the space is rlly well decorated and surprisingly spacious. service was solid too. pair it with good food and i felt very eased and relaxed here; rlly enjoyable experience. the free assorted bread was rlly yummy. they also cut us probably some of the best parmesan cheese blocks i've ever had in my life -- SO sweet and good. calamari pieces were fat and juicy, evenly coated in a crispy and light batter. yum. sauce was kinda salty tho. lobster ravioli had SOOO much lobster. truly a LOBSTER dish lol. the sauce was zingy and light which complemented the richness of the ravioli rlly well. vodka rigatoni sauce was pretty runny, but in a good way. I will keep this all the way honest. The hype is way too much. Unless the dishes were meant to be seasoned a specific way, all of their dishes were overly salted and bold. The Alfredo fettuccine was super salty, my son's "kids pasta" was super salty from the butter drench on. We also thought the rib eye steak was overly seasoned with rosemary. There's no reason to be spending 2+ hrs dining; I feel like the service purposely has you waiting constantly for the food. Me and my family didn't realize that they first start with their complimentary bread basket, pickled white cauliflower in olive oil and then a thin slice of Wisconsin cheese. These were delicious and definitely worth every bite. About 20 mins later, a gentleman came and made our Caesar salad table side which was a cool experience. It's really good but I've had better at other places. Maybe about 30-35 mins later, the pastas came out. Their spicy rigatoni was super delicious and a must try. This was the best dish here clearly. Maybe about 40 mins later, our steak came out which took forever. I'm beginning to think, they're doing this on purpose for an "experience". Me and my family were already getting full by just waiting and we yawned a few times. We were over it. Honestly, the ambiance, service, and plating are all A+ and beautiful BUT the actual taste of food and duration of time for each dish was a C-. We were not pleased and thought places like a Maggianos was even better. I understand why reservations are tough; it's because slots are fully booked for 2+ hrs so there's really no way someone can sit. I've been to Carbone a couple times now and they honestly never disappoint! As soon as I walked in to the end of our meal each staff member was welcoming and helpful. We could not have asked for better service!! I also just love the ambiance of the restaurant Started off with the complimentary bread and pickled cauliflower which I'm just so obsessed with both. We obviously had more than enough bread but had to ask for more cauliflower. Something about it is so so good! Next we got the calamari which wasn't pictured but that was okay. The sauce they pour on it is good but I would love crispier breading. Next, the meatballs and it was just your average meatball but still good! The star of the show is of course the spicy rigatoni. Definitely one of my top 3's in Dallas! You can really taste the Calabrian chilis and I love it. The tortellini is also super good. My boyfriend brought me here for a surprise birthday dinner, and I was so excited! The interior is absolutely gorgeous. Such a nice romantic ambiance and it's so well decorated. The service was incredible. Always had someone checking on us and making sure we were okay. They gave us the drink and wine menu, which is quite extensive. A sommelier came by and offered his services if we were wanting help choosing a wine, which I thought was a nice touch. Some delicous complimentary bread, pickled cauliflower and Italian meats were brought out. I've never seen a restaurant bring out this much complimentary food. It was all so delicious! There were 3 different types of bread- tomato sauce on focaccia, a garlic bread and plain piece of bread. They were all amazing. The pickled cauliflower had a delicious flavor to it as well. A waiter came by with some aged Parmesan cheese and was serving that as well. We put in our entire order at once and our waiter spaced it all out. For starters we got calamari and the table side Caesar salad and then our entrees were the spiced vodka rigatoni and the chicken massimo. I enjoyed watching them make the Caesar salad table side. The salad either didn't have enough dressing or it wasn't mixed properly, because some parts felt a bit dry. The croutons were really good, and I did enjoy everything together. I throughly enjoyed the spicy rigatoni. I've gotten the jar carbone sauce from the grocery store and it's not as good as in the restaurant. It was so creamy and the pasta was cooked perfectly. I do wish they had freshly grated Parmesan on top. They brought a lovely dessert cart and I chose a chocolate hazelnut cake with vanilla bean gelato. Unfortunately, they don't comp birthday treats and we weren't told the prices of the desserts, so the cake was $25. Total price of our meal came out to $243. They charge for water as well, which I thought was odd. They first came around with a new bottle of water and poured it in our glasses and then they just kept refilling it from a normal metal pitcher. On the bill they charged us $18 for 2 bottles of water, which is I suppose how much they estimated they used. That wasn't stated before to us, which would've been nice to know. My boyfriend and I came to Carbone for a special date night and enjoyed our time. We were seated towards the back at a normal table, which was a little less intimate than the booths or side tables. Our server constantly refilled our glasses and checked on our which was great. We did feel like we had a luxe dining experience overall and really enjoyed the free bread and cheese to start. I loved the spicy vodka pasta. It had a nice kick and wasn't super dense while also being a shareable size. The tortellini was my boyfriend's favorite. The gravy sauce it came in was delicious. The Caesar salad they make at your table is delicious and I loved watching it being made though I'm not sure it's worth the price. We both loved our drinks, I especially loved the aperol spritz as it was light and delicious. We didn't like the Mai tai we ordered (not shown) because it was really strong but we also prefer fruity and light cocktails. It was a nice classy date night restaurant and we got lots of pics. We had really high hopes for Carbone in downtown Dallas--mostly because Drake is such a big fan of the place. And if there's one thing everybody knows about Drake...it's that he has impeccable taste in Italian food. (Kidding.) Walking in, the vibe is cool. Not traditional Italian, but definitely upscale. I can see why people pick it for a date night. The service was truly top-notch. They have a whole team of servers and support staff making sure your glasses stay full, plates get cleared immediately, and the table is always clean. That part felt very polished and professional. Unfortunately, that's where the "wow" factor ended. The food didn't match the ambiance--or the price. Everything is served family-style, so we all picked dishes together. We already knew we had to try two Carbone staples: the calamari and the spicy rigatoni vodka. Except...they didn't have calamari. Not sold out--just didn't have it that night. And we were one of the first tables of the evening. "Disappointed" is putting it lightly. So instead, we got the off-menu Hamachi appetizer (pretty good) and the prosciutto with mozzarella. The prosciutto was salty and delicious, but the mozzarella was surprisingly bland. Definitely not memorable. For mains, we ordered the spicy rigatoni vodka, which was good...but just good. Not mind-blowing or worth the hype. The lobster ravioli was decent too, but again nothing special. Our protein was the Steak Diana, and while the steak itself was cooked well, the sauce didn't land for most of us--luckily it was served on the side. One person at the table liked it, so maybe it's just a preference thing. We also ordered the squash as a side, and it felt plain and under-seasoned. I hate to nitpick, but at these prices, you expect a little more than "just okay." For dessert, the tiramisu was actually fantastic--the ladyfingers were spot on. The carrot cake was also enjoyed by the table, though I'm not really a carrot cake guy. Overall, we probably won't be back. The service and ambiance were excellent, and our server really knew the menu. But the food just didn't deliver for us. . Our table shared two orders of the spicy rigatoni, which were great and up to that point the pacing of the meal was well executed. Unfortunately, after finishing the pasta, there was a 43-minute delay before our steaks arrived, which felt excessive. In total, we spent approximately three and a half hours at dinner for only three courses. We had ordered two steak Diane dishes, both medium rare. When they arrived, one steak was cooked correctly, while the other was well done with no red remaining. After taking two bites, I informed our server, who confirmed the issue and offered to either replace the steak or remove it from the bill. Given the extended wait time we had already experienced, we opted to have the steak removed rather than wait again which he didn't acknowledge the wait when we said we didn't want to wait another 45 minutes. What was frustrating was how this was handled afterward. The steak was removed shortly after, and when dessert was introduced, it was implied that it would be provided in place of the incorrect steak. However, dessert was not comped, and we ultimately paid for it, which felt misleading. While Jeffrey began the evening as a fantastic server, the handling of the ribeye issue fell short. Beautiful dining experience in the Dallas area! My bf booked our reservation a month out and he was super excited to see what Carbone was about. The restaurant is stunning and takes you to a different era as soon as you walk in. We came on a busy weekend and the restaurant was packed! Our server was very knowledgeable and recommended great dishes but of course we tried the Caesar Salad, Spicy Rigatoni and Ravioli. Our starter bread was fantastic and can be filling so pace yourself. Our salad was delicious and I loved the option of having the anchovies on the side or mixed in. I loved almost everything about carbone. The ambiance is transformative, the service is impeccable, and the free appetizers are delicious. However it had to lose one star just based on one food item, the ribeye. I'll start with the salad. The table side Caesar may not be worth the price but it's a large portion and is delicious so I would definitely order again. Then the famous spicy vodka pasta was divine and absolutely loved up to the hype. However the ribeye Diane left much to be desired. The sauce it is bathed in is good not great while the sear on the steak and the seasoning on it was not present. Overall it was a solid steak but for $97 I would absolutely not recommend. Has Carbone lost its luster? This once buzzy restaurant and "hard to get reservation" feels a bit like it's losing steam in the Dallas location. Food: On this occasion, we had the Caesar salad, calamari, spicy rigatoni (never misses), and the mushroom fettuccine. The calamari is great - lightly fried and comes with a white wine beurre blanc sauce. The Caesar salad is made table side - croutons are divine and love the sardines for a classic touch. Yes, it's preferred to make reservations if you decide to frequent the restaurant. The ambiance upon entering is like a quant paradise. Now let's break it down the Caesar salad was amazing we asked for no anchovies in I believe it was still somewhat in the dressing so it had like a small fishy taste but it wasn't bad. The sweet and sour mini meatballs no offense to each his own however we were just trying things out was not personally my favorite but again I could appreciate what the chef Pat as a vision. The pasta chefs freaking kiss delicious rip ricotta need I say more!! The ribeye steak tender succulent seasoned well delicious I will definitely have another steak from here again. Came here with my boyfriend yesterday for an early Valentines dinner & immediately had a bad taste in my mouth. You can't bring flowers. I honestly think it was the best thing we ate at Carbone. Right off the bat, we ordered a $200 bottle of wine- which I would assume, the server would be happy with & be more attentive. Wrong. We ordered the calamari, spicy rigatoni with meatballs, the lobster ravioli, and literally never saw our server again. Hahaha. It's kind of funny really. (The portions are also NOT family style. Maybe it's family style if everyone has ONE SINGULAR piece of pasta!) The food was also cold when it got to our table. The rigatoni was chewy. It is NOT WORTH THE HYPE PEOPLE! Never asked how the food was. He literally never came back! Ambience So dark in this place that my eyes were hurting just trying to see. I literally could not see where I was walking on my way to the bathroom. The bread is soooooo good! This doesn't mean I won't try Carbone again, I might, but I'm not running back. We got a spread of food - calamari, tuna, ribeye Diana, lamb chops, and more. The calamari was good, but they asked if we wanted to put this sauce over it, and we said yes, and it made the dish pretty soggy/salty, so I kind of wish we didn't. We ordered the potato Louie, but I was too full to even try it and it looked so good. I've had the spicy vodka pasta at carbone vino a year back and really liked it, but I wasn't super crazy about it this night. I also didn't care for the lobster ravioli which I was really shocked about. It needed more flavor IMO. Our server was amazing and very knowledgeable. Incredible food and service - what a special dining experience! I have been wanting to try Carbone for the longest time and our dinner did not fall short of high expectations. We came for our New Year's Eve dinner and had an amazing time. Parking - Complimentary valet on site. Ambiance - we were fortunate enough to sit in the main dining room and it was so so stunning. The entire building was gorgeous and the bathrooms were beautiful as well. Food - Ok let's get into it! When you sit down you get an assorted bread basket, a hunk of cheese and a meat platter. The bread platter was to die for and i couldn't get enough of the cheese! So good! We shared the spicy rigatoni as that's a must and it did NOT disappoint. We also got 2 of their specials for the night: Truffle fettuccine and one of the steaks (I'm vegetarian so I don't pay attention lol, it was $170 and my boyfriend LOVED it). The truffles were flown in that day from Italy and they brought the box over for us to see prior to shaving over our pasta. It was incredibly expensive ($175) but was the best truffle dish I've ever had. We did not save room for desert and didn't order any more drinks but all the more reason to come back. Service - impeccable. This to me is what separate good/nice fancy restaurants and exceptional. This is the type of place where it feels like you have 5 people waiting on you at a time and folds your napkin all fancy when you leave for the bathroom. My wife was curious about the place, so we drove down and tried it. The service and ambiance were fantastic! Their calamari was probably one of the best I've had. The pasta was not bad. Food was good, but I don't think it was worth the ultra premium price we paid. I knew it was going to cost me. Lol...but $30 for a mediocre old fashioned was a bit over the top. If you want to impress your date, take them here for a great experience, but be prepared to shell out some serious cash. read more

First time visiting Carbone, and I would love to thank Julia for making it such a wonderful experience. We were set for our reservation at 10 PM immediately upon saying we were brought our appetizers, which consisted of pickled cauliflower, bread, options, and cheese and salami. Julia came over and explained the menu and how ordering worked. She also explained some other options that were not on the menu. We began our night with the grilled octopus appetizer, which was amazing we then opted for the spicy rigatoni as our macaroni option. The spicy rigatoni definitely sealed the deal for me next for our entrée we got the ribeye Diane, which was fattier than what I'm used to, but it was still delicious and flavorful for our sides. We opted for the mushrooms and the broccoli, it had a little bit too much garlic, but it was still edible at the end . At the end, We were given complementary cookies. I loved that the restaurant was dimly lit so it was very romantic, but it also played classic yet. Upbeat music definitely will be back and do recommend people at least try Carbone once. read more

Carbone Dallas truly lives up to the hype. The ambiance was incredible--classic, upscale, and intimate--with great music playing throughout the night. I had to push my reservation back and emailed the team, and they responded promptly, which I really appreciated. The ricotta cheese-stuffed pasta with ragu was unforgettable (I'm still thinking about it), and the bread alone is worth the visit. It's conveniently located next to what seems to be their sister restaurant, Vino, and there was plenty of parking, which made the experience even better. Came here for a NYE dinner with friends -- our first time at Carbone -- and unfortunately, the experience fell short. Our captain had an attitude throughout the night and genuinely made us feel like she didn't want to serve our table. At one point, she threw a napkin at my friend's husband, which was shocking and uncomfortable. We were also served a bottle of red wine at room temperature when it should have been chilled. Despite all of this, my friends and I remained polite and kind, but the overall vibe was off from start to finish. Food-wise: * Bread basket was good * Clams were a 7/10 * Tortellini ragu was a 6/10 * Caesar salad was a 7/10 I will say, the woman walking around checking on guests was super friendly, and all of the male staff members we interacted with were very nice -- which made the service contrast even more noticeable. I went to this restaurant as apart of an engagement party last Wednesday. The food was decent but honestly a little pricey for what you get. However the hostess was extremely rude to my friend. If you are looking for a special night to celebrate something Carbone is the place to go. It's almost like stepping back in time when you enter the restaurant. A romantic vibe with also a touch of 1950s New York. From stepping inside the restaurant you can tell you will have a great dining experience. From the moment we pulled up to the restaurant where our car was valeted to when we got the bill. Everything is served family style and they have all of your favorite Italian classics. The one that truly stands out is the spicy rigatoni. Served in a delicious vodka sauce that won't leave you to filled. I did wish it had some meat though. It also wasn't very spicy. They have a full drink menu and their drinks are delicious and strong. The one downside this place is pricey and can add up quickly with multiple people.
