When you walk in, you may question if this place is real,.. or a front for something else... actually it's a front.. for a business that could take your freshly kill game, and break it down into all the necessary bits. Yup, they have a butchery service. If that isn't why you are here, it's because of the Jerky, preserved sausage, or the polish sausages. The Jerky is seasoned and tastes of perfection. It's salty, savory, chewy, tender, and all things sexy. They have plenty normally, but I have been told by a local, that they do run out, so if you see something that looks empty, just ask. You wonder why you haven't come here before... well, it might be because it's off the main drag, so you are not going to just drive by it. I first went to Careks' as a young teenager while on a hunting trip, that was 70 years ago. My wife and I make a "Jerky Run" at least two or three times a year all the way from Olympia. I agree that the old atmosphere is somewhat eye opening, but when YOU get to be over a hundred years old I doubt you'd be no spring chicken either. While in Cle Elum we stopped at all three meat markets; Carek's included. Free street parking can be found. Discover is an accepted form of payment. Carek's focuses on jerky, pepperoni and sausages. I am a huge horror buff so the aged building and equipment immediately transported me to horror scenes. Carek's wasn't very tidy either and service wasn't very friendly. During our visit, I purchased some Pepper Jerky for $26 a pound. The jerky was tender, peppery and flavorful. Our friends also enjoyed their meat purchase. During our visit, there was a steady flow of people coming and going; a good sign. Overall, Carek's serves up some tasty jerky; however, Carek's was not aesthetically pleasing to me so I will not return in the future. read more

Carek's is my go to for jerky (when I don't have access to my uncle Bobby's stash of elk haha) legit have to set aside/hide a separate bag from my boyfriend so he doesn't eat it all :P Great service, prices and flavors! I love the "dirty" jerky, got a little kick to it but i like the rub on it. Perfect amount of spice! My all time favorite has to be the honey garlic though I can definitely smash a 1/2 lb in one sitting no problem Little mom and pop meat shop located just off the main drive through roslyn, great pit stop for a yummy snack on way to the lake. They also have a little fridge with sodas and cuts of meat at a fair price. Lady working their is super sweet, always smiley and gives great suggestions! Carek's Meat Market is off the main drag in Roslyn, down a street with a few small homes, including one selling firewood. It is decades old and must've been one of the first businesses in the local community, or at least one of the oldest still around. When Carek's opened, I bet their only competition was a general store. Now there's a macaron shop and Village Pizza in town, yet Carek's is still selling jerky, bacon, and smoked sausages the same way it did from day one. To enter Carek's is to enter a butcher's museum, with the display cases, pictures, and cash register providing a full story of the past. The cash register is now just for show and they do accept credit cards but I appreciate that they left it there. Carek's understands that going to the butcher is more than adding meat to your fridge; it's a historical experience to be appreciated. We purchased a slab of beef jerky and an assortment of smoked sausages. The jerky had just the right amount of chew and gave me the sense that I was actually eating meat, rather than gnawing on dried leather. The smoked sausages were grilled. It was hard for me to know when to take them off because I had never grilled smoked sausages before. A thermometer would have helped with this. Also, forgetting them on a high heat grill evenly burned one side of the sausages. Even after all this abuse, the sausages tasted good and were perfect when thinly sliced, frozen, and added to eggs in subsequent weeks. read more

As I really dig down and think about it, this meat shop encompasses a lot of what I love about America. In this town of a few thousand people is a place that has existed since the early 1900s, providing awesome smoked and fresh meats to the area. In addition, I find it incredible that in adjacent small towns on the east side of the mountains, their exist two incredible meat shops. Owens meats, just down the road boasts an amazing selection of all things carnivore, while Carek's has a much longer history, while also having some boss level meet! We came here on a there and back weekend over to Seattle. We stopped here on our way back in sample to jerky, the landjaeger and took a look at all the cuts of meat that were available. The reason this place doesn't get a five star review is that we found the landjaeger to be slightly less good than that at Owens. The beef jerky was solid, but was not amazing. The selection of meats was excellent and I heard from the guys at Owens,that this is the place to get smoked ribs. We are actively looking for another opportunity to grab some of those. The place is located off the beaten path a little bit. It's off the main road in the small town of Roslyn and literally looks like an old house that was turned into a meat shop 100 years ago. As with most places,A little bit of experience goes a long ways and this is no exception! A place that is well worth your time stopping and if you have the opportunity, you should definitely check out their compatriots, Owens a few miles down the road. read more

Best Polish sausages hands down. I've ventured across the country to stockpile them now for 20 years. Today marks the most recent trek. Only scored about 15lbs, but these aren't mass produced cheap grocery store wieners! The smell is incredible. The police dogs are drawn to them. I am well aware that when I fly back to Wisconsin next week my suitcase is going to sport TSA tags stating they searched my luggage. This trip bringing me to Seattle this summer was to foremost be about performing some electrical and walk repair work on my little sisters home in west Seattle. Her house is a beautiful old home, with a vast east facing view of Seattle's Spokane Street bridge, the Delridge neighborhood, the shipping industry and downtown Seattle. A gorgeous 100 year old home. Which required me to pack a suitcase with many of my prized Makita cordless power tools. I mention this because my return trip will no doubt be intercepted by Seattle K9 drug sniffing crew, requiring my 10-15lbs of tantalizing smelling meat, as they seek all the presumed cocaine or heroin the K9's go apeshit over. If those mutts eat my Polish, I'll be so very upset. Also in the purchase, as I've been doing since I was a child, is a few pounds of the best beef jerky and other goodies this ancient and decrepit place maintains serious fame for. read more

This is a very unique experience. It is all about the meat. Walking into the shop is like stepping back in time about 80 years, which feels charming or strange depending on your taste. The jerky tastes very good, and is definitely not the vacuum packed brand name stuff sold at the store. First of all, Carek's sells big hunks, not little strips. Carek's jerky is moist, not dry. Carek's costs less. And, there are no preservatives in Carek's jerky. (I know because I left my jerky out for a few days and it began to mold. It would have been nice if Carek's had told me I need to refrigerate it. But maybe that's what I get for being a city slicker.) I am not such a connoisseur of jerky that I would go out of my way to return to Carek's, but if you're driving through Roslyn it is certainly worth stopping for the trip back in time. read more

They sell big slabs of meaty, moist flavorful jerky. They also take credit/debit cards which was a plus. The shop itself is not that much to look at, but their jerky and meat stick were Delish. Not quite as tender as I usually like (though that may be from the way we prepped them), but the flavor was amazing. We were staying in Cle Elum to play golf at the Suncadia golf courses and found this little Butcher and smoked meats shop in Roslyn on a side street. It has been in business since 1913 and I can see why it is still there. Best meats and sausages anywhere. We wanted some of their summer sausage but they were out of it. Since we were there for 5 days they made us 8 sticks of the summer sausage and we picked it up the morning we left. This place is the bomb.. love their meats... don't drive past this place.. Stumbled upon this gem during a visit to Roslyn. We picked up a great selection of beef jerky, pepperoni, and a couple of flatiron steaks. Everything we tried was spectacular. I have never tried better jerky than what Carek's meats have!! My husband has chron's and needs to abide to a very strict diet and he can have the jerky from here and he loves it! Tryed everything from this place almost, but has taken 23 years to try the pork ribs I have seen there every time I went there. Ask and they will tell you they are un cooked. Ask about slow cooking them in apple juice. I tryed this in the slow cooker (crock-pot) on low for several hours and were outstanding!!! read more
