Carbone is an absolute must. From the moment you walk in, it delivers that classic Italian feel elevated, nostalgic, and full of energy. Service is impressive Dougie is a delight. The salmon is easily in my top three best preparations I've ever had perfectly cooked and incredibly flavorful. The bread service and salami service are both fantastic and set the tone right from the start. Desserts are iconic and live up to the hype, and the cocktails and wine list are just as impressive everything feels thoughtfully curated and spot on. The hot/cold reviews concerned me but it was a great experience. They don't take phone calls. If you need to change or adjust your reservation you can only do it by Open or Resy, or going to the location directly. Bring people that will share, t's family style. Despite other reviews, we were told No Mocktails here! I was embarrassed to ask, and was scolded by the server that they can" make it work" but they don't Do Mocktails! I really enjoyed the food here - maybe I had high expectations but I've heard a lot of good things and don't often eat good italian food. For starters, the welcome bread, cheese and salami are incredible...especially the focaccia with tomato sauce. It was hard to resist not eating it all up! We also got the caesar salad which was served tableside. It was a fun experience to see them mixing it - the salad itself was pretty regular... tasty, but not phenomenal. For the main, the vodka sauce rigatoni was a must and we got the veal parmesan as recommended by our server. Pasta was amazing. I don't know about any one else but I thought it may have been the best vodka sauce pasta I've had. Just the right amount of spice. I really enjoyed it. The veal was also great - although a little pricey so I don't know if I'd order again. But the portion sizes were huge and it could feed 2, maybe even 3 people. Another early dinner celebration at Carbone. The service was excellent and friendly throughout. We told them we had a show to catch, and they timed all the dishes (including dessert) perfectly. I appreciated them taking the initiative to divide the pasta in advance and adding a birthday candle to the dessert. I also loved the decor and ambiance. Surprisingly, I found the spicy vodka pasta ($38) just alright--good, but not mind-blowingly so. However, I really liked their meatballs ($28), the welcome bread, and the lemon cheesecake ($18). The linguine ($46) was very well made; I just wish it included more clams. Glitzy and ritzy, this place is as large as the Pentagon. Multiple dining rooms spread are out like suburbs. I arrived slightly earlier than my reservation and lined up to check in. The Hostees were just out of High School. A swarm of automaton hot bots glued to computer monitor. "Please step to the side for seatment." "Can we have a drink in the bar?" "No. Go through the Casino to Bardot on the right, but if you leave, you'll have to get in the check in line again and then wait for seatment". "Fine, I'll wait for seatment". Eventually I was ushered to a table which was next to the Busser Station even though there were many empty tables. "Can I be seated at the corner table over there?" I said to the Hostee who rescued me from seatment. "You'll have to return to the Welcome Desk and ask a Senior Hostess for re-seatment. "Oh for Chissakes, this can't be that hard. I was on the launch pad ready for ignition when another Hostee said she could take me to the requested corner table. By the time I was ungreeted and then seated I was not in the mood for food. The Hip Hop Loop did little to calm my angst but that morphed into Doo Wap, Funk, and Junk, blowing through the speaker system. Soon the sound flunky was busted and the speakers adjusted. Decent music flowed bode well. The Table Captain was smart, professional and pleasant. Within seconds my irritation dissipated as a Runner brought a lovely basket of warm House Baked Bread. Focaccia, Garlic Bread, and Rustic Sesame Loaf took me off the edge of the ledge. Pickled Cauliflower and a pyramid of Salumi flutes joined the basket and were great bar nibbles. The Bar: Hey, it's Vegas, Baby. The town that never runs out or can't get it. Excess is the favorite flavor. You want it, you'll have it just as you like. My Mai Tai was delivered quickly. Several Rums, Almond Syrup (Orgeat) and Lime served tall in a glass that resembled the rear view of Kim Kardashian. The Mai Tai was delicious and dead perfect, although two might have caused the perfect death. The Vibe: Hey, it's Vegas Baby. Everything is over the top. Who's in the house? Hey, it's Vegas, Baby. In short order you'll see everything whether you want to or not. The Staff: On the muscle and the hustle. Ask and yee shall receive. The Food: The actual menu was as large as a Queen Size Flat Sheet and unwieldy considering the little Bar Table better suited for an Ice Cream Shop. The menu itself was short and to the point with several choices under each heading, ie; Primi, Contorni, Carne, Pesce, etc. Most of the items needed explanation, ie; Calamari Marco, Chicken Massimo. Like what's a Marco and a Massimo? Apparently relatives of the owner. That explains it, no? In all fairness all questions were answered in detail with a smile. Calamari Marco winked at me and turned out to be a huge tangle of crispy hot from the fryer Squid Rings, Arms and Legs served with a boat of Butter, Cream, and Calabrian Chile Sauce. If you're on a Statin, just ask for two Lemon Wedges. The Calamari was as good as any professional kitchen can make it and easily enough for three peeps. One Ring and I was an addict. The Caesar Salad was mixed expertly table side, and without splashing dressing on my new shirt. This salad is what Caesar Cardini envisioned it could and should be. It's what a Caesar Salad wants to be when it grows up. Baby Romaine leaves, large Croutons of Rustic Loaf super crunchy from some quality fryer time. The Dressing was Garlicy, Creamy and loaded with White Anchovies. It just doesn't get any better. Should I have quit now? You decide. The Spaghetti Puttanesca (Whore's Spaghetti) had the required ingredients, Kalamata Olives, Capers, Garlic, but not a crushed Red Pepper in sight. The dish was invented by "working girls" who wanted a spicy kick to make them sweatier than their employment normally caused. A puff of sea breeze cooled them before they had to return to a Mister and a Mattress. The Spaghetti was cooked just right but do ask for some Parm and a little cuppa Crushed Pepper. The Pork Chop came buried under a heap of Peppers and Onions which were Vinegary and crunchy as they were cooked just right. Scrape those off to the side and enjoy them before we get to the Pork. An order of Vinegared Artichoke Hearts had pucker power and was a lovely addition. Alas, the Pork was dry, chewy and still connected to sinewy mystery chew. My Pork dream was dashed on the rocks of MEHdiocrity. Perhaps some careful trimming in prep and a dry or wet Brine would have helped. Otherwise the Pork was a pass. Overall the food was good. We had a 9:30 PM reservation for a group of 9 and the place was absolutely packed even that late. If you are having trouble finding it, the restaurant is located on the second floor of the Aria. There is an escalator that takes you right up there. Can we talk about how large the menu is? The actual menus are physically huge. They are so large that there is basically no space on the table to even keep them while you are looking. We were seated in the front room and our server was excellent. We picked a few favorites and they recommended some stellar additions to the meal. While the food is served family style, I felt the portions were on the smaller side for a large group. However, the quality was top notch and everything we ate was delicious. They also have a full bar with great cocktails. After weeks of trying to get a reservation online and over the phone, I decided to walk into Carbone at Aria and try my luck. Since I was just a party of one, I got lucky and was seated right away at the back bar. I was greeted with a wonderful bread basket along with a plate of salami and pickled cauliflower. Everything was terrific and a great way to start the meal. For an appetizer, I went with the Caesar salad and it did not disappoint. It was piled high with cheese and crisp lettuce. The only small downside was that the croutons were a bit greasy. For my main course, I had to try the TikTok-famous vodka rigatoni. It was good! Best thing ever, maybe not - but certainly enjoyable. I also added a meatball on the side, and I would argue it might have been the best meatball I've ever had in my life. Overall, I'd absolutely stop in again the next time I'm in town. The final restaurant I had to visit in Vegas was Carbone -- and it absolutely did not disappoint. I remember walking past the original Carbone years ago thinking, one day. So this felt like my moment. And honestly? I wasn't even sure we'd get in. Vegas was packed that weekend, reservations were tight... but somehow we secured one. Hallelujah. From the second we sat down, it was on. Complimentary Parmesan, pizza bread, garlic bread, and pickled cauliflower -- the most perfect start. That parmesan transported me straight to Italy. Our server was fantastic. He walked us through the menu, helped us map out exactly how many dishes to order, and to top it off -- he's Cuban and I'm Cuban, so that little connection made it even more fun. I will always say yes to tableside anything, and the tableside Caesar was an experience. Those croutons? Melt-in-your-mouth good. We shared: * The meatballs * The spicy rigatoni (should've ordered another, it was that good) * Chicken * Ribeye * Broccoli rabe * Potatoes (my personal favorite side) Everything was flavorful and beautifully executed. I started with an espresso martini -- divine. The back servers were kind and incredibly attentive, and I really appreciated how approachable the wine and cocktail list felt. There was truly something for everyone at different price points, which I love in a high-end spot. Went to the carbone inside the aria. Was a little disappointed overall. We had a reservation for 6 people. The staff was rather difficult to deal with (cold, dismissive, pushed a few expensive items on us). They also put our table in the corner. It was nice to have a bit of privacy, but we were so far outside of where all the action was that there was no real ambiance. They give you some free starters and wow the bread, cheese, and the side dishes were ALL delicious. We got the Cesar salad and calamari as the starters. You can skip on the calamari nothing special, but don't miss the Cesar salad. The BEST one Ive had yet. We got the spicy rigatoni and although it was good, the ribeye diana was even better. So juicy and flavorful. We got broccolini as a side and even that was delicious. We also got tiramisu and pistachio gelato. Their tiramisu was different and they had their own take. It was more cakey and although it wasnt my fave, it was other people's fave in our table. However, the pistachio ice cream has me on chokehold. I will start by stating that I made the trip to Las Vegas to eat at Carbone, that's how much I loved my first experience years ago and couldn't wait to return. This visit did not disappoint at all! The experience starts off with complementary, pickled cauliflower, large variety of bread, and cured meat slices. Then your host recommends a a variety of family style items as starters and mains. My favorite item was the Dover Sole and Caesar salad - both prepared table side. This is not an inexpensive meal but well worth it!!! The Dover sole was market price and ended up being $165 but tasted heavenly and worth every penny of buttery goodness. The Caesar salad is in the top 5% of Caesar salad in my humble view, from perfectly balanced dressing to amazing croutons and crunchy little gem Romain lettuce. The service is incredibly professional, friendly, and top-notch. Ask for a cozy booth and enjoy the experience! The fried calamari was pretty good 6.5/10, but I would've preferred more breading. My girlfriend and I both ordered the Ribeye Diana which was about $99 each. I thought that with the price and how fancy the restaurant was they would know how to cook a steak. We ordered medium and over half our steaks were well done. It was literally grey throughout. I would have sent it back, but because it is fine dining, everything took forever to come out. So we have finally tried the famous Carbone. It was our second anniversary dinner of the evening. This restaurant is much bigger than I thought and it's right next to Sky Suites promenade entrance where we stayed at. We were seated in the small room in the back with a tiny bar. Place was lively but very loud and crowded. It's old NYC Italian restaurant vibe. Food is Italian American not authentic Italian though. For drinks we had bottle of sparkling wine, Grey Goose & Vesper martinis. For food we had two kinds of pasta including famous spicy vodka pasta, octopus, clams, pork chops, branzino whole fish and side of asparagus. They served complimentary bread, salami and Parmesan cheese. Those were so yummy but don't they make ppl full before the actual meal? The pasta was absolutely the best we'v ever had. Hands down my favorite Italian restaurant of all times! I have been hearing the hype around this place for years and finally got to try it for the first time. This is the perfect restaurant to celebrate a special occasion - the ambiance, service, and food will not disappoint. It's such good value for the service and the food. FREE bread + salami + aged parmesan + cauliflower + dessert included!! The restaurant looks like it came straight out of a movie. The decorations, tableware, and uniform of the employees were all beautifully coordinated. We loved our waiter who was funny, extremely knowledgeable about the menu, and made us feel incredibly at ease at this upscale restaurant. I was told that there is a $75 fee per person if they cancel or no show, so make sure you go. Complimentary: cheese, pickled cauliflower, salami, and bread. Inside: the place is marvelous and looks like old NY. The antipasti octopus pizzaiolo was hands down the best octopus I've ever eaten. I could tell that they used sous vide because it melted like butter in my mouth. I could have eaten three plates of this and called it a night. This was most definitely the star of the show. My friend ordered the branzino while I had the fettuccini con funghi. For dessert, we split a lemon cheesecake and I had an Americano because I was getting tired. The cheesecake was incredible and decadent, while the complimentary Italian cookies were forgettable and tasteless, but hey, they were free. Hats off to Humberto for being awesome. The prices might look crazy to some, but anyone who has eaten here can tell you it's not. It's really worth every penny. I attempted a walk in and was told to return in 2 hours for a seat at the bar. By the time I came back they brought me in and the service was incredible. I normally don't like sitting at the bar at restaurants like this -- I feel like the service isn't usually as good. I couldn't have been more wrong. The staff was SO attentive and so nice to talk to. I wasn't that hungry and really just came to cross the famous spicy rigatoni off my bucket list. But they kept bringing me food! First the bread basket, which was NOT your average italian restaurant bread. The basket had three different types of bread, each delicious but the stand out was the tomato focaccia. Then came MORE complimentary food. Assorted cheeses, pickled cauliflower, a plate full of parmesan, and an extra plate of just salami. I didn't realize this was a thing! Then I got my spicy rigatoni, and I immediately got the hype. From the atmosphere to the attention to detail in every dish, plus a very attentive waiter, we could not have asked for a better experience. My husband had a martini and I enjoyed a glass of white. We started with the house stuzzichini, which included large chunks of Parmesan, dry salami, and assorted breads. The semolina bread was easily a standout and so delicious. For our starter, we had the beef carpaccio drizzled with truffle oil and it was incredible. I highly recommend trying it. For our mains, we ordered their most popular pasta, the spicy rigatoni vodka. It is easy to see why it is so well known. The flavors were perfectly balanced with a nice kick of spice. We also ordered the orecchiette Vito, which reminded us of a pasta dish we had in Milan. The finely chopped broccoli rabe pesto mixed with sausage was perfection. We ended the night with a chocolate and hazelnut layer cake topped with vanilla ice cream and gold flakes. We paired it with an espresso, which was much needed to keep up with the Vegas nightlife. I would recommend this restaurant as a one time experience to really enjoy everything it offers. Carbone at the ARIA (2nd floor) absolutely lived up to the hype and more. I went with my family of four during Thanksgiving week, and it ended up being one of the best dining experiences we've ever had. Initially, the only reservation I could snag was a 10 pm slot on a weeknight--basically midnight in my home time zone. I figured I'd be eating two dinners that day. A few days before, I called to see if there was any chance of an earlier table, and voila--amazing customer service! They graciously moved us to 8 PM, which was perfect. The moment we sat down, we were offered flat or sparkling water and began a dining "journey" that kept getting better. Let's talk about the "free bread" basket... OMG. It was massive, warm, delicious, and honestly could've been a meal on its own. We were already halfway full before appetizers even arrived. Food highlights: Calamari: Lightly fried, tender, and simply delicious. One of the best versions I've had. Caesar Salad: On point. They use anchovies (as they should!), and the server assembled the entire salad right in front of us--dinner and a show, but the show was free. Spicy Rigatoni Vodka: Their signature dish, and yes, it's absolutely worth the hype. Perfectly al dente pasta with a rich, spicy, creamy sauce. Perfection. Service was stellar--engaging without being overbearing, conversational but professional, and zero pressure to over-order. The ambiance was exactly what you'd expect from Carbone: classy, dimly lit, and upscale but still comfortable. And not onto loud inside so we could actually hear each other and hear the waiter. $100+ I wanted to share feedback regarding our recent visit to Carbone. We came all the way from D.C to recreate our best meal yet. We dined there last year and had such an incredible experience that we were truly excited to return and recreate that evening. Unfortunately, this visit was very disappointing. I do want to begin by recognizing German, our table assistant, who was absolutely wonderful. He was attentive, kind, and made sure we always had water, brought ice promptly, and happily accommodated requests like additional cheese. His service did not go unnoticed, and we truly appreciated him. However, once our captain, Christian, became involved, the experience began to decline. There was a noticeable lack of urgency, minimal eye contact, and an absence of warmth that you would expect at a restaurant of this caliber. We ordered the same items we had during our previous visit: the Caesar alla ZZ, rigatoni alla vodka, lobster ravioli, branzino, and the hazelnut chocolate cake (recommended again by German), along with three drinks. When we ordered the Caesar salad, Christian informed us it could not be prepared tableside as before, but instead would be made in front of a mirror. This was disappointing, especially since bringing out a cart for tableside preparation had been part of our previous experience. However, when it came time for dessert, bringing out the dessert cart was not an issue, which made the earlier limitation more confusing. While we understood and moved forward, the salad took approximately 25 minutes to arrive, and when it did, it did not resemble the dish we remembered. It had an overwhelming horseradish flavor rather than garlic. As someone who enjoys garlic and often asks for extra, this was clearly not garlic. When I politely asked Christian if the recipe had changed, his response was, "The kitchen makes it, I don't," delivered in a dismissive and rude manner that made me feel uncomfortable for even asking. Due to the overpowering flavor, I let German know I would not be eating the salad. He handled the situation graciously and removed it from our bill, which we appreciated, although that was not our intention. Additionally, our pasta dishes took about 35 minutes to arrive, despite ordering everything together and not having appetizers. The rigatoni was also slightly overcooked, which added to our disappointment. On a positive note, the dessert itself was excellent and lived up to our expectations. Overall, the food quality did not meet the standard we experienced during our previous visit, and the service--particularly from our captain--fell short of expectations. Combined with the long wait times, the evening did not reflect the level of excellence we had come to expect from Carbone. Given how much this place gets hyped, it was very underwhelming. The calamari was rubbery, the salad was fine but nothing special, the broccoli rabe was soggy with no crunch or flavor, and the vodka pasta was delicious but overpriced. The best thing here was the wine (I got the Camigliano Brunello di Montalcino). The service was even bad. Our waiter seemed frazzled, would interrupt when we asked questions, and just generally seemed inconvenienced by our presence. For an almost $400 bill, this was not the experience I expected to have. The restaurant itself was nice and well lit and decorated. The hostess walked us to the very far back for our table. This location has a lot of nooks and crannies. read more

I came here for an attempted light meal. I only ordered the Spicy Rigatoni Vodka and didn't realize that it would include some many other tasty bites. I didn't have a reservation so I requested bar seating. There was no wait but the bar seating did fill up soon after I arrived. FOOD Spicy Rigatoni Vodka - I thought this was just right. The pasta was cooked properly and the sauce was flavorful and enjoyable. The portion size was good too. EXTRAS When you dine here, they include a complimentary bread basket, plate of salami, and a bowl of pickled cauliflower. The bread basket consisted of an assortment of high quality breads. The salami and cauliflower were great to snack on too. SERVICE I dined at the bar side. I thought service was good. The people here seemed polite and available. read more

I came into Carbone with main character energy and a reservation secured two weeks in advance--because if there's one thing I don't play about, it's high-end Italian food. I was ready for a cinematic dining experience... velvet booths, impeccable service, and pasta that makes you question your life choices. Instead? I got... a soft opening of disappointment. We arrived 10 minutes early for our 7PM reservation (because punctuality is sexy), only to be seated 15 minutes late. Okay, fine--build the suspense. But then... plot twist. We were escorted to what I can only describe as the "forgotten corner"--right by the kitchen, tucked away like we accidentally crashed a private party. It felt less "exclusive dining experience" and more "last-minute folding chair at Thanksgiving." Then came the real magic trick--our server disappearing act. 20 minutes. Twenty. Whole. Minutes. Before anyone came to take our order. At that point, I had already memorized the menu, considered a career change, and nearly cooked the Spicy Rigatoni myself. Speaking of food--let's be fair: Spicy Rigatoni Vodka (x2): Good, but not "call-your-ex-and-tell-them-you've-moved-on" good. Caesar Salad (x2): Solid. Reliable. The MVP of the night. Potatoes Louie: Cute, crispy, did their job. Drinks: Forgettable. Like... I'm trying to remember them as I write this and it's giving 404 error. The bread basket though? Oh she showed up. Warm, delicious, and honestly the most consistent relationship I had that night. But the service? Whew. It felt like we were on a dining conveyor belt--drop the food, disappear, repeat. No vibe, no warmth, no "you're special for being here." And at this price point? I expect to feel like I'm staying in a Aria Sky Suite Penthouse, not like I'm on standby seating. Final thoughts: Carbone is giving overhyped with a side of missed potential. There are too many incredible spots in Vegas to spend your time (and money) feeling like an afterthought. Would I come back? Maybe... if the bread basket personally invites me. Otherwise, I'll keep my pasta standards--and my expectations--elsewhere. read more

the Carbone hype is real, definitely plan ahead since reservations are hard to get. We ordered the "Assorted Baked Clams" to start and they were some of the best i've had. They do start you off with salami, cheese, pickled cauliflower and some highly addictive bread .. what a great way to start and 1 appetizer + the bread is more than enough for 2 people. For entrees, i ordered the famous "Spicy Rigatoni Vodka" and my lady ordered the "Lobster Ravioli". The ravioli dish had some great lobster pieces and the rigatoni can be too spicy if spicy isnt your thing .. for me, it hit the spot with the bread to soak up and was a dish that for sure stood out from my trip. We were treated to some lemon ricotta cheesecake for the birthday sweetheart and some of the famous cookies which we saved for later in the night. They have quite the spread for sweets here, so make room. Love the low-lit ambience with 90's music (im sure they switch it up depending on day).. attention to detail and service was one of the best in Vegas that I've experienced. If you came from another resort, like us .. finding Carbone can be an adventure depending on where you get dropped off. Easiest thing to do is just ask any Aria staff where-to start and follow the signs.. Aria is a great property which deserves to be explored after a great meal at Carbone! read more
