    I've been loving I Can't Believe it's Bread in Bellevue. Every time I stop by, the place smells amazing and the staff is genuinely kind and patient, even when it's busy. Their gluten-free cinnamon rolls and lemon bars are ridiculously good - soft, flavorful, and you honestly wouldn't know they're gluten-free. I also appreciate that they always have a nice variety in the case, so I can try something new each visit. If you're in Bellevue and eat gluten-free (or even if you don't), this bakery is absolutely worth the visit.

    I have never seen such a huge variety of Gluten Free AND Dairy Free offerings! The double chocolate muffins are out of this world! And the cinnamon rolls.... I've never had a DF/GF cinnamon roll so fluffy! I heated it up with plant-based butter, maple butter from Trader Joe's, and the frosting it came with. I've been missing Cinnabon style buns, and this came through. My family and I also enjoyed the pumpkin loaf. This is not your typical sit-down bakery. Many items come frozen. The baguettes were a bit crumbly, but that might have been because I ate it the next day. The flavor was great! It is a bit pricey, but the buns, loaves, and muffins were definitely worth it. It's a good thing I live in Oregon! I would go broke if I lived close.

    Easy parking and a convenient Bellevue location, this bakery provides very well thought out gluten free bakery goods... at boutique prices... a great tasting. Great for those gluten-challenged and a definite treat. We had the cinnamon rolls which were fabulous cinnamon-y with a good texture and sweetness, the sweet potato biscuits which also had a good texture, subtle sweetness that begs for some great butter, and the almond apricot biscotti which required tea (or coffee) to complete the experience.

    Absolutely the BEST gluten-free bakery I've ever been to! As someone with a severe gluten allergy and who's super picky about gluten-free treats, this place completely exceeded my expectations. My sister and I tried the bagels, pecan bars, raspberry streusel bars, and scones--and WOW, everything was out of this world delicious! The owners are the sweetest people, and made us feel right at home. And the coffee was amazing too! From the cozy atmosphere to the incredible food and genuinely kind people, I'm beyond grateful for this gem of a bakery. I'll be telling everyone I know (even my gluten-loving friends) about it! Can't wait to go back!

Pricing was average for their category. The desserts were fine in terms of flavor. They do not have a restroom though, the restroom is outside in the center of the office building and not inside the bakery suite.

The fruit cakes were pleasant, but this is where personal preference really matters. For me, I always lean toward more fruit, less cream. While the whipped cream feels light at first, after a few bites it starts to feel heavy and a bit greasy on the palate--pretty, but not especially restrained. The black sesame cake was the most interesting--and the most polarizing. The first bite was a true wow: deep, nutty, and indulgent. But as I worked through it, the texture became confusing. There were jelly‑like cubes mixed in that broke up the experience in a way I couldn't quite reconcile. I love black sesame, but this particular execution wasn't entirely my thing. The standout, without question, was the croissant. It's excellent--beautifully laminated, crisp where it should be, tender where it counts. I completely understand why they've earned awards here. I only wished there were a savory vegetarian option to explore the full range of what they can do. As for the coffee: visually, it's spot‑on. Flavor-wise, it misses the mark. Pouring caramel over the top without integrating it into the pulled shots means it sinks straight to the bottom. The result is an unbalanced experience--mild up top, an overwhelming sugar bomb at the end. Unfortunately, I couldn't finish it. All that said, it was genuinely fun to try, and it's the kind of place I'd revisit out of curiosity--especially to see what shows up seasonally. I'd absolutely be intrigued by something like a passionfruit offering.
