It was rich, deeply flavorful, and served unseasoned enough to let you adjust the salt and pepper to your own preference. If you're new to 도가니탕, the generous size of the meat and tendon pieces might be a bit surprising. For me, however, the larger cuts were perfect. The accompanying dipping sauce of radish, soy sauce, vinegar, and wasabi was an excellent complement, cutting through the richness of the meat and adding a refreshing contrast. The 반찬 are apparently made in-house, and you can taste the difference. Everything was fresh and well prepared, especially the quality of the 고춧가루 they use. My only gripe? No soju. Hangyang has been one of the must visit places ever since I found it about 15 years ago when I visited Anaheim for blizzcon. The place only serves a limited staple of Korean food but what they serve they do them so well that it's worth going just for that small menu. Over the years they expanded their menu but their staple imo is the galbi tang or beef bone soup. It comes with 2 pieces of large beef bones. The soup is delicious and is paired perfect with the mustard sauce. There are other delicious offering such as the thistle rice bowl. I'd say because of the limited menu everything is great. The parking lot can be packed especially in the weekend as all the church goes come by. Most of the clienteles are usually middle aged or older so you know they know what authentic Korean food is. Galbi Tang: A light beefy broth that clearly didn't use any cubes to achieve the flavor that it has. You get about four bones of short rib with ample amounts of meat within them. The noodles in the bowl are basically non-existent, but you are given a cup of rice with this, so I guess that's the reason. The extra noodle is the portion that I was expecting, and the glass noodles were decent. 6. Don Katsu: It's easily the biggest pork cutlet I've seen in my life. Normally, I'd associate big portions of an item with mediocrity or bad flavor, but this isn't the case. I feel that the katsu was better than decent, was relatively juicy, and better than I expected/better than I'd admit. 13. Jab Chae: This is where things go back to the world of average to above average. The glass noodles were fine, the salty sweetness of the dish was expected, and the portions were huge. Service: You pay a higher price because there is more food. You also pay for the higher price because the service is a step up from normal. Staff here remember your order and keep track of the table's orders. Pretty impressive stuff. Ambiance: A simple restaurant that fits about 30-40. I have never tried dipping the Galbi in the side sauce, but since the table next to me were all doing it, I tried it out as well. This took an otherwise 7/10 Galbi Tang to 10/10. Usually you get the meat in thin sliced bulgogi (without the flavoring) style served meat. But no, this place has crazy thick, juicy, tender, rib style like chunks of meat that fall off the bone off a chunky sized bone that makes it look like you you are feasting off a large turkey sized bone off the meat meal. The meat was so delectable and tender like a galbi gim which is gently slowly stewed over long hours on end. Then you usually have the broth that is served intentionally bland so you can flavor to your liking with your choice of salt and pepper. No this place has the broth perfectly flavored so you don't have to fuss with such things and all you have to do is enjoy the soothing flavors that are garnished with green onions and the tendor meat falling off the bones. I loved that they sent over so many kinds of kimchi variations.
