The cashier said it was their busiest time. We lucked into finding a table to enjoy our food. It is like a busy deli in NYC. The Reuben was fantastic. My wife got the cheesesteak. They grill the meat and make the sandwiches right in front of you so they are hot and fresh. My wife's cheesesteak was ok. Seemed kind of dry and didn't have any peppers and not too many onions. Maybe that's the NYC way and not Philly. Anyway I love the place. We will definitely be back to try their bagels and other sandwiches. Oh yeah. I also got a Dublin soda. It's a craft soda (Coke) made with pure cane sugar. Goood.

The crust has a chew to it that is firm but gives way soon enough after biting. What it gives way to is a crumb that is soft, textured and smells like a double dose of sourdough yeast. The starter is at least 25 years old and boy howdy, it really packs a punch. So much so, I asked an employee there if they sold starter. I would have bought some to use and grow at home. Enough about their star item ... let's go over the lunch I enjoyed there yesterday (15May26, got a free cookie on their birthday). I had their Crawfish Mac and Cheese in a bread bowl. The pasta was curly and cooked al-dente, as any pasta should be. The pieces of crawfish had a slight, very slight dusting of bread crumbs on them that added a nice texture to the forkful of pasta and creamy cheesiness that is a hallmark of mac n cheese. Needless to say, I managed to finish the contents of the bowl (the plug of bread removed is also served) and about half of the wonderful bread bowl before forcing myself to just stop. The remains were dutifully doggie bagged and brought with me as a snack to be enjoyed on the drive home. I will be in College Station many times over the next four years and when there, Blue Baker is definitely on my list of places to get great bread and a good lunch. I get that like baking and what not can be a noisy ordeal but that's why restaurants usually have the ordering area a bit closed off from the kitchen. Also the counter tops are way high up while you're supposed to say if you want anything else on it after it's been toasted. I'm at least tall enough to see over this counter, but barely, and I'm 6 feet tall. I can't imagine how it'd go for someone that's short. Aside from that it's a great place. The vibe inside almost reminds me of some 6th street Austin bars. Everyone was nice enough. If you sign up with the app as a first timer, right now anyway, you can redeem a free original sandwich on your next visit. So i'll certainly be doing that soon!
