But if you blindfolded me, I don't know if I could confidently tell you it was Wagyu. It tasted very similar to a really good smash burger, so unless you're trying to impress your taste buds (or your wallet), I'd probably just order the original smash burger next time. One thing to keep in mind: there was only one guy running the whole operation when I visited. He was taking orders, cooking, and doing everything short of cloning himself. So if the place gets busy, expect a little wait. Honestly, respect to him for keeping it all together. Parking is a bit of a treasure hunt since there are only a few stalls. I got lucky and snagged the last spot, but street parking may be your backup plan. The inside was clean, spacious, and a comfortable place to enjoy your meal. Overall, I'd definitely come back--next time I'll save a few bucks, grab the original smash burger, and let the lone burger superhero work his magic.

Between the tomato bacon jam, the pickles, onions, and special sauce, it was like a well-orchestrated symphony, each flavor getting highlighted without being overpowering, and complementing the rest. That being said, somehow, there was something missing. I am not quite sure what, but I think it's from the actual hamburger patty. I really wanted to say this was one of the best burgers I've had but there was something that just didn't quite get me there. For a wagyu patty, I think I needed it to be richer, and to hold its own with the other ingredients, but it felt like the add-ons were carrying the burger. I mean, I felt like the bread was doing more than the patty itself. Maybe the patty got a bit overdone and would've worked better medium rather than medium-well to well-done? I really can't be sure. Will I go back? Yes, for sure. I am curious about all the other burger variations they have with the fried Kimchi and the Umami mayo. Maybe I'll even try The One fries with all the fixings. And if they could just find that one tweak, they may turn out to be one of the best burgers around.
