I am rating the Pool Bar, it turns into Carbon at night. Nestled in the heart of Villa del Palmer but not a hidden gem. The resort has done a wonderful job on bird and fly problem, but not here. They have renovated the place but have not improved on their customer service I felt like I was at a truck restaurant, where the food is so good that you don't mind standing to wait on your food. But in this case it is supposed to be customer service. I waited the longest I had ever waited since five days on the resort. I ordered Chicken, but they brought them out on taco shell on taco containers. No one checked on us until the check came and it was a different servor. No friendly greeting and no happy good byes. Consistent restaurant located in Villa Del Palma resort in Cabo. The restaurant opens at about 5 o'clock located with sunset and Ocean views. Their main courses are grilled meats, seafood, vegetables, and combinations with vegetables inside dishes. They have a signature cocktail list which the mai tai is more fruity than tropical mai tai's. Wine is typical mid tier white through reds. Menu is consistent. wait staff is attentive, fresh bread and butter, for appetizers we had the salad bar (fresh greens, ceviche and broccoli soup - yum) and combination of filet and salmon. This dish could feed for a party of 4!!! between my husband and I, we could only eat half of this plate so portions are big. First of all, let me say this the first time we have been to this place. It is connected to the villa del palmar resort. It was a great view of the beach! The service was super great ! Alexandro took care of us !! The salad bar with the ceviche and pulpo was excellent!!! And the lobster and filet mignon tower was one of the best food I have ever had!! They don't do reservations unless you're an elite member. Ok, no problem. We had about a 45-60 minute wait, no biggie, chilled around the pool & hotel grounds. Get in, order, go to salad bar. Now this to me stuck out from jump street. I finished my salad before I got my drink, that's insanely hard to be that slow. We get our food, they bring out the items on a grill, it's kind of their gimmick. It's a nice concept. Now 2 issues, the food was just ok, nothing special, and making matters worse this guy didn't check on us once, we had to flag him down for things 3 different times, including the bill. If you're busy I get it, but maybe say that, say something, it was like we weren't even there. For sure not up to the Villa Del standards of great service you get at 75-80% I'd say of places you get served at, IE, restaurants, bars, poolside, etc. read more

We didn't have reservations and stopped by on a whim since we needed to eat food. We waited about 25 min and got seated and the wait was worth it. We ordered the tomahawk steak which feed all 5 of us. It is not listed on the menu - your waiter will have to tell you about it or just know. The chimichurra sauce was soooo good with the steak. It is a MUST!!!!! We also ordered the seafood grill. The grill comes to your table on a charcoal grill. Make sure you eat the fish first and fast or it will over cook. We all had the bread that came with our meal which. The kids loved and the ceviche at the salad bar was pretty good too. The kids loved the seared tuna on some bread. It was worth the money and I just have to say the steak and the chimichurra sauce is still in my mind since it was that good!!!! read more

While looking for dinner options we stumbled upon Carbon on Yelp. The pictures of the surf and turf skewers reeled me in! Exactly what I needed in my life. It did take some effort to be able to have dinner there but it was totally worth it!! When we saw the pictures online we did not realize that this restaurant is actually inside the Villa del Palmar Beach Resort and Spa in Cabo San Lucas. We were staying at a completely different resort and were not sure if we could even eat here. Getting someone on the phone was also a bit of a challenge. Even with a Spanish speaking friend. We finally were able to determine that we would be able to dine at Carbon but they were "first come, come first serve" for dining and we were a party of seven people. We arrived and it did take a little time to get into the resort entrance and then to park and find the restaurant but once we got to the restaurant it was less than five minutes before we were seated. Our server did a fantastic job from beginning to end. We were served toasted bread and butter which were very good. Our meal came with a "healthy salad" which was pretty but not exactly my type of salad. Everyone else at my table liked their salads. One couple in our group ordered a meal that came on a grill top with shrimp, ribeye steak, and fresh grilled vegetables. They said it was excellent. Another couple ordered fish and steak on the tabletop grill that also came with the fresh vegetables. My husband and I ordered the surf and turf skewer special that included lobster, filet mignon, and fresh vegetables with the skewers. Our 17 year old also shared this meal with us. This meal is enough for two people but adding a third person to share the meal may be pushing it but maybe not if you and your people do not eat huge amounts. My husband and teenage son are very tall and eat tons of food. The presentation for the food was terrific and the food tasted excellent. Our lobster and steak were cooked perfectly and were good quality. All in all everything was great and I would recommend Carbon to anyone looking to have a memorable meal while in Cabo San Lucas. Simply wow!!! There is something about having a quiet dinner while listening to the sound of crashing waves that is wonderfully splendid. The atmosphere of this ocean front grill is awesome!! This business requires a reservation and seating is limited. I have had the pleasure of dining here twice and both times its been a great experience. The service is excellent and the staff is super friendly. I love the friendliness of the local staff. Its an honor to call myself Mexican. We ordered the Filet Mignon and Shrimp Skewer Grill. We were offered a simple salad bar and grilled bread soon after being seated. After our bread and salad our grill was brought out. The feast is more than enough for three people. The food was excellent. A tip I would give is to remove the Shrimp and steak Skewers off the grill as they will continue to cook. Our last Shrimp was overcooked because we left it on the grill and it lost the right consistency!!! read more

We opted to try this place as it was conveniently placed in our hotel. We didn't make reservations (try to make it before 5PM) but we were seated at a nice spot, with a gorgeous view of the ocean. Service is awesome, they are very welcoming. We shared a surf and turf which is a flank steak with shrimp and veggies. Enough for 2 people to share as it also comes with a free walk or two to the salad bar. The bread basket also has two fried donuts, not sweet but delicious, like a chinese donut. Delicious! Now flank is a fattier side of a cow so I was a little worried that we didn't go ribeye but it was super well cooked. I asked how they recommend it prepared and so we went medium though i tend to like medium rare... It was super tender, didn't feel chewy at all and it was gushing with flavor. I love that they bring a fat grill to your table so our dish continues to grill. The veggies were spot on and we had such a delicious experience right by the beach! read more

Absolutely love this spot. My family and I visited this place a couple times when we were on vacation in Cabo. The food was absolutely delicious. They bring out the food on these individual grills. The meat cooks in front of you, and stays warm while you eat. You have an incredible view of the ocean as well. Enjoying delicious grilled food while hearing the waves crash around you is just absolutely amazing. The veggies, seafood, and meat were all amazing. I hope we get the chance to visit Cabo again, this spot will be at the top of my list. read more

Overall it's an experience that one should have when staying at the Villa Del Palmar; however, it was clear that they weren't ready for our party of 11 when we showed up 15 mins earlier than our reservation (which was 7:30 pm) but our table wasn't ready & had to be scrambled to be put together (or not to the presentation one expects for this caliber of location & price). Our order was taken - 2 specials, 2 glasses of wine & couple of sodas. Trip to the salad bar was fast & layered together. Bread basket with butter greeted us. Our specials were delivered with a little delay but it didn't disappoint. The steak was medium rare & was my favorite. The shrimp were ginormous (not good for leftovers I learned) but not peeled. The veggies were plentiful but the potatoes were my favorite. Amazing ambiance by the ocean shore and beach under the stars! The food selection is surf and turf but served on a mini hot grill!!! The veggies and food are so fresh ! Really great ingredients and top notch beverage selection. In the daytime it's a sushi and taco bar which is also superb with a multitude of amazing salsas at the salsa bar. While excited to try this unique experience, the actual product was less than desired. While in a beautiful location, the food was tasteful, but in a huge quantity...and pricey. We had the lobster special...lobster only OK, a bit tough, and not worth the money. Service quite slow, at times we felt invisible, and while staff was pleasant, not extremely attentive to our needs. My husband and I came here on our last night of our honeymoon and unfortunately didn't have a pleasant experience. The food was great, but our server Amilia took long each time we asked her for something and it felt like she forgot about our table plenty of times. She forgot to get us a couple things she said she would, we asked to her macarons for our dessert and she said it was only for "paying customers" not for the all inclusive customers which is silly because "all inclusive" customers still paid for the food technically. This is an absolutely horrible place. We had a reservation at one of their restaurants. The security at the front gate did not let us in because the restaurant did not pick up the phone. I walked for 40 minutes to this place for no reason. The security guy didn't speak any English and neither did whoever he put me in touch with on the phone. What's the point of having me talk to somebody that doesn't speak English knowing that I don't speak Spanish. The name of the security guy is Cristian Dominguez. BTW, I thik this hotel has a huge infestation problem. I saw no less than 4 exterminator trucks enter while I was at the security gate. read more
