It occurred to me this condition was present due to the non-use of said shaker. I don't think I've ever asked for a salt shaker in a Chinese resto. I pulled a toothpick out of my "Murse" and broke up the caked NaCl. Applying same to the pieces of Shank, the flavor bloomed and I was a happy boy.
