They even have crossing bridge noodles which are from Yunnan. We came in for lunch on a weekend it was about half full. There seemed to be one main employee responsible for the dining room so it did take a second for someone to notice us and seat us, but it wasn't too long. There are physical menus, but you order on a QR code at your table, which seems quite common at regional Chinese restaurants these days. Not a problem, the interface was easy enough to use. Note that while you order using the website, you pay the normal way. I had my husband, who is vegetarian, with me, so we went with all vegetarian dishes: mapo tofu, stir fried baby bok choy with chiles, tomato egg stir fry, sichuan cold noodles, and a bowl of white rice (which is extra charge here, womp womp). All our dishes came out pretty quickly. The mapo tofu here is excellent, and has a bit of mala but not too much. It's nice and saucy, and you definitely want to eat it with white rice to cut the spice and soak up that delicious volcanic sauce. The stir fried bok choy is excellent, perfectly cooked, and gently seasoned which was a good counterpart to the very flavorful mapo tofu. The tomato egg stir fry is a great version of this standard comfort dish. The sichuan cold noodles were actually our least favorite, as it is surprisingly quite sweet, and that's just not our preferred flavor in noodle dishes. Portions are generous all around and we brought home a small amount of leftovers. Service is fast and friendly, and prices are reasonable. We will definitely be back to try more of the menu.

I went simple this first time around, picking the bundle of 5 beef skewers, 2 pork belly skewers, and a potato skewer. Out of these items, I really enjoyed the pork belly skewers. All the other items were good, going to have to get more the second time I visit. Just to quickly note and correct the first review on here, Gutian Fried Skewers is not the first fried or Chinese skewer place in Seattle. There's actually two more places in North Seattle that do almost the same exact thing. The Shoyu based beef Aburasoba was also a knock out, slightly more delicate flavors but all working in harmony. The beef slices were super tender, they melted in my chopsticks. The soft boiled egg was still slightly runny yumm. The noodles were thinner than the Tokyo Aburasoba but just as fresh with a nice chew. I also highly recommend it, especially if you want a more classic style flavor. We ordered to go and the service was wonderful. A very nice server and chef prepared our food quickly and with care, they have nicely branded chopsticks and even put cardboard at the bottom so our to go bowls stayed stable. The setup is very casual; you seat yourself and order/pay off a QR code, then the food is brought to you shortly after. I like that despite the QR code ordering they still have laminated physical menus at each table, which I think makes for a nicer experience. Seating is made up of a nice handful of 4 tops and a couple areas of one-sided bar-style seating for solo diners or duos. When I went in on a Friday early evening there were plenty of people there but it was still easy to find a table. I had the Tokyo Ganzo (pork version) which comes in the jumbo size by default. I added a couple swirls of vinegar and a couple swirls of hot oil, as directed, mixed it all up and starting slurping it up immediately. The chew of the noodles with the luxurious, glossy sauce feels incredibly luxurious, and the pork bits are both perfectly browned and flavorful and melt in your mouth. The jumbo size is perfect if you're really hungry -- I generally have a big appetite, can destroy a bowl of noodles in two minutes flat, and found the jumbo size incredibly satisfying. I can definitely see myself coming here again when I'm having a noodle craving to try more of their aburasoba.

That particular location is on the smaller end and I found it very cramped inside while eating. This Fremont location is much larger with way more seating. It's still am almost entirely self-service type of restaurant, with two kiosks right in front for ordering and everything being self service including bussing dishware and packing up leftovers, if any, at the end of the meal. Occasionally they give out packs of freshly made leftover ramen noodles for free - on my first visit, they had a pile right next to the order kiosks. One interesting thing about this restaurant is that they don't appear to accept tips at the kiosks. That's probably why the ramen prices here are 10-20% higher than the competition. Kotteri Ramen ($20) - I feel like the broth is missing something, like some kind of special flavor to set it apart. What exists is pretty unctuous with a fatty mouthfeel that coats the tongue and mouth with slowly rendered pork bone and cartilage. It's very garlic forward due to the amount of crunchy garlic chips mixed in along with the squid ink-esque black garlic oil layer. Usually when I feel something is missing, it's due to lack of salt, but I'm not so sure in this instance. The broth is fatty but somehow a little bland and doesn't show any sign of frothiness. With that being said, the noodles are excellent. They are a thinner variety, cooked perfectly with a firm bouncy bite that somehow doesn't gets overladen with broth even after sitting in the soup a while. The pork is okay, it's thick cut and porky, clearly marinated but yet missing some of the soy umami notes and any sort of char. It's not even that tender compared to other ramen shops. The egg is slightly over soft boiled with the outside layer of the yolk completely set, but the inside still jammy. The entire half egg is tender though and has decent flavor from marinade. (4/5) I visited again a couple of weeks later as I was interested in the chicken sandwich. This time they didn't have any free noodles though. Kim Kua ($8) - Eight chunks of kabocha lie on the plate, elegantly arranged to give height, then drizzled with Malaysian curry, and sprinkled with crushed pecan and some spicy, lemony microgreens. The kabocha is roasted, but to a point where they are still quite firm instead of being buttery. The pecans aren't toasted, instead having that velvety stale texture they are known for when stored for a while. The drizzled curry sauce isn't very much, just a couple of spoonfuls, but is enough to give some spicy and curry powder forward flavor. It's clearly rich with coconut milk and has plenty of flavorful ingredients, but is missing that special punch to bring things together. I believe it's undersalted. I can't say I'm a huge fan of this side. (3/5) Spicy Crispy Chicken Sandwich ($13) - The chicken has an extremely robust crunch, boosted by a mix of starches that gives an almost hard kettle-chip type of texture. The seasoning mix used on the chicken and/or in the breading is flavorful, fragrant with lemongrass, spices and just a bit of heat to mix things up. The meat looks kind of rubbery pink in color, perhaps from a marinade? It's a rather large piece that overhangs the bread quite a bit, and the interior isn't too dried out at all even given the heavy exterior fry. They leave the chicken skin-on which enhances that crunch factor even more. On top, they add a couple of slices of pickled cucumber, sliced lengthwise for size. On the bottom is a bed of lightly dressed red cabbage. It makes for a really balanced bite. On the side, they serve the sandwich with a cup of sauce that's somewhat thin and runny. There's some chili funkiness going on there, with a tang and slight mala numbing quality to combine with the nutty sesame flavor and heat of the peppers. I really don't like the bamboo plate this sandwich is served on. It makes for a messy eat. Why not use a normal ceramic or metal plate? Heck, I'd even accept plastic. (4/5) Overall my experience at this Ooink is about the same as the location on Capitol Hill. The ramen is good enough to satisfy a craving, but I just feel like there is something missing. That special ingredient to make things zing and pop. I can't figure out what it could be. Bathrooms - Single unisex room.
