Classic Sirloin* with Avocado - 10oz
    Mike G.

Reminder to myself to stop getting the steak here. I used to get the guiltless sirloin, which I stopped getting because it was so bad. My daughter had the classic sirloin on one visit and loved it, so we've both gotten it twice since....and it's been bad both times. I sent mine back last night because my medium steak was rather grey and very tough. It was taken back and remade...more rare than medium on the second try, but whatever. Still really tough and tasteless. Broccoli and asparagus were both undercooked. Asparagus was too heavily salted. When looking at the bill, I thought they had taken mine off the bill and comped it...but what they actually comped was the re-make of my first steak. I realize it's Chilis, but $24 for bad steak isn't a good deal. My daughter left a good part of hers...I brought a decent amount of mine home for the dog...and she found the steak tough as well. Of course, she ate it, because she's a dog. Service was fine, but the food was bad.

We did not come by for a five star meal, it's chilis. The wait staff was amazing and on top of it. The Mango margarita was on special and it was great! The chips and salsa were good, salsa a bit sweet. The cheese sticks were crispy and had the "cheese pull" but a bit lack luster in flavor. Mushroom burger was good but didn't have many mushrooms and a little overcooked. We will likely come back for their well Known margarita specials and have a meal while knowing this is a chain restaurant and it's good, but not michelin star, and that is okay!

First time visiting this Chili's location in Castle Rock. Haven't been to a Chili's in a while! As I entered the restaurant it brought back memories. The last time I dined at a Chili's was probably back in 2019. This location is clean, attentive and has friendly staff along with decent food. I liked my waitress. She made sure my food was cooked to order and that I had everything I needed. I ordered a side salad with ranch dressing and the Double Old Timer Burger with Cheese. The burger came to my table near picture perfect. My only suggestion is to offer a bit more fries. If you like a nice "grease burger" this is the one for you! I recommend ordering it. I liked that the bun was fresh and didn't completely fall apart after a few bites. Food was decent and VERY reasonably priced. For the side salad, burger with fries and soda, the bill was very reasonable. Kudos to Chili's for not raising prices to make up for loss of profits. I was very pleased with my total bill of sale. I will probably return here at a later date but I'm in no hurry as there are so many restaurant options these days along with new ones to try. Check out this Chili's location as it's not far from the Meadows Pkwy and I-25 exit. Hope you have a good experience!

Stopped at Chili's after the Renaissance Festival. Sat at the bar, service was great. My bf and I split the SmokeHouse Platter w/ribs. Chicken Crisper wasn't very good, dry for my taste, but ribs and fries were good. Signed up for rewards and got free chips and salsa, but you have the option for a free drink instead of chips.I was told you get free chips and salsa every time you go to Chili's. Restaurant wasn't too busy around 3 pm. Overall restaurant was clean except bathroom could've used a little work.

Dry and brown corn on the cob.

Ordered takeout, it's was absolutely terrible. I am pretty sure we were served left overs. The white queso was disgusting, it had curly noodles and was like water. The guacamole was brown. The salsa had a weird taste and looked like ketchup was added. The corn on the cob was brown and dry. The top of my bun on my Old Timer was missing a chunk of crust and looked something happened to it. I called to let someone know, so another customer wouldn't have this experience. They told me a manager will call me. Never received a call. I never leave reviews on yelp, but this was so disappointing after spending over $38.00 plus tip, I couldn't even eat it. We usually get Chili's once a month, never again. Chech out the pictures of the queso and corn.

During a lunch rush they thought it'd be a great time to close down half of the restaurant. There were plenty of booths in the bar area and we asked to be seated in a booth, well we were given dirty looks by the hostess, and then even dirtier looks by what seemed like the manager because we didn't want to sit at a normal table with our child who cannot sit still. Food took awhile to come out, which was expected since it was packed. But I didn't think any of our food would come out cold. I hated everything about my mushroom burger. My daughter wouldn't even touch her cold chicken pasta. My husbands steak however he said was good he just wished it was cook correctly but it was fine for him.

BEST customer service! The ambiance is always welcoming and positive. The food is so delicious consistent and well made. BEST CHILIS EVER

Hefty portions but ask for check early! Our machine was broke and our waitress was covering a lot of real estate! Food was great! Staff friendly just a long wait to be in our way and we were needing to get other things done .

HOLY FREAKING MOLY, THE BRINKERHOFF IN CASTLE ROCK JUST RUINED ALL OTHER RESTAURANTS FOR ME…read moreFOREVER!!! Listen up, you beautiful degenerates of Colorado -- if you're anywhere near Castle Rock and you DON'T drop everything to go to The Brinkerhoff, you're actively choosing a life of sadness and regret. This place is perched up there like a goddamn castle overlooking the kingdom, windows so meticulously clean I could see my future in them (and it was eating more ribeye). The views? ABSURD. I'm talking "postcard from heaven" levels of ridiculous. You'll be stuffing your face while staring at scenery that makes you question why you ever lived in a basement apartment. The ambiance inside is straight-up opulent too -- crystal chandeliers dripping like diamonds, stone walls, red leather booths, and that massive framed vintage Beech 18 airplane photo that hits different. Speaking of which... My best friend Rob took one look at that classic twin-prop Beech 18 on the wall and the hairs on his arms stood straight up. Turns out he actually flew one of those exact legends back in the day. There's a killer story behind it -- ask the staff about it, they'll hook you up with the full tale. Goosebumps guaranteed. This place doesn't just serve dinner; it triggers full-on life flashbacks. The food? ABSURDITY-INDUCING. I'm still recovering. * Spicy Hiramasa Roll -- TO. DIE. FOR. Spicy tuna, avocado, cucumber, and pure culinary sorcery. One bite and I ascended. I blacked out and woke up speaking fluent sushi. * Big Island Ribeye (16oz, soy-marinated) -- OUT. OF. THIS. WORLD. Juicy, flavorful, marinated in what I can only assume is liquid gold and unicorn tears. MUST GET. I would fight a bear for this steak. I would marry this steak. Hell, I'd let this steak ruin my credit score. * Chipotle Glazed Wagyu Short Ribs -- These bad boys were so awesome I almost proposed. Sweet, smoky, melt-in-your-mouth perfection that made me question every other rib I've ever had. They were basically foreplay for the main course. And don't even get me started on the STAFF. These legends deserve their own parade. Big shoutout to our waiter Larson -- the man dropped recommendations like they were bars in a rap battle. 10/10 service, zero notes. GM Lisa came in hot on the 4th of July, straight from the sister property Sierra, working like a boss and being the friendliest, most knowledgeable human alive. Absolute queen behavior. GM Heather rolled up, made sure everything was flawless, and then dropped restaurant history knowledge like a TED Talk. I felt cultured AND fed. And eternal props to Chloe & Keiley in reservations -- we showed up AN HOUR LATE like the chaotic gremlins we are, and they still saved our seats. That's not service, that's sorcery. This crew isn't just outstanding -- they're the Avengers of hospitality. Outstanding food + god-tier staff + Beech 18 nostalgia that gives your pilot buddy chills = I'm moving in. 10/10. 100/10. Infinity/10. It's a MUST-GO when you're in Castle Rock. Bring your appetite, bring your people, bring stretchy pants, and bring your best stories. I'm already planning my return like it's a religious pilgrimage. Brinkerhoff, you absolute madlads -- thank you for existing. I love you. Never change. (Go. Now. Tell them the unhinged guy AND his Beech 18-flying buddy sent you.)

We started by splitting a side Caesar salad, which was very flavorful and good. None of us were impressed with our chicken. Thinner than it has been in the past, it was also overcooked and quite dry. Service started off slow, but was ok, although we did have to ask for drink refills after our glasses sat empty for a long time.
