My husband had learned about this spot and wanted to try it while we were in that part of town. Such a good idea!! Despite deep dish being in the name, they are also known for sourdough thin crust pizza (the owner/chef told us he had recently reformulated it so it wouldn't be floppy at all but "cracker-like"). Honestly, some of the best pizza I have ever had!! We got a pepperoni pizza as well as a "White Album" with cheese, spinach-artichoke dip, garlic and no red sauce. Both were excellent! Even my husband, who is less likely to stray from the classics, said the spinach-artichoke pizza was a good choice. The owner was friendly and the food delicious. George's really deserves the accolades for their pizza. Their tavern style pizza I've ever tried in Chicagoland area. It is a very technically excellent thin crust pizza. Let's start with their sour dough thin crust. It's flavorful, perfectly crispy but not cardboard dry and has the right amount of bite and chew. The dough at every part of the pizza was evenly cooked and there were no wet spots. I don't know how they balance all that out for perfect texture and bite! The crust is also sturdy enough to hold the toppings. Nothing irks me more than soggy dough that lacks structure. The tomato sauce was evenly and slightly spread. The sauce flavor bright, flavorful and not sweet, which I like. The toppings were balanced and evenly spread out, which takes a lot of time and care. One interesting and smart choice they do with the sausage topping is that they flatten the sausage a little bit into almost like a disc instead of a round meatball. What that does is it helps the sausage cook evenly and all the way through plus some tasty browning at the same time with the pizza crust. They way they portion out and plot out the toppings is smart so it's evenly distributed. I can tell they put a lot of R&D into developing their pizza craft and execution in production. I'm blessed they're quite close to my home - no need to drive all the way to Kim's Uncle's in Westmont. George's is one of my favorite neighborhood spots now. read more

George's pizza came on the scene a few years ago with their unique take on deep dish, using a sourdough crust. Acquiring a pie used to be almost as hard as getting face value tickets on Ticketmaster because you had to sign up for a slot. However, now that they have been in business for a couple years, they have an easy-to-use online ordering system, with usually an hour wait for pick up and 1.5 hrs for delivery. Like other reviews have mentioned, their deep dish is so good. They use fresh ingredients, and have creative combinations of toppings, but the ability to make your own. However, this year, enter their new sensation: tavern style pizza. This seems to be a new venture, but they are staying true to their sourdough crust. I have to say, this may be one of the best tavern style pizzas I have had in the city. It utilized the fresh ingredients they are known for, BUT the star was the perfectly crispy crust. I can honestly say after having been to almost 100 pizzerias George's is by far among the best pizza Chicago has to offer. My lady and I had heard how good this pizzeria is however it took a while to get there given that we're in the western suburbs which made the drive a bit far. However it was well worth the drive George specializes in both deep dish and tavern. We love all styles so we decided to pre order one of each and dine in. Both styles were beyond amazing especially the Orwell's Farm with the abundance of taste. Perfection! Aside from the brilliant pizza offerings, the service and ambience were beyond compare. Chicago pizza is so complicated. One place says tavern style, one place says deep dish. And in the west loop, they're attempting to pass Roman style pizza. I say we can have them all! George's is one of the few new styles I've had in a while. Their pizza is on a sourdough focaccia style crust. I was nervous about it at first but once I had it, I was hooked. The pizza was perfectly cooked, I chose a great combination of toppings, and I was very impressed by this random find. I ordered for pick up but the restaurant seemed very friendly and clean. The staff was more than happy to help out and even gave me some tips on carrying it as it was SUPER hot as well as how to reheat properly. First off, I absolutely love George's. I've ordered there at least a dozen times and have had a great experience each time... except this one. I ordered my usual pie -- Sausage, Pep, Garlic, and Giard. However, the toppings this time were different than every other time I've been. In the past, George used to use whole cloves of garlic on the pie. It was glorious. This time there was none that I could see. I brought it back and was told it was chopped this time and that id be able to taste it when I ate it. Well, my partner and I are it, and we might as well have not gotten garlic. The taste was hardly perceivable. I certainly won't order garlic again if this is how it will be from now on. Similarly, the giard was extremely small. Maybe that's just the brand that's being used now, but it seriously detracts from the nice crunchy texture you'd typically have from giard on the pizza. Lastly, the dough was very off, almost soggy. The crust was far softer than it has ever been, yet the cheese in the middle was burnt. Notably, George did not cook this pie. Maybe it's training issues with new staff, but my partner and I were shocked at how different the dough was. Ultimately, this experience actually deserves a 3/5. I'm going to give it a 4/5 because I love George's and have had many good experiences there. But the quality tonight was worse than it has ever been in my dozen + times going there and I hope that this isn't how will be from now on. Attached is a photo of today's pizza, and my same exact pizza ordered from here last year. The difference is quite obvious. Today's isn't up to the standard I hold George's too. Edit: the owner, George, reached out and assured me that he is assessing quality control. Due to the fact he reached out and my many positive previous experiences, I'm going to make this a 5/5. As Chicago residence for over a decade, the allure of deep dish pizza has worn off. However, when folks are in town, we always have to treat them. After driving by George's so many times since we've moved to Edgewater, we decided to give it a try when our in-laws came to visit... Oh my goodness... It was SO good we have now gotten it twice since on our own without guests in town! What makes George's pizza unique is that it is made on sourdough crust. This makes the flavors pop amidst the scrumptious funk of sourdough. Plus they are very generous with toppings. We got pepperoni, sausage, red onions, and garlic...it was divine! Prices are very reasonable and the service is extremely helpful. One of the best parts of George's is that you can preorder your pizza on Tock as if it is a dinner reservation. This way you know that you have it scheduled and ready to go. Such a great/streamlined idea! The place itself is cute and quaint! But we have not eaten-in ourselves. Maybe one day. George's is now one of our favorite local pizza spots. And I mean it. Not one of our local deep dish spots...but overall pizza spots! We dined in on an early Friday evening (made reservations, selected our meal and paid online all before we arrived) and it was a very welcoming space. Only seating for about 20 or so people inside but at the time we were there it was half full (probably purposely). We got the 14" Build A George with Italian Sausage, Cremini Mushrooms and Ricotta and I could barely take the picture before we got to devouring a good portion of this pizza (we ate the rest at home later). The pizza was expertly made by George and he came out and said hello afterwards too. While I left the restaurant full, I didn't feel bogged down like I normally would when I eat deep dish pizza. **4.5 Stars** Very impressed by our first visit to George's Deep Dish, another in a line of impressive gourmet, order-ahead pizza options borne out of the pandemic. Like Milly's Pizza in the Pan, its closest competition (in both distance and quality), George's is a pan style play on deep dish and Detroit style pizza, light and airy with a caramelized crust. Both places offer quality pies and noticeably fresh ingredients, but other than a higher price point and the need to order in advance, that's actually where the similarities end. George's does an excellent job with toppings - just look how much spinach and mushrooms we got on our pie. Yes, it needed a little extra salt and some garlic, but the toppings were fresh and delicious, particularly the mushrooms. I was similarly impressed by the cheese, flavorful and plentiful with a great pull. The star, however, is the sauce. It's a sweeter sauce, but not cloyingly so like you might find at Lou Malnati's. It's extremely well balanced with salt and a little bit of heat, just a great sauce unlike any I've had in Chicago. Extremely impressive. While I loved the inner crust of the pizza, light and airy and able to stand up to the toppings, I really wish the caramelized crust went a little harder and a bit lower on the edge of the crust- it's more like hinting at that famous style than actually fully executing it. And, while I am usually a fan of some cornmeal underneath my crust, it was only full cooked closer to the edge, and completely uncooked in the center. If those two things were tightened up, I'm pretty sure this would become my favorite pizza in the city. Our journey of eating pizza from Chicago magazine's top 25 top rated places continues. I will be reviewing George's Deep Dish pizza as my last review of 2023 and what a great way to end the year! This pizza was absolutely delicious! We ate at George's on a Saturday night and we pre-ordered the pizza online and put in a note that we would be dining in. The way this place works is you do have to order the pizzas beforehand and you can either get them for pick up or dine in. We ordered the Orwells vegetarian pan pizza and even though we were pretty stuffed after finishing it between four people, we wish we had pre-ordered another one as they ran out of dough! The Orwells pizza was topped with mushrooms, red onions, roasted red peppers, and ricotta cheese. The ricotta cheese was really a nice addition and gave it such nice texture. The crust of this pizza was simply amazing. It was golden and flaky and just simply perfect! George uses a sourdough base and I'm telling you you've never had anything like this. If I lived in this neighborhood, I would for sure be eating there once a week. We also had the Feeny's garden salad which was the perfect start to the meal and enough for everyone of our party of four to have two servings. Since we couldn't get a second pizza, we opted to do all the desserts from the menu, which was well worth it. We had the Costanza's Bosco Fudge Cake, Curious' Limoncello-Mascarpone Cake and the Prince's Salted Caramel Heath Cheesecake. The limoncello mascarpone cake was hands-down my favorite however, they were all worth ordering, and nothing was left behind . George's was a no-frills atmosphere, but you did feel like you were eating in someone's house. Besides a large group that seemed to be celebrating something special, we were the only people dining in there. It was intimate and cozy and we were so lucky to meet George himself. He told us all about how his restaurant and pizza recipes came to be. You can tell this guy loves what he does and it's a family affair. His daughter was our server and I think his mother was there helping as well. They were all so hospitable, and their pizza is definitely worth traveling for! Make sure to check George's out and definitely order more than one pizza because then at least you can bring it home if you're full after the first one. We had an early dinner on a Sunday before my son was heading back to college. The pan pizza was fantastic! I loved the sourdough crust. The toppings were all of high quality. My son the pizza snob placed it second only to Pequod's for this style. Personally, I actually liked George's better. The service from his mother in the dining room was nice and easy going. Because you ore-order and then use the tablets for drinks and whatnot it creates a very casual and relaxed atmosphere. Man I haven't had a good deep dish like this in a long time! I pass up George's on my daily work commute and was curious enough to bookmark this place in the hopes of going on a future date. Well, that time arrived over the long weekend and we opted to do take out. Due to its popularity, takeout orders are only made through Tock and you must reserve a timeslot for pick up. The night I booked our pizza, I stalled and instead of getting the 5pm spot (timed out) all that was left was 8pm and after. I threw caution to the wind and took the 8pm. At arrival, the form of payment they take is card only. I picked up my 10" modified Hala minus the peppers and onions. Once it was home with us we feasted. Between my husband and I, the pizza was gone in under two hours. My Gawd was that a delicious pie! Everything was spot on. It's pricey pizza but totally worth paying for with quality like this. Without a doubt the best deep dish pizza I have ever had! My family and I visit Chicago regularly and are always on the hunt for delicious deep dish. We have tried the OG's like Giordano's, Pequod's, Lou Malnati's, and so forth. Although they have been worthy of a trip, none have stood out like George's. The place itself is quaint with the best music videos playing on TV. There are only 2 people on site, George and his mother, who serves as the waitress. She is very friendly. George is a delight. They were both a pleasure to meet and speak with. Since it was only George cooking, and he had numerous takeout orders, we waited for about 45 minutes to an hour, which would not have been a problem if they had alcohol, so my partner and I went on a hunt for beer. Unfortunately, we did not find any, but we were able to check out the area and pass the time while waiting for our very, well worth-the-wait pizza. We ordered a medium all meat, which was perfectly cooked and flavorful. It was plenty for the 4 of us, with even a few slices left over. I can almost taste it now as I type this. My mouth is literally watering. I wish I was closer, but it definitely gives me another reason to visit Chicago. I cannot wait until the next time I visit George and his lovely mother. When I was talking with him he said that the current plan is to keep the requirement that you order your pizza in advance, but you can come to the restaurant to eat it, I think? It's also a great idea because Raven Theatre is less than a block away from him. And the elementary school may also have events occasionally.... Anyway, he said he's going to add some appetizers to the menu. There's already the salads, of course, but they have spaghetti and meatballs too (they make a pizza with it!) so that might be part of their additional menu items.
