My friends and I planned a Vegas trip, and for the birthday dinner, we decided on the iconic Carbone! I highly recommend making a reservation well in advance because they get super busy. We booked ours three weeks ahead and only got lucky because someone had canceled their booking. Once we were seated, I noticed how they have different rooms and sections with plenty of seating, giving the restaurant a really cool atmosphere. We sat by the bar and started off with some great drinks. They also provided complimentary appetizers, which were amazing, especially the cheese! I highly recommend getting the calamari as it was very light yet flavorful. We also ordered the spicy rigatoni vodka, which is their infamous pasta and genuinely made for an amazing meal. The lobster ravioli was also very good, featuring a generous amount of lobster. However, we liked the salmon but we just heavily preferred the other dishes we received. As for dessert, we ended our meal with the tiramisu, which was very good and the perfect way to wrap up our dinner. I will say that as much as I enjoyed the food, I wasn't particularly happy with the service. Our bartender completely forgot about us for a bit and even took one of our plates before we were finished or able to say anything, which was quite disappointing. Still, a memorable birthday dinner spot!
We dined at Carbone for my birthday, and because even after all these years reservations are hard to come by, ours was for 9pm and we were seated closer to 9:25. The restaurant is much larger than meets the eye and we were seated in the small back room with the additional bar. There were quite a few tables open. Service was attentive and professional. We ordered a bottle of wine which they kept chilled and always made sure to refill our glasses as needed. I was a huge fan of the complimentary starters and to be honest I think they were my favorite part of the meal. A member of the staff comes to your table to serve a chunk of parmesan cheese cut right off the block. You also receive a bowl of pickled cauliflower, a beautifully presented salami rose plate, and a basket of 3 types of fresh bread. Our waiter informed us that everything was served family style and meant to be shared, so I found it interesting that they split our order of Spicy Rigatoni Vodka for us. It's one of their most well-known dishes and we really enjoyed it. The Octopus Pizzaiolo was delicious, especially with the inclusion of the crispy potatoes. The thick piece of fish on the Salmon Oreganata was beautiful but the salmon itself lacked a bit of seasoning. They bring around a dessert cart but we opted out as nothing caught our eye and we were pretty full. They brought out a small birthday dessert with a candle, which was delicious and always appreciated.
Lovely place for a date night or dinner with the gals. Ambiance is dim lit and intimate, but can be a little loud. I loved the decor, it gave speakeasy vibes. Staff was attentive, welcoming, charismatic which added to my first time dining here. Overall id totally come back. I find it overpriced but its vegas and at least I know itll be tasty food (ex: how is one meatball $10 excluding tax + tip) Free Bread (5/5): Loved the toasted garlic bread!!! Cauliflower & salami came out too but I didnt try it Spicy Rigatoni Vodka + Meatball add-on (4.5/5): Both were delicious. No option to add chicken so i ordered a side of meatballs which is not on the menu ($10 per meatball). For $36, the vodka pasta should come with a protein. Tortellini Ragu (3/5): Loved the ragu sauce & meat, I felt the tortellini was a little too rich but I think thats personal preference. Couldve came with more meat for $38. I wouldnt order again Tiramisu (5/5): Soooo good, definitely recommend. its enough for two people Tip: Make reservations in advance as its very popular. If you dont, you may get lucky and snag a spot at one of the two bars inside like we did!
I called in advance to make a reservation for 1 and I let the person on the phone know the date and time. She booked it a day early for whatever reason. I got there and they couldn't find my reservation. The front desk lady ended up squeezing me in. The service was absolutely fantastic and food was great.
All I can say is that this restaurant is absolutely worth the hype! We felt so lucky to score a reservation here and then we proceeded to have one of the best meals we can remember in Vegas. Highly recommend the carpaccio with truffle- divine! We also tried some of their specialties, including veal Parmesan and spicy vodka rigatoni. They had branzino too which was out of this world. The service was impeccable, and the atmosphere made you feel like you stepped into a different era. Shout out to our amazing server Juan who made our night so very special.
This was a different experience, mostly good but with some deficiencies based largely on food preparation preferences. For example, for Veal Marsala I greatly prefer well-pounded scallops of veal rather than veal off the bone. So, I opted for Veal Parmesan instead, which was good but still served with a bone. Said a server to me, "Aren't you going to eat the bone?" and I answered, "Why? Do I look like a dog?" "No," he replied. "Meat on the bone is the best part." So, I gnawed on the bone a little bit, and I concede that the meat I encountered was indeed tasty. But Diane reported that her Fettuccine Alfredo was slightly overcooked. Far more impressive than our entrees were the free preliminaries that were brought en masse to our table at the outset of our meal: a Bread Basket with Sesame Seed Bread and Tomato Focaccia, delicious Italian Salami, chunks of Parmesan, and Pickled Cauliflower, followed by light and golden Calamari Marco. Tortellini in Brodo Soup filled with Swiss Chard and Foie Gras was good but too salty. A Caesar Salad prepared tableside was very fresh with finely grated Parmesan Cheese spilled over the Romaine leaves like snow. A fine side was Potatoes Louie, soft and tender sauteed potatoes. We were warned by an assistant server that we were probably ordering too much dessert, and he was right. But we thought we were ordering individual desserts. It turned out that each of them could have easily served three or four diners. The four of us did ultimately each try different desserts in the end. They were Chocolate Cherry Blackout Cake, Vanilla Ice Cream, Carrot Cake, and Lemon Cheesecake. Each was an excellent example of the type of dessert it represented. Service was excellent. Our captain just forgot to bring requested Marinara Sauce for the Calamari besides the spicy aioli that was tasty enough that I no longer wanted any other sauce. Our dining room with a black and white checkered floor was crowded but still classy, and table seating was comfortable. Yet the noise level was so loud that it was difficult to carry on an easily understood conversation at our table.
First time here. Got my reservations like a month in advance. They give you complementary Parmesan cheese, bread and salami and some pickled veggies. Everything was delicious! Reminded abit of a charcuterie board. We got 2 pastas. The vodka pasta. It was yummy. Probably my favorite vodka pasta I ever had. The other pasta we got is tortellini Al ragu. It was yummy! For dessert they give you complementary rainbow cookies(they were okay). The server was funny.
Reserved weeks before and got a seating arrangement away from the main dining room. Spicy Rigatoni was the most talked about and it was fire. Ordered the freshest caprese salad, freshly baked focaccia, delicious truffled corn, and tender prime porterhouse. I enjoyed it all. Great service overall, must go if you haven't!!
I'm from NY and can't get in the one in my town BUT I was with friends who got a reservation. I now get the HYPE. It was awesome! First, the vibes are great! I love the decor, the booth we sat in and the whole restaurant. It was packed on a Tuesday. Ofc I had to try the spicy rigatoni and the chicken parm. The breadbasket was so good and the cheese that was placed on the table before we ordered. Everything was great and the waiter was amazing. Hope to try to get in NY where I live. LOL!
We had a great experience at Carbone in Las Vegas. I had previously visited their Dallas location and tried the Spicy Vodka Rigatoni for the first time, so I was excited to have it again, and it did not disappoint. The only downside was that it took a while to be seated, and there was a bit of a wait before our server greeted us and brought water. Aside from that, the experience was excellent. The food was outstanding, the atmosphere was lively, and the overall dining experience felt special. If you're visiting Las Vegas, I definitely recommend checking out Carbone. Just be sure to make a reservation well in advance, as it's a very popular spot.
It feels like this place is so overhyped. I won't go so far as to say that it's bad. I mean the food was OK, especially if you factor in the price. Now I'm not one to shy away from a decently expensive meal at a place of this price range, but with a place of this price range I expect a certain level of quality. This place fell short. The Veal Parmesan was OK. Flavorful enough, tender enough, but lacking severely in crisp. The complementary breads were fine; I enjoyed the variety. The Caesar salad was INTENSE, like almost TOO intense. I will say that the spicy rigatoni was pretty good although I wish it was a tad more spicy. But an expensive pasta with no protein does have you questioning the worth. I can't complain about the service, I don't recall there being any issues. The vibe to me is like kind of classy old school Italian. Although it's kind of loud in some rooms, the back room where we were at wasn't so loud and crowded.

Service was attentive, done with a sincere passion to bring every diner a great experience. - The salads are huge, delish, and would easily feed 2-3. - I tried one of their signature items, spicy rigatoni with vodka sauce. I thoroughly enjoyed this dish, which was perfectly al dente and layered with rich, vibrant flavors. - Shared the Torta di Nocciole with my wife and we both loved it. This dessert is emblematic of the Carbone experience: big, bold, maybe a little excessive, and an absolute must-try on your next Vegas trip.
Carbone is an absolute must. From the moment you walk in, it delivers that classic Italian feel elevated, nostalgic, and full of energy. Service is impressive Dougie is a delight. The salmon is easily in my top three best preparations I've ever had perfectly cooked and incredibly flavorful. The bread service and salami service are both fantastic and set the tone right from the start. Desserts are iconic and live up to the hype, and the cocktails and wine list are just as impressive everything feels thoughtfully curated and spot on. It's a smaller interior, so definitely book well in advance it fills up fast for a reason. Overall, a flawless experience and one I'll be thinking about for a long time.
This is easily one of my favorite restaurants in a long while! Shout out to Joey, our wonderful waiter, for his kindness, attentiveness, great recommendations, and cool personality! The meal comes first with cheese, three different types of bread, cauliflower, and salami slices. All delicious and all free. We had the caprese salad and the tomatoes were to die for. So good. If it's in season, def get this. It's large and perfect for sharing. We got the Spicy Rigatoni Vodka and this was delicious... BUT My favorite was the Orecchiette Vito. I know everyone raves about the rigatoni but the orecchiette Vito was legit. Both pastas were perfectly al dente. The Vito was a tad bitter in taste but it was sooooo good. Wahh I still think about it! We got the Ribeye Diana and Funghi Trifolati. The ribeye was perfectly cooked and seasoned. The mushrooms were fleshy and a pretty large side. For three women, we finished everything ordered but were sooo stuffed. We'd probably been fine not getting the rigatoni.. lol! Def plan on coming back when in Vegas. We scored a last-minute reservation for 8 people on a Friday night, which was such a pleasant surprise! The service was great--our server was attentive, friendly, and kept checking in to make sure we had everything we needed without being overbearing. I ordered the spicy rigatoni vodka pasta, and it was absolutely delicious. I don't handle super spicy food well, but this had the perfect amount of heat and so much flavor. The Caesar salad is a must! They prepare it tableside, and it's honestly the best Caesar salad I've ever had. We'll definitely be back. read more

Carbone is a classic restaurant with delicious food and a great vibe. It's so hard to get a reservation but if you do, it's worth it. A celebrity hot spot for a reason, this place serves great quality Italian food that may seem overhyped but you get what you pay for! Fresh ingredients and great taste. The rigatoni and Caesar are classic must haves. Their house bread basket, salami and picked veggies are delicious. Skip the veal, it was dry and over priced. Just go for the pasta and salad and maybe another app and you'll be happy. Also the best drink I've ever had - the paper plane - 10000/10! read more
Omg where do I start. The vibes of Carbone are definitely excellent. We had a nice booth that sat back and we could see most of the restaurant. The service was phenomenal. All of needs were met and any question we had regarding dietary restrictions were completely answered. The food was great. My friend and I split the Calamari (not pictured, we ate it before the pictures), Caesar salad, the spicy rigatoni vodka, shrimp scampi, and asparagus. I have gluten allergy and I was still able to enjoy the pasta and the calamari was made with rice flour so I could have that as well. I can't wait to come back to Carbone! read more
an extra star for the on the house little appetizers of cheese, salami, and bread. the quality of these were delicious. we opt for the veal parmesan and spicy rigatoni and though it was good just a tad pricey. i wish the rigatoni was more spicier. you also get the on the house spudmoni/tri color cake cookies. read more
I really enjoyed the food here - maybe I had high expectations but I've heard a lot of good things and don't often eat good italian food. For starters, the welcome bread, cheese and salami are incredible...especially the focaccia with tomato sauce. It was hard to resist not eating it all up! We also got the caesar salad which was served tableside. It was a fun experience to see them mixing it - the salad itself was pretty regular... tasty, but not phenomenal. For the main, the vodka sauce rigatoni was a must and we got the veal parmesan as recommended by our server. Pasta was amazing. I don't know about any one else but I thought it may have been the best vodka sauce pasta I've had. Just the right amount of spice. I really enjoyed it. The veal was also great - although a little pricey so I don't know if I'd order again. But the portion sizes were huge and it could feed 2, maybe even 3 people. I'd definitely come back to dinner again. read more

This is one of those restaurants I've had bookmarked for quite awhile but never made time for it or had other plans. But this time I made it a priority just to check it off my list. Going to make it short.. would I come back, probably not. It's checked off my list and its not one of those places I must come here every time I'm in Vegas. Pricey? Yes, but when its good I don't paying.. only thing i did mind was the $10 meatball! Was a bit dry and was better not ordering it. But pasta was very good! read more

Love the vibes in here and the food was delicious. You definitely need to make a reservation ahead of time as they get busy and are very popular. Everything was so good but by far our favorite was the spicy rigatoni, potatoes and the bread. We were not a fan of the broccoli and our steak was a bit chewy but everything else makes up for it. Definitely a fun culinary experience. read more

Another early dinner celebration at Carbone. The service was excellent and friendly throughout. We told them we had a show to catch, and they timed all the dishes (including dessert) perfectly. I appreciated them taking the initiative to divide the pasta in advance and adding a birthday candle to the dessert. I also loved the decor and ambiance. Surprisingly, I found the spicy vodka pasta ($38) just alright--good, but not mind-blowingly so. However, I really liked their meatballs ($28), the welcome bread, and the lemon cheesecake ($18). The linguine ($46) was very well made; I just wish it included more clams. Will recommend for special occasions, and I'm curious to try out their mains (steaks and veal parmesan) next time. read more

Great Italian food and positive dining experience from start to finish. The pasta was perfectly cooked, the flavors were rich and authentic, and every dish felt thoughtfully prepared. The service was attentive without being overbearing, and the atmosphere was elegant yet comfortable. Glitzy and ritzy, this place is as large as the Pentagon. Multiple dining rooms spread are out like suburbs. I arrived slightly earlier than my reservation and lined up to check in. The Hostees were just out of High School. A swarm of automaton hot bots glued to computer monitor. "Please step to the side for seatment." "Can we have a drink in the bar?" "No. Go through the Casino to Bardot on the right, but if you leave, you'll have to get in the check in line again and then wait for seatment". "Fine, I'll wait for seatment". Eventually I was ushered to a table which was next to the Busser Station even though there were many empty tables. "Can I be seated at the corner table over there?" I said to the Hostee who rescued me from seatment. "You'll have to return to the Welcome Desk and ask a Senior Hostess for re-seatment. "Oh for Chissakes, this can't be that hard. I was on the launch pad ready for ignition when another Hostee said she could take me to the requested corner table. By the time I was ungreeted and then seated I was not in the mood for food. The Hip Hop Loop did little to calm my angst but that morphed into Doo Wap, Funk, and Junk, blowing through the speaker system. Soon the sound flunky was busted and the speakers adjusted. Decent music flowed bode well. The Table Captain was smart, professional and pleasant. Within seconds my irritation dissipated as a Runner brought a lovely basket of warm House Baked Bread. Focaccia, Garlic Bread, and Rustic Sesame Loaf took me off the edge of the ledge. Pickled Cauliflower and a pyramid of Salumi flutes joined the basket and were great bar nibbles. The Bar: Hey, it's Vegas, Baby. The town that never runs out or can't get it. Excess is the favorite flavor. You want it, you'll have it just as you like. My Mai Tai was delivered quickly. Several Rums, Almond Syrup (Orgeat) and Lime served tall in a glass that resembled the rear view of Kim Kardashian. The Mai Tai was delicious and dead perfect, although two might have caused the perfect death. The Vibe: Hey, it's Vegas Baby. Everything is over the top. Who's in the house? Hey, it's Vegas, Baby. In short order you'll see everything whether you want to or not. The Staff: On the muscle and the hustle. Ask and yee shall receive. The Food: The actual menu was as large as a Queen Size Flat Sheet and unwieldy considering the little Bar Table better suited for an Ice Cream Shop. The menu itself was short and to the point with several choices under each heading, ie; Primi, Contorni, Carne, Pesce, etc. Most of the items needed explanation, ie; Calamari Marco, Chicken Massimo. Like what's a Marco and a Massimo? Apparently relatives of the owner. That explains it, no? In all fairness all questions were answered in detail with a smile. Calamari Marco winked at me and turned out to be a huge tangle of crispy hot from the fryer Squid Rings, Arms and Legs served with a boat of Butter, Cream, and Calabrian Chile Sauce. If you're on a Statin, just ask for two Lemon Wedges. The Calamari was as good as any professional kitchen can make it and easily enough for three peeps. One Ring and I was an addict. The Caesar Salad was mixed expertly table side, and without splashing dressing on my new shirt. This salad is what Caesar Cardini envisioned it could and should be. It's what a Caesar Salad wants to be when it grows up. Baby Romaine leaves, large Croutons of Rustic Loaf super crunchy from some quality fryer time. The Dressing was Garlicy, Creamy and loaded with White Anchovies. It just doesn't get any better. Should I have quit now? You decide. The Spaghetti Puttanesca (Whore's Spaghetti) had the required ingredients, Kalamata Olives, Capers, Garlic, but not a crushed Red Pepper in sight. The dish was invented by "working girls" who wanted a spicy kick to make them sweatier than their employment normally caused. A puff of sea breeze cooled them before they had to return to a Mister and a Mattress. The Spaghetti was cooked just right but do ask for some Parm and a little cuppa Crushed Pepper. The Pork Chop came buried under a heap of Peppers and Onions which were Vinegary and crunchy as they were cooked just right. Scrape those off to the side and enjoy them before we get to the Pork. An order of Vinegared Artichoke Hearts had pucker power and was a lovely addition. Alas, the Pork was dry, chewy and still connected to sinewy mystery chew. My Pork dream was dashed on the rocks of MEHdiocrity. Perhaps some careful trimming in prep and a dry or wet Brine would have helped. Otherwise the Pork was a pass. Overall the food was good. The place was slammed by 6:30 so what do they care if the Pork fought the fork to a decision? Was the food as good as the flagship Carbone in New York? Nobone. Carbone phone home. read more

We've been dining at Carbone for years and have always enjoyed our meals here. Our most recent time really out did all of our past visits and may have been one of our best dining experiences ever. Dion was not only welcoming, but really made us feel like we were the most important people in the room. The way he explained the specials made our mouths water and we decided to order almost all of his suggestions. From the scallops with blood orange, to the salad with fresh peas and then the perfectly cooked filet, we had such a delightful meal. Even the pasta course with their famous spicy vodka sauce was enhanced with the house meatball. After such a decadent meal, I didn't think we could have dessert, but Dion surprised us with a lemon cheese cake and carrot cake that were to die for. I always love visiting Carbone during the summer especially for the people watching, and the staff absolutely make it a wonderful experience. It's such a cool vibe for both large groups or an intimate date night. I can't thank Dion and his team enough for the wonderful service and meal. I'm already looking forward to our next visit, hopefully sooner rather than later. read more
We had a 9:30 PM reservation for a group of 9 and the place was absolutely packed even that late. If you are having trouble finding it, the restaurant is located on the second floor of the Aria. There is an escalator that takes you right up there. Can we talk about how large the menu is? The actual menus are physically huge. They are so large that there is basically no space on the table to even keep them while you are looking. We were seated in the front room and our server was excellent. We picked a few favorites and they recommended some stellar additions to the meal. While the food is served family style, I felt the portions were on the smaller side for a large group. However, the quality was top notch and everything we ate was delicious. They also have a full bar with great cocktails. The highlight of the night was when Kevin Hart walked out from the back right as we were finishing. Security did not allow photos, but it definitely added to the Vegas experience. read more

After weeks of trying to get a reservation online and over the phone, I decided to walk into Carbone at Aria and try my luck. Since I was just a party of one, I got lucky and was seated right away at the back bar. I was greeted with a wonderful bread basket along with a plate of salami and pickled cauliflower. Everything was terrific and a great way to start the meal. For an appetizer, I went with the Caesar salad and it did not disappoint. It was piled high with cheese and crisp lettuce. The only small downside was that the croutons were a bit greasy. For my main course, I had to try the TikTok-famous vodka rigatoni. It was good! Best thing ever, maybe not - but certainly enjoyable. I also added a meatball on the side, and I would argue it might have been the best meatball I've ever had in my life. Overall, I'd absolutely stop in again the next time I'm in town. If you can't snag a reservation, it's worth trying your luck walking in like I did. read more

The final restaurant I had to visit in Vegas was Carbone -- and it absolutely did not disappoint. I remember walking past the original Carbone years ago thinking, one day. So this felt like my moment. And honestly? I wasn't even sure we'd get in. Vegas was packed that weekend, reservations were tight... but somehow we secured one. Hallelujah. From the second we sat down, it was on. Complimentary Parmesan, pizza bread, garlic bread, and pickled cauliflower -- the most perfect start. That parmesan transported me straight to Italy. Our server was fantastic. He walked us through the menu, helped us map out exactly how many dishes to order, and to top it off -- he's Cuban and I'm Cuban, so that little connection made it even more fun. I will always say yes to tableside anything, and the tableside Caesar was an experience. Those croutons? Melt-in-your-mouth good. We shared: * The meatballs * The spicy rigatoni (should've ordered another, it was that good) * Chicken * Ribeye * Broccoli rabe * Potatoes (my personal favorite side) Everything was flavorful and beautifully executed. I started with an espresso martini -- divine. The back servers were kind and incredibly attentive, and I really appreciated how approachable the wine and cocktail list felt. There was truly something for everyone at different price points, which I love in a high-end spot. To finish, we had the carrot cake, cheesecake, and a hazelnut dessert the restaurant sent out complimentary -- such a sweet touch. The space itself is stunning -- glamorous, classic, buzzy. We had the best time here! Came to celebrate a bachelorette and we're not disappointed! There were 7 of us and we left full. The food was DELICIOUS! The calamari was the star of the show for me, whatever they put in that dipping sauce was so delicious. The restaurant itself is dark and romantic vibes, but VERY jam packed. Service was outstanding, super friendly staff! I would definitely come back for date night with my husband, but not sure about a big group due to how little space there is to move around. read more

Service was phenomenal! We had reservations and was seated right away. There were two servers helping us and they thoroughly went through the menu for us. They give you some free starters and wow the bread, cheese, and the side dishes were ALL delicious. We got the Cesar salad and calamari as the starters. You can skip on the calamari nothing special, but don't miss the Cesar salad. The BEST one Ive had yet. We got the spicy rigatoni and although it was good, the ribeye diana was even better. So juicy and flavorful. We got broccolini as a side and even that was delicious. We also got tiramisu and pistachio gelato. Their tiramisu was different and they had their own take. It was more cakey and although it wasnt my fave, it was other people's fave in our table. However, the pistachio ice cream has me on chokehold. I'm a big foodie and have dined at many fine dining restaurants in Las Vegas, and this was one of the worst service experiences I've had. We had a 9:15 reservation but didn't receive our entrees until after 11:30PM. We were informed nearly an hour after ordering that one of the dishes was unavailable, and another order came out completely wrong. Interestingly, the only thing that arrived quickly were our $350 bottles of wine. My wife didn't enjoy the food and I was left with a sour taste because our entire order was wrong. I will start by stating that I made the trip to Las Vegas to eat at Carbone, that's how much I loved my first experience years ago and couldn't wait to return. This visit did not disappoint at all! The experience starts off with complementary, pickled cauliflower, large variety of bread, and cured meat slices. Then your host recommends a a variety of family style items as starters and mains. My favorite item was the Dover Sole and Caesar salad - both prepared table side. This is not an inexpensive meal but well worth it!!! The Dover sole was market price and ended up being $165 but tasted heavenly and worth every penny of buttery goodness. The Caesar salad is in the top 5% of Caesar salad in my humble view, from perfectly balanced dressing to amazing croutons and crunchy little gem Romain lettuce. The service is incredibly professional, friendly, and top-notch. Ask for a cozy booth and enjoy the experience! I can't wait until my next visit and want to visit their new location at the Bellagio. read more

They have don't a chicken pasta, but they have chicken dishes and you can get pasta. No creamy pastas on the menu, but the spicy rigatoni has cream in it.

Yes! Really good variety and good quality, don't get too full on it!
If they don't have space for reservations can they take you as a walk in if someone cancels?
They do take reservations but probably needs to be well in advance. I tipped hostess $100 & got in immediately. Guess that's old school. Worth it though. We had spectacular evening.
