Ever since I saw Bai Cebu Lechon / Suisun on "Check Please" I've been wanting to try but Suisun is way out in the boondocks. Now that they opened in Hayward it's a lot more convenient. Located in the shopping center on the corner of A street and Hesperian it sits on a separate pad. The interior is has a modern clean decor but besides the Lechon the menu is very limited. There is Pancit a Filipino staple and a couple of other side dishes. Obviously the star is the Cebu Lechon which is handsomely displayed in the front counter. Ordering by the lbs the Lechon is $21.99 per lbs. The Lechon lives up the hype with its very crunchy crackling skin. 5 star ***** The rest of the menu items are just meh. I got a little of each and every item not really familiar with the offerings. A new item was the Filipino sausage balls and really tasted like candy and sausage. Not liking it an all. We finally made it to Hayward after months of seeing this place on Instagram. The lechon was unlike any we've ever had before.The skin was perfectly crispy. We also got pancit and longanisa, though the pancit needed a bit of lemon and the longanisa was a touch too sweet for my liking. The lechon stew, though I'm not sure of its exact name, was delicious. After such a hearty meal, we definitely felt the need for some salads, haha! But now we know--this is the spot to go to for lechon on special occasions or holidays. read more

CRISPY SKIN, RENDERED FAT, MOIST MEAT Several years ago I drove to Suisin City for lechon. I heard so much about this place. The drive from Union City to Suisin City was around 1 1/2 hours. Was the lechon worth the drive? Yes it was. After my eating experience I felt the Bai Cebu Lechon at Suisin City was the second best Filipino eatery in the Bay Area because of their specialty, which was Cebu-style lechon. I didn't want to go back to Suisin City anytime soon for lechon. I was delighted to find that there was a location in Hayward. The first time I came was on Super Bowl Sunday as a pre-game meal. I came here with my nephew. I ordered a 1 1/2 pound of lechon and two orders of steam rice. There are three layers of exceptional lechon: 1) crispy skin 2) moist meat 3) rendered fat. The most important quality is the crispy skin, which can't be soggy. The skin at Bai Cebu Lechon Hayward check marked that quality as the skin is crispy like glass. The second aspect is the meat. I've ate lechon in the past with the meat as dry and stringy. The meat at Bai Cebu Lechon is moist. I never tasted a piece of dry meat during my meal there. The last quality is the fat. Is it too fatty that is inedible to eat? What makes the lechon at Bai Cebu different from other lechons is the rendered fat, which makes the skin crips and meat moist. My meal that day was more memorable than the 49ers in the Super Bowl. About a week later after still reeling from the Super Bowl loss I came here on a Saturday. Since I came here by myself I decided to get half a pound of lechon and an order of steam rice. In addition I ordered two sticks of Cebu chorizo. The Cebu chorizo isn't as long but has a texture similar to longanisa. Even though I ordered two sticks of Cebu chorizo I found them very filling to my meal especially when I had lechon also. The third time I came here was on Daylights Saving Day for an early lunch. I asked the manager if they use charcoal as they do in Suisun City. She confirmed this location also uses charcoal. The charcoal adds the smokiness to the lechon and is responsible for the rendered fat. As the fat is rendered due to the charcoal the meat bastes itself. Not only I ordered the half pound of lechon along with steam rice, but also I picked the pineapple hopia. Pineapple tends to be overly sweet in pastry or dessert but pineapple hopia wasn't overly sweet. The lechon here is probably one of the most expensive in the Bay Area as the price of per pound is pricy. I recommend ordering half a pound of you're going by yourself as half a pound of lechon along with steamed rice is a filling meal. Is this Hayward location better than Suisun City? So i saw this i think on tiktok or maybe it was youtube, but one of the bay area food reviewers, highlighted this place, citing the the flavor was just very different and so much better on their cebu styled lechon kawali. They have what i would consider very limited hours, but given the specially of their cebu styled lechon, i assumed it's that they just can only make enough in a day to cover supply for only a short part of the day which is 10-3 daily... so for me working during the week this had to be a weekend venture. So i went, and the POSTED PRICE is $21.99/LB of the Cebu Styled lechon kawali. To be honest, funds were tight, and i really shouldn't have been splurging, but i indulge myself especially with new cravings, since new dishes seem so few and far between for me, so i was eager to get this and try for myself. So i get there, not knowing the price, but seeing the sign about $21.99/lb and have the guy cut me about 1/2 lb, trying to not spend so much, but i see that it's not really enough, and tell him to do the full pound. My eyes aren't great so i couldn't fully see if the weight was 1 lb or off just a little or a lot or what, but i'm EXPECTING it to be ~1 lb, maybe within 1/10 lb or so, which i think is fair. So I get up front and i'm expecting to get up front and pay 21.99 +/- a few cents since cutting to precise weight can be an issue, and of course tax on top of that, so i'm thinking approx $25 with tax and all. But somehow, it came to $28 and change...almost $30. So i'm not sure how that 21.99 pound turned into almost 30 dollars with tax being at absolute max 10.75%. So needless to say, this was frustrating and disappointing. But first visit, trying out a new place, i try to allow for some surprises, one never knows, and despite it hurtin my already tight wallet more than intended, i just grinned and beared it. So that is my one disappointment AND confusion...how much i actually got charged in contrast to what was expected based on the posted 21.99/lb sign. So THAT sucked. Otherise? The Cebu styled lechon KAWALI???? TO DIE FOR. DELICIOUS. ABSOLUTELY MOIST AND MOUTH WATERING. WORTH $30 for a serving and half? MMMM...i want to say MEH, cuz really that IS too much... BUT my tastebuds did thank me. So moral to my story, for myself anyway, is try it again, and just be SUPER vigilant of the weight being cut for you, that it IS what you asked for as close as can get and that you are then charged at the $21.99 rate. So just be aware and go in with that foresight. That is why not the full 5 star rating...that was confusing and it shouldn't be But the Lechon there IS , in my lifetime the best lechon kawali I've ever had...i'm not a filipino but grew up around them, speaking the language(s) etc, so i've been around lots of lechon all my life and it's all "good", but the flavors from the herb blend Bai roasts theirs with? Bai Cebu Lechon is finally open in Hayward. We always drive by it when going to Target in Hesperian and A St. but it looks like it's always close. Finally looked at Yelp to see their hours and I came in around 11am today before lunchtime crowd. I was the only one there and as soon as I walked in, I see the glistening Cebu Lechons. I'm not a fan of a whole pig / lechon since I always find the pork gamy. Then some parts of the lechon are so dry and no taste. Then we got the Cebu Lechon once at Phil's House and I wasn't impress by it as well. There was no taste. But this Cebu Lechon from Bai was so juicy, moist, and very tasty. We just noticed this place when it was posted on Instagram. We're curious and we decided to try them. It is located at the intersection of A Street and Whipple. Once you walk in, you'll notice this enormous lechon belly behind a glass window. There must be a dozen and it looks like it was just cooked. We came here for the lechon belly and there's a price posted for every pound you buy. We ordered 2 lbs of lechon belly and it amounted to almost $50. We think it is a little bit pricey but wanted to experience the food. The service was fast and we got our order quickly. The place has a dine-in area also The lechon belly is just ok. The price is steep because of the process of preparing and the labor of having it baked. We wanted to patronize local business owners that's why we came to check this place. If there is any place where I'm a regular, it's here. Bai is my Cheers - it's where everybody knows my name. And while they're known for their cebu lechon, 90% of the time, that's not why I'm there. But that cebu lechon... delicious! It's so good, so greasy good, so probably-really-bad-for-you good. The skin is crispy in all the best ways, the meat is juicy (and again, really greasy), and the flavor is on point. At $22 per pound, it does cost a pretty penny, but I'm willing to splurge on a special occasion. But again, usually not why I'm here. No, I'm there for the empanadas & they *know* that's why I'm there. Literally, I'll walk in the door and they'll say "yay, we have empanadas for you today!" or my fiance will walk in without me and they'll say "picking up empanadas for Jessica?" If you've read my other reviews, you know I've been on an empanada kick lately. And while many might disagree, Bai's empanadas are my favorite ones yet. It's the bread/crust. I don't know what they put in it, but it's different than other empanada crusts and I love it. & of course the filling is delicious too. My only wish is that they were open for longer hours/every day because for whatever reason, I always crave it when they're closed. Or I'll go when they've run out for the day. But not to worry, I'll always make my way back. They have lots of other stuff on the menu too and while it's mostly a takeout spot, there are plenty of tables available if you're looking to dine in. The lechon is tasty on the first bite. Be careful it's very fatty and oily. $20 plus per lbs. is expensive with the amount of fat you get. They also had pancit and different menu but it's not the best flavor. It was too salty and oily. Service is quick. This location is bigger than the one in Suisun. They've got an original one Suisun City. I was once passing through that town and called them once to try, but they were out of Lechon (their main product) by noon time. So never stopped in, and kinda bummed, but it did make me wonder how good it really was for them to sell out so early in the day. Fast forward to present day and they open another location much closer to me in Hayward, whhhaaaaa right??!! Ventured in on a Sunday lunch hour and the place was surprisingly quiet, maybe their new-ness? There's no printed menu, which I found strange. The lechon price per pound is printed $22ish/lb. And outside of that lechon, there really is only about 6-7 things to order. Also didn't seem like a place where you can get just one plate for one meal. More of place to get a big quantity of something, then split it family style, which is actually the preferred way to eat amongst that culture. So can't really hate on their format. So I just went with it asked for a pound and a half of that Lechon and they said "how about a pound and 3/4?" O-kay? They basically have a ton of these pork belly rolls that are masterfully seasoned and roasted to a glorious crisp on the outside. Then there's a full time 'chopper' who just chops these rolls into pieces onto to-go boxes and weighs it then straight to a cashier, just like a Chinese Deli. They literally handed me my order in less than 3 minutes. The Lechon (4*) is the star here. It is probably the best version I've had in the Bay Area thus far. Well as far as the exterior goes. The outside has a thin crackly crust that is the hallmark of a good Lechon. It is thin and rendered and golden like stained glass. And because they use all pork belly versus other parts of the pork, this is crazy fatty and juicy. So you have to be into that sensation. Real lechon you can pick from pieces from the leg, the loin or any part that suits your taste. Here it is quite isolated, just one part. I did find the dark meat underneath all that fat and skin to be quite chewy though and a bit gamey. After the first day, I just cut those out as it was not going to get any better. I'll have to try again to see if this is a 'thing' here. Even though I did find the first few bites to be really satisfying and juicy, I couldn't eat a lot of it due to the richness. Like after about 4-5 bites, I was done with it. Well done until another meal, I just couldn't do a lot of it for each meal. So it is great to stretch it out. And that almost $40 box of roast pork I got, it literally could feed 4-6 peeps if you had rice and another side to go with it. So for all those that think this is expensive, look at the big pic. So for as how indulgent this is, I think this is a decent value. Pancit ($7/box/3*) Got this to go along the pork order and it was just okay. Like how they use 2 types of noodles, one thickish like chow mein noodles and the other thin clear rice noodles. Made the bites interesting. But the noodles were on the mushy end and the totality of the flavor was way too salty for this dish. I had to cut the bites of this with steamed rice. I also wanted more fresh crisp veggies in this, as the pork bites were so fatty and I wanted some form of contrast. This wasn't it unfortunately. But the Lechon here is quite special, the exterior part at least. Special enough to bring to a gathering and most would be impressed. Went here last Sunday with my mom as she was craving some lechon! I discovered this from a friend he recommended it to me. My mom is from Cebu, so she knows what real cebu lechon should taste like and this place did not disappoint her. We got the lechon, dinuguan and longanissa. I also bought Mongo hopia and Ube Hopia (i was craving it soooo bad and it was a surprise that they have it here too). The lechon was $21.99/lb -- we asked for 1lb only but they ended up cutting about 1.5lb which was fine. The lechon was good, fatty and oily, but the skin was CRUNCHY! It's literally only the skin that I eat the most, but the meat itself was also good, it would be like a 4/5 lechon, its not the best best but it's better than the other lechon that I've tried around my area. The lechon sauce was ehh, wasn't anything special to it, kinda expected that it would be really good but it's taste just like Mang Tomas. The dinuguan was delicious, my mom really enjoyed it, as she said this is how the cebu style dinuguan is. Which is like, the meat is finely chopped and not like squares like the regular dinuguan? (hope that made sense lol). The longanissa is superb too, it was sweet, perfectly cooked and it paired perfectly with the vinegar sauce they give. First of all, I've been to Cebu a couple of times and without a doubt, Cebuanos do make the best Filipino lechon. I've had Zebuchon and Rico's and both were fantastic. That said, my expectations were pretty high when trying out this place. First of all, if you're going around lunch hour, be prepared for a long wait. There is only one line, regardless if you pre-ordered for pick up at a specific time. There was a line of about 20+ people and they only had one person chopping the bellies for each order. After waiting approximately 45 minutes, my order was finally filled, and we decided to eat on premises. While waiting patiently in line, even though I pre-ordered, there were some other customers that went directly to the cashier and the manager/supervisor accommodated them before the rest of us that waited in line. This caused some friction. Why accommodate this pinay Karen? What about the rest of us that pre-ordered and waited this long line? I voiced my concerns and by the time I got my food, they were apologetic. Overall, the quality of the lechon is far better than any other place within the bay area and definitely had a Cebu style seasoning to it. The skin was crispy, and the meat was tender and well seasoned. As another yelper mentioned, be prepared for a lot of fat. They serve the chopped Lechon in a styrofoam container and by the time we were a few minutes into eating, there was a 1/4" layer of fat that the pieces were soaking in. We had to remove the pieces and place them on napkins. Not surprised, because these are pork bellies after all, which is the fattest part of the pig. Leaving some constructive criticism and recommendations for the management: 1) Accommodate your phone orders first if they specified a specific pick up time. There is no sense in placing a phone order if you still have to wait in the same line that everyone else does. 2) Have two separate lines, one for phone orders and one for just walk-ins. Some signage would help and employees can do a much better job in communicating with customers that are standing in line. If you can't have separate lines, then perhaps an employee should communicate with the customers in line asking them if they pre-ordered for pick up at a specific time and accommodate them first. 3) If there is a really line that is going out the door, perhaps you should have more than one person chopping the lechon bellies. This will speed up the efficiency and not upset your customers. Staff needs to recognize this and adjust accordingly based on peak hours. Second time I tried to eat here. Their hours are clearly posted until 3pm. It was 2:35 and everything was cleaned and no food was available. The staff was all bundled up and ready to go. I brought this up to the lady at the counter and she tried to hand me a business card and said to call in the future. I told her that I didn't want it. I told her that it's not a good look that even if the door was unlocked and the sign said open, the restaurant was basically closed because there was nothing left. And they certainly did not make me feel welcome. There were some bundles of food near the register for people who placed phone orders, I'm assuming. I also spoke with another group of diners who just left and they agreed that they barely made it under the wire and that it was a ridiculous and inconsiderate way to operate a restaurant. They weren't sure if they would be back, since the only thing good was the lechon. I won't be back. Came here on a Sunday afternoon for lunch and decided to dine in with some friends. Coming in, the place seems clean and simple which helps with the ordering and seating process. You come in, place your order and choose from the selections they have out for the day. The obvious things to order are their Lechon and and pancit. For this order, we also decided to try out their Dinuguan, and tripe. Lechon was pretty good, a little too much fat for me at $22/lb but I am sure others are completely fine with it. The pancit was a great deal, we had a "small" and it was enough to feed 5 people for $7! At first bite, it tasted pretty good. I did notice after a few bites that I was super thirsty and realized that it was pretty salty. While I get their dishes are supposed to be on the saltier side (which is why you have to have rice with all their dishes) I just found all of the entrees with the exception to the Lechon to be too much salt. read more

It's been a few months since our visit to Bai in Hayward, and I wanted to share our experience. My husband and I were craving lechon and decided to stop by, since we've had good experiences in the past. As always, the place was clean and the service was excellent. The cashier was friendly and helpful, which we appreciated. However, we were disappointed with the quality of the lechon this time. We're not sure if we were served an older batch, but it tasted burnt, dry, and lacked the distinct "tanglad" (lemongrass) flavor it used to have--which we really enjoyed and considered part of what made their lechon special. It just wasn't the same as we remembered from their earlier days. Because of that, we're not sure if we'll be coming back to the Hayward location. We're hoping this was just an off day, so we plan to try their main location in Suisun to see if the quality is better there. read more
