The restaurant is clean I can say that much. The food came out quick but it was hot. The catfish was CRISPY . I was in town for a Veterans seminar/career fair and decided to look for something prior to heading back to the Cavazos area. I would definitely come back. The only thing I didn't like was the restrooms. Not a fan of public restrooms but I had my purse with me and had no where to put it. The service was good, no problems and I ate inside. Customer service is on point. Very nice cashier and food runner. Kept the place clean and checked on us several time. The place has 3 sitting areas. 2 inside and 1 outside. Restroom are on the outside around the building. Unfortunately all of the food was pricey and didn't taste good at all. Hush puppies were over cooked. The crab stuffed jalapeños, came with bacon wrapped around it being very tough and didn't taste crab at all. My husband ordered the Jambalaya but it had Bay leafs in it that were inedible and the chicken was chewy. I ordered the Korean wings. They were so pitiful. lol they had almost not meat on them and the spicy dust was just sprinkled on one side of the chicken wing making the flavor not consistent throughout. How we got here: Union Hall was closed. I love to go to Union Hall when I'm in Waco because everyone can get what they want. Cajun Craft came up on my maps as a restaurant that wasn't too far away. I checked Yelp, as I always do, and the reviews were great. Pulling up: The outside appearance is most definitely an eye sore, but due to the raving Yelp reviews, I figured this was a hole in a wall and the food was about to blow us away. Red flag number one. Cleanliness: The restrooms are outside so as we were waiting to use the restroom, an employee walked out of the bathroom with an apron on. After we used the restroom, we noticed there wasn't any soap. The employee that just walked out of the restroom with the apron most likely didn't have soap either. There wasn't soap in either restroom. Red flag number two. Food & Ordering: You order your food at the counter and they'll bring your food to you. The food took a while for them to make and for us to receive our food. After the long wait, we were eager to dive in and eat. I ordered the Bayou Etouffee and the rice was overcooked and mostly warm, with some bites being cold. The roux wasn't good at all. It tasted like something that might have been frozen or bought from the store where you just add water to a mix. It was pretty horrible. The boudin balls were okay. This place really deserves 1.5 stars, but I gave it 2 stars since the food was edible. read more

I was in the area and Cajun Craft came up as a highly-rated restaurant on Google reviews. I was looking forward to trying it out because of this. Cajun Craft was easy to find, with a small parking lot in the front of their building. As I entered I was greeted immediately. The lady was very friendly and helped me select some food options. She exhibited great customer service. I ordered the Gator fried basket. The gator was very good and tasted like flavorful fried chicken. The remoulade sauce was good as well. The hush puppies were good too but they only put two in an $18 meal! I didn't try the ranch. HOWEVER, the portion was too small. As you can see from the picture 10 very small pieces for $18! I also ordered a catfish fillet at $5 this was also small. I was very disappointed. Luckily it tasted good, but not worth the small portion size. The Gumbo was average in flavor however the small portion was $6 not bad. The mashed potatoes with boudin gravy were good. Nothing was spectacular here. If the portion size was larger I could recommend this place. I would pass unless you want to see if they have increased the portion size since my review. read more

In town for work, a coworker of mine invited me to join them for dinner. Cajun food is just a bit out of my wheelhouse, and I typically do not have a knack to enjoy the New Orleans type food a lot of people love Sorry, I know that is a bit lame. But, I did take the invitation and knew I could make something on the menu work for me. I punched in the address to my GPS and made my way. It brought me to a sketchy part of town, but that did not deter me. I know these are the type of joints that make for the best food. I parked and strolled right in. A small little cozy dining area, not really outfitted for big crowds. My coworker was already enjoying her food. She had a plate of fried catfish and other things. I walked up to the counter and perused the menu. Again, not for the exotic tastes of New Orleans, I opted for the fried chicken plate. A side of fried okra and red beans and rice to pair it with. I sat down and joined my coworker who was busy going to town on her plate. She did mention the fried catfish, hushpuppies, and sides were delicious. While she was not looking, I swiped a hush puppy. It was indeed delicious. My food arrived and I got right to it. Let me tell you, I am here to tell you the fried chicken is on point. Piping hot, crispy and seasoned well, super juicy and moist. You can tell this place does not just cook food, but they put love into their food. The fried okra was crispy, and the red beans and rice were delicious. My coworker and I finished, and took off. Both of us were very satisfied. If you are in this part of town, give this little hidden jewel a try. Great food, friendly staff, and the price was actually decent too. We waited over an hour for our food. The gator came out cold. We had to pay 54 cents for another ranch dressing because the little bit they included wasn't enough to even cover the lettuce. The decor is cozy and the staff is friendly and accommodating, providing fast service. However, the food is definitely the shining star of this establishment. That is one of the most delicious meals I have ever had. We were told the fried food was not dropped until it was ordered and you could taste the freshness. The crawfish etouffee had just the right amount of spice without overpowering the richness of the other flavors. And the catfish was crispy on the outside and flaky on the inside without being dry. All of this rested on the fluffiest bed of rice. My husband demolished the chicken as soon as it was cool enough to eat. I sampled his sides. The mac-n-cheese was creamy and smooth. The fries were lightly crispy and dusted with the most delicious seasoning. I wish they sold that by the jar. I would have left with three! Me and my wife decided to stop here and grab the fried boudin balls, fried catfish basket and fried softshell crab with red beans and rice , first things first the service was decent , we ordered online so not much interaction but the interaction we did have with the staff was friendly and informative. The overall ambiance of the restaurant was also cool , it gave a cozy feel. As for the food.... The boudin balls were AMAZING crunchy and full of flavor ! Also they were a very nice size and portions . The fish was ok but the fries were beyond bland , presentation on meals was out of this world though! Lastly the soft shell crab, I've been waiting a very long time to try softshell crab and these were fried to perfection. BUT it is very very very salt heavy and wish they could tone that down a bit . Wow! I'm in town for my graduation from Baylor and we passed this place on the way back to the hotel and decided to make it our dinner option and am I so glad we did! Immediately when we walked in there was a warm demeanor with bit smiles and assistance with the menu. The environment was warm and beautifully lit and we were attemded to the entire time. I will note - it is an intimate space so I would call ahead if you have anything over 7 people to ensure space is available. Every single thing we ordered WAS DELICIOUS. My spouse got the catfish atchafalaya and I ordered the seafood platter with extra shrimp and it was to die for. We had the beignets to finish and they were soft and delicious.
