There were quite a few people waiting as well, and I believe there was about a 30-45 minute wait. We killed some time by strolling around the plaza. The menu is pretty simple and straightforward - I love that they offer Knife Cut Noodles. Our noodle dishes were both delicious! The texture and chewiness of them makes me feel they were freshly made. I also ordered the Beef Roll Pancake and it was one of the better ones I've had! I like that everything from the menu to the decor, is modern and clean-looking. Parking was really easy - Noodle St. is situated in an enormous plaza so finding a spot won't be an issue. Came here for a second time and the stir fry bowl was excellent choice and so was the Korean beef and rice. Although the braised savory chicken noodle was definitely nothing I expected nor was it anything I liked. I think you need different tastebuds for this acquired spice blend. Came here for dinner with my boyfriend around 8. There was 1 other table and no music playing, so the restaurant was REALLY quiet (felt kinda awkward). Service was good! Our server was very nice, no complaints there. I ordered the Beef Noodle with knife cut noodles and xiao long bao. The noodles itself were great! If I had known the soup had some sort of Mala (numb spicy) in it, I wouldn't have ordered it. It made it hard to enjoy the rest of my meal because of the taste it left in my mouth. When we ate the XLB we heard a loud crunch following a toothache. I found some sort of bone/plastic inside the first one. I thought "it's ok," this type of thing happens. Hand-pulled noodles in Monrovia. I was quite excited. Initially ordered beef noodle soup, but got the wrong one. They were nice and switched it out, especially since the plain beef noodle soup had no flavor. The one with real beef broth and chunks of meat is the spicy beef noodle soup. The chunks had more tendon and were not soft. No star anise. 9.75 for a bowl. They just opened last week and are still figuring out the dishes and taste. I recommend this restaurant. Food: The quality of the food is comparable to Din Tai Fung, except this place serves larger portions and isn't nearly as expensive as DTF. We ordered lots of appetizers all of which I would come back for, including beef rolls, pickled cucumbers, fried tofu, and fried calamari. The fried tofu is a popular appetizer and different from any other restaurant's; the outside is gently crisp-ed while the inside still maintains its soft tofu texture. The beef rolls were fantastic too. The pancake used to wrap the beef roll had a nice crispy texture to it and the beef, which often is made to be too dry, tasted fresh. Other dishes we ordered were the ChaSiu fried rice, beef noodle soup (popular), and curry noodle soup. This place lets you choose your noodle's cut/thickness. While I had trouble getting use to the curry noodle soup, I think this would be a popular dish for those who enjoy the curry flavor without rice. The fried rice was very delicious, but all of us did note that the rice was a bit hard (assuming they used Day 2 rice) as to make the fried rice texture. I still really enjoyed that dish. We also each ordered watermelon juice as our drinks. We were given the choice of whether to add sugar, but it tasted sweet enough without. Setting: It's hard to come across a Chinese restaurant with a nice clean, modern setting with nice service and authentic Chinese food. I liked the interior design, high wooden ceilings, and spaced-out seating. The kitchen is also visible, so you can watch the chefs make the noodles and other dishes. Service: My party ordered more than a dozen items all at once and the server didn't make a single mistake despite a full house. I am a noodle holic, and I always search for a nice restaurant with handmade noodles. I feel so thankful that my friend brought me here and tried this awesome spot! They have amazing appetizers like lamb skewers, cucumbers and pan fried dumplings. I did enjoy all of them. For noodles, I highly recommend the knife cut noodle. I live in the Bay Area and I can't express how much I miss Noodle St--this place really made an impression on me when I ate here on a visit to the LA area. I've been on a quest for great knife cut noodles for the longest time, and had never been satisfied until I came here. I got the vegetarian noodle soup with knife cut noodles and it really blew me away. The broth had a distinct celery flavor and it was really light, not too salty. The noodles were chewy, which I love, and you can even watch the chefs shave the noodles through the glass walls to the kitchen. It's mesmerizing watching the dough go flying into boiling water. I also got a dry noodle and it had a very different flavor, which was cool to experience. I would probably come back to SoCal just to eat at this place because there's really nothing like it. I called and was told they added it to the regular noodles, which they clearly did not. The spicy beef roll had essentially no beef in it (see the picture.) Came here the other night after catching a movie at a nearby theater. It was close to closing but the manager was kind enough to still us and allow us to order. All the stuff there were extremely kind, and the ambience was very lovely. The tables and chairs there are really beautiful and even the chopsticks you get to use look really nice and you could tell they take care of everything. One of my favorite things about this place was how you get to see the chefs working on your food and pulling the noodles by hand. I Food came and it was really smelled so delicious. The Signature Beef Noodle reminded me a delicious asada beef taco but in soup form. I don't know how they did that. The stir fry evenly coats and the chicken was tender to the touch, but let me talk about the knife cut noodles! Oh man were those amazing. They were so chewy and in the best. I ordered via Yelp Delivery. The driver was rude and angry as soon as I opened the door. Driver was yelling "No Tip!" assuming I had no intention to tip because I chose the cash option for tip. I said hang on and he shoves the food to my chest, then pulls out his phone to show me tip amount was $0. I said okay and he walks away screaming. I ended up throwing away the food as I have no idea what that guy may have done to it. One of the best noodle place in 626, they make fresh noodle and you can see them doing from the see-through glass. Price is pretty fair and is good portion size also worth to get is their lamb skewers which is delicious. They had pretty parking lot so parking isn't issue. read more

Will return for the food but maybe as take out as the service was not as great as I had hoped. The servers are very nice, but not too attentive. We were seated and handed menus but they never came back to take our order. Other customers who were seated after us got to order before us... they also never checked in on us once we received our meals. Appetizers came out after our main course hit the table, and the drinks we ordered were out and they didn't tell us until we asked. This place is delicious! The restaurant is small and cozy so expect a wait. We were lucky to just walk in on a Saturday but we were told that is usually not the norm and I can see why. The host and waiter were both very nice and friendly and patient to explain everything to us. Their noodles are made from scratch and there are various types of noodles to choose from. One can customize their bowl or plate with their preferred ingredients which makes this place an easy win for dinner. The prices are fair and you get good portions for what you eat. My only reason for deducting one star was because our appetizer dumplings were forgotten and once they remembered about them, one of the servers was not very pleased that we canceled that item in the end.
