Shilla has been a neighborhood staple for years, offering everything from cakes and breads to bing-su and beverages. I have had many of their cakes for celebrations and birthdays, they always hit. While they nail the classics, they also continue to impress with creative desserts that feel fresh and refined. The interior has plenty of seating, clean, and cute paintings on the walls to set the mood. Despite the busy crowds, service was quick and welcoming. We came specifically for the 3D mousse desserts, and they exceeded expectations. My favorites were the Sleeping Bear, Avocado, and Banana. The avocado mousse was surprisingly nutty and paired perfectly with the banana jam filling, creating a balanced dessert that wasn't overly sweet. The Chocolate Bear was equally smooth and creamy, and even the buttery cookie base was delicious. The strawberry bingsu was generously topped with condensed milk and large, chewy pieces of rice cake, making it the perfect dessert to share. Shilla remains Annandale's staple bakery and a gem.

Strawberry eclair - smaller than previous. Also, the shell is consistently overcooked now. Quiches - these are around a third of the previous size. Sometimes they are overcooked and dry. Also, the mixed veggie quiche is much smaller in depth to the spinach one Various danishes (cheese, apple, cherry, sticky buns) - all around a third of their previous size. Still great quality and tasty though Sfogliatella (Italian pastry) - surprisingly, these are larger than they used to be. These are not good anymore though. The filling tastes good, but it's a weird texture now that they make it larger. The pastry shell is really hard and chewy now that they are larger. These used to be the greatest ever. It's a shame. Cannoli - tried this for the first time today. Won't ever do that again. The shell was good and crispy. The filling was a weird color and had tiny chocolate chips in it. You could tell it was several days old because the chips were soggy. Also, they filled it when we ordered it - and they just put a tiny bit of filling in it so we could actually see through the shell. Not good.

One of the things that makes them stand out is the creative blend of ingredients and flavours that most other bakeries don't have. And they have classic offerings that are hard to find elsewhere, such as the banan cream bun which now apparently has slices of real bananas in addition to the already outstanding banana cream filling. Service is always friendly and courteous, and the fact that this is not a big chain of stores adds more credibility in my book. I hope they stay open for many more years.

While sipping on my now, pumpkin spiced latte from here, I saw actual meals being served and I missed out on ordering sandwiches from the back :( Something I will be coming back for! I did get up and order more things, like a fall inspired cookie ice cream sandwhich, all alone by itself in a sea of other flavors, I had to rescue it. And the sour macrons! They have everything from small bites like cookies and pastries to full size cakes & tarts. They also have single serve slices of some of their cakes like the chocolate mousse cake. We went for breakfast sandwiches and tried both of the base bread options. The snowflake bread was soft and pillowy (my favorite) and the brotchen bread was slightly crisper & a little bit saltier, also amazing. Eggs are fluffy and a great portion size. Added cheese to each and smoked bacon. A delightful breakfast treat. On the way out, I got a baguette for a last minute appetizer need. It was so soft and freshly baked (and big!). I'm going back today for more fresh bread. There's also plenty to shop for like mustards, jams, cheese and charcuterie, grab and go items, and beverages. This place has summer chalet vibes & is very upbeat and friendly. Lines can get long during typical busy hours, so it's not super quick if you're in a rush. Great place to come relax.
