Was recommend to this place by my sister in-law. She had messaged me that this place offered a vegan menu as well as a traditional menu. So here we are on a Saturday afternoon enjoying good and good margaritas. The place is cozy and unique with the decor of famous Luchadores throughout. We started with the plant base vegan elote and it was quite flavorful. It is nice that they offer tacos and if tacos is not what you are in the mode for you can have the protein done in different styles like, burritos, bowls or quesadillas. I ordered the carne asada quesadillas and my Fiance ordered the Napoleon dynamite vegan quesadillas. Everything was hot and fresh. We usually have a great experience at Dilla Libre! My family loves their food but this was a disappointing experience. We stopped in for a late lunch around 3 p.m. and were the only customers in the restaurant for most of the meal. It took quite a while to be acknowledged, get menus, and place our order. The two servers were more focused on their conversation than on helping guests, and it felt like our presence was an inconvenience. The food itself was delicious, but our basket of chips was mostly tiny broken pieces that were difficult to dip in the salsa. Very hang-with-friends, Taco Tuesday, happy-hour type of place. Now the food. They have an entire regular menu AND a completely separate vegan menu (including dessert ). Not just one sad option -- a whole menu. That always earns points with me. I had the vegan banh mi tacos and they were delicious. Fresh, flavorful, balanced -- nothing over-portioned or sloppy. My husband had a quesadilla and said it was just as good. The cauliflower bites had real spice (not pretend spice), and the habanero salsa actually brought heat. Flavor across the board. Our waiter talked with us forever about the history and concept -- super welcoming, super chill. And when they handed me a free sticker, the employee joked, "It's free... unless you're mean to me." I was sold Eclectic. Unexpected. Culturally blended in a way that feels authentic to the owners' story. Looking for something light so we went to check out their happy hour. This place was recommended by the owner of the Airbnb we were staying at. He had mentioned that they had really good salsa. Super delicious Mexican food with a TON of vegan options! My dad and I came here for lunch and had the most amazing time. First off the free chips and salsa were spectacular. Then for our mains my dad got the california burrito and i got the vegan hot chick quesadilla. I walked in five minutes to close, and the cashier greeted me in such a friendly manner and assured me that they could still do a takeout order. He even offered me chips, salsa, and water while I waited and told me to sit down and he'd bring it to the table. He even put the water in a to-go cup. My partner and I used to be regulars here, a couple of years ago. Service started declining and prices went up so we visited less and less. Last week we had dinner there and it was just ok. The vegan carne asada fries were way too salty. I couldn't really eat them. We ordered Buffalo cauliflower bites which used to be a favorite app of ours but also just was ok. Then last night we went for Father's Day dinner, (my partners request). There was only one girl running the entire restaurant which had probably 6 tables of guests at the time, including two duos at the bar. Understaffed if you ask me, especially for Father's Day Dinner. Either way, we sat ourselves to give the food another try since we figured last week was just an "off" night. Well when the waitress brought us chips and salsa the chips were way overcooked and tasted nasty. The salsa was bland but edible. I asked the waitress if there were fresh chips coming out since the ones she gave us were overcooked. She said she would check in back. She never walked to the back to check. She was assisting other tables instead. But I tried to give her the benefit of the doubt since she was alone. We had already put our order in, buffalo cauliflower bites, to give it another chance, and a vegan hot chick burrito. Then I brought a co-worker along because it's the closest taco shop to my office. Which means I will be frequenting this place a lot. I've never raved about someone else's meal in a review before, so I'll tell you about the tacos. They are amazing! Most taco shops offer similar varieties, but the chicken is always a bland option. I visited Dilla Libre Uno on Tuesday, 03/31, at 7:10 p.m. Although there were only three tables occupied and one person at the bar, the experience was a complete disaster. My partner and I waited at the entrance to be seated, but the bartender merely told us they were "trying to clean some tables." We moved to the bar to be more convenient for the staff, but the service only got worse from there. Lack of Professionalism and Service Despite sitting directly at the bar, we were never greeted. The bartender continued making drinks without acknowledging us or explaining that it might be a wait due to being short-staffed. We sat next to dirty dishes while waiting over five minutes without anyone offering a menu or even a glass of water. I eventually had to get up and grab a menu myself. Inequitable Treatment The frustration peaked when a new group of four arrived after us; they were immediately provided with drinks, menus, and chips and salsa while we were still being ignored. The other server appeared lost and avoided us entirely. Even after the bartender specifically instructed the server to attend to us at the bar, she still failed to approach us. We waited ten minutes without a single word of service. Management and Staffing Concerns As someone with years of experience in the service industry, it was clear that the staff was overwhelmed and frustrated by our presence because it was "Taco Tuesday." This establishment desperately needs a host to manage seating and a busser to clear tables so the servers can actually attend to guests. A simple greeting, water, and chips would have easily maintained our patience while food was being ran. Conclusion We ultimately left hungry to spend our money elsewhere. To add insult to injury, the bartender said "thanks for coming in" as we walked out, to which I replied, "thanks for what?" I came back the next day because I was overcharged for the cauliflower, and the server was kind and offered me a discount on my order. So I chose the All Thai'd Up quesadilla which includes citrus marinated chicken breast, serranos, grilled onions, sweet thai chili sauce, Thai Basil, Mint, jack cheese, topped with sesame seeds. This was delicious! Definitely on the sweet side with the sauce but I loved it. Great flavors and I enjoyed it. It also came with some chips and salsa. This is a casual spot for some good eats, so I'd be back in the future. Sat down and ate in the other day and there was only one waitress/bartender but she was super friendly and honest about the size of the quesadilla so my boyfriend and I shared one and it was perfect.
