While in Cle Elum we stopped at all three meat markets; Carek's included. Free street parking can be found. Discover is an accepted form of payment. Carek's focuses on jerky, pepperoni and sausages. I am a huge horror buff so the aged building and equipment immediately transported me to horror scenes. Carek's wasn't very tidy either and service wasn't very friendly. During our visit, I purchased some Pepper Jerky for $26 a pound. The jerky was tender, peppery and flavorful. Our friends also enjoyed their meat purchase. During our visit, there was a steady flow of people coming and going; a good sign. Overall, Carek's serves up some tasty jerky; however, Carek's was not aesthetically pleasing to me so I will not return in the future.

Carek's Meat Market is off the main drag in Roslyn, down a street with a few small homes, including one selling firewood. It is decades old and must've been one of the first businesses in the local community, or at least one of the oldest still around. When Carek's opened, I bet their only competition was a general store. Now there's a macaron shop and Village Pizza in town, yet Carek's is still selling jerky, bacon, and smoked sausages the same way it did from day one. To enter Carek's is to enter a butcher's museum, with the display cases, pictures, and cash register providing a full story of the past. The cash register is now just for show and they do accept credit cards but I appreciate that they left it there. Carek's understands that going to the butcher is more than adding meat to your fridge; it's a historical experience to be appreciated. We purchased a slab of beef jerky and an assortment of smoked sausages. The jerky had just the right amount of chew and gave me the sense that I was actually eating meat, rather than gnawing on dried leather. The smoked sausages were grilled. It was hard for me to know when to take them off because I had never grilled smoked sausages before. A thermometer would have helped with this. Also, forgetting them on a high heat grill evenly burned one side of the sausages. Even after all this abuse, the sausages tasted good and were perfect when thinly sliced, frozen, and added to eggs in subsequent weeks.

No idea why they don't have 5 stars. Hands down best jerky and bacon I've ever had. The Landjager is especially juicy and the bacon is thick slices and lean with the perfect amount of fat, does not shrink like store bought thick cut. The service is great and I've had good experiences with all employees since I come ever few months. They are straight forward and have been selling meat since 1913 so don't go in expecting anything less or more.

Best Jerky in the world. You cannot go wrong with the Dirty. Please stop by and give it a try. You will not be disappointed.

When I'm on I-90 going through Roslyn/Cle Elum I always stop by. No excuses! Best beef jerky and pepperoni. OMG never had better.

Wow, what an incredible dinner! I got a chance to meet both owners, Kim (wife) and Chef Alex…read more(husband). My boyfriend and I started off with the Clams! The broth was perfectly seasoned, clams were cooked just right and it had an elegant touch of pork belly, saffron and smoked sausage. Genuinely one of the best orders of clams I've ever tasted. We also ordered the Halibut with a curried coconut sauce and the fried rice cake. The halibut was cooked perfectly, the rice cake was AMAZING!! Perfectly fried and paired so well with the intense and rich flavor of the coconut curry broth. The halibut was seriously the star of the show, you can tell it is fresh by the quality of the meat. My boyfriend was very surprised at how the risotto was prepared. He added steak to his risotto which was cooked to a perfect medium rare. The texture and taste was spot on. Our server, Sharae was very pleasant and reccomended alot of amazing drinks to us as well. She took excellent care of us with having the balance Of professional yet fun/ outgoing personality. She was just the sweetest. We finished our meal with a mouthwatering LEMON tiramisu. Out of this world, Melts in your mouth!! Perfect absence of lemon, cream and the cake was rich and both delicate at the same time. 10/10 best restaurant in town. Will be back for breakfast. The owner Kim was so awesome, very fun to converse with. Her and Sharae made our experience very memorable. Thank you for taking great care of us!!

The server that got us was very friendly and nice. We ordered cocktails; a sparkling rose' for me and a jalapeño mojito for my husband. The jalapeño mojito was delicious. Just a tiny amount of heat and the jalapeño came through. I ordered a Caesar salad to start. Was topped with anchovies and was good and crisp. My husband ordered the halibut with green curry. It was cooked to perfection and very tasty. I got the pappardelle ragu because I was told it was fresh in-house made pasta. The sauce was good, but the noodles definitely didn't taste fresh or have in-house made texture. I wouldn't order it again. I was having fomo so we ordered the ribeye medallion crusted with potatoes and I wish we wouldn't have. It was the most bland dish I have had recently. I don't think the ribeye or the potatoes were seasoned. I get that it came on a sweet onion jam, but that was just sweet. There was no salt or pepper coming through at all on the meat or potatoes. I wish we would have sent it back. I am just not that person. Luckily with enough fresh ground pepper and salt at the table, it made edible. We told our server, she didn't seem to care. We decided we couldn't end on a bad note with the ribeye medallion, so we got the lemon tiramisu. I have never heard of lemon tiramisu. It was so good. I highly recommend. I saw the chop tomahawk come out of the kitchen multiple times and it looked amazing. Ambiance is great. There is an open kitchen so that can be loud. Be aware there are high top tables when you make reservations. Would definitely go back.
