First, let me say that I have high admiration for the individual who spits in the world's face and against all odds, advice and common sense decides to open up an eatery. These people are heroes in my book and carry with them a bigger set of balls than the ordinary reviewer - yours truly included. That said, allow me to set the scene. Last week I rolled into Springfield late in the evening with a coworker and checked the little Garman GPS for some local restaurants. Korean seemed to our liking so we followed the voice commands to a dark strip mall whose only sign of life came from the windows of an empty Hawaiian restaurant. Tired and hungry, we decided to give it a try. There was a lack of ambiance with the exception of a few dozen Hawaiian leis stapled to walls. My coworker ordered the Panko breaded chicken strips which were about 70% Panko and 30% chicken. If you have any dental work, I would avoid ordering this. I ordered the Maui pork. Let me try to do this dish justice. If you let pulled pork slowly roast all day in a crock-pot, then moved the pork to a colander and rinsed it under running water for 30 minutes to remove all possible flavor, place it into an earthen pot with warm water, you would basically replicate the taste of this dish. The slaw and macaroni salad which accompanied the dish were bland as well. I did enjoy the steamed rice and my can of diet Dr. Pepper, though. Sorry Kailanis, you just completely miss the mark.

Speedy's specializes in Hawaiian food. All meals are $8 (not 6.99 like on their website) and are made with local, fresh ingredients. I decided to go out on a limb for Taco Tuesday and get their taco's (the cook was awesome and gave me one chicken and one pork) and I didn't regret it. The tacos had a lot of meat (no skimping on the ingredients) and tasted really fresh. Loved the cilantro too. The optional spicy sauce was also amazing. Their fries looked homemade with cayenne and marash pepper and drizzled with honey (very similar to ones I've had at a gourmet restaurant so they were fantastic). I also got a complementary honey roll that was tiny but tasty. The only complaint I had was that they couldn't get my card to scan so I had to pay in cash and the pork taco was a little greasy. A lot of food for the money. I personally think it was worth the price. Generally, a 10/10 would eat again. A gem among food trucks in the area.
