if you just need sustenance while staying at the property. Buffalo Green chili burger- flavorless and under cooked Chicken pot pie- ya mama makes better Crème brûlée- over baked, pulling from the edges, curdled and weeping - we sent back

AMAYA is absolutely a gem. We dinned here for two days as we were snow bound on the week of November 9, 24. We are frequent visitors to Santa Fe and the menu options, execution, presentation and cuisine are remarkable!! The service in spite of reduced staff due to the weather was incredibly on point. The dinning room is spacious and the scenery was incredibly beautiful, winter wonderland!!

Located in a quieter part in the edge of downtown, parking is usually pretty easy to find on-Street, and it's a few steps over to shops. The outdoor patio is secluded and quiet, and the indoors offers plenty of seating in a historic setting that's bright and fresh. On the food side, Palacio cooks their red Chile for over 8 hours, making it in my opinion one of the best and most flavorful in Santa Fe. Most other places I get Christmas style, but here, the red Chile is just perfect. On this trip, we had a smothered breakfast burrito and enchiladas suizas. Both were perfectly cooked, served hot, and resulted in another visit of what we expected from Palacio - great food and friendly service in what had quickly become our favorite Santa Fe restaurant.

Unfortunately I was highly disappointed by food and service. I ordered fish and shrimp taco. The food wasn't bad but it's didn't come with a side of salsa or any sort of sauce. It did comes with a side of rice which I felt was under seasoned. The service was slow. I walked in around 1pm and door was locked. I was surprised to find them close even though online says that they are open at 11am that day. I checked on google and it was suppose to be open. I called and they said that they are open but waiting for alcohol to be delivered at 3pm. Did they assume that every customer coming in is ordering alcohol? As far as I understand this is a restaurant that serves food and alcohol and not a bar. Shortly after my arrival, there was a large tour with 12 people showed up. I could see that the waiter was a bit flustered because he also had to tend to other customer as well as the tour. I guess this is where the tour take people for authentic taco experience. In my opinion these are more toned down gringo tacos. My taco didn't come with a side of sauce like everyone else. I also noticed that the tour all received a side of salsa which I didn't. I'm not sure if the waiter forgot. I had to flag down the waiter a few time because he also forgot my drink. I also ordered an agua Fresca watermelon and it wasn't made of real watermelon but flavor syrup from the bar. I wished I had known that it wasn't real melon. 2.5 stars for the food and 2 for service. Again food wasn't terrible, but certainly wasn't close to be the best.

However, I was pleasantly surprised. I was greeted super warmly and was educated on their menu as the host led me to my table (this place is sprawling and has inside and outside tables). My server greeted me immediately and was so helpful in her recommendations. She was truly interested in giving me the best experience as opposed to running the bill up for a bigger tip. Fresh out of the museum of New Mexico, I had learned adovada is a native dish, so I went with the carne adovada plate. Made with slow roasted lean pork, marinated in red Chile, garlic, and oregano. Served with cheese blue corn, red Chile, and onion. With a. side of pinto beans. It was spicy. Not HOT, but not "white people" spicy. It was warm and filling. Delicious. As far as margaritas, all I had were great. I had one of their premium 24 dollar margs, but it wasn't any better than the 12 dollar one recommended by the server. They also offer huevos rancheros, various enchiladas, tamales, burritos, tacos. For those wishing to go a little more americanized (but then why would you come here), they have a buffalo burger, grilled chicken sandwich, and regular burgers. Don't let the crowd deter you. It sounded like dinner service would have meant waiting for a table, so this worked out perfectly. The bar area struck a nice balance between lively and intimate. The tables had cute lanterns filled with coffee beans, and the abundance of plants throughout gave the space a cozy, nighttime greenhouse vibe. As instructed, we ordered at the bar and everything was brought to our table. Unable to decide between two desserts, we ordered both: the Hot Fudge Sundae and the Cheesecake. To pair with dessert, we went with the Spiked Coffee and a glass of Santa Fe Spirits Apple Brandy. We'll go from bad to good: neither of us cared for the cheesecake. The sour cream vanilla topping overpowered both the cheesecake itself and the graham cracker crust. My wife, however, really enjoyed the spiked coffee, and I thoroughly enjoyed the apple brandy. It was incredibly smooth, almost like drinking apple pie. The surprise winner of the night was the hot fudge sundae, and what made it exceptional was the fudge sauce. It had this rich balance of dark, slightly bitter chocolate with just enough sweetness to keep it smooth and indulgent. Overall, we had a great experience and would absolutely come back to try an actual meal sometime.
