This Cheese Theory pizza parlor took over Starbucks. It is located on the 1st floor inside the Sherman Oaks Galleria. After my friends left, I was starving. I walked in on the same day 6/17/ 26 at 7:15pm and was greeted by a young, pretty lady by the name of Sarah. She was very pleasant, kind, and helpful. She gave me the rundown of their menu and I decided to go with their small size Hawaiian pizza that was more like a medium size. ($12.00). It was a bit odd when she said she has to charge me extra for the Ham & the Pineapple. I told her 3 times that I have had the Hawaiian pizza in so many places and it automatically comes with both ingredients. Then she said she will make an exception this time and we went on with my order. I also got their Arugula Burrata Salad ($18), that was enough to feed up to 3 people. Easily. Came with Arugula, Cherry tomatoes, Red Onions, (was a bit too much onions). Burrata cheese, with Balsamic Glaze, and Olive Oil dressing. It was not too overpowering. Being hungry and a bit greedy, I also ordered their Ajarski ($15.00), an Armenian pastry, that is usually shaped like a boat. Theirs was shaped square and the egg in the middle was oozing flawlessly. Didn't get anything to drink, but they had bottled, canned and fountain drinks. They also have a variety of desserts. While I was in the middle of eating my food, Sarah surprised me with a complimentary Tiramisu. What a nice gesture that was. Food overall was very fresh, delicious, and hot. Will I return? Yes, I will, and I'd like to try their other menu options. They have different kinds of sandwiches, salads, and pizzas. No pastas.. Place was nice, clean, and BIG!! They had restrooms and underground parking. It is a family owned business and has only been around for a month. Good luck to them! Do yourselves a favor and them, go support this business. Came back around the same time a few days later for a 'redemption' visit. Honestly, the food is excellent (I have a refined palate and was impressed last visit), service can be improved (there's always room for growth), and I truly have a heart for small businesses- I WANT THEM TO WIN... So... In and out in 20 mins. Full order, made flawlessly, and even added fries (fried in beef tallow!!!) and Cajun rub wings. Top. Tier. Added another star because it's looking like they're working out the bumps- and if they can get it right for me- one more time- on the next visit (and there will be one- the food is *good*)... My son and I stopped here for a quick lunch after seeing a movie at the Regal theater. The staff was super friendly and accommodating. The pizza was great, with a perfect ratio of sauce to cheese and just the right size for us to share. They gave my little one a coloring page and crayons while we waited and afterwards surprised us with a couple of cookies, and even asked for permission to give him the cookie, which I really appreciated. There weren't many people there, but I hope that's just because it was Sunday on a holiday weekend and a few of the other businesses at the Galleria were closed. One of the best Pizza spots around. We had a pepperoni and jalapeno pizza and it was amazing. Great crust and fresh ingredients. Fresh jalapenos were fantastic as most places are canned. Onion Rings were crispy and cooked perfectly. Beef Tallow fried wings were very tasty. Chocolate cake was not too sweet but still delicious. This is my second time coming to Cheese Theory this week. I went yesterday and had their Cajun rub wings with a personal pizza, and honestly, it has been a long time since I've had wings that left an impression on me. The texture of the skin was incredible, flavorful with the perfect bite, while the meat stayed juicy in every bite. Paired really well with the pizza and a cherry cola. The pizza had an excellent cheese-to-sauce ratio, and the crust had this special blend of textures that kept me wanting another bite. As I was leaving, the owner told me their fries were addicting. I had to come back and test that statement for myself. Today, I can confidently say he tells no lies. The flavor on those fries had my tongue wanting more immediately. I also ordered the steak sandwich and was initially perplexed by the bread. Then I took a bite and realized I was not prepared for the creation Cheese Theory made here. The bread somehow managed to be soft, firm, and crunchy all at once, strong enough to hold the sauce, cheese, and juices from the meat while still staying soft and satisfying to bite into. The ribeye itself was cooked perfectly. Tender enough that I could pull it apart with my fingers and bite through it effortlessly. Every flavor combination felt intentional and purposeful. I was also offered a side of cheese chips. Those weren't my personal favorite, but the combination of the fries, sandwich, and cherry cola was all I needed. It was also quite overpriced and overall unexciting. I considered getting the salad, but it was $18 without any protein, which I thought was overkill for just arugula and tomatoes. Insider tip: there isn't much foot traffic here, so most of your customers are likely nearby employees. Lowering prices and offering some kind of discount could help build a more loyal customer base. They must have just opened, because they did not have fountain drinks available nor did they offer any parking validation. I ordered a "Hug", since I was curious about the name. Although the place was relatively empty, it took a long time for my food to come out, and it turned out to be like a pizza folded in half for hand-held eating. It was also pretty pricey for what I got. However, the food was tasty, the staff was very friendly and did check up on me. The seating space itself was spacious & clean.
