Our nieghbor raved about this pizza so we were excited to try it being pizza lovers from Chicago and New york. The man That took my order was friendly but the pizza had soggy crust with gooey cheese, couldn't even eat it even after trying to crisp it up in the oven when we got it home. Maybe the oven wasn't hot enough yet, I dont know, all I know is that I won't be going back especially after spending $30 for what I would consider to me a medium sized pizza at best. As someone who works in the industry myself it's relieving to just be able to talk to someone who can answer menu questions straight and make helpful suggestions along the way. Don't get lost among all the other Food Truck areas looking for this gem. It's directly across the street from the Costco Gas Station. Plenty of parking typically and a sweet little shady spot right next to the truck to enjoy your meal. The menu is far from basic. We had Da "Boss" and Margarita. Should've filmed the cheese pull. My wife and I have a routine. We arrive on Maui, pick up the rental car and have lunch at our favorite food truck. The monkey wrench is my teenaged son who eats only burgers, quesadillas, spaghetti and pizza. Life is too short to fight every battle and so we took our boy to a pizza truck. Da Grateful Dough Pizza Truck to be specific. As my wife and I were very happily chowing down on Thai food, my son kept insisting that he was insisting he was eating the best pizza ever. And the kid eats a lot of pizza. For the sake of thoroughness, my wife and I tried a bite and indeed, Da Grateful Dough DOES make a pretty singularly spectacular pizza. A flavorful balance of obviously high quality ingredients topping as crisp a pizza crust as one could ever ask for. Well, we know where to feed my son on Maui. Today, roughly a week later, we were in the area and hungry. My son and I stopped back at DGD. Now to be fair, pizza is one thing. Credible barbecue is quite another. But there it was, right on the menu board, offers of ribs, chicken and "briskit." I ordered my son a Primal Pizza: pepperoni, venison sausage, buffalo mozzarella and a beautiful, housemade confection of ube and ricotta (which by the way masterfully adds color, sweetness, dimension and contrast), while I, fully expecting to be disappointed, ordered barbecued ribs with a side of Caprese Salad. Clearly, I don't know everything. I've learned today that perfect pizza and perfect BBQ can originate from the same skilled hands. Those hands by the way, belong to Benoit. Before you taste a bite, the love Benoit has for his ingredients and for his creations is palpable. Benoit talked a little bit about his beginnings in Canarsie and how funny he finds it that after a life spent around the world, honing his craft as a chef, that life conspired to bring him home to pizza. And as I say, the pizza is great, but let's not give the Caprese short shrift. Every component, the buffalo mozzarella, mesclun and balsamic (and a tasteful hint of onion) all shine as they play together in carefully crafted harmony. We are all fortunate that Benoit has found his way back to pizza. And while a man of his talent could easily be doing what his is doing with great success anywhere on this planet, I'm glad that for the balance of this vacation, I've got him only a few miles away. But I was expecting pizza so I had to find one somewhere else. Stumbled across Da grateful dough and man am I glad flatbread co was closed because otherwise I would never have tried this new place! Truly excellent pizza. A lot of interesting toppings gave some great options. I chose the pepperoni one (pretty basic choice but I had trouble deciding!), and even that had great ingredients like Ube ricotta, black garlic oil and pecorino Romano. I also couldn't help but ask him to add the POG BBQ sauce as well. The pizza had a nice thick dough but it melts in your mouth. Excellent crust. My friend, who is very reticent to give high praise to food, likewise gave a rare exclamation of praise. I really wanted to like the pizza. We got a great PR hype from the guy running this place and it was all about the best ingredients! Unfortunately the execution leaves a lot to be desired. The dough is reminiscent of Domino's and that's a deal killer for me. It was undercooked and chewy. No amount of San Marzano tomatoes or Buffalo Mozzarella can rescue a pizza with such a poor base. I would have given this two stars but the sales pitch from what I assume was the owner gives it an "experience" star! Edit: I was personally contacted by the owner (Chef Benoit) and he was sideways unhinged over getting a three star review and did not like it all. Chef Benoit made a lot of personal comments about me instead of acknowledging that maybe he didn't put out the best product on that day! I am removing my mercy "experience" rating star and giving this business what it deserves - 2 stars! I could not recommend this experience to anyone.
