Took the short trip to Green Bay to try out the new Copper State Brewing Co. with my better half. It occupies the old Hinterland building just off of Broadway in Downtown. The experience was stellar from top to bottom and I would recommend it to anyone! Ambiance: Exposed brick, giant wooden beams, and rustic steampunk style copper accents throughout. Lights were very bright throughout the building on both floors, which isn't my favorite but is worth mentioning as some folks prefer it. The main bar on the first level proudly displays their logo and all of the wonderful beers brewed behind the next wall. Long "community style" bar tables and giant pillars keep the large space comfortable and inviting. There is an espresso bar, couches, and lots of little comfortable nooks if you are just in the mood for coffee.The place was moderately busy and we waited about ¾ of a drink before our table was ready. We were taken upstairs to a small two top across from the upstairs bar, which had lots of open seats. Next time we will probably cruise straight upstairs to get seats at the less crowded bar like the other, more savvy, guests. They have multiple spaces and I believe they do private dining and events, also. Service: The staff is adorned in branded threads but clearly had the freedom to personalize their look as well, which I admire. There was a large crew on and everything seemed to roll like a well oiled machine. Very friendly, very prompt, and seemed knowledgeable. Food and Drink: The Lager was spot on with a malty backbone and a crisp fruity hop finish. They were featuring Conundrum Red Blend wine and it is one of my absolute favorites. Just a perfectly balanced wine that worked with all of our dishes. My dinner drink was the always amazing Basil Hayden's 8yr Bourbon, which took our dessert to the next level. First we ordered the Deviled Eggs appetizer, which came on a "nest" of fried sweet onion strings, topped with tart cornichon and a dehydrated beer foam crisp. The crisp was the wow factor for this dish, giving the rich and salty egg a touch of sweetness. My future bride got the Salmon Entree and loved every bite. The Salmon skin was ridiculously crispy and fish was perfectly dark pink throughout. It was served on a bed of quinoa and a bright golden butternut squash puree, accompanied by brussels sprouts, wild mushrooms, and seared delicata squash slices and drizzled with a maple yogurt sauce. I opted for the Tenderloin Medallions, which was beautifully plated, perfectly cooked, and melted in your mouth. Served on a parsnip puree and cherry reduction, the three medallions were topped with blue cheese. The accompaniments were beautifully fire roasted pears and a walnut crumble. The dish was spot on conceptually, and executionally. Chef Scott was nice enough to step out of the kitchen and see how our meal was and ended up sending out the chocolate mousse to congratulate us on our recent engagement. It was the perfect finale to the meal. It's hard to be rich and light at the same time, but this mousse was perfect. Overall, we would highly recommend Copper State to anyone that wants to experience what high quality looks like in our area. I gladly rate them Five Stars and my fiance said, "I guess we need to come to Green Bay more often"... I wholeheartedly agree. read more

If you want to go out and have a cheeseburger and a beer for lunch this is not the place to go. Stopped by on June 3rd to have some lunch and looked at their menu online and I was kind of excited about some of their burger options only to arrive to find that I could not get a burger until 4. Apparently they're more of a coffee shop during the day, and only serve cold sandwiches or sandwiches warmed up in the panini press and I think some breakfast sandwiches until 2, and then there's bar snacks from 2 till 4, and then you can get a cheeseburger for dinner, but no cheese burgers for lunch. We did not stay only had a beer each and then we left and went someplace else for lunch. Bare brick IPA was acceptable and I did really enjoy it there double IPA have a nice pineapple aroma. We loved the vibe of hinterland and this place also has a good vibe and great beer. But the food was pretty terrible for 3/5 of our party. My husband loved his BLT. My mom loved her burger. My son and I ordered the shrimp was lacking in flavor. It was placed over "fried rice" that tasted like someone dumped maple syrup on it. Not edible. My daughters roasted chicken was dry. Our really great (truly great...nice knowledge) waiter took pity on her and brought her extra mashed potatoes. So kind. So stop for a beer but grab dinner elsewhere read more

I was excited to try Copper State as I have heard good things, I was not disappointed! I love the expanded bar area downstairs. The menu is large and varied enough that everyone can find something and the descriptions are perfect. My husband had the Dousman burger, which is your basic cheese burger, and fries for a side. I like more on my burger so I got the Rugged North burger which has maple jack cheese, candied bacon, a fried egg, and orange spice aioli. This was hands down the best burger I have ever had! The combination of toppings is amazing but the buns they use are better than the average burger bun. I had mac and cheese for a side and it was great. I also recommend the one Cent Wheat Lemon Cake and roasted beer salad. Their brews are great also, get a flight so you can try a few, I enjoyed the one cent wheat, Kuper Kolsch, Platinum Coffe Blonde, and the Silent Canary Double IPA. So disappointed. Went in on 6/19 for dinner. Roof leaked on us and our table. hostess seemed annoyed we asked to be moved then sat us at a table for 8---we were a party of 3--and place was not crowded at all. Ordered the burger medium well and came rare. Evan our waiter never came to check on us. Didn't ask when he collected plates if anything was wrong so I told him he might want to tell chef about the issue. We asked for a reduction of bill for the leak on our guest, the inedible meal and waiter says he will ask manger. He went right to register and swiped my cc. Will not go back to this place. First off I'm super happy we gained another brewery in Green Bay, and the place looks amazing. Just super bummed about the pizza, for a wood fired pizza it's super doughy or chewy, there trying and I'm hopeful they will get there pizza dough right. Without a doubt, the best burger I have ever eaten!!! The Rugged North burger was incredible from the first bite to the last!!! It took a little while for it to get out but it was WELL worth the wait!!! I picked the salad as my side and it was not only well put together but tasted delicious. This place serves pretty good food with a brick vibe, unfortunately the service is a let down. Visited here for the second time for dinner. Enjoyed everything that we had although the service at both the bar and tables hasn't been good any time we have been here. I had to reach across the bar and wave in the bartenders face to get a menu and then again to place an order. He looked sad and disheartened to be serving me. If the service isn't interested in me being there to spend money then it's hard to want to come back. Both beers I had were harsh and murky. Cocktails were good which saved the day. read more

Came up from Milwaukee to explore some Breweries in Green Bay. Walking in the decor was cool, plenty of parking and there was someone at the hostess stand that greeted us immediately! Yeay! The bar was full but other than that the place was empty. It was 4:45 so we asked to sit at one of the high top tables near the bar. They said those were for dinner guests only. We said that we were ordering appetizers and having a couple beers and they said we could "try and find someplace at the bar." Literally 10 tables open and they would rather turn people away? Does not make sense- I understand a restaurant doesn't want people spending $10 on beer and taking up a table for the entire night that could've been used for dinner guests.... but we were paying customers at 4:45.
