Every detail made it feel like I had been transported somewhere truly special. The live entertainment was the perfect finishing touch. The belly dancers were incredibly talented and added so much energy and authenticity to the evening. Combined with the music, it created an experience that was about so much more than just dinner. One of my favorite moments happened as soon as I was seated, when my hands were ceremonially washed. It was such a unique and welcoming touch that set the tone for the rest of the night. Our server was outstanding. Once he learned it was my first time visiting, he made sure I felt welcomed and took great care of us throughout the entire evening. We've been fortunate enough to dine here four times since they opened, and somehow it just keeps getting better. On our previous visit, we even had the opportunity to spend some time chatting with Michelin-starred Chef Jeremy Ford, who is one of the most humble, down-to-earth people you'll ever meet. He is a magician when it comes to conjuring up spectacular dishes. We started the evening with champagne before I settled into one of my all-time favorite Scotches, Lagavulin 16. Candice chose the tasting menu while I decided to order à la carte so we could experience a little bit of everything. First dish up was the Cacio e Pepe Cheesy Puffs, which were unbelievably light, airy, cheesy, and absolutely addictive. The butter pickles added just the right amount of salty tang to balance all that rich buttery goodness. Next came the Kalamata Olive Ciabatta with whipped feta, Kalamata dust, and pickled baby radishes. Simple ingredients elevated into something truly memorable. One of my personal favorites followed: the Sake & Citrus Cured Japanese Yellowtail. The combination of textures, acidity, and freshness makes this one of the most beautiful and well-balanced dishes on the menu. I couldn't pass up the Foie Gras & Truffle Tarts. If you know me, you know foie gras is one of my favorite things to eat, and these were every bit as rich and decadent as I hoped. The Harissa Lamb Faggatelli delivered incredible flavor with its combination of tangy ginger, sweet peppers, and perfectly cooked lamb. Then came the Fragrant Spiced Barramundi. While Candice isn't the biggest fan of this dish since she dislikes curry, I absolutely love it. It has just enough spice to keep you coming back for another bite without overpowering the delicate fish. The Smoked Beef Rib arrived next, and honestly...this is a dish you simply cannot skip. Every single bite is packed with smoky, tender perfection. It's one of those dishes that sticks with you long after dinner is over. Then came the Westholme Australian Wagyu Striploin. Perfectly cooked with incredible marbling and textures that remind you why premium Wagyu is so special. Absolutely flawless. To finish the tasting menu, Candice enjoyed the Citrus Pavlova featuring olive oil cake, Yuzu pastry cream, Cara Cara oranges, and caramelized pistachios. The balance between savory, sweet, citrus, and crunch makes it one of our favorite desserts anywhere in Las Vegas. Of course, Stubborn Seed is known for all the little surprises throughout the meal. There were palate cleansers, petits fours, and a gorgeous festive donut that was almost too pretty to eat. I may have accidentally forgotten to take a picture of their incredible peanut butter candy bar, but trust me--it was every bit as amazing as it sounds. Now for an insider tip... If you're coming to Stubborn Seed just for dinner, you don't have to park in the Resorts World self-parking garage. During one of our earlier visits, Josh--one of the managers--shared that guests dining at the restaurant can valet at the Conrad entrance and simply walk directly into the back entrance of Stubborn Seed. It's incredibly convenient and has become our preferred way to visit when we're not staying at Crockfords. The service here has been exceptional every single time we've visited. Between the consistently outstanding hospitality, the way they treat locals, and some of the finest food you'll find anywhere in Las Vegas, Stubborn Seed continues to earn its place among our favorite restaurants. Food: 5/5 Service: 5/5 Atmosphere: 5/5 If I had to rate it on my own scale? 7 out of 5. Yes...it's that good. This isn't one of those places where I say, "We'll definitely be back." So it's a very exclusive fine dining experience. The food itself was unlike any tasting menu I've had so far. It's billed as Spanish tapas, but it is so much more than that. The 20+ courses that you get are all unique and just blow you away! The creativity and detail that goes behind every dish is at an extremely top level. And yes, the food is actually delicious. I don't think there was a single miss in any of these dishes. The team working here are wonderful. Although there may be some preparing that takes place in the kitchen with respect to each of the component parts of each dish, every single dish was prepared right in front of us and served to us directly. Not just that, but everyone here is super nice. Had some great conversations with the chefs. This was definitely one of the great dining experiences I have had this year. The only question I have is seeing how many Michelin stars they will get once the revived Michelin Guide for Las Vegas officially announces its results in August!

When you arrive you start out sitting outside of Jaléo having drinks and getting to know the people that will be dining with you. The dining room only holds eight people per service. You receive your golden ticket, which is your admission into a world of pure imagination just like Willy Wonka. They tell you when you enter that you're entering the mind of Chef Jose. The room is fun and quirky with odd little knickknacks in everywhere you look. It makes you wonder what you ate in for.... In a really fun way! Then you are taken on a culinary journey. You will have mind-blowing combinations like cotton, candy and foie gras or beets and manchego or the most amazing crab dish you've ever had in my life. French toast was drowned in so much sugary topping you couldn't taste the toast at all. Eggs were whipped and actually tasted fine, that's a genuine plus. Chicken dishes were salty and dry at the same time, not a good combo. Pasta was cooked al dente right but had basically no sauce, just big chunks of cheese sitting on noodles. Pizza was fine, nothing special. Burger I'd actively tell you to skip, meat was overcooked. On top of that, at $65 a person you're waving your arms down just to get a server's attention, they forget what you ordered, and each round takes 10-15 min. After last call it was another 20-30 min for dessert and the check. Steak and eggs and other premium items cost extra on top of the $65 too, and it's not small: $50-120 more. Between the food and the service, this is a 2 star spot on its best day. Wouldn't go back. If you want AYCE brunch in Vegas, Wicked Spoon at the Cosmo does it better on every front.
