I waited a few weeks before I wrote this review. I wanted to ensure that my immediate reaction wasn't a major factor for this review. I went on Friday 9/9/22 around 730PM. The place was relatively busy, but not packed. I'd say a little less busy than most places nearby for a Friday night. Zero wait for a table of two at walk-in, which is where the positive experience ends. We ordered two drinks. They were wrong. Took 10min to get a replacement. Our server went behind the bar several times and made drinks. Seemed like they may have been understaffed or maybe it's just standard practice to have a bartender also serve tables (it took forever between visits). For food, we ordered a cup of green Chile soup, a southwest chicken salad with grilled chicken, and a chicken burrito Christmas style. When the food came out, a guy began just setting an entree in front of me. I politely said (before he completely sat it down) "that is hers" while I pointed across the table. He then proceeded to aggressively put all of the items on the table in no organized manner and dismissively stated "you can figure it out." Seriously? You just assumed that an entree was mine without asking and I try to correct it, so you get angry? The tables next to me were even bothered by it and questioned what his deal was. I told the server and she said the manager would be informed, but I'd assume the manager or the person running the house would have made it a point to us that it was unacceptable. Well, it gets worse. The food. The salad was beyond bland. Zero flavor. The chicken was "red" from a marinade but it had absolutely zero flavor. Not even salt. The worst part of the meal was the soup. It was beyond dense. It had the viscosity of a smoothie. Certainly thicker than something like a cream of mushroom soup. Once again, flavor was lacking. Had decent spice, but overall bland. The chicken burrito was also underwhelming. I mention this entree last for two reasons. 1) it contained the same bland dried out chicken. As if it was cooked, refrigerated, left on the counter for a few hours, then reheated in a microwave and added to a burrito. Awful. 2) the green sauce use to cover half of the burrito was the exact same thing as the "soup" mentioned above. Very, very odd. Actually, a third reason is that it was cold. The soup/sauce on my burrito had already coagulated upon arrival. Well, long review and I tried for a few weeks to let it slide. I've been to two other restaurants of similar food styles since this experience and it only confirmed how much I would avoid Hatch. Easily the worse $100 I've spent in Seattle and this place will not last very long if fundamental seasoning and customer service issues are not resolved. Note: I added two photos because that's all I took. One is the salad and the other is the "soup". Update 11/19/23: I met an "owner" last week at another spot. A guy, with glasses, maybe in his 40s. He was just as horrible as the experience I had at the restaurant. Belligerent. He told me "I hope you learn to be forgiving of places when they have only been open a few months" in such a condescending and belittling tone. It's my fault that the food and service were awful? Don't open if you're not ready. Refund me if you made a mistake. Don't talk down to me like I'm the problem. If you worked in any other industry, you'd be fired for not performing after a few months. Had dinner here before a show not long ago. I was looking forward to it and it didn't quite live up, but it was a decent option and maybe would try it again if it was convenient. We shared the queso. It was so-so, so that was kind of a letdown but good enough. I had one of the entire salads. It was massive and I ate less than half, and it wasn't super memorable but also not bad. Service was also so-so and mainly she seemed annoyed by us and her job in general, so that is always kind of a killer for an experience. EDIT: I just got off the phone with Jason the owner. We talked over my experience and got to the bottom of what happened that night. After speaking to him I feel confident in returning to the restaurant and being served a safe meal. We came in close to the kitchen closing and due to a server error (it happens) they substituted the tortillas on the fly without thinking about it. Just a one off mistake. Thanks Jason for taking the time to care about your customers and reaching out! I am extremely disappointed in Hatch. We came here because the menu clearly listed gluten free options. My server took it upon herself to substitute the tortilla on my tacos without letting me know to a FLOUR one. I was skeptical of the texture but assumed maybe there were made in restaurant and different than store bought. After eating the first one I decided to clarify that they were corn and she then told me she switched them because that's all they had out. I have celiac and would not recommend this to any other gluten free person for this reason. I will now suffer the consequences because of it. Super bummed! read more

After watching this place get built and finally open, we kept driving past it and making a mental note to give this place a chance someday. The other day after a long travel weekend, we were feeling lazy to cook but craving burritos, so we decided to hop on in here and see what's up. It was a Sunday night, so there weren't many people in here; it was relatively chill and quiet, although we thought this place could get pretty packed. The restaurant itself is huge actually, and the decor and food gave us the impression it's Tex-Mex, which isn't always my favorite but glad we can cross this place off the list now. Unfortunately, the food was exactly what we expected in flavor, and the waiter kept mentioning how unspicy everything was. Still, thankfully he saved the whole meal by letting us know to try the table sauces, specifically the Colorado Crunch sauce, which is the red chili oil of the table sauces. That sauce should single-handedly be sold; these guys can make a ton of money just by selling this sauce. Even the waiter mentioned he uses it on his food at home. Not going to lie, I was really upset w the flavorless Christmas-style Chili Carnitas Burrito I ordered, and my partner ordered the same but with steak and had a similar reaction. We didn't feel like ordering cocktails since we had already partied all weekend and were feeling a bit tired of alcohol, but if we ever return, we're trying the queso burger and some of the tacos that look yummy in their pictures. Okay food and service, although the place is super cute! I came by with a friend on a Sunday evening, and we were seated pretty quickly. I highly recommend coming earlier as, despite the day, it got packed! Our server took our orders pretty quickly, although I noticed that they were out of several items on the menu. I decided to get the mushroom burrito, which turned out to be nothing special. It wasn't filling at all, it was more tortilla than stuffing, and there was barely any flavor. The only way to avoid a bland bite was to dip each into the sauce. We later tried to flag our server down several times to pay the bill, but she didn't come by again. We even made eye contact multiple times as I'd ask, but she'd smile and continue walking. I do understand that it was getting busier, but this went on for over 20 minutes before another server helped us out. Overall, I didn't find the food and service worth the money. read more

I give you this background because most of my reviews are now in video format--but This particular video review ran an error code and I BOOKED it here so I could give a review on one of the most impressive restaurants I have been to in Seattle. To start out, I went into this restaurant, thinking the very least and was just looking for a good salad. The staff was so friendly and so with what I was about to do ( live show ) that they immediately accommodated any needs I needed and let me begin. my waiter Mary, was an entire vibe! She never once made me feel out of place and instead, made sure all my food was timed right! The salsa and chips came out, and I did not even need to salt them--which is a problem I have with Seattle food. & The portion size blew my mind! So many chips!! Then The salad dropped. The salad was something I could not stop eating!! I'm so frustrated the video didn't save because you needed to see this! It looked great on camera and it tasted just as good as it looked! The viewers/audience were equally as impressed! Then someone comes out and asks how everything is and after replying I'm so impressed it's delicious. I can't believe it. He reveals himself to be one of the owners! He not only participates in the live show, but gives me samples of other foods to try! And not just me! The entire floor got the samples! These types of restaurants/owners are few and far between in Seattle and it's good to know that they still exist! Noteworthy moments hidden by my salad obsession: The margarita was delicious. Their desserts were delicious and they even have scorpion hot sauce! (Try it with your own discretion but to me? It was also "so so good"!) A nice corner spot in Belltown, I enjoyed the ambiance. A note about spice: yeah ... it's warm! I don't mind though, even the bloody mary for brunch had some heat (and was served with cilantro, as a heads up for those that don't much care for it). Drink was good though! For someone that is limited on carbs, the menu is tough to negotiate. I had the Hatch Green Chile Soup, it was hearty! A bowl was too much, but I suspect a cup would've not been enough. Early parts of the service was fine, got the drinks going, all needs addressed. It was a little inconsistent after a few more folks showed up, I just assume they're running a little lean on folks to run the floor so, probably just a fluke. Would definitely recommend the place if you like some spicy Mexican style food. Not good for those that can't do a lot of carbs -- that said, I didn't ask the staff about what options might exist for low carb / diabetic choices so might be worth a return visit. read more

I was really excited after seeing a high review score. But overall disappointed. Everything was just ok. I wouldn't go back and sorta wish we had gone somewhere else. In the happy hour menu with 4 of us, 5 cocktails and food we walked out spending $250, including tip. That's not that great a deal for a happy hour. The food was mediocre at best. Most of it tasted like ready made meals from the grocery store. The guacamole tasted like the stuff you buy in a tub in the deli section of a grocery store. The queso some how had almost no flavor which I don't understand how with cheese. Salads was ok. The place has potential but they need a better chef to create a better menu of quality food items. The chips and guacamole were good. The salsa that came with it had an out of the jar taste and texture - not good. The service was pretty slow considering how few people were there. Very few vegetarian or seafood options. We both had the Hatch Chile Rellenos, which seemed like a good option since they had a person actually roasting green chiles right outside the restaurant. They were not good. The mound of rice had little flavor, the pinto beans tasted canned. There was a nice fresh salad on the plate - by far the best item we were served. The chile rellenos were not good. Small with little batter. There were two of them - which was more than enough. They were filled with something like a lumpy off-tastiing queso gravy rather than any identifiable cheese. Both the red and the green sauces served with it tasted canned. As a native New Mexican, I was absolutely thrilled to find a New Mexican restaurant in my new city. New Mexican cuisine is unique. Things New Mexican food is NOT: Tex-Mex, Mexican food, Southwest food, easy to find outside of New Mexico. Things New Mexico food IS: Rich, bold flavors; drenched in roasted green chile, red chile (we don't have a Chile Institute in NM for nothing folks), or both (Xmas!); representative of the unique mix of cultures that is the state of New Mexico; extremely tasty. While all of these food cultures use some similar ingredients, the flavors and the handling of the ingredients is not the same. As in Italy, one might find regional differences in the food even though similar ingredients are used (even in the US, think of all the different styles of pizza!), the experience of those ingredients is different, such is the case here. Back to my review....I was thrilled to walk in and smell the deep, smoky, spicy aroma of roasting green chiles. It instantly brought me back to the first 18 years of my life walking down the sidewalk, watching the roasters turn and getting hungry just smelling the air. I loved seeing the Ristras hanging on the wall and all the books lining the shelves, some showing their age. Everyone was extremely friendly and the servers attentive. Largely, the service was very fast, but for some dishes, you should not expect speed if you want perfection, which is exactly what they delivered. I also disagree with some reviewers who say the area is sketchy. The area may have an alt-culture vibe, but that is exactly what it is trying to be and I love it for that. Anyone who has been to any larger city/metro area knows that some of the coolest places in the city sometimes also have more grit. This adds to the character and vibrancy of the place in my opinion. The food was largely exactly as I would want and hope for a New Mexican meal to be. I had the stacked chicken enchiladas, Xmas style, served with rice and beans, and a small sampling of the pork-based green chile stew. My husband had the green chile burger and fries. The food was all excellent and exactly the kinds of flavors I would expect from a New Mexican meal. We were both very happy with our food selection. I was too stuffed for dessert, but next time it is on the list. It is hard to find any critique of the meal, but if I had any it would be that cilantro isn't a very common spice in traditional New Mexican food, so just embrace the NM flavors as they are. No need to try to appeal to the SW food crowd. Let them fall in love with NM food as it comes. Also, embrace the bold chiles. Go ahead and get some of those Sandia variety chiles and liberally apply to everything. There's always an on-the-side option or the Big Jim cultivar chiles for those who don't like it as spicy. Overall I loved my experience and will definitely go back. My advice to anyone who is hoping to experience this restaurant is to go there not as if you are going to it Tex Mex, Mexican food, or Southwestern food, but as if you are going to try something entirely new, because for many of you, you will be. Waitress was assisting table for appetizers and then seemed to have disappeared and someone else (who didn't seem quite sure how to handle ordering system) took over for her. They couldn't figure out whose meal was whose and ended up being out other tables food and extra dishes. As far as the food goes, the margaritas were good. The enchiladas were fine. I was really impressed by Hatch Cantina! I've walked by it a million times and honestly never thought anything of it-- but we stopped in yesterday and I know we'll be back! When we arrived it was still happy hour, so we got margaritas off that menu. $11.50 is a bit steep for a HH marg, but the spicy was extremely delicious so well-worth it in my opinion. We started with the crab flautas and cornbread. The cornbread was moist and flavorful, and the flautas were well-textured, unique, and flavorful! My partner got the chili relleno with beef Colorado. The chili was nicely fried and was stuffed with a decadent cheese. The beans were also very good with a nice smokiness to them. I got the pork hatch chile green stew and it was incredible! Spicy, tangy, creamy, and full of big chunks of pork. The recipe is the owner's grandmother's, and he honestly could've created the restaurant for this dish alone! We ended with the Mexican chocolate brownie which was the perfect way to end the meal. The food here reminded me of the Mexican food we got in Denver, and that's a big compliment! read more

Stopped in on a slow Tuesday afternoon for a bite and we were more than pleasantly surprised! Started off with a couple of margaritas after some explanations. I ordered the Hot and Bothered which is their take on a spicy margarita with Habanero bitters and hot honey--YUM. My friend got the blood orange margarita which was equally tasty. Both very fresh. My friend ordered the Beef in Chile Colorado in taco form and she said it was BANGIN'. I got the veggie burrito as I'm a veg head and it was so good! Lots of zucchini in it! The queso fundito was a phenomenal pairing with our meal. Magic was our server and a very personable dude who talked about the story of the restaurant and the chef who uses recipes from his grandmother's kitchen! Where I'm from, it's actually cheese. Out here, queso is more of a powdery base and it was consistent with what we got here. It wasn't terrible, but it didn't taste like cheese. That said, everyone enjoyed their food. I ordered the burritos Xmas style, and I'm pretty sure the tortillas were made fresh too. I wasn't the craziest about the pork, as it was a little dry, but all things considered, it was really good. I think there were pickled onions in mine, which a nice touch to break up the flavor. Located in the heart of Belltown, this is a little gem of a place. I've been here a few times now while staying in the area for work, and it's been consistently good. The inside of the place is cool, with a disco ball, and some interesting lighting and artwork on the walls. Reminds me of a restaurant in Tel Aviv for some reason... Anyway, every time I've been, the service has been very friendly, and usually pretty fast. I've only ever been for takeout though, so I haven't spent a large amount of time there. The food was solid each time... not knock your socks off or anything, but good, and definitely worth the price. I always like to read the 1-star reviews of a place I enjoyed before writing the review. Just to see if I was blind to the complaints that others had (and also bc they're usually funny and entertaining, hahah). But honestly, even after reading the 1-stars--and also in the moment at the restaurant--I thought this place was pretty good! The --SERVICE-- was so nice (the bartender lady, the manager guy, and our server) and everyone we interacted with was super friendly. The --ENVIRONMENT-- was good because it wasn't dead (we went on a Wednesday night) but also wasn't bustling full of people to the point we never got our food. I also looooved the playlist on the speakers that night, so props to whoever's Spotify that was; felt like my own I loved it so much! Lastly, and most importantly, the --FOOD AND DRINKS-- were really good! The margaritas weren't necessarily anything to write home about, but they definitely were not bad.
