We simply visited Carver Brewing because it was their happy hour before going to have Thai food later in the evening. We had heard good reviews and those reviews understated how good this place is. Every beer we tried was fantastic. I'm not a hop head but their double IPA was off the chart good. The Barleywine was spectacular and dangerous. We all agreed that it should be enjoyed along with a salted caramel ice cream. The other beers were just as good. We did not have a full meal but did enjoy the pretzels and cheese dip. These service was spot on and friendly. If you are in Durango, and like beer, then you owe it to yourself to visit Carver Brewing Company. read more

We had great food and service here tonight. I had the Italian Cheese Melt with tomato basil soup and it hit the spot. Others at the table tried it and had food envy even though they loved their burgers as well. We split two desserts that were also very good. Lily was our server and was both sweet and attentive. What a great place to share a few brews and great food with friends. We had 7 people in our party, and everyone had something different and not a single person was disappointed. I had the Cuban and it was delicious! My husband had one of the burgers - best he's had in a long time. One friend had the street tacos, which I'll have to come back for! Service was great! My family loved the wings, and big homemade pretzels with a white queso dip. Yum! I tried the broccoli cheese soup and it was a little thinner than I expected but a really good hint of beer flavor. My husband and son got the steak sandwich and they gave it a 7 out of 10. They said it was really good, just a lot of bread and wished they had more steak on it. The burger was good. I personally loved the buns they are on. I ordered the macaroni and cheese entree. It was ok. It had thin twirly pasta, not macaroni. It's topped with a lot of bread crumbs - maybe a little too much. Not what I was expecting, but still good. We checked in at the front for lunch and got on the list. It was a 30 minute wait for a table of 5, and they text us when our table was ready. Since my family was only in Durango for one night, I did tons of research to find a restaurant in historic Durango that would appease my husband and three young boys. We decided to come here because of the great reviews and it was within walking distance of our hotel. I ordered the bacon and blue burger and it was absolutely the best burger I've ever eaten. We had breakfast this morning at Carver Brewing. There was a wait and we sat at the bar, the bartender was very very nice. Food portions are large and my husband and I split something. The waitress was great we had to wait for my grandkids and they were very patient with the kids. The food was very good we would definitely be going back but allow some time for a wait. They will take your phone number and send you a text when your table is ready which is very convenient. read more

This was our second visit to Carver. I really enjoy the atmosphere and the great service. I had the Reuben with green Chile pork stew. The Reuben was ok but lacking something. Maybe some more sauce or sauerkraut. The stew was great! Full of flavor and big chunks of pork. My husband got a burger, it was cooked perfectly and the bun looked homemade and it was toasted perfectly. The fries are delicious! I kept eating them with my stew. Maybe they should put some green Chile cheese fries on their menu! Also, I had their root beer which is made in house. It was full of great flavor! We went on a Monday evening the last day of July. Surprisingly it's and we were told it would be a 25 minute wait. Turned out to be more like 10 minutes which was a nice surprise! Flight! What a profound American invention, the flight of beer samples. I enjoyed the Powerhouse Porter, 120 Schilling Scotch Ale, Twilight Peak IPA, and Apricot Belgian Blonde. A fine selection! I came upon Carvers after cross-referencing a list of recommendations from a local customer with the ranked list of Yelp-recommended restaurants. Although Carvers was not #1 on either list, it was was the only restaurant rated high on both. I tried the Four Corners Steak Sandwich, which is the closest item Carvers has to a French dip -- "Thinly sliced beef, Swiss, mushrooms, onions, peppers, spicy chipotle sauce, garlic aioli, on a soft pretzel roll." The sammich was a bit more spicy than I was anticipating, particularly since my lips were already chapped from the Durango dry mountain air. Nonetheless, this was a tasty dish. I have every reason to give Carvers five stars. read more

In Colorado, it's hard to swing a cat without hitting a brewpub. We were there for eight days and visited enough of them that, quite honestly, they started to become indistinguishable after awhile. That's sad to say because almost every one we hit in Colorado was better than average. Carver Brewing fell somewhere in the middle of the pack of those we tried in The Centennial State. Within Durango, I didn't like it as much as Steamworks. The feel and decor of Carver feels rather Nineties-ish, and the restaurant seating area even seems a little like Applebee's. That's not so good. But the food was quite good: Had the sagamity as a starter, which allegedly is a Chippewa vegetarian stew and was hearty and flavorful as those things go. The Southwestern Chicken-Stuffed Poblano was, too. Wife had the Tatanka buffalo burger, which was more flavorful and juicy than super-lean buffalo burgers sometimes are. If this food wasn't quite as good as what we'd had at Steamworks a few evenings earlier--the flavors didn't quite stand out as much--it was certainly better than the rather dated appearance of the restaurant suggested. The beer itself was excellent. Pretty sure we had an IPA and a fall seasonal that I can't remember this many weeks later. I just remember that we had no complaints! I think that Carver, like Steamworks, deserves four stars, although this rating is more like a 3.75 versus Steamworks' 4.25. read more

Where else can you go for an eco-friendly restaurant that also serves Bloody Mary's and Mimosa's on Sunday, but only Carvers! We've been up here a number of times and was impressed that there were some changes to their menus offering low calorie option breakfasts. I ordered their asian scramble, which consists of brown rice, soy sauce, edamame, red bell peppers and egg whites all scrambled together. It was like eating a healthy version of fried rice in the morning, which I'm accustomed to in my child hood days. I also had a side of fruit, which comes with the meal and had a better variety of fruit than most restaurants offer: pineapple, strawberry, grapes, kiwi, honeydew, oranges, and grape fruit. All of the fruits were served in slices and not mixed together in a salad like fashion like you would see in most diners, which is nice because then you still have crispy fruit and not mushy fruit. What better way to have sunday brunch than with a $6 Bloody Mary special? Since its autumn season they also had specials of pumpkin pecan pancakes and it looks like their special of biscuits and gravy sold out because they had to take it off the board. read more

After backpacking 5 days/4 nights in the beautiful Weminuche Wilderness, we came into Durango for:(in particular order, although 1 and 2 could be switched) #1 Shower (skinny dipping the Los Pinos river, not an option..too coldy and moving pretty fast), #2 Beer #3 Food that was not freeze dried. I had heard all about the wonderful Carver's from J, people we chatted with on the trail and from all of the reviews here on Yelp! We were quickly seated on the back patio. It was a beautiful evening, slight cool breeze...ahhh miss it already(it's 108 in Az right now) Lindsay was our server and she was super cool, very attentive. We both ordered pints of the Cascade Canyon Cask IPA. Really good. We usually never order appetizers, but the green chili artichoke dip sounded yummy. It was pretty amazing. We ate the entire bread bowl. For dinner , J got the southwest ravioli w/ chicken,(Cheese ravioli topped with red chili cream sauce garnished with black beans and Monterey jack cheese. Served with garlic-toasted French bread I got the southwest steak sandwich w/ the seasoned oven baked fries(Thinly-sliced roast beef, grilled with onions, red peppers, green chilies, mushrooms, and provolone on grilled French bread with chipotle mayo. ).........hello heaven! I was fortunate enough to make it back to Carver's last weekend. I didn't get a chance to eat here last time, but finally did so on this trip! The service was great and the atmosphere was relaxing. There was a guy at a table next to us that kept playing his harmonica. At first it was really annoying, but it kind of grew on me. I had the tequila lime mahi mahi and my sister had the turkey reuben sandwich. Both dishes were tasty! We each tried a bite of each other's food. We also had Carver's signature root beer. It was GREAT! The next morning we even came back for a couple of growlers for the Super Bowl. The raspberry wheat is FANTASTIC! Well not really sure what all the hype is but it's just another regular bar. It has a front area with a bar and some tables, a back area and an outside. So it's good for events. Typical American food. Sandwiches, salads, & typical appetizers. Food wasn't bad but it wasn't amazing. Basically if you need to eat, then this place will do the trick. We tried to hit most, if not all, breweries in southern Colorado on our recent trip. We tried a flight of beer at this place, just like the others. I'd say this place is probably on the bottom of all the breweries we checked out but it was still a nice place. The staff were very friendly and informative about the beers. It is on the main street so you have a nice view, depending on where you sit, for people watching. Their menu looked extensive but we did not eat here so I cannot comment on the food. I might go back if I'm in Durango, but honestly I think I would probably go back to Steamworks Brewery before going back here, only because I thought the beer at Steamworks was better. read more

I hadn't heard of this brewery until recently despite it being one of the oldest, if not THE oldest, brewery out of Durango. Steamworks and Ska with their distribution footprints, canned offerings, and appearances at beer festivals in New Mexico are much more familiar to me. But I hipped myself to this place really quickly. I came in for lunch, peeped the beer listings and inquired about flights. For around $10 you can get four pours served in tasteful 4 oz. snifters. Presentation matters with beer too. Of the beers, the two that stood out to me most were the pilsner, which was dead on for the style and probably my favorite of the lot, and the double pepper saison. All of the beers were well-made and true to style, but these were the best of the best. The two IPAs on tap were good too, but I get IPA-fatigue sometimes so I skipped over these. As for the food, it's good. Nothing earth-shattering but it did the trick. Plus, I got lucky and had a special that got me my food with a free beer. That works for me. The service was excellent and incredibly friendly so there's really a lot to praise here. An excellent place to visit in Durango. read more

Carver Brewing has a lot going on, so I'm not sure where to start: okay, my bartender, Tom, because he made the experience. He was genuine and really listened to me. I was running a half-marathon the next day so he suggested the Salmon Curry Quinoa bowl based on heaviness of meal, proteins, and overall tastiness. I wasn't sure - I didn't mean to be that healthy. After hemming and hawing for sometime, I took a chance. It was absolutely amazing. Who knew it could be healthy and so tasty? Tom was supercool about letting me have a small taste before committing to a full pint. All the beers were really good: Colorado Trail Nutbrown Ale, Iron Horse Oatmeal Stout, and the Oktoberfest Bier. Their beer selection was really well-rounded. They obviously want to have something for everyone. Since I started with service, I'll end with it: Tom checked in after every beer and after I tried my entrè. He was awesome! read more

Finally redeeming our Christmas "experience" present from last year, my parents decided to treat my fiancé and I to a weekend getaway in Durango to ride the train to Silverton and spend a long weekend together. After an 8 hour drive over gorgeous passes and seeing the fall colors, we checked into our cute condo off Main St and were in the mood for a beer, or 5. Yelp - suggesting Carver, came to the rescue when deciding on a place to go - as a cold draft beer sounded great. The 4 of us were seated fairly quickly for a Friday night and ordered 2 flights consisting of a variety of beers - of the servers choice, as all sounded delicious. My favorite was the IPA and the pale ale - as I love hops! While the menu is extensive, I was most impressed by the variety. Mexican, Italian, Indian and more! We decided on sharing a few appetizers - the chicken quesadilla and chorizo nachos - both delicious! Our server was super nice and friendly. When he accidently brought the wrong drink order for B, he quickly replaced it with the correct beverage and apologized. He seemed very professional and genuinely likes his job! The atmosphere is very relaxed, chill and inviting. The big open garage doors create a fun and open environment :) This little slice of paradise was just what we needed after a fun road trip! :) read more

This place was great. It was my second time visiting and second great experience. The beer here is excellent, I highly recommend it. The wheat beer is my favorite! The food is also very good and fresh. I ordered the bison burger protein style with a salad and it was very tasty. My parents raves about their Cobb salads with chicken as well. Service was prompt and satisfactory. The only reason I give this place 4 stars is because they don't have a dog friendly section other than one small bar of chairs which we sat at. It seems silly to me to have a giant patio in beautiful downtown Durango and now allow dogs! Just my opinion though. read more

Buddy who lives I Durango 15 years ago recommended this place so I had apprehension walking in, I didn't need to. The food and the beer are five stars. We had the green Chile and the four corners steak sandwich, both incredible! They walked that fine line of being just hot enough but not too hot. I'm a hop guy and the two iPas were fantastic. Big hops with a dry finish. Barrel aged stout was also great. I bought two crowlers Togo, should have gotten more. I'm here one night and will probably go back for breakfast tomorrow. Every time I'm here I'll go and I'll tell everyone who mentions Durango about this place. read more

This is mostly a review of beer and it comes right after having visited Steamworks. The beer menu is listed on the wall, and it's also printed on laminated menus. This means it seldom changes. We ordered a flight consisting of four beers. (Many brewpubs give you six.) The CO Trail Nut Brown was not unpleasant but it had a somewhat acidic mouth feel. Iron Horse Stout was a bit of coffee and a bit of bacon and pretty smooth, though with a slightly bitter finish. The Barleywine was the hoppiest I've ever tasted, and worth a try if you like that, but very hoppy beers aren't my thing. I don't recall the fourth, but it too didn't really work for us. The service was very good, and I had a delicious vegan red chile stew. The food was recommended to us by a local, but I wouldn't return for the beer (see Steamwork review). read more

OMG, I had the best lunch today at Carvers. It was their special. Smoked Salmon Chowder. It was sooo good. So creamy, tasty & flavorful. Salmon, bacon, corn & cream. Delicious! My son did not like anything that he ordered off the kids menu. He first chose the pasta with butter. It was way too bland for him. He wanted alfredo and they did not have alfredo only marinara sauce. Since he would not eat that I ordered him the grilled cheese and french fries. He did not like it either. All the kids meals come served on top of a frisbee which you can take home as a souvineer. The waitress was kind enough to take off one of the kids meals because he did not like it. My son is pretty adventerous when it comes to food so everything was to bland for him. He loved the fries though. What kid doesn't like fries. I ordered the tuna sandwich. It was not on the menu but I saw it on their website the night before. So the waitress said that they had to charge me sushi quality prices for the sandwich. OK. I guess. It was good but I think next time I will order it lightly seared. The medium rare was still too cooked for my liking. The sandwich was still a great sandwich and my son ate most of my french fries. A friend of mine ordered the bread pudding. It was so good. It comes served with two scoops of vanilla ice cream and whipped cream. It was a rather large serving so everyone at the table was able to share and be content. I've never had bread pudding so the next time I have some it will be compared to the one I had at Carvers. read more
