They also brought out a small plate and a knife to handle the rib, which was a thoughtful touch that saved me from an otherwise undignified situation. Once the meat was cut and ready I did what any serious pho person does and built my dipping sauce on the small plate: chili oil, a small amount of sriracha, and hoisin. I am told that this is the traditional way to approach pho. You preserve the integrity of the broth and dip your noodles, meat, and vegetables as you go. Dumping everything into the bowl is a valid personal choice, but it is not the way of the Jedi. My son stuck with the reliable Pho Special plus extra noodles at $16 plus $2 for the extra noodles, which remains the best value play on the menu for a bowl that genuinely satisfies.
