Okay this place is COOL cool. My husband and I were immediately intrigued by the Vietnamese influence on the menu because that fusion absolutely speaks to both of us. Come to find out, the original concept in Phoenix was actually a pho restaurant called "Pho King" -- yes, spelled P-H-O and King. I literally died laughing. In all my years of eating pho, I've never heard of a white guy owning a pho spot -- but that's exactly how this started. The owner is married to a Latina, and the menu reflects the foods they love. That evolution turned into Dilla Libre #1, and now there are multiple locations. I love a good glow-up story. The space itself is packed with lucha libre memorabilia -- belts, masks, merch, artwork -- it's everywhere in the best way. It's playful but not cheesy. Bar vibe, colorful tables, cool energy. Very hang-with-friends, Taco Tuesday, happy-hour type of place. Now the food. They have an entire regular menu AND a completely separate vegan menu (including dessert ). Not just one sad option -- a whole menu. That always earns points with me. I had the vegan banh mi tacos and they were delicious. Fresh, flavorful, balanced -- nothing over-portioned or sloppy. My husband had a quesadilla and said it was just as good. The cauliflower bites had real spice (not pretend spice), and the habanero salsa actually brought heat. Flavor across the board. Our waiter talked with us forever about the history and concept -- super welcoming, super chill. And when they handed me a free sticker, the employee joked, "It's free... unless you're mean to me." I was sold Eclectic. Unexpected. Culturally blended in a way that feels authentic to the owners' story. It's rare to see Vietnamese and Mexican influences on one menu in a way that makes sense -- but this works. Didn't try drinks (I don't drink), but they have solid specials and Taco Tuesday deals if that's your thing. Would I go back? Absolutely. Fun vibe. Good flavor. Cool backstory. And yes... I'm keeping the sticker.

Looking for something light so we went to check out their happy hour. This place was recommended by the owner of the Airbnb we were staying at. He had mentioned that they had really good salsa. They offer an unlimited chips and salsa on their happy hour menu. Their chips were light and fresh and we couldn't stop eating it. Their chips carne asada nachos were loaded with a generous amount of meat. Margaritas were great too!

Super delicious Mexican food with a TON of vegan options! My dad and I came here for lunch and had the most amazing time. First off the free chips and salsa were spectacular. Then for our mains my dad got the california burrito and i got the vegan hot chick quesadilla. This quesadilla was spectacular, full of flavor and very generously filled, even maybe had a little bit too much vegan cheese if that's possible. They have a full page vegan menu which is amazing, I will definitely be back to try some other options. My dad loved his burrito as well. Our server was really nice and friendly and our food came out fairly quick. The inside of the restaurant is really fun and highly decorated with a Mexican wrestling theme. Highly highly recommend!

Excellent service with an authentic menu filled with good available to everyone. Vegan? No problem there is an entire vegan menu. Gluten or dairy free? Tons of great options. Carnivore through and through? The carne asada is to die for. Enjoy the authentic wrestling art while eating excellent appetizers. I recommend this stop for tourists or locals alike.

I walked in five minutes to close, and the cashier greeted me in such a friendly manner and assured me that they could still do a takeout order. He even offered me chips, salsa, and water while I waited and told me to sit down and he'd bring it to the table. He even put the water in a to-go cup. The salsa was delicious and had a good kick to it. The carne asada tacos were juicy but a little tough. Still great quality for them nearing closing time. The tacos come three to an order. They only do a la carte tacos on Taco Tuesdays, and they only have corn tortillas. The inside of the restaurant is very charming and gives an endearing small business feel. I would definitely come back and dine in given the fantastic service!

I've been debating on the stars to give Dilla Libre Uno only because I had a stomach ache the day after but not sure it was from there -- but I was so full when I left and I even had left overs. Their portion sizes are so big!! Ok so what I love about this spot is they have both a vegan menu and a traditional menu so perfect for people with different food preferences. I definitely will take my dad here because he wouldn't he caught dead in a vegan restaurant and there is not a lot I can eat in a traditional Mexican restaurants. The decor is pretty cool too -- it has the Mexican Luchador wrestling theme with many pictures of old luchadores, masks, wrestling belts and artwork depicting this culture. Dilla Libre has an extensive menu, it was so hard to decide what to get because there were so many options!! We started with the chips and guac. The tortilla chips were corn chips and about a 7/10 -- not the best but not stale and just enough salt. The salsa was delicious -- I love a good house made salsa. We ordered guac -- we ordered a small portion and it was just enough for three, especially since the entrees were very very large. I ended up having the vegan hot chick burrito (made with beer battered cauliflower) -- which is kind of like BBQ chicken, my friend's had a black bean burrito and the vegan California (which has french fries inside!!). My hot chick burrito was very flavorful and very spicy for this white girl, and did I mention incredibly large? I immediately ordered a to go box since I knew I wouldn't be able to eat it all. The primary vegan "proteins" are Beyond carne asade, fried potatoes, house made chickpea chorizo (this sounds good and need to go back and try) and beer battered cauliflower so quite a good selection -- still no mushrooms though!! (I'm on a quest). So overall I thought it was good, and even my leftovers were good. Portion size is great, price is reasonable too for the portion size -- and especially since I had lunch the next day! Ambiance is casual but fun, service was decent too.my biggest advice is come

We visited around 7 PM on a Wednesday, and the place was surprisingly empty, especially considering all the great things we'd heard. When we walked in, the waitress was cleaning and didn't greet us right away, which felt a bit unwelcoming. That said, the décor was impressive, every corner had something interesting to look at. After a few minutes, the waitress brought us menus, followed shortly by water and our drinks: two margaritas and a lemonade. Once the drinks arrived, we placed our food order: Carne Asada Tacos ($17 for three, plus $4.50 for a fourth), the Steak and Bleu Burrito, and a kid's quesadilla with fries. Unfortunately, the food didn't live up to the expectations or the price. The tacos were some of the smallest I've ever had, and definitely not worth $21.50. I've had far better from food trucks and roadside stands. The Steak and Bleu Burrito was another letdown, though my daughter, who loves blue cheese, was excited to try it. Even she wasn't impressed. Surprisingly, the best item we ordered was the kids' quesadilla and fries. The margaritas were just okay, but the lemonade was actually the standout drink of the night. Given the high bill and the glowing reviews, we'd seen online, we expected much more. Sadly, we won't be returning.

    Burnt buffalo cauliflower bites

My partner and I used to be regulars here, a couple of years ago. Service started declining and prices went up so we visited less and less. Last week we had dinner there and it was just ok. The vegan carne asada fries were way too salty. I couldn't really eat them. We ordered Buffalo cauliflower bites which used to be a favorite app of ours but also just was ok. Then last night we went for Father's Day dinner, (my partners request). There was only one girl running the entire restaurant which had probably 6 tables of guests at the time, including two duos at the bar. Understaffed if you ask me, especially for Father's Day Dinner. Either way, we sat ourselves to give the food another try since we figured last week was just an "off" night. Well when the waitress brought us chips and salsa the chips were way overcooked and tasted nasty. The salsa was bland but edible. I asked the waitress if there were fresh chips coming out since the ones she gave us were overcooked. She said she would check in back. She never walked to the back to check. She was assisting other tables instead. But I tried to give her the benefit of the doubt since she was alone. We had already put our order in, buffalo cauliflower bites, to give it another chance, and a vegan hot chick burrito. The cauliflower came out BURNT and mostly inedible and the burrito was again, just ok. We never received fresh chips, food was not worth the high price point or any price point in my opinion. And service was lackluster. We wont be returning.

I really liked this spot, first time in -- the vegan menu is a full page, the bathroom ambiance is eclectic, and the flavors are diverse and rich. The blue demon cauliflower bites on the happy hour menu were crispy, coated, and spiced beautifully. The salsa tasted fresh, not bottled but ran out a little too early with the chips. Pero 4/5 estrellas. The vegan napoleon dynamite dilla was too cheesy for my partner who literally said "I never thought I'd say those words in my life" as she's someone I'd consider a cheesehead! I left wishing the vegan Banh Mi tacos had less chickpea and more texture than mush. That said, I'd definitely come back and try their taco mixer because everything coming out of the kitchen looked super filling and freshly made. Which is good because their prices seem high before seeing your plate. Solid find for plant-based dining but be prepared to take some home. Oh and get the vegan elote cup: it tastes better than it looks! Sabroso, Q rico 083125

Every time I come here it gets more packed, which is both annoying and completely understandable because the food is ridiculously good. The tacos are fantastic, the fries are life-changing, and the hongos fries specifically deserve their own national holiday. This place made the Top 100 food spots in America list, and honestly? Deserved. It's the best taco spot in the country in my opinion and makes places like Torchy's feel like they're competing in junior varsity. The vibe is also way above average for a taco joint; lively, clean, and full of people who look like they just took their first bite and immediately started planning their next visit. The taco crew is always friendly too, even while dealing with lines longer than a DMV on a Monday. If you don't know what to order, here's the move: Get one taco or an especial if you're a cheese enthusiast, a medium fry with your topping of choice, and guac with chips. That's the kind of meal that makes you sit in your car afterward thinking about your life choices in a positive way. Enjoy. And maybe stretch beforehand because you're going to want to fight someone over the last hongos fry.

The caramelito continues to be my favorite of the two. Love the roasted salsa on the salsa bar though the hot red one is really good too! I do wish their guac salsa had more tang and salt. Sometimes the best meals happen because your original plan falls through. That was exactly the case…read morehere, and honestly... I'm not even a little mad about it. I ordered the veggie tacos with roasted sweet potatoes (skin on, which was absolutely the right call), pepitas, feta, and all the right toppings. Whoever prepped those sweet potatoes deserves a raise because they were cut into the perfect sized pieces. Every bite had a little sweetness, a little crunch, a little saltiness... it just worked. My dining partner ordered the barbacoa tacos, and I didn't even have to ask if they were good. The involuntary "Mmm..." after the first bite answered that question. Four tacos disappeared in record time, followed by, "I could've eaten two more." That's about as glowing of a review as you're going to get. Now let's talk about these tortillas. Handmade. Corn. Tortillas. Are you kidding me? They're the kind of tortillas that had me question every tortilla I've ever eaten. Soft, fresh, and somehow they manage to steal the spotlight even with everything else on the plate being so good. The chips and guacamole were excellent, too. The chips have to be made in-house and they disappeared at an alarming rate. The salsa that came with them had this smoky, fire-roasted, chipotle flavor that kept me reaching for another chip... and then another... and then suddenly I realized I'd eaten way more chips than I intended. The bottled table salsas deserve their own paragraph because they completely confused me... in the best way. They bring three to the table... a green, a red, and a darker red. I kept tasting them individually thinking, "Okay, these are alright." Then I started mixing them. Game over. On their own, each one was solid. Mixed together? That was the magic. I don't know if that's what they intended or if I accidentally stumbled onto the perfect combination, but from that point on, every taco got the salsa trio treatment. The only tiny hiccup was when we first walked in. We were greeted, asked if we wanted menus, and sat ourselves. We waited for a bit thinking someone would come take our order, only to realize it's actually counter service. Once we figured that out, everything was smooth sailing. Not a big deal at all... just something first-time visitors might want to know. Follow the sign "order here" I also loved the layout. You can actually watch them making the food, which somehow makes the wait even harder because everything smells incredible. Two tacos ended up being the perfect light meal for me. Could I have eaten ten? Absolutely. Those two statements can both be true. Meanwhile, my dining partner polished off four barbacoa tacos and was talking about ordering two more. We only ended up here because another place happened to be closed, and honestly, I'm glad it worked out that way. This ended up being one of those meals we keep talked about on the drive home. Oh and the bathrooms?. I walked in and immediately thought, "Whoa... this is a cool bathroom" The lighting had this pinkish-purple glow that made me feel like I'd accidentally wandered into a trendy lounge instead of a taco shop. I honestly wasn't even sure there was regular lighting in there and I didn't look... because the vibe seemed so intentional. Finally, the music. .. upbeat, dance-worthy, the kind that had me bouncing in my seat while waiting for my food. Between the atmosphere, the lighting, and the music, the whole place had me want to hang out a little longer. Zero regrets. I'll absolutely be back... and next time I'm ordering more tacos.
