All the coaches and players from the summer league were being accommodated but my reservation was delayed by an hour and my party had to sit in two separate tables. We were lucky to get enough to get a reservation here on our last trip to Vegas we sat down quickly and was greeted by our waiter. I really liked our waiter. He was very warm and welcoming. The complimentary appetizers were delicious and a nice touch. We started with Ceasar salad. This was probably the only thing we ordered that wasn't great. The salad was drenched in dressing and gave me a taste in my mouth that I couldn't shake for the rest of the night. For main entrees we ordered spicy rigatoni, pork chop with peppers, spaghetti with meatballs, and the tortellini with marinara ( can't remember the formal name for the last 2) all outstanding. What really blew our minds at the end, was the dessert. A chocolate cake that was so delicious. I would of still have it 5 stars if it didn't take us 45 mins to get our food. Even after showing it to them. They took my plate only to come back and say "the chef eat what I had taken out of my mouth. Ate dinner here tonight was excited based on all the reviews but a complete letdown. It started with the unfriendly hostess with the purple hair and just went downhill. The pickled cauliflower was delicious as was the bread. The octopus appetizer ($35) was amazing the caprese salad ($29) was not good the tomatoes were bland and I have had better mozzarella from Trader Joes. The spicy rigatoni was good nothing memorable. Ragu tortellini was good the meatball was amazing. The side veggies ($19) were terrible. The artichokes I assumed would be fresh but they were clearly frozen. The corn was unedible. Server never once came by and asked how are dinner was. Server never offered pepper with the salads or parmesan cheese with the pastas. Don't waste your money! Honestly, I was looking forward to it for quite some time. It was near impossible to get that reservation, but i got it! We arrived a few minutes early, but was told, rudely, that it was not time and we have to wait. We waited but were never seated at out reservation time. Finally nearly 20 minutes passed our original reservation, we were seated. It started ok, and the appetizers were good! Octopus was great! But it went down hill pretty fast! We ordered their famous caesar salad, which was super garlicky and way too much dressing, not in a good way! We ordered their famous vodka carbonara pasta and New York steak! Took over 1 hour to bring food and the pasta was very salty and the steak was just disgusting!!!! Cute restaurant on the second floor of Aria. Right when you walk in there's Old Italian classic music playing. The place has a very homie Italian feel to it. The table setup was super cute with little painted plates and wine glasses. Our server Chad was very attentive and gave us the heads up on all the good food and drink suggestions. Had dinner at Carbone last night at a table for six. Extremely disappointed. Did not ask if we preferred regular water and proceeded to charge us $33.00 for water. Ordered the carpaccio, where's the meat? Smothered in mushrooms and mushy meat, if you want to call it that. Linguine Vongole was ordered, requested the white sauce and served over salted red sauce. Ordered veal parmigiana and it was overcooked, over priced and dry. $91.00. In my fine dining experiences, this place was the worst ever. Required a dress code but was absolutely not enforced. Carbone is part of Major Food Group and is located inside the Aria Resort & Casino. A reservation is highly recommended as it is often full. You must order the crudo, pizzas and pastas (you can't go wrong with any of the options). The only reason I give Carbone one less star is because every time I eat at Carbone it takes over 1 hour for the steak to be served so if you are pressed on time order something else instead. Of the steak options, my personal favorite is the bone in New York Strip. I also recommend the lamb chop! We like to come back for the food, fun ambiance and for the servers as they are very friendly and attentive. read more

So was in vegas for a trip and was going to see a cirque du soleil show later in the evening. I was hoping to grab some food prior to the show and after a bit of searching I saw this joint pop within a reasonable walking distance to the show. I also recognized the name from its chefs and figured it was worth a shot given I had not had the opportunity to partake in their food before. This joint is located in Aria and it is quite the "old school" traditional feel with the red accents in the room making me feel I was walking into a mafia den and waiting for someone to kick down the door to use their tommy gun.... Maybe ive been watching too many movies. But I digress, the service is on point and quite friendly throughout the entire meal and we were seated promptly for our dinner reservation. As part of their opening plates, they provide a basket of bread, a small plate of salami, and some pickled vegetables which was a nice touch. The bread basket was delicious with the focaccia being quite delicious and my favorite. The drinks are plentiful here with a fully stocked bar so they kept coming throughout the meal. After perusing the menu, I decided to go with the famous meatballs, the famous rigatoni, and the veal Parmesan dish. The meatballs were out first and they were juicy and packed with flavor. Really solid meatballs and a great way to start the meal. The rigatoni was cooked great and perfectly al dente with the sauce being made really well making you yearn for more bites of it. You can choose to add a protein to it with a charge of course. The veal Parmesan was massive and came out with good presentation with the bone on the side. The veal was cooked well although I wish the meat was a bit more tender but I really appreciated the fact that the breading was not too overpowering. We were stuffed with the meal after these dishes so were unable to try the dessert but it looked solid as well. All in all, this is a solid spot for dinner and definitely hits the mark for just good solid traditional Italian food. I wish so badly that I could eat Mario Carbone's food without having to interact with the incredibly pompous and unfriendly front of house staff in Las Vegas. I've been to Carbone in NY several times and have had only positive experiences. I made a reservation for my birthday dinner nearly a month in advance for 9:45 PM on Saturday night. When we checked in at 9:45 on the dot, the hostess (Jen) told us our table would be ready in 10-15 minutes. I checked in again at 10:00 PM (15 min later) and she said she wasn't sure when our table would be ready, maybe another 10-15 minutes. So we waited patiently and checked in again at 10:15, now 30 minutes after our reservation. She still had no idea when a 4 top would open up for us and now couldn't even quote me a time. I asked to speak to a manager (John) who never once apologized for the wait and when I told him we had traveled to Vegas to eat at Carbone to celebrate my birthday his response was "Everyone here is celebrating something -- you'll just have to wait. And at this point, we don't know how much longer it'll take. There is nothing we can do." We were never offered as much as a glass of water while we waited. I've never experienced such unfriendly service in Vegas in my life, especially at a "nice" restaurant and on my birthday. We were finally brought to our table at 10:45 PM, a full hour after our reservation time. The first thing our waiter said to us when he handed us the menu was "The kitchen closed at 10:30 so I'll need to take your order right away." I find Carbone's food to be delicious...usually. But after waiting an hour and being treated the way we were on what was supposed to be a celebratory evening, I won't come back and regret supporting a restaurant that treats it's customers the way we were treated. He recognized we spoke Spanish and he did too, which I thought was neat but I was wrong. He did check in to "certain" tables if you'd like to take a guess on what those tables were. He rushed us on going over the menu and went downhill from there. We were extremely disappointed with the calamari, not worth trying (which he recommended). We got the Cesar salad (probably best item there and was not recommended). Our captain started preparing it (very upset about it obviously). He left in the middle and the runner came randomly to finish it. Just very off putting. We tried the famous spicy pasta, to ME.....it was ok. Emphasis on OK. Lastly the veal Parmesan: that was better than the pasta. We ordered the lemon cake dessert to go and they never packed it for us. Our fault for not checking but....again, goes back to service. We think it is due to the fact that we do not drink liquor. Everything is fine until we place our order. We don't drink so the bill is not large, there are 3 couples and we all share so the food charges are not large so we get snubbed. We ordered Caesar salad then waited 45 min, I asked what was going on and was informed there was a mix up. The mgr would be out to talk to us. We ea ordered Veal Parm, delicious. We made reservations 2 months in advance. Restaurant was packed, food was excellent. The highlights were Ceaser's salad, bread, cheese, seafood tower, dessert. The only thing that was off for me lobster ravioli, way too salty (they did remove it from the bill). Stuff was attentive but it took a while to get our dishes. Over all, definitely a must to try. My husband and I in town for the weekend and were fortunate enough to get prime dinner reservations at Carbone LV. Let me start by saying the food will live up to your high-end Italian expectations and you'll leave very stuffed and satisfied! Where they fell so short was in the service department - let me clarify that it was only our "Captain" that made this dinner one of the worst we've experienced in a very long time. He only came to our table about every 30 minutes. To start, he rushed through a spiel about how the menu works and then would disappear again for 30 minutes. He never smiled or even portrayed any sense of politeness, just treated us (and the tables around us) as if we were a huge inconvenience. We shared we're pregnant and he ranted about parenthood and said the usual things that already-parents complain about regarding their children, which is fine I guess, but we shared it's our first and our excitement/wanting to celebrate, so it made things very awkward and uncomfortable. I even escaped to the bathroom and heard a large group of women complaining about the same Captain, which I was happy to hear it wasn't just my husband and I he clearly disliked. My husband had ordered a drink with our main course, but it didn't arrive until after we had paid the bill. I'm torn to recommend this restaurant - I would probably say you're better off going to a local LV Italian spot vs wasting your time vying for a reservation at Carbone. The servers are very pushy with what they think you should eat, they just want constantly push you buying the "mains" which is steak basically and make you kinda feel stupid if you only order pasta. We gave Carbone another shot after a disappointing previous visit. Athena was our server and she is amazing. We've had her during past visits which were all great. I went in with some high expectations, because...well, there are plenty of other nice dining options in Vegas. Even just in the Aria. And I'm definitely not someone who minds spending $$$$ on food at all, as long as the quality is there. The food at Carbone was good, but the food & service certainly didn't warrant the price point, even if it is on the Vegas strip. Let me start out by saying - The free bread basket and Parmesan cheese were absolutely delicious. I would've happily paid money for more of that Parmesan. With that said, all 4 of us in our party felt that everything else was good or ok, not great, and the quality didn't quite match the price. Two of my friends ordered the spicy rigatoni, which was priced at $30. At that price tag, I would expect that maybe the pasta would taste homemade or the sauce either be made with special ingredients or noticeably higher-quality ingredients. Neither seemed to be the case. My boyfriend's Veal Parmesan, while tasty, was $70, and an easily shareable portion, which our server did not mention. Service was not particularly attentive, and we seemed to be inconveniencing our server just by sitting down, more than he was interested in helping us. This beautiful restaurant was the perfect representation of old meets new; in everything, food, decor, drinks, etc. A group of 12 of us was completely taken care of and the wait staff was so nice. Started off with the basket of bread, (tomato bread was the best), thin-sliced pepperoni, and rustic chunks of pecorino romano cheese, a BRILLIANT Ceasar salad with the best croutons I've ever had, a refreshing classic chopped salad, and last a beautiful tuna carpaccio with an eggplant puree. For entrees, we had a lot of really great dishes but the ones that stand out the most were the Rib Eye steak with an apple whiskey demi-glaze, and the BEST rigatoni with vodka sauce- it was the sexiest pasta dish I've ever seen. First - visit this restaurant. We knew we wanted Italian so we made a few reservation options and ultimately decided on Carbone and couldn't be happier. First, it is perfect seating for couples with cute two person half circle booths. They start you off with complimentary cheese, prosciutto, and amazing bread. Service was extremely slow. The longest time I've spent at any Vegas restaurant. The bread and prosciutto was very good. Other than that everything else was a good first bite but nothing more. Overrated and overhyped. read more
