I'm really impressed with what the new ownership has done here. The previous owner moved into a barren strip mall, but created a spot to build community. The couple that bought it, was the right team to steward this gem. They've built upon the previous owners foundation, yet made it their own. It was our first time here and this place did not disappoint. A group of 12 of us came on a whim, got there right when it opened and was seated immediately. The staff were supper helpful and attentive the entire time and even with how large of a group we had. My favorites were the fig and ricotta pizza with prosciutto (they made it extra Crispy for me). This saltiness from the meat helped balance out all the amazing sweet elements of the pizza. I also loved the bbq chicken pizza on their specialty menu. This Pizzeria is the best in the inland empire. Seriously. The food is immaculate. Everything we ordered was absolutely suburb. Fresh, cooked very well, and the flavors are just *chefs kiss* From the moment we walked in, we were greeted by a very lovely woman who arranged our table to include one more person who was not originally counted on the reservation. Our server was incredible. Very attentive, answered all of our questions, was very engaging and overall an immaculate vibe. (I WISH I got her name but I do remember she was wearing purple macrame earrings lol). The only thing that was kind of a bummer was the wait time for our food but seeing how it was very busy, we understood. Great food! Pizza was so good. We got the pesto pasta. We had a Cesar salad and it was delicious. Dessert was amazing! Definitely suggest to make a reservation. The more things change, the more they stay the same. Fiora Pizzeria is the former La Volata (which has been successfully around for years). The décor and layout are the same, even the pizza oven - which is a good thing. The menu (this evening we only ordered one item) is, also, basically the same (and also just as pricey). We didn't have reservations and so we were seated at the bar. (Note to self, one will still need reservations: as in the past.) We enjoyed their Charcuterie Board (full size). Even though the Full Board only comes with 3 cheeses and 2 Salumi, it was more than enough for the 2 of us. We really enjoyed the variety of the cheeses and salumi: ranging from soft and sweet to dry and savory. The accouterments provided an abundance of enhanced textural and palate combinations. Unique for Redlands, their oven house toast added a crunchy texture and earthiness with each bite. We've enjoyed the prior establishment and really enjoyed this new one. read more

Cool place. Menu looks amazing! The food tasted great and the drinks were good. The only downside was how long it took for the food to come out after we ordered. When we sat down, our server took our drinks and appetizers order pretty quick but then things seemed to slow down. Drinks took a while to come out. Appetizers came out and we were almost done with them before we could place our entree order. It seemed like the food took a long time to come out. We were there for over 2 hours which seems like a good amount of time but when you go with kids, it is too long. They are a new business so will try again once they are more settled. read more

I ordered a pizza to go and it was fantastic. It was so flavorful, so crispy and had so many toppings! I literally ate a piece before I was even able to take the picture as seen below! Everybody I met while I waited, from the hostess, to the servers, to the bartender, and even their spectacular head chef were friendly and so welcoming! The owner was super down to earth and I'm pretty sure he even made my pizza! We really REALLY love this place. My family and I have been coming here since before the ownership change, back when it was La Volata, and it's still our absolute favorite restaurant in Redlands!!! Every time we go, we're reminded why we keep coming back. The staff is so kind and welcoming, it honestly feels like you're being taken care of by family. The service is always amazing, just consistently thoughtful and warm. We always start with the wood fired confit garlic with house toast. Garlic lovers will be in heaven!!! Then we usually get the classic pepperoni pizza, which is hands down the best pizza in Redlands. Everything tastes SO fresh and perfectly made. My go-to is the spicy fusilli vodka pasta with Calabrian chili, parmesan, and basil. I always add sausage and mushrooms, and it's honestly my favorite pasta in ALL of Redlands. It has spice to it, but they'll adjust it if you want, which is nice. You can tell they care about the food, the experience, and the people coming in. I've tried so many Italian spots around here, and nothing compares to this one. Definitely make a reservation because it gets busy. Amazing pizza--Spice Roni was one of the best I've ever had and great value. Meatballs and beer were solid, though the appetizer could use bread at the price. Skip the cod; it wasn't worth the cost. Service was the main issue: we arrived at opening and the staff didn't seem ready or particularly welcoming. Let's get a few things out of the way first. 1. Service wasn't perfect but very good and friendly. 2. I really like the revamped interior of Fiora. 3. Our Caesar salad was fantastic, the best I've had in ages. So. What went wrong? The pizza. The signature reason for Fiora. When this place was La Volata it was very difficult to decide if this was the best pizza in town or Bricks and Birch. B&B won by a nose, but Volata won for the fine dining/date night experience. But now the pizza at Fiora isn't quite what it once was. Due to inflation and tariffs, importing the proper flour is rather pricey. So Fiora opted for a domestic (?) sour dough flour which reduces cost and even nudged the pizza pricing down a bit. The problem is that Fiora's pizza is no longer competitive in Redlands. It's okay (which is what 3 stars means on Yelp) but I've had better, including the pizza served at the Food Hall by the slice. When that pizza is just out of the oven it is four times more savory than this pizza. Understand I'm talking about the dough. The toppings on our pizzas were oddball delightful, a signature of such pizzerias. And these days I have to avoid red sauce, and both 'white sauce' pizza offerings didn't disappoint. But I'm afraid that I can't return to Fiora for pizza, which is sad. I know they offer some pastas and such but seriously I can get those at ITALIA BELLA in Yucuipa. So my apologies to the new owners but this is just what my Italian tastebuds are telling me. I make pizzas at home and know dough. The irony is that business was bustling and buzzing something silly on a Thursday night and -- therefore -- none of these words may matter. read more

A few things... our server kissed her partner in the middle of the restaurant , bar tender was drinking while working. I admire the creativity but if I'm going to be paying $20-30 dollars a plate, my table should not be made from a wood pallet. It's seems like a nice restaurant however plates were dirty, lights were dusty and it's only been open for a few months. Food: I order a pizza and the outside crust was burnt and the middle of the pizza was under cooked. I took it home and popped in the oven. I wanna give another try, but ima wait... I was eager to try this spot thinking that it was La Volata - only to find out it's a new restaraunt ran by La Volata staff. Our server informed us it was a new menu and new recipes so we decided to give it a shot since we were already there. Unfortunately the pizza and pasta we ordered was not the best, although the pictured pesto pizza looked beautiful it was pretty subpar. We ordered the pasta verdura which was overcooked and lacked flavor. Our cocktails were not great either, luckily our server was amazing and replaced one of our drinks (a basil/cantaloupe cocktail) and we had let her know our feedback being it was the first week of opening and their menu was completely new. I have fine dined at The French Laundry, The River Cafe and many other great restaurants as well as The Tartan, Greensleeves, MU and many other'Mom & Pop eateries that I have greatly enjoyed. But I have to be honest about the absolutely poor excuse for pizza that was served at Fiora Pizzeria. All the ingredients on the pizza were tasteless and it was served WITHOUT the Pepperoni we asked to be added to the pizza. The service was also lacking as we had to wait an unusually lengthy amount of time to order a second cocktail. What has happened to good, not great service? Owners and managers of dining establishments have forgotten how vitally important every single person is that walk through their door. My parents and I were looking for somewhere to have lunch on a Saturday afternoon and were pleasantly surprised when we discovered Fiora Pizzeria has a lunch service! We stopped in and the staff were very friendly and patient. I ordered the Charred Broccolini Panino with the butternut squash soup of the day. Both the sandwich and the soup were incredible! Such unique flavors, so fresh and extremely delicious. My parents also loved their food and our appetizer of roasted garlic and toast was delicious as well. Great experience with exceptional food. The Forrester pizza (thin crust mushroom pizza with arugula and red onions) and caulifarro salad were absolutely delicious - will definitely order these again. The new owners are very nice and seem dedicated to providing a good experience for their customers. If it's not broke, don't fix it. The honeypot was the best pizza on the menu. Even if it can still be ordered, the peppers are not the same, and it should come with prosciutto, not pepperoni. I ordered the fancy pizza off the new menu and that was okay, but it too has been taken off (at least the online menu). The new ricotta pizza is not good, this should be made with goat cheese instead, check out North Italia's fig and goat cheese with prosciutto for inspiration. Running out of reasons to go back to what was once our favorite restaurant in Redlands. Hopefully this feedback is helpful in restoring what made this place great. read more

What an incredible experience! The food, ambience and service were all 5 star. There were 5 of us and it could not have been a more enjoyable dining experience. Cocktails were yummy and we started with their house made ricotta (OMG, if you've never had this before, you must try it and you can thank me later) witch came with delicious woodfired bread (we ordered more bread too)! We also ordered the meatball appetizer which was also perfect for sharing with the entire table. The best meatballs that I have ever had! You can tell they make them by hand here. The meatballs were so good that two of party ordered the spaghetti and meatball dinner, We also had two different pizzas which were also fantastic. The sourdough pizza crust was light, airy and very tasty. This has top be one of my top five pizza experiences that I have ever had (I have been eating pizza for over 60 years), reminds me of the pizza I had in Naples. We finished our meal with a hot, house made chocolate chip cookie along with house made ice cookie dough ice cream. The portions are huge and we all brought food home. The service was very friendly and attentive. It's also pretty cool to watch the Pizzaiolo make the pizza and put them into the beautiful woodfired oven. All of the pastas are house made as well.
