We dined at Carbone for my birthday, and because even after all these years reservations are hard to come by, ours was for 9pm and we were seated closer to 9:25. The restaurant is much larger than meets the eye and we were seated in the small back room with the additional bar. There were quite a few tables open. Service was attentive and professional. We ordered a bottle of wine which they kept chilled and always made sure to refill our glasses as needed. I was a huge fan of the complimentary starters and to be honest I think they were my favorite part of the meal. A member of the staff comes to your table to serve a chunk of parmesan cheese cut right off the block. You also receive a bowl of pickled cauliflower, a beautifully presented salami rose plate, and a basket of 3 types of fresh bread. Our waiter informed us that everything was served family style and meant to be shared, so I found it interesting that they split our order of Spicy Rigatoni Vodka for us. It's one of their most well-known dishes and we really enjoyed it. The Octopus Pizzaiolo was delicious, especially with the inclusion of the crispy potatoes. The thick piece of fish on the Salmon Oreganata was beautiful but the salmon itself lacked a bit of seasoning. They bring around a dessert cart but we opted out as nothing caught our eye and we were pretty full. LOCALS HONEST REVIEW We made this reservation a month in advance for my birthday. Unfortunately, it turned into one of the worst fine dining experiences we've had in Las Vegas and we eat out ALOT to numerous fine dining spots off and on strip. Our 9:15 PM reservation wasn't seated until 9:35. Water took over 15 minutes to arrive, and it was another 30-45 minutes before our waiter, Deon, even took our order after I asked him "who our waiter was". Ironically, both $350 bottles of wine arrived within minutes, but our food didn't. About 45 minutes after ordering, we were told one of our entrees had sold out. By the time our meals finally arrived around 11:30 PM, my husband had already spoken to the manager because waiting nearly two hours for entrees at a restaurant of this caliber is simply unacceptable. To make matters worse, my order was completely misunderstood. I asked for the restaurant's best chicken pasta recommendation and was served an odd combination that didn't go together at all (2 separate dishes NOT a pasta with chicken) Fine dining is about the entire experience, not just expensive wine. The food itself was underwhelming, but the service and apparent lack of management were the biggest disappointments. This was a different experience, mostly good but with some deficiencies based largely on food preparation preferences. For example, for Veal Marsala I greatly prefer well-pounded scallops of veal rather than veal off the bone. So, I opted for Veal Parmesan instead, which was good but still served with a bone. Said a server to me, "Aren't you going to eat the bone?" and I answered, "Why? Do I look like a dog?" "No," he replied. "Meat on the bone is the best part." So, I gnawed on the bone a little bit, and I concede that the meat I encountered was indeed tasty. But Diane reported that her Fettuccine Alfredo was slightly overcooked. Far more impressive than our entrees were the free preliminaries that were brought en masse to our table at the outset of our meal: a Bread Basket with Sesame Seed Bread and Tomato Focaccia, delicious Italian Salami, chunks of Parmesan, and Pickled Cauliflower, followed by light and golden Calamari Marco. Tortellini in Brodo Soup filled with Swiss Chard and Foie Gras was good but too salty. A Caesar Salad prepared tableside was very fresh with finely grated Parmesan Cheese spilled over the Romaine leaves like snow. A fine side was Potatoes Louie, soft and tender sauteed potatoes. We were warned by an assistant server that we were probably ordering too much dessert, and he was right. But we thought we were ordering individual desserts. It turned out that each of them could have easily served three or four diners. The four of us did ultimately each try different desserts in the end. They were Chocolate Cherry Blackout Cake, Vanilla Ice Cream, Carrot Cake, and Lemon Cheesecake. Each was an excellent example of the type of dessert it represented. Service was excellent. Our captain just forgot to bring requested Marinara Sauce for the Calamari besides the spicy aioli that was tasty enough that I no longer wanted any other sauce. Now I'm not one to shy away from a decently expensive meal at a place of this price range, but with a place of this price range I expect a certain level of quality. This place fell short. The Veal Parmesan was OK. Flavorful enough, tender enough, but lacking severely in crisp. The complementary breads were fine; I enjoyed the variety. I'm a huge vodka pasta lover and I was skeptical going in, like how good could vodka rigatoni get? Carbone's most famous dish is hands down the best vodka pasta I've ever had. Everything we ate was fantastic- Caesar salad, meatball, pomodoro pasta, carrot cake. So the only miss was the chicken parm. You have to call ahead to order this because it's not on their main menu. They insist on using the thickest chicken breast ever, instead of the usual chicken cutlet type. I appreciated them taking the initiative to divide the pasta in advance and adding a birthday candle to the dessert. I also loved the decor and ambiance. Glitzy and ritzy, this place is as large as the Pentagon. Multiple dining rooms spread are out like suburbs. I arrived slightly earlier than my reservation and lined up to check in. The Hostees were just out of High School. A swarm of automaton hot bots glued to computer monitor. "Please step to the side for seatment." "Can we have a drink in the bar?" "No. Go through the Casino to Bardot on the right, but if you leave, you'll have to get in the check in line again and then wait for seatment". "Fine, I'll wait for seatment". Eventually I was ushered to a table which was next to the Busser Station even though there were many empty tables. "Can I be seated at the corner table over there?" I said to the Hostee who rescued me from seatment. "You'll have to return to the Welcome Desk and ask a Senior Hostess for re-seatment. "Oh for Chissakes, this can't be that hard. I was on the launch pad ready for ignition when another Hostee said she could take me to the requested corner table. By the time I was ungreeted and then seated I was not in the mood for food. The Hip Hop Loop did little to calm my angst but that morphed into Doo Wap, Funk, and Junk, blowing through the speaker system. Soon the sound flunky was busted and the speakers adjusted. Decent music flowed bode well. The Table Captain was smart, professional and pleasant. Within seconds my irritation dissipated as a Runner brought a lovely basket of warm House Baked Bread. Focaccia, Garlic Bread, and Rustic Sesame Loaf took me off the edge of the ledge. Pickled Cauliflower and a pyramid of Salumi flutes joined the basket and were great bar nibbles. The Bar: Hey, it's Vegas, Baby. The town that never runs out or can't get it. Excess is the favorite flavor. You want it, you'll have it just as you like. My Mai Tai was delivered quickly. Several Rums, Almond Syrup (Orgeat) and Lime served tall in a glass that resembled the rear view of Kim Kardashian. The Mai Tai was delicious and dead perfect, although two might have caused the perfect death. The Vibe: Hey, it's Vegas Baby. Everything is over the top. Who's in the house? Hey, it's Vegas, Baby. In short order you'll see everything whether you want to or not. The Staff: On the muscle and the hustle. Ask and yee shall receive. The Food: The actual menu was as large as a Queen Size Flat Sheet and unwieldy considering the little Bar Table better suited for an Ice Cream Shop. The menu itself was short and to the point with several choices under each heading, ie; Primi, Contorni, Carne, Pesce, etc. Most of the items needed explanation, ie; Calamari Marco, Chicken Massimo. Like what's a Marco and a Massimo? Apparently relatives of the owner. That explains it, no? In all fairness all questions were answered in detail with a smile. Calamari Marco winked at me and turned out to be a huge tangle of crispy hot from the fryer Squid Rings, Arms and Legs served with a boat of Butter, Cream, and Calabrian Chile Sauce. If you're on a Statin, just ask for two Lemon Wedges. The Calamari was as good as any professional kitchen can make it and easily enough for three peeps. One Ring and I was an addict. The Caesar Salad was mixed expertly table side, and without splashing dressing on my new shirt. This salad is what Caesar Cardini envisioned it could and should be. It's what a Caesar Salad wants to be when it grows up. Baby Romaine leaves, large Croutons of Rustic Loaf super crunchy from some quality fryer time. The Dressing was Garlicy, Creamy and loaded with White Anchovies. It just doesn't get any better. Should I have quit now? You decide. The Spaghetti Puttanesca (Whore's Spaghetti) had the required ingredients, Kalamata Olives, Capers, Garlic, but not a crushed Red Pepper in sight. The dish was invented by "working girls" who wanted a spicy kick to make them sweatier than their employment normally caused. A puff of sea breeze cooled them before they had to return to a Mister and a Mattress. The Spaghetti was cooked just right but do ask for some Parm and a little cuppa Crushed Pepper. The Pork Chop came buried under a heap of Peppers and Onions which were Vinegary and crunchy as they were cooked just right. Scrape those off to the side and enjoy them before we get to the Pork. An order of Vinegared Artichoke Hearts had pucker power and was a lovely addition. Alas, the Pork was dry, chewy and still connected to sinewy mystery chew. My Pork dream was dashed on the rocks of MEHdiocrity. Perhaps some careful trimming in prep and a dry or wet Brine would have helped. Otherwise the Pork was a pass. Overall the food was good. We had a 9:30 PM reservation for a group of 9 and the place was absolutely packed even that late. If you are having trouble finding it, the restaurant is located on the second floor of the Aria. There is an escalator that takes you right up there. Can we talk about how large the menu is? The actual menus are physically huge. They are so large that there is basically no space on the table to even keep them while you are looking. We were seated in the front room and our server was excellent. We picked a few favorites and they recommended some stellar additions to the meal. While the food is served family style, I felt the portions were on the smaller side for a large group. However, the quality was top notch and everything we ate was delicious. They also have a full bar with great cocktails. After weeks of trying to get a reservation online and over the phone, I decided to walk into Carbone at Aria and try my luck. Since I was just a party of one, I got lucky and was seated right away at the back bar. I was greeted with a wonderful bread basket along with a plate of salami and pickled cauliflower. Everything was terrific and a great way to start the meal. For an appetizer, I went with the Caesar salad and it did not disappoint. It was piled high with cheese and crisp lettuce. The final restaurant I had to visit in Vegas was Carbone -- and it absolutely did not disappoint. I remember walking past the original Carbone years ago thinking, one day. So this felt like my moment. And honestly? I wasn't even sure we'd get in. Vegas was packed that weekend, reservations were tight... but somehow we secured one. Hallelujah. From the second we sat down, it was on. Complimentary Parmesan, pizza bread, garlic bread, and pickled cauliflower -- the most perfect start. That parmesan transported me straight to Italy. Our server was fantastic. He walked us through the menu, helped us map out exactly how many dishes to order, and to top it off -- he's Cuban and I'm Cuban, so that little connection made it even more fun. I will always say yes to tableside anything, and the tableside Caesar was an experience. Those croutons? Melt-in-your-mouth good. We shared: * The meatballs * The spicy rigatoni (should've ordered another, it was that good) * Chicken * Ribeye * Broccoli rabe * Potatoes (my personal favorite side) Everything was flavorful and beautifully executed. I started with an espresso martini -- divine. The back servers were kind and incredibly attentive, and I really appreciated how approachable the wine and cocktail list felt. I've never had a worse customer service experience than I did at Carbone. We were incredibly excited for dinner here, but left feeling nothing but frustrated and disappointed. After our tableside Caesar salad, we waited over an hour for our spicy rigatoni and chicken to arrive. During that entire time, not a single employee checked on us. We were seated in the corner by the kitchen, and multiple staff members walked by and could clearly see that we had been sitting there waiting. To make matters worse, the employee refilling our waters took away our salad plates and utensils without asking if we were finished, even though we were simply taking a break from eating. He also never brought us new plates, so we sat there for over an hour with nothing in front of us. Meanwhile, the table next to us was seated about 15 minutes after we arrived and received their fresh plates and pasta before we did. At that point, we finally flagged down a server and asked to speak to a manager. Ironically, that server was probably the only person who was kind and helpful all evening. When the manager came over, we explained that we had been waiting over an hour for our food. Instead of apologizing or even listening to the rest of what we had to say, he abruptly walked away mid-conversation and went into the kitchen. About 10 minutes later, he returned with two separate plates of spicy rigatoni that honestly looked like they each had only a spoonful of pasta on them. Respectfully, I've received better service at Olive Garden. We have both worked in customer service for over eight years, so we understand that mistakes happen. Orders can be delayed, and restaurants can get busy. What matters is communication and how guests are treated, and that was entirely missing here. The experience ended on the same note. The same employee who removed our plates dropped off the almond cake while literally walking by our table. He didn't stop, explain what it was, or say a single word. Went to the carbone inside the aria. Was a little disappointed overall. We had a reservation for 6 people. The staff was rather difficult to deal with (cold, dismissive, pushed a few expensive items on us). They also put our table in the corner. It was nice to have a bit of privacy, but we were so far outside of where all the action was that there was no real ambiance. Ordered the following: Prosciutto and mozzarella Caesar salad Rigatoni al a vodka Meatballs Veal parm Ribeye Dover sole Came with the complimentary bread, salami, and Parmesan Food was all pretty good. Not sure why the reviews are so low for Carbone but by reading them it seems to be more related to service. Went here with my husband for a birthday dinner and was really pleasantly surprised after reading some of the reviews. Service was great, they were friendly and we got seated right away. We thought the food was great, loved that they gave so much for starters with the focaccia and salami, enjoyed their salad and also loved their classic spicy carbonara and the options on the dessert cart too. What a horrific meal. The dishes were small and are not big enough to share as the menu suggests. $105 for veal marsala? The veal parmesan was over $80 for a slice of veal. The Caesar salad, made at the table, was a mess. Server failed to take our drink order. The service was mediocre and hurried. Please save your money and avoid this tourist trap at the Aria. I will start by stating that I made the trip to Las Vegas to eat at Carbone, that's how much I loved my first experience years ago and couldn't wait to return. This visit did not disappoint at all! The experience starts off with complementary, pickled cauliflower, large variety of bread, and cured meat slices. Then your host recommends a a variety of family style items as starters and mains. My favorite item was the Dover Sole and Caesar salad - both prepared table side. This is not an inexpensive meal but well worth it!!! The Dover sole was market price and ended up being $165 but tasted heavenly and worth every penny of buttery goodness. The Caesar salad is in the top 5% of Caesar salad in my humble view, from perfectly balanced dressing to amazing croutons and crunchy little gem Romain lettuce. The service is incredibly professional, friendly, and top-notch. Ask for a cozy booth and enjoy the experience! From the moment we walked in, I knew we were in for something special the kind of place that just feels right. As someone with a dairy allergy, I'm used to limited options, but here it was effortless. The staff were knowledgeable and accommodating, which made the experience even better. Then the food arrived. The calamari was to die for, lightly coated in rice flour, perfectly crisp, and not overly fried. Every dish that followed was just as impressive, full of flavor and clearly made with care. So we have finally tried the famous Carbone. It was our second anniversary dinner of the evening. This restaurant is much bigger than I thought and it's right next to Sky Suites promenade entrance where we stayed at. We were seated in the small room in the back with a tiny bar. Place was lively but very loud and crowded. It's old NYC Italian restaurant vibe. Food is Italian American not authentic Italian though. For drinks we had bottle of sparkling wine, Grey Goose & Vesper martinis. For food we had two kinds of pasta including famous spicy vodka pasta, octopus, clams, pork chops, branzino whole fish and side of asparagus. They served complimentary bread, salami and Parmesan cheese. Those were so yummy but don't they make ppl full before the actual meal? The pasta was absolutely the best we'v ever had. But the sauce was a bit too spicy for me. Fish was good but I'v had better. Service could've been better for this price tag. Still it was a pleasant meal with good food and drinks. Overall a good experience. When you sit down, you're greeted with a chunk of fresh Parmesan cheese. Soon followed by pickled cauliflower, rolled salami, and a bread basket. Our waiter spent time directing us to his favorites on the menu. We went with 2 of their specialties which were the veal Parmesan and spicy rigatoni, which were very good. Our 3rd entree was the steak Diane. We got the sauce on the side, which wasn't our favorite. It was an apple brandy, but the steak itself was the best steak we had all weekend. For the size of the entrees, the price was a little high. We didn't get desserts but they looked good. They did provide rainbow air cookies with the check. read more

I was told that there is a $75 fee per person if they cancel or no show, so make sure you go. Complimentary: cheese, pickled cauliflower, salami, and bread. Inside: the place is marvelous and looks like old NY. The antipasti octopus pizzaiolo was hands down the best octopus I've ever eaten. I could tell that they used sous vide because it melted like butter in my mouth. I could have eaten three plates of this and called it a night. This was most definitely the star of the show. My friend ordered the branzino while I had the fettuccini con funghi. For dessert, we split a lemon cheesecake and I had an Americano because I was getting tired. The cheesecake was incredible and decadent, while the complimentary Italian cookies were forgettable and tasteless, but hey, they were free. Hats off to Humberto for being awesome.
