I stopped at Diego Pops with colleagues during a trip to Old Town. The place was busy on this beautiful Friday night, so we joined the waitlist and walked around the area for about 40 minutes until our table was ready. We decided to have just appetizers here because there were additional nearby restaurants that we wanted to try. We split an order of Brussels sprouts nachos, which came with a fried egg and garlic beet crema on top. There were delicious! We all agreed that the nacho toppings needed to be better distributed throughout the chips, which had concentrated areas of cheese and other ingredients, while other chips had none. But if you're looking for untraditional nachos, this is the place to go. We also ordered drinks and one taco apiece. I enjoyed the grilled cod taco, but found no detectable mango flavor in my frozen mango margarita-- it really just tasted like a traditional margarita. The indoor and outdoor atmosphere was fun. We ate outdoors, and were kept comfortable on a toasty summer night by water misters. Our server was helpful and friendly, too. The waitress was very kind and the food came out quickly. The margaritas were good we got a spicy pitcher. The salsa selection was great allowing for every taco to have a unique flavor design. Diego Pops came highly recommended however it did not live up to the hype. The wait time alone was insane and by time we were seated we were famished. The chips and salsa were pretty good but the tacos were flavorless and very basic. Service was ok but all staff were so busy running around trying to manage the crowd that there was not an opportunity to personalize service. I've been to Diego Pops twice during work trips to Scottsdale, and I can say that it's one of the places I look forward to visiting each time! During the more *tolerable* warmer months (don't come for me, I'm a Washingtonian through and through), the outdoor patio is the best! Love sitting out here in the partially covered, open air atmosphere. But, beware of the birds - they aren't shy! They don't steal your food or anything, but they'll almost clip you with a wing as they fly by your table. The first trip here I tried the tortilla soup and a couple of different tacos. The soup is hearty and full of flavor, and the tacos were delicious. This most recent trip, we got the Brussels Sprout Nachos and I got the Crispy Cod Bowl. I know, I know. Brussels Sprouts Nachos? Should that be a thing? And the answer is absofreakinlutely. Hands down one of the tastiest things I've ever had! There's so many different toppings, each bite is loaded with cheese and veggies. Don't skip out on ordering some of these for the table to share. As for the Crispy Cod Bowl, it's delicious! I topped it with some of the Serrano Ranch as well, which gave it a great kick. The cod is wonderful and perfectly crispy, and the bowl overall is a great portion. The perfect lunch for a warm day, if you ask me. Diego Pops is always a yes for me in terms of work lunch options. Went for a team lunch while in Scottsdale for an off-site. They offer modern takes on classic Mexican dishes and everything on the menu sounds incredible! I love Mexican food but prefer it for dinner. Let's just say beans and salsa! We started with guacamole, street corn queso, and chips and salsa. I recommend all three! I continued with the Brussels Sprouts and Prosciutto Salad - it's full of flavor and texture including kale, toasted almonds, cotija, and pickled onions for the win (I vote for pickled onions on all savory dishes!). It was extremely busy the day we were there. There were many bachelorette parties (including the one I was with), and it was the Final Four weekend. Because of this I have to say the service was not great, i.e. we waited for 30 minutes once seated without anyone taking our drink or food order. The cool part is that, on their taco menu, all the tacos can be ordered in a bowl form. You can also mix and match the tacos, except for the birria. I opted for the grilled shrimp bowl for a lighter, healthier option and it came with avocado; purple cabbage slaw, pickled onion, and chipotle aioli. Visiting from out of state we were in the Scottsdale area near the mall and were in search of Mexican/tacos. We came across Diego Pops and we are so glad we did! We decided to sit on the patio to take advantage of good weather. The patio is large and can accommodate both small and large parties. Diego Pops had good happy hour options and we chose the house margaritas! The tacos are ordered as singles which allow you to try different tacos without missing out! My favorite was the shrimp taco. I also ordered the Elote in a bowl which was pretty good. The ceviche was pretty spicy... and I like spicy but it might've been a little too much for me. More like 3.5 stars, but based on the reviews, I honestly expected a lot more from Diego Pops. The service was five star fantastic. We were greeted so pleasantly when we walked in and our server was incredibly attentive and polite too, coming back. A few times to make sure we were ready to order. Now the menu sounds super exciting, with lots of colorful dishes and great descriptions, however I didn't feel like any of the food really lived up to them. We started with the elote dip, a creamy/cheesy blend that's supposed to be similar to Mexican style roasted corn, and guacamole. The guac was just plain bland. It needed lime, salt, and seasoning. The elote dip was similar, lacking the signature chili lime flavors I love in elote. The chips however were great and I loved the cart of house sauces the server brought to amp up flavors. It was a good thing we got these early on because unfortunately I felt most of what we ordered was bland. We also tried the aguachiles, a dish I have to order every time I see it. The version here was incredibly acidic and didn't have any balance. It also had a bitter note to it, like citrus that sat too long, and I was sadly disappointed with this one. Lastly we had a bowl. Portion size was fantastic, but it didn't have any visual appeal. Flavor wise, it was ok, but again, all tasted the same and didn't have much going on. I added a different sauce to eat bite to bump it up. Maybe I ordered wrong. At least I'd like to think that's the problem. Nothing really hit and with the rave reviews I truly expected more. Salsa had a little bit of a kick to it! I got the birria tacos without beans or rice. Comes with three tacos and a small bowl of consome. This one was sadly not that great. First off, birria tacos are suppose to be drenched in the sauce and fried on the pan for some colour. If you look at my photo you can see that the tortilla was still very much white. Lacked a lot of flavour and filling inside the taco. Even when dipped in the consomme, it was a little dry and not that great to the palette. However, overall I think the ambiance and starter was great. Food can use some upgrades though! read more

I really wanted to love this place. The decor is cute and the patio is large and very inviting. Lots of tables open when we showed up, but we were told that the wait would be about 15-20 min. It was surprising that there would be much of a wait at all considering a lot of tables were open, and even more surprising that the wait increased by 10 minutes when we agreed to put our names down. Some places do this to incite you to go get a drink at the bar while waiting, but I do not know whether that was the intent or not. What I do know is that we had a table ready for us about 5 minutes later. My friend and I ordered 2 burritos. We did not order extras like chips and salsa (disappointed that these don't come standard with meals) or drinks. The service was extremely unfriendly. Our waitress did not once smile at us, and did not seem to want to talk to us. No menus, and the card with the QR code at our table was really filthy (see photo). I'm surprised they don't clean the cards or change them every once in a while. We were given a fork and a paper napkin each. It would have been nice to have a knife too. My burrito itself was a decent size, and it was good. Plenty enough food for me. It came with all of 3 chips, but I went back and looked at the picture in the menu, and that's about what they showed, so no deceit there. There's decent parking in the lot and because we came for Monday lunch (for $3 tacos (a steal!)) we were seated immediately. We ordered skinny margaritas which were super delicious and had cucumber and jalapeños which was cool! We ordered brussel sprouts nachos for the table. They are phenomenal and the pink sauce on top was so cute and yummy! I had the green chili taco as well as a crispy shrimp taco.
