I'm just so thankful they've decided to open one up in the 626, which saves me the trouble from having to drive to chinatown to get, what i think, is a top 3 burger on my list. Didn't realize Amboy was the brain child of the legendary Egg Slut. Had no expectations, but after trying half the menu over various lunch breaks, I would describe it as man's no-nonsense comfort food with chef-y sensibility and execution. But I guess that's what comes from being an alumn of places such as The French Laundry and Castagna. If you like beef, you like burgers, you like french fries, you'll love Amboy. I mean, just look at the photos people post. You do not really see "lettuce," "tomato," etc. Your key vegetable is either potatoes, and maybe some onions and pickles. That's it. This is really a showcase of hamburger beefiness. Whether as smashed patties with the really concentrated caramelized ends, or thick beef patties, with cheese and their own aiolis and sauces, the who delivery accentuates the hamburger as the star. I love that they offer a quality, substantial, sesame seed bun AND toasted slices of shokupan (Japanese style milk bread) to sandwich the beef. The shokupan bread especially feels like an homage to Louis Lunch of New Haven, Connecticut (recognized by the library of Congress to be the birthplace of the modern hamburger). The gentle sweetness of milk bread, with its crisp toasted texture to offset the gentle fluffy innards, right before your teeth sinks into the luscious smashed beef (or 2 patties if you go double!) --- oh fuggedaboutit! It's like the best parts of childhood, amplified -- the kind of grown up taste that McDonald's tried to deliver with the Arch Deluxe, and failed with back in the 1990's. Even for the price point, I think it's quite quality for for the level of gourmet you get. Although, I would say you don't have to pay the premium for the dry-aged beef with the fatter patty (The DH)... unless you are the most discerning of beef snobs that really crave the extra nuances of umami. Don't get me wrong, it is really good, but I'd be perfectly happy with the other 2 styles of patties they offer. I enjoy the straightforwardness and simplicity of the burgers, whether you want it as the "classic," "Truffle," or "steakhouse." I've had plenty of $18~$30+ burgers from various gastropubs, celebrity chef joints, steakhouses, etc. But only a handful... probably less than 5 are as satisfying as what I get here, and you won't even have to spend as much. The pastrami is also pretty decent, but I think if most people based their expectations of pastrami off the "World Famous The Hat," this is considerably less salty, as thin-sliced pastrami goes. As fries go, I do think they are some of the best around for this kind of thin cut, crisp, golden fries. I do think they get a bit too soft and soggy under as much toppings as pastrami and chili cheese. But the garlic fries is the kind of style I like, with freshly minced garlic mingling over it all. Actual garlic. Actual bite. None of this "garlic parmesan" nonsense that totally drowns out garlic's voice like parmesan was Kanye grabbing the mic from Taylor Swift at an awards show shit. **Came on Saturday at 8 pm and they close at 9! :) Not sure how to update the Yelp hours on here since their Google page says 8 pm but don't worry it's 9! While waiting in line, their servers came to give us hot dog samples... then another 10 minutes later.. they came back with fry samples! Super sweet :3 and def keeping us well fed while in line. When we finally got to the front (~30 minutes), I ordered the Amboy, DH which was a 10 oz dry aged medium rare patty: AMBOY BURGER SAUCE, AMERICAN CHEESE, CARAMELIZED ONIONS SLICED PICKLES IN OUR TOASTED SIGNATURE SESAME BUN. It took about 15 minutes to get our order and they actually called my phone number to let me know. With a drink and fries it was $25 but for the single burger alone, it would be $21. A pretty solid burger imo and fries were cooked well too, crispy and lightly seasoned with salt. My bf HATES sesame seeds and those buns had a TON of seeds, but we couldn't taste a thing! :D lots of cheese and carmelized onions with a juicy patty. The patty's outer edge had a crispy seasoning of some sort which was pretty unique. I am brimming with genuine tears of joy. The Amboy DH is unique and ridiculously delicious. I'm literally shaking in excitement as I recall this utterly delightful smash burger. I ordered Amboy's famous DH beef patty ($21). It's humongous! This 10oz Dry Aged Angus Beef Patty drips with its own meat juices. It's cooked perfectly at Medium Rare. Being a smash burger, its outer layer contains that welcomed thin crispy crust. I smiled as its crust reminded me of bacon bits. This burger's toasted sesame seed bun has a gently buttered crust, and I was impressed how its bottom did not become soggy from this meat's succulent juices. Then, there's the thick American Cheese which melts attractively. This thick cheese added a wonderful dimension of texture and flavor. In addition, the sauce, thin pickles, and tender caramelized onions only complimented the prominent, satisfying taste of juicy Angus beef. For an extra $4, I was also able to upgrade into a combo which added thin, crisp fries and a drink choice. I absolutely love that they have Pellegrino seltzer water as an option. However, quick note, these beverages are all canned options. Still, Amboy (West Covina) evoked strong feelings of happiness, satisfaction, and contentment. I want to scream loudly to the heavens! "The hype is real!!!" Not only is its signature food superb, the staff is extremely competent, charismatic, and welcoming. The staff member (Zariah) performed exemplarily. Thankfully, the counter is very clean, and its limited counter's chairs are comfy. If needed though, there's plenty of adjacent seating in this market as well. In addition, the washroom to clean your hands is only a few feet away. The washroom is located besides the nearby Georgie's. Amboy (West Covina) is also decorated with its many awards and accolades. Its music is the Haven City Market's music, so expect upbeat pop music or country music. The song "Party in the USA" by Miley Cyrus was playing during my visit. Also, Amboy (West Covina) has one flatscreen tv with english captions. Overall, Amboy (West Covina) is unique, special, and extremely delicious. The fact that one opened much closer to home AND with free parking is just way too good. So believe me when I say that I'm excited that there's now one in Haven City Market! I came during their soft opening. Since they were still in soft open, I don't think their entire menu is available yet, and I can't wait to come back to try more of their food and to see if this location will have collaborations as well. I got the: 1) Amboy Classic Double Combo: -This comes with their double smash patties, Amboy burger sauce, American cheese, caramelized onions, sliced pickles on their signature toasted sesame bun. -I got this as their classic double smash. -Absolutely delicious, mouth watering burger. The slight char of the edges, the moistness of the meat, sweetness of the onions, and the sourness of the pickles, along with the sesame seed bun, creates a textural, taste-filled heaven with every single bite. -You can taste that they do use quality meats for their burgers here. Gotta be one of my top burgers ever and my boyfriend couldn't stop complimenting it between bites. 2) Garlic Fries: -This is their thin, deliciously crispy fries topped with minced garlic, parsley, garlic oil, and garlic confit mayo. -Deliciously addicting to munch on. Amboy is a popular burger spot with a bit of a dedicated following. It's located in Haven City Market in West Covina, on the left-hand side as you walk in from the main entrance. Just some background on Amboy: It was founded by Chef Alvin Cailan, founder of Eggslut and also head chef (as of 2021) of Umami Burger. He's also the host of "The Burger Show" on First We Feast (you know, the channel that does "Hot Ones") on YouTube. In other words, this man knows his burgers! We've been to the original location in Chinatown and became instant fans. But of course, driving to Chinatown somehow feels like a daunting effort for SGV homebodies, so we've rarely had the motivation to return ever since. Which is why we were very excited to see Amboy open up much closer to home! The burgers are, generally speaking, fairly simple. The focus is on the quality of their meat (case in point: their IG handle is @amboy_qualitymeats), which is why you'll only see a few options on their menu. Most burgers consist of some type of mayo/sauce, cheese, onions, pickles, and bread at minimum, with specialities like chili cheese, truffle, or pastrami (a West Covina exclusive) being added if you desire. That being said, we wanted to keep things simple to establish a baseline first. My wife and I ordered the "Amboy," which is like their standard burger, and the "Fancy," which is, well... a little fancier, consisting of a garlic confit mayo (instead of Thousand-Island style burger sauce) and provolone cheese (instead of American cheese). We ordered both as a double smash patty, but you can alternatively get any burger served with a "slim thicc" patty (which is like a thicker, steakhouse-style patty) or a dry-aged patty. I couldn't justify the $9 price increase for the dry-aged patty; maybe I'll splurge on it one day, but the thought of paying over $20 for a burger seems untenable these days. Anyway, the burgers take a little while to prepare, so we sat at the counter in order to eat them as fresh off the grill as possible. The burgers are actually quite decent in size, with patties wider than the buns and the cheese and sauce sliding out asymmetrically in this perfect, magazine-worthy styling. The meat is indeed delicious--juicy, crispy, and well-seasoned--with the other toppings complementing it well. Also, the sesame seed bun is a bit underrated. It makes a huge difference! We also ordered the truffle fries, which were all right, but I wasn't a fan of them overall. The fries are shoestring-thin, then topped with parmesan crumbles and drizzled with a truffle-infused mayo. For $12, I was expecting a bit more. It felt like I was consuming too much oil and fat overall, and we had to take about half the fries home to save for another day. Ultimately, Amboy is a welcome addition to West Covina. While I don't plan on eating here every single week, this is probably one of the more solid options in this food hall, so I'll be back when I'm craving a delicious burger. read more

The thing about a great burger is that it can be great in many way. It can have interesting quality ingredients, it can have an interesting process, or it could just be a greasy and cheesy hot mess like Nice Guys is. Amboy opts for the second option and I find myself sitting here asking what could they have done better to warrant five stars. My biggest quibble is that there was far less chili and cheese on my chili cheese double smash burger. And it had far too much mustard to replace. The balance between the competing flavors was far off. The fries were serviceable but it's nothing I'd rush back for. The staff was super helpful with answering my questions about which one I and other normal people eat while also being super friendly. Breh. Geez. You don't gotta go this hard, Amboy. I've tried my fair share of burgers across LA and OC, and this spot's up there. Had to do it right with trying both styles of patty: the Amboy Classic double smash and the Truffle Slim Thicc with added bacon. Plus cheese fries because, well, I'm not here to play. The smash burger was textbook with crispy edges, melty cheese, and a soft bun. But the Truffle Slim Thicc with bacon? Oh boy.. Rich, indulgent, and layered with just the right amount of truffle without going overboard. I'm a truffle guy, so soak me in that stuff. This burger had me ready to propose. Read the reviews and was excited. Did NOT live up to the hype. Told us our order would be ready in 10-15 minutes; took 35 and it wasn't that busy. The burger was a bit dry and had nothing on it but aioli. The fries had the aioli on top but would have been better if it came on the side because it was all on top and got soggy. Way too much garlic in it and I LOVE garlic. I'm still tasting it 4 hours later. $36 for a burger and fries, including tip. Never again. read more

Photo does not do it justice but this burger hit the spot! Long lines during the weekends but, I say it was worth. Around $13 for a Double Smash Burger. It came with provolone cheese, garlic mayo, pickles, grilled onions on a toasted sesame bun. The sesame buns were buttery and toasted in a way that was perfectly done. The smash burgers themselves were crispy on the edges while maintaining the juiciness. Pickles - tasted fresh, a nice crunch and tartness. Really great burger - no complaints! read more

First time at The Haven City Food Hall . Have been wanting to try Alvin Cailan's AMBOY. What a great place. Staff was very friendly and helpful and our food was served very fast. Food stall is very clean and accessible. Food was hot and was very tasty and fresh . Lots of choices but menu was simple enough to navigate. I've been waiting for them to open for a while now, so there is a lot of expectations. They opened at 12pm and I was the 4th one in line. I ordered the Amboy double smashed combo, one of their soft open special. The burger itself is a good restaurant quality burger, the sesame buns are nice and moist, good flavor and sauce, my gripe is the patties are not browned and caramelized like a "smashed" burger supposed to be. The fries are excellent, crispy but not overcooked. Overall, I enjoyed their burger but the lack of "smashed" patties really knocked it down for me. read more
