fourth time at Botanist and 2nd at their bar! I had the cuban eight, it's earthy and aromatic, good balanced with rum. My friend got Rojina hightball, clear texture, sweet with signature Santori whisky taste. The miso caramel chocolate mousse was definitely my favorite! Especially the black sesame semifreddo, love the creamy taste! Better experience than last time:)
Late brunch at the Botanist on a Saturday. The place is known for their tasty cocktails but they also have a nice brunch with 2 drinks included. You are greeted with your first drink, a glass of sparkly wine, you can make it a mimosa with some orange juice, they also offer grapefruit juice to add in. With your glass in hand you head to your table to choose your brunch dishes. The menu is standard, you can get a starter, main and dessert or just starter and dessert. The price difference is not that big so we chose the 3 courses. To start I had the beef tartare, it was very nice. The BF liked his truffled mushrooms on toast. I really liked my main, the torched salmon. Loved the sauce and seasoning. The BF had the lobster benedict which was also lovely. One cocktail is included in the menu. I ordered the Pacific Rim gin and tonic. It was amazing! The BF had the Me time, also very good. Clearly an amazing choice of cocktails. To finish, the desserts were amazing. Really beautifuly executed. Very good place for a date or a boozy brunch with familly and friends
Had city course lunch set - steak + pan seared steak. Wife loved the squid, thought it was okay Steak was pretty good - onion jus + fried potatoes were really nice Drinks - cactus kiss and bergamot bubbles, latter was especially fragrant Service was attentive and prompt Ambience wise - great decor, nested in Fairmont hotel - nice upscale vibe
I had a wonderful visit to Botanist, a beautiful and friendly bar inside the Fairmont hotel on the Vancouver waterfront. Bartenders here really know what they are doing and are fun to talk to. I had a delicious champagne drink infused with bergamot. Or maybe I had two. Also had a good cheese plate and some great conversation. You need to stop by this bar if you're ever in Vancouver. It does not disappoint!
(4.5/5) I've been to Botanist a few times prior and enjoyed every time, especially for the wonderful service and ambiance. The restaurant is located in the Fairmont Pacific Rim and has one of the most gorgeous interiors I've ever seen. As per its name, there is lots of greenery inside with beautiful lighting and artistic accents on the ceilings. We came in to celebrate my gf's birthday last Saturday. As my friends were running late, I started with a drink. The drink program here is famous and I didn't expect anything less as my cocktail (what the flower) was fresh, zesty, but fragrant and sweet. The server was quite busy during this time, but when my party arrived, he immediately stopped over to take our initial orders. We started with a few appetizers. The pan seared scallops were accompanied by these delicious crispy and flakey potatoes. The grilled octopus was tender with the perfect amount of chewiness and paired nicely with the creamy polenta. The beef carpaccio was recommended by our server, but I do think I've had better elsewhere. It was beautifully played and I could see the ingredients made for fine textures, but I may just prefer a bit more acidity. My vegan friend also ordered the cauliflower. I got to try the vegan xo sauce and it was delicious! One thing I really like about Botanist is their ability to incorporate many varieties of garnish and side ingredients to make a perfect garden of flavours and textures. This elevates the dish and sets it apart from other places. After the appetizers, the server stopped by with some bubbles as a birthday treat and to fill the awkward pause between appetizers and dinner (the restaurant was quite busy that night). We were appreciative of the gesture and thought it was very sweet! As main courses began to flow in, we were surprised at how the dishes satisfied both our eyes and our taste buds. Among the dishes, the sourdough crusted chicken really impressed me. Although the chicken looked dry, it was actually moist and flavourful. I liked the truffle flavour and sweetness of the burdock. Another interesting element came from the duck breast. We believe it was mushrooms that had been sliced into paper thin pieces to imitate pasta. This was unique and interesting, but also quite enjoyable. My vegan friend ordered an off menu item and she described it as sautéed mushrooms and onions formed into a ravioli with some gravy sauce. It was good, but nothing outstanding. We finished our meal feeling very full. Dessert was a hill we had to climb over. We ordered 2 desserts, one vegan and one regular. The server suggested the squash and pear terrine as we didn't want something too sweet. Oh how amazing it was! The outside was made of a thin cookie that reminded me of a specific egg roll snack I used to enjoy. Inside contained the subtle sweetness of the squash cream. And finally, mushroom ice cream to finish! The ice cream was mostly sweet with a subtle aftertaste of mushroom that I can't quite describe, but it's definitely a must-try for more open minded and adventurous dessert lovers. The final bill was hefty, but the experience, precision, and care put into every element of the night made it worth it for a once in a while splurge. Beautiful food, drinks, and ambiance - what more could you ask for!
The bar at Botanist is one of my favorite bars to visit whenever I'm in Vancouver. It is located in Fairmont Pacific Rim hotel. Even if you decide not to drink or grab a bite there, it's worth checking out the hotel. The bartenders are always personable and attentive. Looking forward to returning to try out their main menu. So far I've only tried the desserts and those have not disappointed.
The botanist was refined from the moment that I walked in; exactly what I look for when going out. I was lucky enough to be seated in the booth right next to their huge open kitchen. It truly became part of the experience, being able to meet into all the different stations and watch the chefs at work was such a pleasure. The best part of my meal was the lobster risotto. It was creamy and rich. You could tell that the ingredients were fresh and natural. There was a high level of detail, quality, and creativity from the kitchen. They definitely seem like they're gunning for Michelin star and with their standard of service, I hope that they get it.
Had such a great time! We had made a reservation, thinking it was for the bar. But their cocktail bar is first-come, first-serve. Reservations are for dining. So we ordered a couple small bites, while waiting for seats to open at the bar. Their appetizer sourdough bread was amazing! Made in-house, and a sizable loaf. Beef carpaccio was delicious. My husband and I were fighting for the last bite, haha. Flavors were incredibly well-balanced. Scallops were ok. Think they tried to do an Asian tom yum flavoring, which didn't work well, imo. Took away from the scallop flavor. Now, the experimental cocktails are where it's at! Pricey, but worth. Because these were some of the most elevated drinks with lovely small bite pairings we've ever had! Really, what an experience. And I wanna go back just to try the rest of the cocktails. ;)
Incredible. If I have anything less than complimentary, it would just be about their choice of artwork in the private dining room. A little bizarre. That aside, every dish was perfect, the timing was spot on, and their wine and cocktail list was extensive. The service was impeccable, but we had the private dining room with a fixed menu. Highly recommend!
Cute spot with a private room. Delicious breakfast here. Clean and tons of greenery. Good cofffee and solid breakfast. Worth a visit or for hotel breakfast. Reasonable prices for a fairmont. Bacon was American bacon. Eggs are decent portioned seemed like 3-4. The toast was the best by far. Slightly moist and really tasty with butter!
Recently I went back to Botanist for the second time after about six years. The duck breast had been a dish I've been thinking about ever since, and I was so excited to see if it was as good as I remembered. Located in the Pacific Rim Fairmont Hotel, Botanist is a beautiful restaurant in a beautiful hotel. From the second you walk in, you get transported to a dimly lit dining room, with modern and sleek architecture and greenery everywhere you look. Although this vibe may be intimidating, the staff from the hosts to the servers are extremely hospitable and kind. When we sat down our server was very friendly and helpful with recommendations and descriptions of anything unclear on the menu. For drinks, I went for the Roji Highball. The drink was good, but not great. There wasn't anything super outstanding about it, but it was refreshing and citrusy while still having a prominent alcohol taste. I was surprised to learn that Botanist ranks 26th in the 50 Best bars list for North America. However, I believe there is a different drink menu in the dining room versus the bar, and I don't know if these menus are strictly enforced. In terms of food, we started our meal with a few slices of rye bread and butter. The butter was great, but I wish the bread came out warm and a little fresher. It was actually slightly under room temperature which was a bit off-putting. The ratio of bread to butter was also off, with significantly more bread than butter. We had to ask for a little more butter. For our starter, we went with the pan-seared scallops. From the second I saw this on the menu I knew I wanted to order it. The concept was unique and stood out to me as something I needed to try: tom yum broth with western style seared scallops. The scallops were amazing. They had a very subtle initial bite while having a delicate chew afterwards. Perfectly cooked. The tom yum broth was also good. Nice and tangy, with a slight kick, and a pleasant herbiness. However I had some issues with the overall dish. The dish is very temperature sensitive, and the tom yum is served separately table-side. Even with this effort, I thought the broth came out a little too cold, also slightly under room temperature. Of course if it is too hot, the broth is overpowering and ruins the taste of the scallop, but if it is too cold it's also distracting and unpleasant. Because of this, it also felt like I was enjoying the two components separately. They were both good on their own, with the intense flavor of the broth being its saving grace, but did not come together to compliment each other in the way I hoped they would. Even if the broth was warmer, I still think there might've been too much of a clash between the tom yum and scallop. I would have liked a little creaminess in the tom yum, as it would add a nice richness to bring the dish together and make the tom yum feel more like a sauce for the scallop instead of a broth severed separately. The whole reason why I went back to Botanist was because of the duck. And after my first bite, I was elated to see that it was just as flawless as I'd remembered. The skin is so perfectly crispy, not too crispy, but melts together beautifully with the tender and moist duck meat. The meat is so soft, it's more tender than most filet mignons. Although the duck is dry-aged, there is no funky flavor or gaminess. The flavor remains very pure and juicy, perfectly complimented by the light brown butter sauce. The portion of duck is very generous, and comes on top of mushrooms, red cabbage, and spätzle. All of these components contribute nicely to the dish, but the duck remains the star of the show. To this day I still believe this is the best duck I have ever had and will continue to compare all ducks I have in the future to this. Overall I had an amazing experience. The service was attentive but not too in your face. There was plenty of attention to our water glasses always someone to ask if we were enjoying our food while still giving us our space during the meal. Although the meal in its entirety wasn't perfect, the duck breast is really special, and something that I will remember for a long time. And while other dishes are still interesting and delicious, I would highly recommend a trip here just for the duck. Botanist is a beautiful restaurant that really leaves a lasting impression from the atmosphere to the service to the food.
We came here for my birthday dinner and this place is gorgeous. Plants everywhere and lots of nice, small touches. There was even a pianist during dinner! Our waitress was incredibly friendly and kind and really took the time to explain the courses to us. We did the tasting menu with wine pairings. Everything was delicious with the exception of dessert, though I found the portion sizes were on the smaller side. The wine pours were incredibly small, even for a tasting menu. The price is rather extravagant so this was definitely a once in my life experience.
Named one of the Top 50 Best Bars (North America), this place deserves the accolades. I went here a few minutes after 5pm on a Saturday and there were a few parties already seated at the bar, but we were seated immediately near the center of the bar where we get to see all the action. It gets busy quickly within 30 minutes of opening. Bar is walk-in first come first served, while the reservations are for the dining room. We tried the first 3 experiential cocktails and the What the Flower as recommended by the bar list. We also got a foraged mushroom tagliatelle from the dinner menu that was phenomenal - pasta was al dente and the flavors are bold and rich. All experiential cocktails come with a food pairing bite and a non-alcoholic spumante for palate cleanser. Water of Life No 1 - Pale Blue Dot - my friends call me Mr Worldwide with my travels, and I was largely appealed by the globe glass, so I decided to try this. This drink has herbal notes and blue in color from blue algae. It looks like a science experiment. "The world is your oyster" as they say in the menu, which directly matches the food pairing that comes with this drink - an edible oyster shell (cracker) with caviar which is quite good. Water of Life No 2 - Ring of Fire - my favorite of the 3 in presentation and flavors. This one has the volcanic effect from the dry ice and the cup has a hole in the middle, shaped like a volcano, for the amplified effect. Surrounding is some material that can catch on fire so when it is torched, it has beautiful small dots of fire moving around resembling lava. I loved the fruity and strong flavors of the drink, and the pairing is a wagyu that is juicy and tender in itself. Water of Life No 3 - Raincouver cocktail - one of the more popular ones and the one that first caught my eye. This was is very mild and a bit watered down, but still has the complex notes that come with the experiential cocktails. The foam is a cherry blossom infused foam that condenses into the cocktail. The placement of the foam was a bit poor so a lot of the infusion dropped to the table. But it was my still my least favorite of the 3 due to the flavor profile. The pairing is a fried chicken bite that is quite good, but a bit overpowering from the delicate flavor notes of the drink. What the Flower - I was drawn to the electric daisies which are just buzz buttons (the flowers that numb your mouth if you take a bite, and it changes how your mouth perceives certain flavors). It did not evoke the jumping or pop rocks or tingly effect so I was a bit let down by the drink. It might be a bit more subtle but I didn't notice at all. Service is good as the bartender took the time to explain the cocktails and did wonderful presentation and show of the experiential cocktails.

Finally came back here for dinner and was very happy with the outcome. People have to realize that fine dining is also about creativity and innovation. For restaurants in Vancouver, this one is one of the top places for that in my books. Highlights: -Mustard Crusted Chicken was honestly the best dish! Perfectly cooked, loved the rye berries and delicious -My mom got a "sorry your meal wasn't up to our standards" caviar dish & it was tasty as heck! I hope they put it on the menu. - Apricot Sorbet- phenomenal I could have ate a whole bucket of it. Tart and sweet at the same time. The pistachio sponge was also interesting in the chocolate taco. -Meyer Lemon Cake was the winning dessert. It had lots of flavour and multiple cooking techniques. Can't go wrong with lemon & blueberries for sure. -Lillilemon Cocktail- tasty and bright Medium: - Cavatelli- perfectly cooked pasta but it was pretty excessive on the pine nuts. I feel like it needs a fresh element like blistered tomatoes or something. - Scallops- really nicely cooked but apples & scallops were are interesting pairing. I liked it. -Lamb Saddle- Colourful plate, liked the sunflower risotto Low: -Chocolate Porter Cake- tasted more like gingerbread and wasn't that great in my opinion. read more

Every now and again, a new restaurant opens up in Vancouver that seems to nail it. When I first saw pics of Botanist (located on the 2nd floor of the Fairmont Pacific Rim), I knew this was going to be one of those restaurants. Unfortunately, it's taken us this long to actually visit. Botanist is interesting in that the restaurant has a number of different spaces to dine in such as the bar, the garden terrace, dining room, and lounge. For our anniversary dinner, we wound up at the garden terrace and were surrounded by greenery and lots of natural light streaming through the windows. We started our meals with some drinks... the Poetry in Motion ($16) made with Vodka, Grapes, Elderflower, Rhubarb, Lemon and Bubbles as well as the Garden of Qarth ($16) made with Mezcal, Verde Cordial, Lime, Ricard, Sparkling Water, and garnished with fresh Fennel. Interestingly, their drink menu gives a tag line for each drink - the Poetry in Motion was "Dance like nobody's watching" and the Garden of Qarth was "Seeds, water, soil and sunshine, celebrate the garden". First up was some complimentary house-made fougasse bread and butter. This type of flatbread has slashes cut into it which makes it resemble an ear of wheat. We shared the Pan-Seared Scallops ($22) as an appetizer. This dish, like all of their dishes, is beautifully presented with perfectly seared scallops accompanied with red onion, green apple, guanciale (cured pork jowl), and modeira jus. The large piece of Seared Sablefish ($42) was a bit difficult to see as it was hidden under the puffed tapioca which was used to carry the fermented vegetables. Served tableside, the waiter poured the white onion nage broth onto the dish which went quite well with the buttery sablefish. I suppose they perched the puffed tapioca on top of the sablefish to keep it nice and crispy as once it touches the onion nage, it absorbs the liquid and turns a bit mushy. The Roasted Rib Eye ($49) was amazingly tender. Served with wild mushrooms, potato gnocchi, crispy bone marrow, and natural jus, each bite just melted in your mouth. A nice touch was that they presented us with a hand written anniversary card at the end of our meal. We ended our meal with the Croissant Perdu ($12). In France, French Toast is called pain perdu which means "forgotten bread". I suppose the same concept applies here but with croissant instead of regular bread. But don't expect to see anything which resembles a croissant in this dish. Instead, the delicately sweet graham cookie ice cream, along with the raisin compote, was served within a circular graham cookie ring on top of the croissant perdu. Our waiter then poured the calvados mascarpone drizzle over the ring. Visually stunning but, even more importantly, amazingly delicious. Not sure how they manage to present such visually appealing and delicious dishes in such a stunning atmosphere while remaining unpretentious but they really nailed it here. read more

Pretty place, great service, amazing dessert and drinks. I went once for night time drink / dessert, and once for breakfast. 1. Night time drink / dessert: - What Flower drink: sweet and not too stiff, pretty - sorbet and pistachio sponge cake: beautifully presented, has a deconstructed feel since individual elements were next to each other. Creative and yummy. - service: I was seated at the lounge, and the server / bartender was very polite and checked on me several times. 2. Breakfast: - Botanist Benedict: the crab tasted great, the cold skinned tomato was a fresh touch. But breakfast was definitely not as creative as the dessert, felt a bit dialled in. - fresh grapefruit juice was a lovely touch - service impeccable, the ladies at the front entrance especially sweet. Overall a fun place to visit, and the retro decor feels youthful and enjoyable. read more

Botanist has been on the top of my list of restaurants to try in Vancouver. I've heard so many good things about the food and the ambiance/decor I had to go see it for myself. I went with a group of 3 girl friends for brunch on a Saturday afternoon. We made reservations online with ease and tons of availability. We got seated right away and was greeted by our server and offered water right when we sat down. The menu had a good variety of lighter to heavier meals and from savoury to sweet. The restaurant itself is stunning, the decor is so modern and chic, definitely an Instagram worthy place to go. We all wanted to try everything as it all sounded amazing so we opted for 4 different dishes to share. Salmon Tartine - grilled sourdough, herbed neufchâtel, pickled onion $17 - Salmon tartine was light and refreshing and not overly salty as sometimes with smoked salmon it can be. The bread was nicely grilled with good flavour and not too hard and crunchy. Brioche French Toast - dulce de leche, caramelized banana, amaranth $18 - Loved the brioche french toast. Flavours were very good and not overly sweet. Banana's were nicely caramelized with a sugar crust. This was definitely my favourite dish. Cinnamon Pancakes - cinnamon sugar streusel, candied pecans, cream cheese glaze $18 - The pancakes reminded me of cinnamon rolls. I really enjoyed the toppings and idea of the pancakes. However the pancakes itself was not of the consistency I like personally. They're your standard thinner pancakes, if you're looking for fluffy pancakes these are not it. Peameal Bacon Benedict - house-made peameal bacon, hollandaise, crispy potatoes $28 - The benedict didn't really wow me. It was a pretty standard benedict - egg was cooked perfectly and the hollandaise sauce was a good consistency and great flavour. However overall I didn't feel like it was worth $28. The peameal bacon - although house-made wasn't anything out of the ordinary. The only part of the dish I really enjoyed were the crispy potatoes. They were nice and crispy on the outside and fluffy on the inside. The seasoning and parm sprinkled on top was delicious. Overall the food itself had good flavours, I wish it was a bit more unique/stand out given the location and overall environment of the restaurant. The plating could use some work as it didn't feel as pretty as the restaurant. I'd like to go back for dinner at some point as the menu seems a bit more unique. But service was great, portions were fair but prices were a little steep. read more

My wife brought me here for my birthday. Wow. The restaurant is just beautiful. Also, I was greeted with many birthday wishes from the host stand at check in to our table. I even got a birthday card signed by the front of house staff which was wonderful. Such great service and attention to detail. Everything on the menu looked so good. I couldn't decide so I ordered the tasting menu for both of us. The six courses were delicious. I enjoyed every dish. They all had their unique flavors & stories, even the bread has a little story. The servers explained every dish. The dish that stood out the most that night was the avocado sorbet served with shrimp. It totally caught us off guard. My wife, who is not a fan of avocado, said it was her favorite dish of the evening. Dessert was also very surprising. It was London fog poured over a nest of phyllo "vermicelli" that was resting on mascarpone balls and citrus fruits. The presentation was lovely, it was not overly sweet, and tasted better with every bite. I thought it was a very smart dessert. Why the four stars? The space is too loud. It seems as though I was yelling at my wife even though we were just across a small table from each other. The acoustic in the space really echos with noise from the lounge below and the piano in the restaurant seemed to be playing extra loudly - maybe to drown out the noise from the lounge? Not sure what can be done. Either way. We look forward to coming back soon for the food & excellent service. read more

This restaurant at the Fairmont Pacific Rim was called Oru previously. Seems like they've added more plant like decoration since my last time here. Went here for lunch and we got the breakfast menu. We ordered the Brioche French Toast, Crab and Avocado Benedict, and Green Tea. The French Toast's plating seemed a little bland and boring. Think they could have come up with a more presentable way of plating it. The slices of bananas had caramelized sugar on them, which was a nice touch. I liked the dulce de leche as it wasn't too sweet like maple syrup but was just sweet enough. Overall it was one of the best French toast I've had in my life. As for the Crab and Avocado Benedict, real crab meat was used which gave it a good flavour. I dislike Eggs Benedicts typically because of the blandish flavour and not a big fan of the Hollandaise sauce, but the Hollandaise sauce wasn't overwhelming and the flavours were excellent. The green tea came in a glass French press. I think having tea with sweet/sugary breakfast is always a good pairing. I definitely give this place a thumbs up. I'd like to come back to check out their dinner menu sometime! read more

Came here for brunch and felt prices are a bit high, but considering it is inside Fairmont Pac Rim, what do you expect. Tried the avocado toast, beef ragu, crab Benny, beef tartare, and the French toast. All items were presented nicely and tasted delicious, especially the ragu. Very glad we ordered that even though it's a bit heavy for brunch. Wouldn't order the avocado toast again as it was nothing special. The French toast was delicious though, would recommend that. My parents took me to the Fairmont for a little staycation to celebrate my birthday last month, so we decided to finish off with a birthday brunch here at Botanist. They had a $60 brunch menu with two drinks (which I opted for mimosas) and two dishes per person. I really enjoyed my beef tartare and crab benedict so I would recommend those. Not sure where to start because everything here is amazing. Came here with my family for dinner and it exceeded my expectations. I knew everything here was super aesthetics through Instagram and social media. I didn't expect the food to be fantastic, but I knew it would be good. I made a reservation for dinner and arrived there an hour earlier because I was already in downtown. Had nothing else to do for an hour because the malls and shops were already closed. I went in with my family to see if we could get seated earlier. The staffs were very helpful and we were able to get a seat a lot earlier. The moment you walk in, it smelled really good and smelled like you are at a garden. Everything from floor to the ceiling is very well furnished. Everything just looks very damn good. They also help you hang the jackets in the front like a coat check. Got seated and we decided to do family style sharing for dinner. I believe we ordered almost all the dishes on the menu. The complimentary buns at the beginning was my least favourite dish because the buns were cold when they came out. The butter was good though so it kind of made up for it. We ordered two foie gras and two scallops to share for appetizers. Scallops was similar to a Chinese fusion XO sauce seared scallops. It was good and seared to perfection. The foie gras was also really good and good flavour to it. The foie gras pie for that dish was amazing and the crust outside was crispy and flaky soft. It was a very unique dish and I really liked it. For dinner, I had sable fish for myself. It was fantastic and perfectly cooked. I tried the salmon, duck, lobster and they were all amazing. The plating for all their dishes are super epic. Nicely plated and very creative. All the dishes were good that day except for my girlfriends duck entree. We felt like it was too salty and the duck was a bit soggy for the skin. She also said that along with my brother. However, it might be an off day and it happens. May be next time, it will be better when she gets the duck again because that's her favourite dish. She prefers to get duck at all the restaurants we go to. However, we still liked everything else for the rest of the entrees. Good flavours, seasoning and very unique style for all the dishes. Then lobster one displayed the lobster in its form with its meat and it looked very nice. I had trouble distinguishing the sauces on the dishes and what I was having. I love it when that happens because that means it is something special to me and I have never tried. Overall, I will definitely come back and I can't wait for the next time I come back here. I believe the menu is very nicely done and very well priced. Dishes look amazing and very unique. The restaurant not very loud and it's a very good atmosphere for dinner. I know their brunches are amazing too and I will try that next time. Overall, I highly recommend this place to everyone. I think it will be very good for a date or just hanging out with friends chatting by the bar. Just because of one out of the eight dishes we had didn't meet expectations, I still believe that this place still has a well deserved 5 star. I had made a reservation to Botanist for my 18th birthday because I felt like treating my closest friends. This was perhaps the fanciest dinner I've had in years. The restaurant is located up the stairs of the Fairmont, on the second floor. When you walk in, you're greeted with the most luxurious set-up: I'm confident that my friends and I took several hundred photos that day and I'm sure that the staff was used to it. Everything was beautiful. We ended up getting different things, and I forgot to take pictures of what my friends ordered; one of them ordered the Watercress Salad, and the other, the Cavatelli. I got a little taste of both, and the Cavatelli is fantastic. Super creamy, and my friend said it was incredibly filling despite the appearance of the portion given. Botanist was very accommodating when it came to dietary restrictions. I asked the server if there were any vegan options on the menu (I'm dairy-free and mostly plant-based) and he patiently walked me through what I could order. I ended up getting the Mustard-Crusted Chicken without the chicken and with the other ingredients amped up. Sounds a little pointless, but the dish was flavourful; the red wine emulsion sealed the deal. The waiter also courteously let me know that there was an egg wash used on the fougasse bread (which, by the way, is amazing). The last thing we ordered was the Roasted Squash, which was easily my favourite part of the entire dining experience. The entire dessert was vegan, but you could not even tell the difference. The combination of the ube chip with the pumpkin cake and chai tea sorbet was exquisite; the cashew cream at the very bottom was a nice touch as well. Don't sleep on the dessert menu! Overall, the service was professional and the ambiance was relaxed. I never felt rushed, and they made my birthday a very calming and restful experience. They even wrote me a birthday card and put a small candle on my dessert plate. The total came up to around 91$ for all of the above. Come to feel pampered! read more

The decor and service here is amazing. I've only been here for brunch and drinks, but everything has been delicious. This is definitely the kind of place you want to take a date or visiting friends/family. Drinks wise, everything is tasty. There are 3 specialty drinks that you can only have at the bar, but there is a not-so-secret semi-private booth at the bar that you can also order food at. Crab and Avocado Benedict: It's expensive for $28, but these are the best eggs benny in Vancouver. I think they make their own English muffin because it's so good. Wagyu Burger: It's good if you like blue cheese, and you can really taste the meatiness of the burger. Avocado Toast: Again, it's a bit pricey for $16, but it's super filling, so it can be a stand alone dish. Plus, their house made bread is great. I prefer the brioche french toast over the cinnamon pancakes, just because the pancakes are a bit drier, but both are good sweet options. They also make a great almond croissant. read more

All of my 5-star ratings mean that I would never hesitate or have second thoughts on visiting a particular restaurant, and Botanist is undoubtedly one of those spots. The atmosphere is upscale, yet warm and welcoming. The earthy tones of the plants compliment the sleek marble accents beautifully. They even have a private table on the balcony which looked like it was straight from a fairytale. The service was impeccable! We were about 30 minutes late for our reservation, and the restaurant was closing in 15 minutes, yet the hostess warmly welcomed us with, "We're glad to see you!" and promptly seated us. I have absolutely nothing but amazing things to say about this restaurant. Onto the food. Poached Hen Eggs: Literally one fo the most creative, yet simple dishes I've ever had. The different combination of textures and flavours just worked with one another flawlessly. It was beautifully plated! All their dishes are a work of art. Arctic char: The skin of the char was lightly salted to bring out the flavour and cooked to a perfect crisp. Nicely paired with the wild rice, as this was sour in comparison to the saltiness.. I didn't think this dish could be topped, but it was! Sablefish: I'm a sucker for sablefish and this one did not disappoint. Buttery, tender - one of my favourite dishes here so far. I actually really liked how the tomatoes were cooked, as they were juicy and packed with flavour. Perfect setting, service and food. I will definitely be back to try their entire menu! read more

I walked into heaven from the moment I stepped into the lobby of the hotel (cool upscale bar area), to the visit to bathroom with all marble floors, and finally -- the most amazing meal. The restaurant is on the top floor of the Pacific Rim hotel in downtown Vancouver (go up the stairs). We visited from Seattle, and I made reservations for my boyfriend's birthday - it was literally one of the best dinners I've had! This is one of the few restaurants that I can say price does mean quality - and you actually pay for what it is! Very good portions that will leave you full. Pros: - Intimate service from waitress; she was friendly and made great recommendations - Starter bread is amazing, and it's complimentary!!! - Best dish of the meal was the appetizer (pasta/mushroom, is the most popular from the waitress); tip - you can eat this as a main course ($22 CAN) - Loved the entrees also (see pictures) - Live music - Great ambiance; love the decor and fresh plants all throughout - Upscale restaurant but people came dressed casually was ok Cons: - Parking in hotel not validated ($22 CAN for 2 hours); you can valet for a few bucks more though LOVED THIS PLACE! read more

I had the chance to stay in a suite at the Fairmont Pacific Rim the past week and enjoyed my time greatly. So once I got everything set up, I made reservations for Botanist. Everything was exquisite The ambiance is perfect. I honestly just want my house to have the same interior design. Lots of plants and marble countertops! It's a great place to bring people who visit Vancouver or if you want to impress someone special person. It is pricier then most places but nothing disappoints. Food was delicious. For appetizers, we ordered the foie gras (interesting with the waffle), pan-seared scallops (i love scallaps) and bison tongue (texture was not tough). I had the seared sablefish for the main. I thought the puffed tapioca was very unique. Never tried anything like that before. The meyer lemon cake was very moist and soft. Will definitely come back. Maybe for brunch next time :) read more

We came here last night for their six course tasting menu for $108 per person. I'm a bit torn writing this review - the ambiance, décor and plating were all really good. However, although the food was good, nothing really stood out or made a lasting impression on us. For the price point, we were really expecting a bit more. 1. Corn pannecotta with shaved truffle (2.5/5 stars) Interesting and unique flavours. I was hoping for more truffle flavour. 2. Ceviche (3/5 stars) The ceviche was fresh and delicious. I wasn't a fan of the cold bits of... I'm not even sure what it was. It felt like dry ice. 3. Lobster tail (4/5 stars) This was one of my favourite dishes of the night. My only complaint was that the lobster tail was slightly over done and turned a bit chewy. The foam and fennel puree paired really nicely with the lobster! 4. Sturgeon (4/5 stars) My other favourite dish of the night. The sturgeon was cooked perfectly. 5. Bison (3.5/5 stars) The bison was cooked nicely but lacked some seasoning. 6. Chocolate mousse with black licorice ice cream (3/5 stars) I'm not a fan of black licorice but this was really subtle and yummy. We thought the portions were fair and we were very full by the end of the six courses. We also thought every plate used the ingredients creatively and the plating was absolutely stunning. Again, everything was nice but nothing made us go "wow!" Service was decent and for the most part good, however there were times when our conversations were interrupted by our server coming in between us to set new silverware - which I thought could have been simply avoided by placing on the other side of us... Formalities?!? The consensus at the end was that it was good for a one time experience, however we would probably not return. read more

I'm not sure I can put enough WOWs in this review to explain how I really feel about Botanist. IT WAS ABSOLUTELY WONDERFUL. This was the coolest restaurant ambiance I've ever been to. I took my sister who's a florist there and she was overwhelmed with the beauty of the restaurant. The design elements throughout are stunning. Even if you can't eat there (it's $$$$), I would recommend just walking inside to check it out. Service is pretty slow, but I think that's part of the experience here so it didn't bother us at all. They also asked us when we arrived if we had any time constraints, since we said no I think the service was pretty good overall. Now, LETS TALK FOOD (and drink): They have a small cocktail menu (7 drinks). We saw the name "Poetry in Motion" and immediately ordered it, how could you not? It was sweet and wonderful! The Vancouver #2 is also highly recommended. The B&T is light and refreshing, more like a small amount of Gin and a lot of Tonic but it was still very good and beautiful. YOU ABSOLUTELY MUST GET THE BEEF TARTARE. It's required. If you don't like it let's have a conversation about it because it's the BEST beef tartare I've ever had. the smoked egg yolk melded perfectly with the parmesan foam, mmmhhhmmm. I would literally go back to this city for this dish. Poached Hen Egg is probably one of the most stunning plates that's ever been placed in front of me. Botanist is an absolute gem and has the potential to truly become a Michelin rated restaurant in the future . Not only is the food great, the service itself is impeccable. The reason for a 4 star instead of a 5 star is, as a Fairmont employee there would be a few things that an auditor would dock the restaurant for. The first would be when making reservations, I called several times during operating hours and no one would answer. It would be a hit or miss getting a live person on the line and when placed on hold was never asked to be placed on hold and would be placed on it for more than 4 mins. Ultimately ended up making a revelation on opentable. Secondly, the time between each course was a little more extended than usual and had us almost ask our server about the delay (not hid fault as, Chris is a modeled server that every restaurant should strive to have). Lastly, I was a bit disappointed about the flavoring of the salmon I ordered as it was bland and oddly enough did not compliment well with the entire entree. Environment/Decorations- modern, open, airy, classy. Color scheme of restaurant- light and soft colors such as creme, pinks, whites with a hint of natural flare ( plants etc) Live band- evenings from 5-10p. Aaron was an amazing live performer who did a lot of acoustic covers. Very relaxing and soothing to hear. Listed below are the items we ordered. Drinks: B&T Bruised berries (mocktail) Appetizers: Watercress salad (was disappointed in this. The salad was had a very sour taste and did not taste the goat cheese as much as we would have liked). Scallops (were cooked just right and tasted amazing. It comes with 3 scallops so keep that in mind) House made bread with butter (loved the presentation and the grainy soft texture) Mushroom pasta ( forgot the name of the dish as they brought this complimentary. Was by far our favorite dish). Entrees Lamb (the flavors blended really well together. This was our second favorite dish of the meal. The lamb was cooked to perfection and you could really indulge in the deep smokey flavor of the lamb) Salmon (was bland and did not compliment well with the ricotta, asparagus etc. however the ricotta Pasta and asparagus was cooked to perfection and delicious on its own). Dessert Meyer lemon cake ( loved the presentation and the brûlée part of the dessert. We wished there was more of the brûlée. The ice cream paired very well with the cake. Only negative was how sour what I believed to be apples). The most positive aspect of our dining experience was our server Chris. Chris was attentive, personable, and extremely professional. He checked up on us the right amount, made personal connections allowing us to feel really welcomed and hands down one of the best servers I have ever been served by ( this includes several Michelin servers). Make reservations for dinner beforehand. The staff were accommodating as our group of girls came here for dinner and all of us came late, but they still sat us and helped us store our Halloween costumes! The atmosphere and decor was very classy and just as the name make it to be, the theme of the menu and decor were related to plants and the garden. We all ordered drinks from a list the girls' favorite drink is a cocktail with a flower floating atop. Expect the prices to be $15 - $25 for an appetizer and $36 and up for an entree. You can find top quality dishes and ingredients here. We ordered the Wagyu Beef Steak and Duck Breast, all plated carefully and prepared in a unique way. You can really taste the fat on the steak and the duck was paired with a yummy sweet and sour sauce and vegetables. My friend had the chicken and it was prepared in a way that infused a sort of unique flavor into the meat, so it was different than how it is normally done! Finally we also ordered the Beetroot cake with meringue. Plating was absolutely gorgeous. Expect to spend $60+ at this restaurant per person, but you'll get a fancy and unforgettable experience. read more

This place has a fabulous environment! This was my first time there and their brunch is one of a kind experience! Punched eggs were cooked to perfection and all main entrees were amazing! If I could try everything on the menu in one sitting, I would! Their brioche French toast doesn't need any words! It just melts in your mouth! Mimosas were so good that it was very difficult to say 'no' to the second round. Oh, they are also made with a freshly squeezed orange juice which was just like a sip of fresh air!
