    Bbq pork sandwich

I came here with some work colleagues for takeout. We got here, picked up our food, and got back within 30 minutes which was amazing. It was busy at lunchtime. Ordering online was easy. As we arrived inside, the gentleman packing up our orders was friendly and asked about sauces, receipts, etc. Mac and cheesy was toasty on top, very creamy. Pulled pork was flavorful and tender. I like the slaw as well as the mountain state bbq sauce, which had a nice tang to it. I've been to other locations and this one is on par with them.

This was really good. I think last year we came a few times and the brisket was really dry. We stopped coming to this location for awhile. This was very good this time.

    Beer!

Went for dinner last night, and it was a great experience. Food was great, people working there were great, and we were there in the peak of dinner hour on a Saturday night and the service was fast and we had no trouble getting a table. It had a positive atmosphere. A few random observations: 1. The portions are not huge. If you have a decent appetite, you won't be going home with leftovers. If you have a huge appetite, you may want an extra side. 2. Reportedly, most Mission BBQ locations do not have alcohol on the menu. This one has a few types of beer available. 3. You order at the counter, and you go up to get it when your name is called. Not unusual for a BBQ place. However, someone does come by and check on you after you've sat down with your food to see if you need anything else. It's nice, but it's quite unusual to have that in a restaurant that is not full service. 4. The oddest thing was that we weren't sure if we were supposed to bus our own tables when we were done. There were trash cans around, so we did, but it seemed like maybe we were supposed to leave everything on the table when we left.

Very rustic inside just what you want when going to a BBQ joint. We went around 7 and there were still ppl eating and coming in after us. You order at the front and they will call your name out when it's ready. Different BBQ sauces on the table. I only tried two. I got the NY pulled pork sandwich that has tangy slaw on top and side of fries. My meal was delicious.

Got the bbq pulled pork and Mac n cheese. Prices were fair and the food was great! I loved all the BBQ sauces to choose from. The Mac had great flavor and was really creamy and cheesy. Great service too. It was fun to see all the veteran memorabilia.

Came in for lunch during Armed Forces Week. Ordered a meat plate and got a free sandwich. Excellent veteran owned business with excellent food. It was so good, I came back the next day and ordered the hawaiian ribeye. Wow! One of the most delicious steaks I've had at a restaurant. I should also mention the amazing service and I loved all the patches and coins on the wall/tables.

The BBQ is dry and tasteless. The sides are equally bad. And all of it is over priced in my opinion.

Good food. First responder theme. Smoker meat plates and sandwiches. Plenty of free parking.

I've visited this place twice and haven't returned for well over s year. Are the sides still very small?

I think that's a matter of opinion. They gave us a large amount of fries and sides came in Palm sized black cups.

I judge every spot against what I'm putting out at home... and a lot of places fall short -- whether it's weak seasoning, lack of smoke, or just flat-out underwhelming flavor. But Wild Waylon's BBQ? Yeah... this place is LEGIT. We went all in: pulled pork, brisket, and the big dino beef ribs -- plus mac and cheese, green beans, a bacon-wrapped jalapeño popper, and the jalapeño cornbread. Every single thing delivered. The brisket had great flavor and was cooked right, the pulled pork was juicy and well-seasoned, and those beef ribs... absolute showstopper. Big, meaty, packed with flavor, and done exactly how you'd want them. Sides were just as solid. The mac and cheese was rich and satisfying, green beans had great flavor, and that bacon-wrapped jalapeño popper + jalapeño cornbread combo? Yeah... ridiculous in the best way. And the smoke -- you can actually taste it. That alone separates them from a lot of spots. The whole experience was on point too. The big pit out front lets you know immediately they're serious about their craft, and the staff was friendly, welcoming, and genuinely helpful the entire time. Prices are also very reasonable for the quality you're getting. This is one of the few places I've been where I walk away thinking, "yeah... they're doing it right." If you're anywhere near Fredericksburg -- or even just passing through -- this spot is absolutely worth the stop.

You see, get there too late and your options will be less. This morning before they opened, they already down to a half pound of burnt ends left for the day. Only a certain number of folks can be let in at a time to control seating which is available in and out. I had the short back ribs (which were so delish they fell off the bone), mac and cheese (warm cheesy goodness) and tried some of the baked beans (with brisket, jalapeños and saucy goodness). We also brought home some turkey, and their two kinds of brisket. Sweet baby Jesus. The wagyu brisket is buttery, melt in your mouth delish and the prime brisket is more traditional. Prepare for the sticker shock. Its expensive. I got brisket for $18. You get like 3 pieces of meat. You can't request for particular cuts. You gotta pray you'll get good cuts. Nothing comes with it ... everything is a la carte. You don't even get a piece of cornbread. They got beans, Mac n cheese, beans and potato salad. I ordered potato salad... Let me tell you it was AWFUL!!! This is nothing like you would get at a southern BBQ or cookout... I never recall ever having dill in a potato salad. My mother in law would have a fit.. It lacked so much seasonings, no egg or ham... no celery. The type of mustard they used was overpowering... and the dill ruined it for me. They have key lime pie and banana pudding.. but after my experience with the potato salad I was like nah. After you pay, they have tip screen? Why? When you're not being waited on and food is overpriced. The brisket was decent but my cuts had too much fat trim.. Service. Employees are nice but Ill stick with Mackies or Mo's pit bbq truck.

It didn't hold favor. Bbq sauce is very watery. Not sure why. Pork- 1/10 we did not like it at all. It was different. Ground. Vinegar overpowers everything. I almost feel it could've been better but we just couldn't eat it. Chicken- 6/10 as a family we ate it. Would picture it in a taco being great. Again vinegar overpowers. Mac and Cheese- 3/10 too milky not enough cheese.... And a true sample. Maybe 2oz. For the price it wasn't worth it. Greens- 8/10 again too much vinegar but I'm a country girl we eat the greens Hush puppies 10/10 French fries 10/10 So all in all we would not stop here again. At around $90 for three people, it felt expensive for a very casual, counter-service setting. They have a quick order cafeteria style service with most sides and meats right there to serve from the ordering counter. They offer a variety of pre-portioned desserts, cold alcoholic beverages, and meats and sides in larger portions to go We chose to sit outside, but the noise level was a major drawback--constant truck traffic and a very loud motorcycle shop next door made it hard to relax or enjoy the meal.
