Entrees were amazing. I had flank steak and hubby had the bison. The dumpling appetizer and carrot soup were good but left me a little underwhelmed. The creme brûlée was not given the proper time to set and tasted soupy unfortunately. My husband and I just had dinner tonight at Chimney Park. We are a little past "middle aged" and don't eat in restaurants frequently because high-quality, perfectly cooked and tasty food is very hard to obtain, in our humble opinion, at any price. Let me start by saying, the scallops were the best I've EVER had, and I LOVE well prepared scallops! Prepared perfectly with the correct sear and seasonings, they were fork tender and melted in my mouth! The roasted beet salad was very flavorful with a parmesan crisp and a tangy vinegar dressing. The bread was absolutely wonderful; a choice of sourdough rosemary and plain sourdough with that crispy crust and chewy soft interior. If, however, you are looking for a great steak, the smallish ribeye may not be your first choice. It was boneless, thin, quite small (probably 8 ounces, maybe 12), and required quite a bit of trimming. The request was for the mushrooms and red wine sauce to be served on the side. The steak arrived with the mushrooms and sauce in separate bowls, minus the potatoes and green beans. When we asked for the sides, we received only the potatoes. Please note, the service was, overall, very prompt and attentive. As is the case in most upscale restaurants, the wine by the glass is served in fish bowl sized glasses filled 1/5 or less full and priced at $12.00. In summary, scallops, ribeye, two salads, two glasses of wine and iced tea came to $120.00 before the tip. If the steak would have equaled the scallops in quality and taste, we would likely make Chimney Park our "go to" restaurant for a nice evening out. At this point, Sony Lubick's in Fort Collins will continue to be our place. read more

Food was amazing! Fancy restaurant in the heart of Windsor that is perfect for an anniversary or special occasion. Portion sizes are smaller. The quality of the food is outstanding. We went here for our anniversary last year and they gave us a plate of delicious truffles and berries with happy anniversary written in chocolate on the plate, in the house. Service was excellent. Make sure to make a reservation early though because this place is very popular. read more

When I was stationed in Antarctica and the loneliness would start to creep in, I often found solace in day dreaming about little restaurants with local fare and local drink. Although Chimney Park is not the quintessential Americana that I would long for, it certainly satisfied my senses and made me believe that, no matter where you are, there are little gems. Last night's indulgence was at Chimney Park Bistro in Windsor, was nothing short of a gastronomic orgy. The chef's tasting menu was a delightful surprise. At $60/person, every person at our table was presented with a different mouth-watering dish for each of the four courses - each more phenomenal than the last. Let me be clear: 4 diners, 4 different appetizers, 4 different entrees, desserts, etc. The kitchen staff's joyful artistry, led by chef & owner, Jason Shaeffer, allowed them to experiment with (mostly) locally grown meat, produce and seafood flown in for freshness not frequently found in Northern Colorado. The dishes were so beautifully presented that we proclaimed that we were afraid to disturb them: succulent scallops, lightly seared and seasoned....lobster and mushroom bisques so lovely that we didn't care who saw us sopping up every last drop with crusty rosemary sourdough bread... tender, fresh baby greens, sugar snap peas, roasted beets, grilled cherry tomatoes, citrus and balsamic reductions, soy & wasabi drizzles that announced that Spring had finally arrived...perfectly grilled beef and bison...a two-cheese dumpling dish that literally melted in our mouths and left us arguing over who got the last tasty morsel...chevre berry cheesecake, Irish cream creme brulee with a lovely caramelized crust, grilled and fresh figs with honey, flourless chocolate cake with ganache and fresh cream...so much more that I cannot even remember...Our party swapped plates until we couldn't consume any more. As we groaned and pushed back from the table - three of us with enough leftovers for another meal - we all knew we'd just discovered our new favorite gastronomic haunt...Why travel to Boulder or Denver for a foodie's delight, when the best is right here in our back yard? Insulting is perhaps the best adjective to describe my recent experience at Chimney Park. Several friends had recommended the tasting menu, and both my wife and I had planned on getting a good sample of the menu, pared with wine. On our visit the top item on the menu was the tasting menu. We asked the waitress to describe it after she had explained the evenings specials. She told us that it is a favorite at the restaurant. The chef prepares several small courses off the menu, all pared with wine. Four courses in all. Then she said "But I don't think it is right for you tonight. This table WILL be set for the next guests at 7:30, and you don't have time to have four courses before our next guests are seated.". At this point, my wife had to convince me that our money was not better spent at McDonalds. My husband and I have been to Chimney Park many times over the years, so it has always been one of our favorites. Needless to say, our last experience there left us a little deflated and disappointed since it was a special evening and we were celebrating our anniversay. We booked ahead, made note on our reservation that it was a special occassion as to why we were there that evening so when we did show up and were shown to our table (the Hostess did not greet us nor was she very friendly) and observed other tables being greated and congratulated by Chef John. A table next to us celebrating a birthday, their table was enjoying the tasting menu, another table across from us it sounded like it was their first time to Chimney Park and were celebrating their anniversay. We patiently waited for our cocktails to arrive, then our appetizers to arrive and we waited for the Chef to eventually make it around to our table. We waited, and waited, but Chef John was not forthcoming, yes, I was disappointed since he had found time to greet the other tables. Our service that evening was good, not great, to be fair, Sarah had a lot of tables she was covering. Our dinners were good; however, our macaroni was undercooked and came out soupy, so overall I'd give the evening a B- when our past experiences definitely ranked an A. read more

We ate here based on other reviewers recommendations. Tauts itself as upscale but its not. We dressed up but would have been fine in ripped jeans and grungy tee shirt. Service was poor. It was not busy but our waiter kept disappearing on us for long periods of time with no explanation. We had to ask for water x2, bread etc. Hubby ordered a beer and it took Fernando 15 minutes or so before he came back with it (bottled). He never asked me if I wanted another drink. Couldn't tell you what I had for dinner because we could not understand our waiter. I think I ordered beef but it didn't taste like it. Again we couldn't understand Fernado not sure if accent was real or fake but it was bad. Hubby liked his meal he had scallops. Only thing waiter was quick on was bringing us our check. Too bad it was our 24th anniversary too. Not going back and won't recommend. Going to Denver next time back to the Broker where upscale means just that "upscale." read more

We celebrated our anniversary and my husband's birthday at Chimney Park. We both enjoyed the entire experience. We each had a martini (lemon drop and garden gimlet), warm bread was delivered, then a delightful salad of the day with peaches and pine nuts. This has become our favorite restaurant to celebrate any occasion. From the time you walk in and are seated, you're treated like royalty. Impeccable service and the food is to die for. We ordered from the menu the first time we visited. Each time after, we let the Chef surprise us. We were hesitant the first time with not knowing what we would end up with. Each of our meals were different. We were asked about likes, dislikes and if there were any food allergies. From there the Chef created our meals. I must admit, I would never have ordered the items off the menu if I were to have ordered. We have been pleased beyond words and this is now how we order. EVERYTHING we ate was incredible. The Chef, who has worked under Thomas Keller, showed off his culinary expertise with some of the best food I have had. Northern Colorado has some nice restaurants, but none of this caliber. Service was excellent, but we were the only ones there. Place looks like a small city diner, not elegant in any way shape or form. Needs a fireplace or something, it was pretty chilly. Just spent our 10th anniversary at Chimney Park and had a wonderful experience. My husband loved the Black Angus Ribeye. I made some special requests from the chef; I tend to love vegetables and hoped he could tailor to my preferences. Has to be one of the best restaurants in Northern CO. We had a fairly large party for dinner and all tasted each plate and compared. The bison steak is amazing ... hands down the best plate we tried. If fact, all the steaks were as close to perfect as could be expected. They were all cooked as ordered and tender as could be. They were great. We have returned to the restaurant over the years and have concluded that the best is now past. When Chef Florian was at the helm this was the best restaurant in NoCO. Now the food is so-so. The shrimp and grits were really sad. The shrimp were overdone, hard and dry. The grits were done very nicely. The gravy was uninspired to say the least. The Salmon was cooked over too high a heat rendering the outside of the salmon dry while the inside was raw. The sauce for the salmon tasted like it came from the same pan as the shrimp and grits. The last time we came we tried the Tasting Menu and found that everything had similar flavorings. This chef is not very adventurous with his flavors and at the risk of being redundant, uninspired. While I can give the presentation of the food a B+ the flavor and condition of the food is a C-. read more

The bread is fantastic! I ordered the special salad of the night which I was told was like a caprese salad, which it was, only with a major skimping in the mozzarella. Only 3 very small pieces. The red and yellow tomatoes were delicious. Next, I had asked for the best fish selection on the menu. The halibut was recommended. The fish came out with a white sauce that had no taste. Halibut being bland needs something and there was nothing there. The potatoes and grilled veggies were very tasty. On a side not I tried my wife's grilled scallops which were extremely salty. My experience tells me that the age of the scallops were being hidden by large dosages of salt. I took the sauce from the scallops and pour it onto my Halibut which made for a better meal. We decided to cut our losses and did not have desert. I will not be going back. Too many other restaurant's that are closer to Fort Collins. read more
